탄저병균 Colletotrichum dematium f. sp. capsicum에 감염된 고추의 병태조직학적 관찰 (Histopathology of Red Pepper Plant Infected with Colletotrichum dematium f. sp. capsicum)

  • 분생포자는 발아관의 수에 따라 포자내에 격막이 형성된다. 저항성 품종(금장 2호, 홍일품)과 감수성 품종(하늘초, 새고추) 간의 부착기 형성율은 큰 차이가 없었고 부착기의 모양은 엔형, 타엔형 및 성장체 등 다양하며 접종 12시간에서 그 형성율은 최고에 달했다. 접종 24시간에 저항성 품종의 잎과 열매에서는 과민성인 작은 갈색병반이 관찰되면서 표피하 조직세포내에 심한 원형질분리가 일어났으나 감수성 품종에서는 시간의 경과에 따라 큰 병반으로 급속히 진전 확대되었고 시간이 경과함에 따라 균사가 하부조직으로 확산되었고 분생자시 및 강모의 출현은 접종 96시간 후에 관찰되었다. 감염종자의 종피는 심하게 붕괴되었을 뿐만 아니라 침입균사도 관찰되었고 배유와 배는 심한 원형질분리를 일으켰다.

고추 주요 재래종 선발계통의 생육 및 과실 특성 (Growth and Fruit Characteristics of Selections from Local Cultivars of Pepper)

  • 우수한 재래종(在來種)에 더뎅이병과 역병 저항성(抵抗性) 인자(因子)를 도입(導入)하기 위한품질친(品質親)을 선발(選拔)하기 위하여 '칼미초'에서 선발한 20계통과 '풍각초'에서 선발한24계통을 공시하여 본(本) 대학(大學) 시험포양(試驗圃楊)에 재배(栽培)하여 개화소요일수(開花所要日數), 초장 및 과실특성을 조사(調査)하였다. '칼미초'와 '풍각초' 선발 계통(系統)들은 모두 개화소요일수(開花所要日數)가 많은 만생종(晩生種)이었고, '칼미초' 계통들이 '풍각초' 보다 변이복(變異福)이 더 크게 나타났다. '칼미초'의 일부 계통(系統)들은 초세(草勢)가 강하고 당도(糖度)가 높으며 포양(圃楊)에서 바이러스에 저항성(抵抗性)으로 나타났다. '풍각초'의 일부 계통(系統)은 과종(果種)이 무거운 대과종(大果種)이었으며 과피가 두텁고 제분율(製粉率)이 높게 나타났다. 이상(以上)의 결과(結果)로서 더뎅이병과 역병에 저항성(抵抗性) 품종(品種)을 육성하기 위한 여고잡육종에서 반복친으로 사용할 수 있는 재료(材料)로 '칼미초' 계통 6, 9, 14, 18과 '풍각초' 계통 14, 16, 18등 7계통(系統)을 선발(選拔)하였다.

대전지역 전업주부들의 학력수준에 따른 식품구매 실태조사 (Food purchase Behavior of Taejon Full Time Housewives with Different Education Levels)

  • A survey was conducted to assess the food-purchase behavior of 197 Taejon full time housewives 30 to 49 years of age. Food purchase was assessed using a questionnaire and the resulting data were analyzed using SPSS programs. Demographic data revealed that most of the households have three to five family members and that the Engel Indices of the participating households were mostly between 10 and 30%. Noticeable results of the food purchase assessment are as follows. In the grain and grain products items, the low-education group purchased more rice and barley than the high-education group, whereas the high-education group purchased more glutinous rice, brown rice, bread, macaronis and spaghetti than the low-education group. In the vegetable items, the low-education group purchased more Chinese cabbage and radish than the high-education group, while the high-education group purchased more head lettuce, broccoli and sweet pepper than the low-education group. In the meat items, the beef purchase was higher in the high-education than in the low-education group, while the pork purchase was higher in the low-education than in the high-education group . In the processed meat items, ham was the most favorite purchase item regardless of the education level. In the fish and shellfish items, Pacific cod and Alaska pollack were purchased more in the low-education than in the high-education group, and salmon and dried icefish strip were purchased more in the high-education than in the low-education group. No items in fruit group showed significant differences in the purchase amount between the low-education and the high-education group although the latter purchased more imported-fruits such as melons, kiwis, grapefruits, and oranges. Dairy products such as milk, cheese and butter were purchased more in the high-education than in the low-education group. It was also found that both the number of food items and the consumption of foods coming from animals were higher in the high-education than in the low-education group.

