뽕잎 분말 함유 어묵의 품질 특성 (Quality Characteristics of fish Meat Paste Containing Mulberry Leaf Powder)

  • This study was conducted in order to promote the utilization of fish meat paste added mulberry leaf powder(EPM) as food. The tested concentrations of mulberry leaf powder were 0, 0.1, 3, 0.5 and Ito The weight of the fish meat paste with FPM was heavier than the control(p<0.001). Oil absorption was the highest in the one with $0.3\%$ mulberry leaf powder, The It a and b values of the fish meat paste were decreased as increasing the concentration of mulberry leaf powder in Hunter color value(p<0.001). Good flexibility was shown not only in the control but also in the one with FPM in folding test. In texturometer test, the hardness was increasing, but the cohesiveness, springiness, gumminess, and brittleness were decreasing in according to increasing the concentration of mulberry leaf powder. In sensory evaluation, color and oily taste were getting higher as increasing the concentration of mulberry leaf powder. The fish meat paste added with $0.5\%$ mulberry leaf powder showed the highest acceptance scores in flavor, texture and overall quality. The result suggest that mulberry leaf powder can be applied to fish meat paste for both quality and functionality.

재래식 메주와 개량식 메주로 제조한 된장의 휘발성 향기성분 (Volatile flavor components of soybean pastes manufactured with traditional Meju and improved Meju)

  • 재래식 메주와 개량식 메주로 각각 담아 숙성시킨 된장의 향기성분을 연속 수증기증류 추출장치로 추출하여 상압에서 농축한 후, preparative GC로 GC-관능검사를 하고 GC/MC 분석과 Kovats retention index를 비교하여 동정하였다. 재래식 메주로 담은 된장의 향기성분으로는 alcohol류 11종, aldehyde류 4종, pyrazine류 2종, acid류 4종, furan류 3종, phenol류 3종, ester류 3종, hydrocarbon류 3종, ketone류 1종, 기타 성분 5종 등 39가지의 성분을 동정하였다. 개량식 메주로 담은 된장의 향기성분으로는 alcohol류 4종, aldehyde류 2종, pyrazine류 2종, acid류 2종, furan류 1종, ester류 2종, hydrocarbon류 1종, ketone류 2종, 함황 화합물 1종, 기타 성분 4종 등 21가지의 성분을 동정하였다. 한편, 재래식 메주로 담은 된장과 개량식 메주로 담은 된장에서 함께 동정된 향기성분으로는 3-methyl-1-butanol, 4-methyl-3-heptanol, trimethyl-pyrazine, 1-octen-3-ol, 2-furancarboxaldehyde, tetramethyl-pyrazine, benzaldehyde, 3-methyl-butanoic acid, naphthalene, 2-ethyl-3-methyl-oxetane 등 10가지 성분이었다.

The Development of Cereal Bars with Dried Anchovy for Chinese Customer Using Check All That Apply (CATA) Analysis for Liking and Disliking

  • Today, energy bars are consumed not only as snacks but also as meal replacement foods. Convenience and nutritional supplementation are the main factors accounting for the increasing use of energy bars. Two hundred Chinese customers who attended the China Fisheries & Seafood Exposition in China, and had no inhibitions about consuming cereal bars were selected. The questionnaire was composed of CATA choices that selected both the reasons for liking and disliking four different types of cereal bars, namely topokki flavor (hot pepper paste), seaweed flavor, kimchi flavor, and ginseng flavor cereal bars with 10% of dried anchovy content produced by BadaOne Co. (Seoul, Korea). The purpose of the study was to investigate Chinese consumer's attitudes and acceptance of different flavored cereal bars containing protein and calciumrich anchovy. For the selected Chinese customers, the acceptance score for the seaweed flavor was the highest, followed by topokki, red ginseng, and kimchi. The acceptance for the topokki flavor was higher than for seaweed for the attributes of color except for general acceptance, flavor, aroma, and texture. The results of the survey showed that the acceptance of kimchi was the lowest, contrary to earlier predictions. The results of the Check All That Apply (CATA) analysis showed that the reasons for liking the seaweed & anchovy flavor were the most diverse, and there was no reason chosen for disliking this flavor. The reasons for liking this flavor were listed as sweet flavor, healthy, seafood flavor, malty flavor, texture, new/unique, and umami. In the case of topokki and kimchi, the reason for disliking the flavor was umami, and in the case of red ginseng, the ginseng flavor was the reason for both likes and dislikes. CA analysis showed that both the flavor and emotional factors were positive for seaweed & anchovy and topokki, but negative for red ginseng. As a result, seaweed & anchovy flavor, which is familiar to the Chinese people, should be the first cereal bar considered for a launch.

