  • Chicken patties and frankfurters were manufactured by varying the relative proportion of MDM to HDM as raw materials, and their palatability, shelf-life and textural properties were evaluated. The obtained results were as follows: 1. Chicken patty containing MDM slowed gradual increase in TBA value during frozen storage, but its storage up to g weeks presented no problems in flavor stability. 2. Color score and total palatability of chicken patty were best for the product containing 30% MDM. It was also concluded that MDM can be included in the patties up to 50% of total meat with good results, but more than 70% was not recommended. 3. The formulation of MDM up to 50% in frankfurter gave a quite satisfactory acceptability and textural properties compararable to frankfurter made of 100% HDM, but the inclusion of more than 70% MDM was not recommended. 4. The TBA value of frankfurter containg MDM did not increase to any great extent until 4 weeks of storage at $4^{\circ}C$, indicating no unique problems in flavor instability compared to regular frankfurter. 5. It was concluded that processed meat products such as patties and frankfurters containing MDM up to $30{\sim}35%$ of total meat ingredients gave satisfactory results in color, texture and palatability, comparable to regular products.

Effect of Ultrasonic Treatment on the Quality of Frying Chicken Meat (초음파 처리가 튀김 닭고기의 품질에 미치는 영향)

  • This study was carried out to investigate effect of ultrasonic treatment on the quality of frying chicken meat. Moisture content of ultrasonic treated leg meat was lowest to 59.7%, moisture content of breast meat was higher than leg meat and protein content of control was higher than ultrasonic treatment. Fat content of ultrasonic treatment was higher than control and leg meat was higher than breast meat. Hunter's L (lightness) and a (redness)-value was not different between frying methods, but L-value of breast meat and a-value of leg meat was higher than leg and breast meat, respectively. Hunter's b (yellowness)-value was not different among frying chicken meats. Frying loss of ultrasonic treatment was significantly lower than control, water holding capacity was higher than control. VBN content of ultrasonic treatment was comparatively higher than control, TBA number of ultrasonic treatment was highest to 0.78mg malonaldehyde/kg. Hardness, springiness and cohesiveness of frying chicken meat was not different between frying methods, but difference of chicken muscle parts were significantly showed. Chewiness was not different among frying chicken meats and shear force value of control breast meat was lowest to 1.9kg. In case of sensory score, aroma and taste of frying chicken meat were out different between frying methods, but texture, juiciness and palatability of ultrasonic treatment were higher than control and that of breast meat were higher than leg meat.

Improving Feed Value of Agricultural By-Products (농산부산물(農産副産物)의 사료화(飼料化))

  • In order to improve feed values of Korean agricultural by-products, various treatments including physical, chemical, physicochemical and fermentation were suggested in th is review article. Physical treatments such as chopping, grinding and pelleting reduce partiole size of agricultural by-products, and increase passage rate from the rumen, thus may increase voluntary feed intake and weight gain. Digestibility and voluntary feed intake of straw, rice hull and sawdust, also, may be increased by chemical treatment using sodium hydroxide or ammonia. Especially, because nitrogen content of by-products increase and toxic problem is not posed by ammonia treatment, it's practical usage is recommended in Korea. Silage or fermentation treatment using principles of microbial fermentation may improve palatability of low quality by-products. As mentioned above, it is concluded that various treatments suggested are desirable and improve feed value but may raise several problems. Unfortunately, because cost for installation and products is great and processing work is complicate, farmers are not using well these processing methods until now. Therefore, in order to increase the practical usage at farm level, it is thought that many research works be achieved for efficient process which have simple operation and low installation cost.

Sensory and Mechanical Characteristics of Daechu Injeolmi by Various Soaking time of glutinous rice (수침시간을 달리한 대추인절미의 텍스처 특성)

  • This study was intended to investigate the optimal soaking time of glutinous rice for making jujube Injeolmi, a kind of traditional Korean glutinous rice cake. The jujube Injeolmi was prepared with glutinous rice soaked for various times (2, 4, 6, 8, 10 hr), and the moisture content, chromaticity, sensory qualities and mechanical qualities were measured while storing them up to 72 hr at 20$^{\circ}C$. The moisture content and L-value of jujube Injeolmi were the highest at 8-hr soaking. The a-value was the highest at 6-hr soaking. The hardness was maintained the lowest at the 8-hr soaked sample during storage. The cohesiveness and springiness were not significantly affected by the soaking time. The gumminess was significantly different among the samples during storage. The results of sensory evaluation showed that jujube Injeolmi had the best color at 4-hr soaking and the highest sweetness at 6-hr soaking. The 8-hr soaked glutinous rice gave the highest level of softness, chewiness and moistness in the sample, therefore, 8-hr soaking appeared to be the most desirable method for making jujube Ingeolmi.

Quality Characteristics of Beef Patty Containing Gums (Gum류를 첨가한 우육 Patty의 품질 특성)

  • In order to investigate the possibility of lwo fat meat products, beef patties were prepared with gums such as carrageenan, methyl cellulose, and xanthangum. The quality characteristics of beef patties were examined. Moisture contents of raw and cooked patties of control were lower than those of patties containing gums, and fat content was higher than those of containing gums. There was no significant difference in the protein contents of patties. In case of L-value(lightness) of raw patty, the control was higher than those patties containing gums. a-(redness) and b-value(yellowness) among patties were not significantly different. Cooking yield, fat retention, and water holding capacity of beef patties containing gums were higher than control beef patty, but salt soluble protein and gel strength were not significantly different. Significant difference did not exist among beef patties in hardness, but the chewiness and gumminess of patties containing gums were higher than control. In case of sensory evaluation, there was no significant difference among patties in aroma and palatability. Texture of control was higher than patties containing gums, and juiciness of control was higher than patties containing carrageenan.

