인지방질 함유식품 첨가에 따른 백설기의 물성적 특성 (Mechanical Characteristic of Backsulgi Added with Rich Sources of Phospholipid)

  • The purpose of this study was to select an ingredient acting as a natural emulsifier to retard the retrogradation of rice cake by the measurement of mechanical characteristics of the cakes. For the purpose, Backsulgi, the most basic type of rice cake, was prepared by adding various ingredients having high contents of lecithin such as raw soybean powder, parched soybean powder, soybean oil, egg yolk powder, and the measurements and observations on the chromaticity, swelling power, pore ratio and cross-section were made. In addition, changes in the textural characteristics of Backsulgi samples were determined while storing them at the temperatures of 4$^{\circ}C$ and 20$^{\circ}C$ for 0, 1, 2 and 3 days. The results of the study were as follows: 1. In terms of chromaticity, the Backsulgi samples added with egg yolk powder, raw soybean flour and parched soybean flour were higher in yellowness(b) than the controls. 2. Both swelling power and pore ratio of Backsulgies added with raw soybean flour were higher than those of controls. 3. A cross-sectional observation using an electron microscope indicated that rice flour particles of controls had uneven pores and were conglomerated in a large lump while Backsulgi samples of raw soybean flour or roasted soybean flour had large and even pores and showed loosened bonding to be transformed into a sponge shape. 4. In hardness, Backsulgi samples added with raw soybean flour had less changes in hardness than that of controls, indicating that the effect of retarding retrogradation was higher when the storage time got longer.

  • The purpose of this study was to select a cake ingredient acting as an emulsifier to retard the retrogradation of rice cake commercially available. For the purpose, Backsulgi, a traditional Korean rice cake, was prepared by adding various ingredients having high contents of lecithin such as raw soybean powder, parched soybean powder, soybean oil, egg yolk powder, and then the changes in the sensory and textural characteristics of the cakes were determined while storing them at the temperatures of 4$\^{C}$ and 20$\^{C}$ for 0, 1, 2 and 3 days. Based on the sensory evaluation, Backsulgi samples added with raw soybean flour were significantly different in roasted nutty smell, roasted nutty taste, softness, moistness, cohesiveness and overall quality compared with the control in the longer storage time at 20$\^{C}$.

쌀의 돌연변이 억제활성에 미치는 가공처리의 영향 (Effect of Processing on the Antimutagenicity of Rice)

  • 쌀을 cooking, steaming, parching 등의 가공처리 형태로서 밥, 백설기, 미싯가루를 제조하여 methanol로 추출한 후 돌연변이 억제활성의 유지여부를 조사하기 위하여 Salmonella typhimurium reversion assay로 조사하고 SOS Chromotest로 확인하였다. S. typhimurium reversion assay에 대하여 직접변이원 4NQO로 유도한 frameshift type 돌연변이의 경우 $46%{\sim}100%$의 억제효과를 나타내었으며 억제활성이 투여농도에 비례하였다. Base substitution type 돌연변이의 경우는 각 가공물의 용매 추출물에서 억제활성이 미약하거나 서의 효과를 발견할 수 없었다. 간접변이원의 경우는 직접변이원과 비교하여 모든 처리구에서 억제효과가 관찰되었다. Trp-p-1으로 유도된 frameshift type 돌연변이의 경우 $75{\sim}100%$의 활성을 나타내었으며 $AFB_1$으로 유도된 base substitution type 돌연변이의 경우는 $66{\sim}87%$의 활성을 보여 직접변이원보다 억제활성이 높았다. SOS chromotest에 대하여는 4NQO로 유도된 돌연변이의 경우 억제활성이 없었으며 Trp-p-2로 유도된 돌연변이의 경우는 19-67%의 억제활성으로 S. typhimurium reversion assay와 같은 경향이 나타남을 확인하였다. 쌀의 항변이원성 물질은 rice-cooking, steaming, parching 등의 가공처리에 의해 억제활성이 소실되지 않아 가공 안정성이 있는 물질인 것으로 조사되었다.

『상한론(傷寒論)』의 갱미(粳米) 입약법(入藥法)에 대한 고찰 (A Study on the Application of Non-glutinous rice in Shanghanlun)

  • Objectives : To examine various ways non-glutinous rice has been applied in different formulas of "Shanghanlun" and the relationship between non-glutinous rice and the formulas' effects. Methods : First, texts that included non-glutinous rice were selected from the "Shanghanlun". Then, they were categorized according to the application of non-glutinous rice, followed by analysis of its relationship with each formula. Results : Most formulas that used non-glutinous rice in raw form when decocting with other ingredients included Shigao. Non-glutinous rice alleviates coldness of Shigao as in the case with Taohuatang where it stops diarrhea. Non-glutinous rice used in Wumeiwan warms the center and boosts Qi and helps the medicinal ingredients to bind when made into pellets. In Guizhitang and Lizhongwan, non-glutinous rice assists Stomach Qi. In Shizaotang, porridge is taken after diarrhea to help quick recovery. To prevent damage of Zheng Qi, Baisan can be mixed with rice water for administration. The level of cathartic effect can be managed through giving cold or hot porridge to the patient according to his/her response to the medicine. Mazirenwan, Mulizexiesan, Banxiasan, Sinisan, Wulingsan are mixed in rice water for administration. It makes it easier to swallow than when mixed with plain water. The application of rice flour is either internal or external. In Zhufutang, where rice flour is parched, it harmonizes the center and stops diarrhea. In Daqinglongtang when there is too much perspiration, warm powder is sprinkled on the skin to stop sweating. Clear porridge in Jiuziyisifang and rice flour in Shechuangzisan were exclusive to "Jinguiyaolue", while Baisan and rice water mixture could only be found in "Shanghanlun". Conclusions : The excavation and research on various ways non-glutinous rice was applied in treatment holds certain meaning in contemporary practice of Korean Medicine where treatment leans heavily on medicinal treatment rather than food, and all ingredients are boiled together in large quantities for most decoctions.