구기자 분말 함유 어묵의 품질 특성 (Quality Characteristics of Fish Pastes Containing Lycii fructus Powder)

  • 구기자 분말을 0, 1, 3, 5, 7%를 함유한 어묵을 제조하여 수분 함량, 색도, 절곡 검사, 기계적 texture, 관능검사, 기호도 검사 등의 품질 특성을 조사하였다. 구기자 분말을 첨가한 구기자어묵의 수분 함량은 모든 시료가 37%대의 수분을 함유하고 있어 고른 분포를 띄었다. 색도 변화에서 L값은 구기자 분말의 첨가량이 증가할수록 감소하였으나(p<0.001), a값과 b값은 증가하였다(p<0.001). 어묵의 유연성을 나타내는 절곡 검사에서는 모든 시료에서 AA로 측정되어 구기자 분말의 첨가에 관계없이 우수한 것으로 나타났다. 구기자 분말을 첨가한 구기자 어묵의 기계적 texture 특성은 구기자 분말 첨가량이 증가할수록 응집성(cohesiveness)은 증가했지만, 껌성(gumminess)과 파쇄성(brittleness)은 구기자 분말 첨가량이 증가할수록 감소하였다(p<0.001). 어묵의 관능검사에서는 어묵의 색상(color), 향미(flavor), 구수한 맛(pleasant taste), 경도(hardness), 부착성(adhesiveness)은 구기자 분말의 첨가량이 증가할수록 높게 나타났으나, 느끼한 맛(oilly taste)은 구기자 분말 첨가량이 증가할수록 낮게 평가되어 어묵에 구기자 분말을 첨가함으로써 느끼한 맛이 감소되었다. 어묵의 기호도 검사에서는 3LFP군이 외관의 기호도(appearance quality), 향미의 기호도(flavor quality), 맛의 기호도(taste quality), 질감의 기호도(texture quality), 전반적인 기호도(overall quality) 등의 모든 항목에서 가장 높은 평가를 받았다. 따라서 구기자를 첨가한 기능성 구기자 어묵의 가공 적성에 적절한 구기자의 첨가량은 3%가 적당하다고 사료된다.

게 페이스트 첨가 패티의 제조 및 특성 (Preparation and Characteristics of Patty with Red-Tanner Crab (Chionoecetes japonicus) Paste)

  • New types of patties were prepared with surimi and crab paste, and then characterized. With an increase of additional ratios of crab paste, the moisture (64.8 to $61.5\%$) of the patties slightly decreased while the ash contents (2.3 to $3.7\%$) increased. The Hunter's color values of the patties decreased in lightness (L value, 58.79 to 54.27) but increased in redness (a value, -2.77 to 3.54). Thus, the patties that had added crab paste appeared slightly more reddish. According to the increasing of additional ratios of crab paste, sensory scores on color and flavor increased whereas the texture score decreased. From the above results, based on physical properties and sensory evaluation, the desirable additional ratio of crab paste for preparing patty was $15\%$. The calcium and phosphorus contents of the patties with the addition of $15\%$ crab paste were 148.8 mg/100 g and 139.6 mg/100 g, respectively, and their ratio (approximately 1:1) was the optimal range in body absorption efficiency. The calcium absorption rate with the $15\%$ additions was 4.9 times higher than that of the patty with no additions. Total amino acid content (16,302 mg/100 g) of the $15\%$ additions showed no difference to the patty without additions, and the major amino acids were aspartic acid, glutamic acid, leucine and lysine. Exceptionally, the cysteine content of the patty with the $15\%$ crab paste additions was 2 times higher than that found in the patty without crab paste. The major fatty acids were 16:0, 18:1n-9 and 18:2n-6 of the total lipids, and there was no difference between the patties with and without crab paste. The above results showed that crab paste can be used as a crab surimi gel source.