PERFORMANCE OF SMALL SCALE LIVESTOCK/CROP DEMONSTRATION-CUM-TRAINING FARMS IN SRI LANKA

  • Three livestock/crop demonstration-cum-training farms have been established on plots of half, one and two acres, typical of the "Kandyan Forest Garden System" Vegetables, bananas, pepper, coffee, coconut and fruit trees are widely spaced, for intercropping with grass, and have been surrounded with live fences that also provide fodder for livestock to increase the family income. Each unit is operated by a selected employee and his family under a monthly incentive scheme based upon the gross margin. On these farms the technical parameters in dairying are better than elsewhere in the Mid-Country. Economic performance over 1985-1992 showed that dairying contributed most to the total gross margin of the half, one and two acre units, i.e. 31, 63 and 69%, respectively. Next came crops (29%, 37% and 19%), poultry (22%, 0% and 9%), and goats (18%, 0% and 3%). In the three farms the cash income per Sri Lankan Rupee spent was 1.5, 4.6 and 2.1, respectively. The overall ratio was 3.2 for dairying, 1.1 for poultry, 4.5 for goats and 9.9 for crops. Actual family labour in the three farms was 548, 548 and 639 days, compared to the 270, 330 and 440 days anticipated in the initial feasibility study. The average incentive payments, which were 20% (half acre), 61% (one acre) and 133% (two acres) of the parastatal salary of the employee, were only insufficient for the extra labour applied in the half acre unit. Dairying and goats proved to be attractive cash earners with a domestic fuel were important benefits. Poultry did little to improve farm income.

건조방법과 향신료 추출물 첨가가 육포의 품질특성에 미치는 영향 (The Effects of Drying Method and Spice Extracts Added to Beef Jerky on the Quality Characteristics of Beef Jerky)

  • To develope Hanbang beef jerky as health food, six kinds of beef jerky were prepared by adding sugar (A), licorice (B) and three kinds of spice extracts (clove: C, fennel fruit: D and Chungyang green pepper extract: E) and mixture of all extracts (F). The effects of the drying method and added spice extracts on the quality characteristics of the beef jerky were evaluated. In general, the air-blast dried beef jerky contained $31{\sim}33%$ moisture, $50.0{\sim}51.2%$ crude protein, $7.2{\sim}7.8%$ crude lipid and $3.0{\sim}3.3%$ crude ash. For the mineral content of the air-blast dried jerky, the most prevalent mineral was Na $(1540.08{\sim}1838.17$ mg%), followed by K, P, Mg, and Ca. The Ca content of the beef jerky was highest in the mixed extract group (88.53 mg%), and the lowest content was in sugar-added group (53.12 mg%). For the color properties, the L-value (lightness), a-value (redness) and b-value (yellowness) were higher in the air-blast dried beef jerky than in the hot air dried samples. The drying methods showed their greatest affect on the redness (a) for all six jerkies (p<0.001). For the preference by sensory evaluation, the beef jerky samples with added sugar (A) and licorice extract (B) had significantly higher scores than the beef jerky samples with the added spice extracts, for both of air-blast drying and hot air drying (p<0.05). Preference for the air-blast dried beef jerkies with added clove (C) and fennel fruits (D) were significantly higher, in terms of taste, color, softness and aftertaste as compared to the respective hot air dried jerkies (p<0.01). Considering all the obtained results, we concluded that licorice and spice extracts can be used as natural preservatives in the development of health foods and the air-blast drying method is recommended to improve the quality characteristics of beef jerky.

천연식물성분이 아질산염 소거에 미치는 영향 (Effect of Natural Plant Components on the Nitrite-scavenging)

  • 차류(녹차, 두충), 약용식물류(어성초, 삼백초, 백화사설초), 해조류(김, 미역, 청각), 채소류(피망, 케일, 오이, 양파) 및 과실류(토마토, 매실. 자두, 포도)추출물로부터 pH를 달리한 in vitro반응계에서 비타민 C함량과 아질산염 소거작용을 분석하였다. 비타민 C 함량은 녹차추출물에서 65.1∼77.1 mg/100 g로 가장 높았으며, 채소류는 과실류보다 대체로 높게 정량되었다. 아질산염 소거작용은 pH 1.2에서 그 효과가 가장 우수하였으며 차류, 약용식물류 및 해조류의 경우 pH 1.2에서 각각 57.0∼100%, 50.0∼100% 및 18.0∼99.0%였다. 특히 케일 쥬스 10 m1 및 매실쥬스 5ml첨가시에도 100%까지 아질산염 소거작용을 나타내었다.