Effects of Air and Vacuum Packaging on the Qualities of Pork during the First 4 Days Post Mortem (함기포장과 진공포장이 도축 후 단기 유통 돈육의 품질에 미치는 영향)

  • The pork loin used in this study was obtained from carcass chilled for 24 hours after slaughter and divided into 2 pare. The first part was air packaged and the other part was vacuum packaged, both of which were chilled at $4^{\circ}C$. After 2 days of slaughter, the qualities of air packaged loin chilled for 1 day showed lower drip lose, higher water holding capacity and better sensory texture than the vacuum packaged port (p<0.05). On the other hand, the air packaged loin chilled for 2 days showed lower drip loss and shear force value(SFV), higher Hunter's $a^*$ value, higher amount of taurine and alanine, and better taste, texture, juiciness and palatability than the vacuum packaged pork (p<0.05). However, the air packaged loin chilled for 3 days showed lower hip loss, chewiness SFV, higher amount of VBN $(12.37\;mg\%)$ and total plate count $(2.6\times10^4\;CFU/cm^2)$ than the vacuum packaged pork chilled for the same day (p<0.05). for the same chilling period, there was not significant difference between air and vacuum packaged pork in pH, TBA value, $L^*$ value, $b^*$ value, cooking loss, hardness, springness, cohesiveness, gumminess, total free amino acid contents and cooked meat aroma (p>0.05). Considering all these results, it is recommended that the way of air packaging for the pork with a short storing period should be reconsidered to cut down expenses.

Change of Organoleptic Properties with Heating Concentration of Oriental Melon Juice (참외주스 가열농축에 따른 관능적 특성 변화)

  • This study was carried out to observe the change of organoleptic properties of the juice prepared with various heating temperature and heating time. Organoleptic color showed maximum value at 94.95$^{\circ}C$ and 21.63 min and organoleptic aroma showed maximum value at 63.14$^{\circ}C$ and 20.38 min. Organoleptic taste showed maximum value at 96.63$^{\circ}C$ and 14.31 min and overall palatability showed maximum value at 97.18$^{\circ}C$ and 14.55 min. The best condition was 98$^{\circ}C$(heating temperature) and 13 min(heating time) at organoleptic evaluation of oriental melon juice.

Changes in Properties of Dandelion Tea Induced by Roasting Conditions (볶음조건에 따른 민들레 잎차의 특성 변화)

  • This study was attempted to develop dandelion tea under various roasting conditions. The quality properties of tea were evaluated by measuring soluble solid. total yield, pH, color value, turbidity, browning degree, and sensory evaluation induced by various roasting time and temperature. The total yield and soluble solid content were the highest at the roasting process at 23$0^{\circ}C$ for 10 min. pH value was higher in non-treatment than pre-drying treatment and was not different among the roasting times. L value was reduced with increasing roasting time. Turbidity and browning degree of dandelion tea were the highest at the roasting condition at 23$0^{\circ}C$ for 10 min. Palatability was the highest at the roasting condition at 23$0^{\circ}C$ for 5 min without pre-drying. The higher solid yield was obtained with an increase in roasting temperature. Turbidity and browning degree increased under the roasting conditions at 230 and 26$0^{\circ}C$, respectively. Palatability in sensory evaluation increased at the roasting condition at 26$0^{\circ}C$ for 10 min. The higher savory taste value was obtained with an increase in roasting temperature.

Response of Rice Yield and Grain Quality as Affected by Rice Leaf Folder (혹명나방 피해 정도에 따른 벼 수량 및 미질 반응)

  • This study was carried out to determine the response of the rice yield and grain quality by rice leaf folder (RLF, Cnaphalocrocis medinalis G.) and identify the damages caused by different transplanting dates, nitrogen amounts and chlorophyll amounts (SPAD value) of rice leaf. As the damage degree of RLF was getting severer, the ripened grain rate and 1000-grain weight were decreased and due to the increasing of chalky rice rate the rate of head rice was reduced. Therefore, the yield of head rice was decreased by 36% in heavily damaged rice plant. Among the physicochemical characteristics, protein content of rice grain was increased but amylose content was reduced, consequently, the palatability was deteriorated in heavily damaged rice by RLF. The degree of damage of RLF was getting serious as transplanting date was delayed and as the amount of nitrogen was increased. In the relationship between the SPAD value and the damage degree of RLF, as the SPAD value was increased by nitrogen fertilizing, the damage degree was also increased exponential functionally.

Study on Improvement of Cooking Rice Method for Acceleration of Consumption of the Rice (쌀소비 촉진을 위한 쌀밥 조리 개선 연구 (I) - 취반시 조리수에 산, 지방, Cellulose 첨가에 따른 texture 변화)

  • This study was attempted to enhance taste and quality value of cooked rice by adding fat, vinegar, cellulose in cooking water. Cooked rice with five different levels of material in cooking water (100% water A: 10% vinegar B: 10% fat C: 10% fat and 10% vinegar D: 10% fat, 10% vinegar and 10% celloulose) was tested for rheology, fine structural changes, sensory evaluation, in vitro digestion. 1) Cooked rice by adding 10% fat rate was higher than A, B, D, E samples for softness, Jelly and increased in vitro digestion. 2) sensory evaluation conducted by tweenty university students a panelists showed that B, D sample were low value in flavour, texture and taste, but higher than A sample for softness, Jelly and in Vitro digestion. 3) E sample (l0% fat, 10%s vinegar, 10% cellulose) was more significant for taste, texture, and digestion than A sample. From these results, it was concluded that rice cooked with 10% of fat in cooking water was quite acceptable, in terms of practical food value consisting of palatability rheology and digestibility.