  • 연잎 분말을 0, 0.5, 1, 1.5, 2%를 함유한 어묵을 제조하여 수분함량, 색도와 절곡검사, 기계적 texture, 관능검사, 기호도 검사 등의 품질특성을 조사하였다. 연잎 분말을 첨가한 연잎어묵의 수분함량은 모든 시료가 37%대의 수분을 함유하고 있어 고른 분포를 띠었다. 색도 변화에서 L, a, b값은 연잎 분말의 첨가량이 증가할수록 감소하였다. 어묵의 유연성을 나타내는 절곡 검사에서는 모든 시료에서 AA로 측정되어 연잎 분말의 첨가에 관계없이 우수한 것으로 나타났다. 연잎 분말을 첨가한 연잎어묵의 기계적 texture 특성에서는 경도, 응집성, 탄력성에서는 유의한 차가 인정되지 않았으나, 껌성과 파쇄성은 연잎 분말 첨가량이 증가할수록 감소하였다. 어묵의 관능검사에서는 연잎의 향미, 경도, 부착성은 연잎 분말의 첨가량이 증가할수록 높게 나타났으나, 구수한 맛과 탄력성은 0.5 LP군이, 씹힘성은 1 LP군이 가장 높게 평가되었다. 어묵의 기호도 검사에서는 0.5 LP군이 외관의 기호도, 향미의 기호도, 맛의 기호도, 질감의 기호도, 전반적인 기호도 등의 모든 항목에서 가장 높은 평가를 받았다. 따라서 연잎을 첨가한 건강기능성 연잎 어묵의 가공 적성에 적절한 연잎의 첨가량은 0.5%가 적당하다고 사료되며 연잎을 함유한 고품질의 어묵의 제조 가능성을 확인하였다.

당귀 분말 함유 어묵의 품질 특성 (Quality Characteristics of Fish Paste Containing Angelicae Gigantis Radix Powder)

청국장과 김치에서의 이취 발생과 저감화 (The Reduction of "Off-flavor" in Cheonggukjang and Kimchi)

  • Off-flavor in foods and in raw materials is quite concerning, as it could signify deeper-rooted problems. Methods of reduction of "off-flavors" in traditional food such as Cheonggukjan and Kimchi, and in raw materials of soybean paste were studied by means of a literature review. It was found that the major components of "off-flavor" were due to butyric acid, valeric acid, alkylpyrazines, ammonia, and sulfides for Cheonggukjang, and for Kimchi were sulfur containing components such as methyl allylsulfide, dimethyl disulfide, diallyl disulfide, methyl allyl trisulfide, methyl 2-propenyldisulfide, dipropenyldisulfide. There is a demand for a scientific and systematic approach in overcoming the "off-flavor" problem. Nutritional aspects and safety should be considered. Several methods have been attempted, such as masking, binding, improving cooking process, inhibiting rancidity, and controlling the growth of micro-organism. Methods of masking were the most frequently ones used for the reduction of "off-flavor", and in some cases, othertechniques were additionally applied. The masking method would be useful in the reduction of "off-flavor" in traditional Korean foods, i.e. Cheonggukjang, Kimchi, as well as in new product development.

Character Impact Compounds in Flavors of Korean Soy Sauce Manufactured with the Traditional and the Improved Meju

  • We characterized the character impact compounds of flavors of the fermented Korean soy sauce manufactured with both the traditional and the improved Meju made with different strains. The whole flavor samples were obtained by extracting each volatile flavor phase from both the traditional and the improved soy sauce. To get more detailed information, each whole volatile flavor was further fractionated into the basic, acidic, phenolic and neutral fractions. Each separated peak from the whole and fractionated flavor samples on gas chromatogram was identified by GC/MS and Kovat s retention index, and likewise the aroma of each peak was investigated by a sniffing test with the exercised panel. We were able to identify 15 groups of ingredients with the characteristic soy sauce aroma from the soy sauce made with the traditional Meju and 6 groups from the soy sauce manufactured with the improved Meju made with Aspergillus oryzae. The character impact compounds the two soy sauces were different from each other.

고추씨를 첨가한 즉석 고추장의 품질특성 (Quality Characteristics of Instant Gochujang added with Red Pepper Seeds Powder)

  • This study produced instant Gochujang(red pepper paste) with enhanced convenience by increasing nutritional value and palatability, and by reducing production period, adding in the red pepper seed in the red pepper paste production in order to increase the use of the red pepper seed that is not used often as a food ingredient even though its nutrition value when producing red pepper paste was proven. Moisture content, pH, L-value, a-value, b-value, sugar contents, and salinity of instant Gochujang tended to increase as the amount of red pepper seed increased, while viscosity manifested the opposite trend. Sensory evaluations were conducted on instant Gochujang to assess differences in characteristics, which demonstrated that as the amount of red pepper seeds powder increased, the intensity of redness for the red pepper paste's external appearance, luster, spicy flavor and taste, and savory taste were evaluated strong. Meanwhile, fermentation value, which is red pepper paste's foremost weakness was evaluated as weak. Moreover, there was no difference in the size of the grain when compared to the contrast group consisting of regular red pepper paste. The results of preference test demonstrated that the RG3 with 30% of red pepper seed is optimal in terms of the external appearance, taste, texture and overall preference.