풍(風)질환과 관련 있는 식치방(食治方)에 관한 연구 - 『식의심감(食醫心鑑)』, 『음선정요(飮膳正要)』, 『식료찬요(食療纂要)』를 중심으로 - (A Study on Food Cure for Wind diseases - focusing on Sikuisimgam, Eumsunjungyo·Singnyojaebyeong, Singnyochanyo -)

  • Objectives : The paper analyzes food cure recipes related to wind diseases as written in Sikuisimgam, Eumsunjungyo Shikyojaebyeong, and Singnyochanyo. The paper shall then use results of the analysis to consider food cure recipes utilized by patients who are suffering from wind diseases or who are showing symptoms of wind diseases. The paper aims to help cure modern diseases related to wind diseases and make a set of suggestion about preventive foods. Methods : Important dietary guidebooks in Korea and China were studied, and the author studied only the ones among the food cure recipes that had wind diseases for which they are effective. Sikuisimgam 16 species, Eumsunjungyo Shikyojaebyeong 13 species, Singnyochanyo 13 species of food cure recipes related to wind diseases were extracted, and they were studied based on their ingredients, cooking style, and administration time. Results : There are food ingredients introduced as effective for curing wind diseases within Sikuisimgam, Eumsunjungyo Shikyojaebyeong, and Singnyochanyo. Among them, some of the ones that can be utilized in the modern age are: arrowroot(葛粉), nepta herb(荊芥), Baekryangmi(白粱米), Dongmaja(冬麻子), milled rice(白米), Eokiin(薏苡人), fermented soybean, chongbaek, Wubanggeun(牛蒡根), soy beans(大豆), grass(椒), xanthium fruit(蒼耳子), changi leaves(蒼耳葉), jinpi(陳皮), black pepper(胡椒), ginger(生薑), mint leaves(薄荷葉), suyu, heukjima(黑脂麻), ojagye, chives, and Baekyuma(白油麻). Conclusions : The food ingredients extracted from Sikuisimgam, Eumsunjungyo Shikyojaebyeong, and Singnyochanyo are effective in curing wind diseases, and they should be processed in ways that enable the people of this age to consume more of them. Moreover, people who have not yet suffered from wind diseases but are showing the symptoms of wind diseases will benefit from taking care of their blood pressure by consuming these foods in their everyday lives. Such people will serve as examples of good food cure recipes.

"도문대작(屠門大嚼)"을 통해 본 조선중기 지역별 산출 식품과 향토음식 (A study on Regional foods in the middle of Chosun Dynasty through Domundaejac)

  • Regional foods is influenced by weather, local and social environment etc. The purpose of this study was to understand that regional foods in the middle of Chosun Dynasty through Domundaejac. Some of representative dishes of the Hansung and Kyonggi-do Area is duck(rice cake) of seasonally celebrated days, hangua(korea confectionary) and rice wine. Typical foods in Chungchong-do Area is included persimmon, jujube, watermelon and wax gourd. Some of the well-known food in Kangwon-do Area is pear, bangpungchuk(gruel), sukebyung(rice cake), woongjijunggua(korea confectionary) and sanat-kimchi(picked mustard leaves and stem) that is seemed characteristics of mountainous section. Some of the famous dishes in Cholla-do Area is backsanja(korea confectionary), tea, chuksun kimchi(bamboo shoot pickle), citrus fruits and ear shell. Kyongsan-do Area ia famous persimmon, bamboo fruit, dasik(korea confectionary) and yakban(glutinous rice cake). Hwanghae-do Area is famed pear and choshi as assumed the eatly form of gochujang(thick soypaste mixed with red pepper). Representative dishes are deljjuk(blue berry), herring, sangat-kimchi(picked mustard leaves and sterm) in Hamgyong-do Area and daemandu(big dumpling) in Pyongan-do Area. The coast area is famous for using lots of sea food. Fresh seafood is consumed raw, and clams, fish and seaweed are liberally added to soups and other dishes. The East coast is catched salmon, flatfish, codfish, sandfish and mackerel The West coast is catched yellow corvenia, lobster, tiny shrimp and large-eyed herring. The South coast is catched sea mussel, codfish and laver.