차 잎가루를 첨가한 증편의 품질 특성 (Quality Characteristics of Jeung-pyun not Made with Parched Tea Leaf Powder)

  • The purpose of this study was to determine the optimum condition for producing tea leaf Jeung-pyun that does not contain added parched tea leafs (0, 0.5, 1, 1.5, and 2%) while producing Jeung-pyun that has a variety of functional ingredients and to investigate the possibility of making practical application of tea leafs. Moisture contents were 56 ~66% and there were no significant differences among the samples. The pH of Jeung-pyun samples was 5.65~5.74. The L-value decreased as the amount of added tea leaf increased, and the a-value was low in the group made with added tea leafs. The b-value was high in the 1% added group and had a tendency to increase vs the control group as amount of added tea leaf increased. In the groups with added tea leaf the volume was evaluated as being higher in the order of 1>1.5>2%. The specific volume of the group with added tea leaf was evaluated as being higher in the order of 1>1.5>2%. Sensory characteristics of the group with added tea leaf were evaluated as being high. For characteristics of cell uniformity, rice wine flavor, and sweetness, the control group was evaluated as being high, and for characteristics of color, moistness, and softness the 1% added group was evaluated as high. Astringency was evaluated as being high in the 2% added group. Texture profile analysis was conducted after samples were maintained in an incubator at $20^{\circ}C$ for 0, 1, 3, 5, and 7 days. Characteristics for hardness, gumminess, chewiness tended to increase with longer periods of storage. Characteristics for cohesiveness, springiness tended to decrease as the storage period increased. As determined by this study, addition of 1% tea leaf was the most favorable method for making use of tea leafs the production of Jeung-pyun and a potentiality for the use of tea leafs in food was discorvered.

"임원십육지(林園十六誌)”의 초류(麨類) 조리 가공에 관한 문헌 연구 (A Study on the Literature of the Cooking Product of Cho(Misutkaru) in Imwonshibyukji)

  • Imwonshibyukji(1827) is an important and stupendous ancient scientific book, which is much like an encyclopedia, that can discern the dietary life of the latter period of Choseon. This article is assorted, which is mentioned in this book, as Cho(Misutkaru-in parched grain that is weed out into powder) to the main material of grain Youmicho, Wandoocho, Youcho, also the medicinal plant as the main material Youkhangcho, Backyupcho, Chungumcho, Unyoungcho, and Naecho, Haengcho, Eicho, Imgumcho, Joyou, Bokbunjacho, made by fruit. The results of inquiring the property by the assortment is as you see in the following. Youmicho, Wandoocho, Youcho, Youkhyangcho, Backyupcho, and Chungumcho, which consist of glutinous rice, nonclutinous rice, barley, buckwheat, pea, and black soybean are among 13 kinds of methods to make Cho. The manufacturing process is similar to that of Misutkaru, but in the case of Unyoungcho 6 different medicinal powders are mixed with Chundang and Sookmill to form a hard portable taffy substance, which is quite unique. Naecho, Haengcho, Eicho, Imgumcho, Joyou, and Bokbunjacho are extracted from pulp and processed in a powder form like Misutkaru, which can also be considered as a fruit tea. Youcho is unique in its sense, since it is fermented by maggots that are bred in order to obtain the juice. Cho is known to calm thirst and empty stomachs, and has various medicinal materials to act as food to aid virility. It is also known to have multiple functions as an alternative staple, refreshment to aid virility, portable food, and preferable beverage. There are ten references on Cho, 37% are Korean in Ongheejobji and 63% Chinese in Jaeminyosool, Bonchogangmok, Chungmoonbobang, Nongjungchunsuh, Wangshinongsuh, Shikgyung, Sukmyung, Bonchoseupyou, and Wisaengbogam. The citations are in the general introduction and 13 types of Cho are cited 19 times overall, but citations based on Chinese references are non existe.

반정량 식품섭취빈도조사를 이용한 경기지역 일부 대학생들의 영양 섭취 실태 조사 연구 (Dietary Intake by a Semi-Quantitative Food Frequency Questionnaire Given to College Students in Gyeonggi-do)

  • This study was conducted to assess the dietary intake of college students in Gyeonggi-do. The dietary survey data were obtained by a semi-quantitative food frequency questionnaire given to 103 students, 56 males and 47 females. The average age the of subjects was 22.5 years old for the male students and 20.9 years old for the female students. Among the subjects, 38 males and 26 females' height, weight and percentage of body fat were measured using Inbody 3.0. The average height, weight, Body Mass Index(BMI) and percentage of body fat of the subjects was 173.1cm, 68.6 kg, 22.9 and 18.9% for males and 162.5 cm, 54.1 kg, 20.5 and 28.1% for females, respectively. The mean daily intake of energy was 2,343.0 kcal for males and 2,062.0 kcal for females. The average intake of protein, carbohydrates, Vitamin B1 in the male students were significantly higher than those of the female students(p<0.05). The average of Nutrient Adequacy Ratio(NAR) was ranged from 0.60(folate) to 0.99(phosphorus). NAR of Vitamin A and calcium was 0.71 and 0.75, respectively. The average of Mean Adequacy Ratio(MAR) was 0.85. The intake of rice and oriental cereals(sum of the parched cereal powder, ramen, noodles, Chajangmyon, buckwheat vermicelli, buckwheat noodles, dumplings and rice cakes) in the males was significantly higher than those of the females. The intake of snacks in the females was significantly higher than that of the males. Appropriate nutritional education for an optimal intake of nutrients may help to improve the quality of diet in college students.