군납 농산물 중 카바메이트계 농약의 모니터링 (Monitoring of Carbamate Pesticide Residues in Agricultural Products Supplied for the Army)

  • 본 연구는 2005년 1월부터 12월까지 경기도와 인천지역에 납품된 14종 농산물 356점 중 카바메이트계 농약 10종 (aldicarb, bendiocarb, carbaryl, carbofuran, ethiofencarb, fenobucarb, methiocarb, mehtomyl, isoprocarb, propoxur)을 분석하였다. 대상 농산물 356점중 카바메이트계 농약이 12건 검출율(2.53%)이 검출되었으며, 그 중 2종류의 농약이 검출된 농산물은 1건으로 0.27% 이었다. 군납 농산물중 methomyl(0.84%)로 가장 많이 검출되었으며, carbofuran(0.56%), ethiofencarb(0.56%), carbaryl(0.28%) 순으로 나타났다. Aldicarb, bendiocarb, fenobucarb, methioarb, isoprocarb, propoxur 은 시료에서 검출되지 않았다. 검출된 농약은 상추에서 ethiofencarb(0.29 ppm), 고추에서 carbofuran(0.24 ppm), 시금치에서 methomyl(0.23 ppm), carbaryl(0.01 ppm), 배추에서 carbofuran(0.20 ppm), 오이에서 methomyl(0.12 ppm), 쑥갓에서 ethiofencarb(0.01 ppm), 파에서 methomyl(0.01 ppm) 이었으나 모두 MRL 미만으로 안전하였다.

암모니움, 아초산염(亞硝酸鹽)과 칼슘 화합물(化合物)이 고추 역병균(疫病菌)(Phytophthora capsici)의 발아(發芽)와 균사생장(菌絲生長)에 미치는 효과 (Effects of Ammonium, Nitrite and Calcium Compounds Affecting to Germination and Mycelial Growth of Phytophthora capsici Causing Red Pepper Fruit Rot)

  • 고추 역병균(疫病菌)의 유주자낭(游走子囊) 발아억제(發芽抑制) 및 균사생장(菌絲生長)에 미치는 효과(效果)를 구명(究明)하기 위하여 $NH_4^+/ NH_3,NO_2^-/ NHO_2$$Ca^{+2}$을 in vitro에서$NH_4OH,KNO_2$$CaCl_2$에서 공시(供試)하여 수행한 결과는 다음과 같다. 1. $NH_4OH,KNO_2$$CaCl_2$로 조제(調劑)된 mol 용액(溶液)으로 처리(處理)한 결과(結果) 비(非)이온화(化)인$NH_3, NHO_2$와 이온화형(化型)인 $Ca^{+2}$ 농도(濃度)에 의해 고추 역병균(疫病菌)의 유주자낭(游走子囊) 발아(發芽)가 무처리구(無處理區)에 비(比)하여 $15{\sim}50%$의 억제효과(抑制效果)를 보였다. 2. pH와 mol농도(濃度)가 증가(增加)함에 따라서 $NH_3$의 농도(濃度)가 증가(增加)되었으며 반면에 $HNO_2$농도(濃度)는 pH 감소(減少)와 mol농도(濃度) 증가(增加)에 의하여 증가(增加)되었는데 동일(同一)한 농도(濃度)에서 $NH_3$는 pH6보다 pH8에서 유주자낭(游走子囊) 발아(發芽)에 더 저해적(沮害的)이였으나 반대로$HNO_2$는 pH8보다 pH6에서 더 억제(抑制)되었다. 3. $NH_3$$HNO_2$은 저농도(低濃度)에서 고농도(高濃度)로 될수록 유주자낭(游走子囊) 발아(發芽)가 더욱 억제(抑制)되는 경향을 보였다. 4. $Ca^{+2}$은 pH와 mol농도(濃度)가 증가(增加)됨에 따라 유주자낭(游走子囊) 발아(發芽)가 억제(抑制)되는 경향이었다. 5. 균사생장(菌絲生長)은 pH에 의하여 영향(影響)을 받았는데 특히 높은 PH에서 다소 억제(抑制)되었으나 $NH_3, HNO_2$$Ca^{+2}$의 농도(濃度)에는 아무런 영향(影響)이 미치지 많았다. 6. 이상(以上)의 결과(結果)로 보아 고추 재배(栽培)에 있어서 토양개량제(土壤改良劑)인 계분(鷄糞)같은 실소(室素)를 ,함유(含有)한 유기물(有機物)의 $NH_4^+/,NH_3,\;NO_2^-/HNO_2$$Ca^{+2}$은 고추의 역병균(疫炳菌)의 유주자낭(游走子囊) 발아(發芽)에 저해적(沮害的)으로 작용(作用)함으로 이는 실제로 토양(土壤) 개량제(改良劑) 처리(處理) 토양(土壤)에서 고추 역병균(疫病菌)의 발생억제현상(發生抑制現象)을 부분적(部分的)으로 나마 뒷받침하여 준다.
