Effects of the Red Pepper Powders Dried in Hot-Air by Various Processing Methods on Quality of Kochujang during Fermentation (가공방법을 달리하여 열풍건조한 고춧가루가 고추장의 품질에 미치는 영향)

  • Physicochemical characteristics of Kochujang based on hot-air dried the red pepper powders with different treatments, were investigated during 90 days fermentation to obtain information for the industrial production of Kochujang. The pH was decreased gradually during fermentation, and pH of the control Kochujang was consistently higher than those of others. The total acidity was increased linearly during fermentation, and Kochujang with 0.1% vitamin C was consistently higher than others. Reducing sugar contents of Kochujang was increased until 75 days but was decreased slightly thereafter, showing highest value for the control sample. Amino nitrogen contents was increased gradually until 75 days, showing highest value for Kochujang with mash-dried red pepper powder, but it was decreased remarkably thereafter The L and a values of Kochujang were increased, whereas b value was decreased during fermentation. L, and b values of Kochujang with mash-dried red pepper powder were higher than those of others, showing the more light and deep color than others. Appearance, taste and overall acceptability of Kochujang based on mash-dried red pepper powder were higher than others.

A Study on the Relationship Between Health Protective Behavior and Health Locus of Control (예방적 건강행위와 건강통제위 성격 성향과의 관계에 대한 연구)

  • It is assumed that the more society advances in its complexity and development, the more people pay attention to their health and accordingly the more people tend to practice health protective behavior. Most of human behavior is based on social inter-actions. The concept in Locus of Control has been developed from social learning theory to help better understanding the social phenomena affecting human behavior. Multidimensional Health Locus of Control is consisted of three dimensions: Internal, Powerful Others and Chance. This study was conducted to find out the health protective behavior patterns of the people and its relationship with Health Locus of Control as an influencing factor to their behavior. All the subjects in this study were the ones of the bank employees in Seoul, Among the total of 1,430 bank employees, 761 were chosen as a sampled subjects. Questionnair survey was conducted from March 4 to March 13, 1985. Research instruments used in this study were two kinds, one was the Health Locus of Control Scale developed by Wallston & Wallston and the other was the Measuring Scale for Health Protective Behavior developed by the investigator. Analysis of data was done by using Descriptive Statistics, X²-test, t-test, ANOVA, Pearson's correlation coefficient. The results of this study are summarized as follows: The mean score of Internal was 24.1, Powerful others was 19.7 and Chance was 15.3 out of maximum range of 6-30 respectively. The mean score of Health Protective Behavior Scale fell as 53.2 out of a maximum range of 18-90. Internals were more likely closely related with sex, educational levels and religion, Powerful others were related with age, educational levels and the number of family members. Chances were related with edu cational levels. The older the subjects were, the more concerned about their health. They tended to practice more favorable health protective behaviors. Furthermore, married people tended to fay more attention to their health than single individuals. Also, the number of family members and religion affected their attitudes in the health protective behavior patterns. Internals and Powerful Others were related with health protective behaviors. If one believes he can do something about his health and others play a significant role on his health, he is more apt protective patterns more suitable for health and actually shows that he is better off.

Changes in the Physical Characteristics and Components of the Jujube Fruits by Drying Methods (대추의 건조방법에 따른 물성 및 성분의 변화)

  • This study was investigated to changes of texture, color and chemical properties in jujube fruits which dried by sun and hot air instrument. Weight and moisture contents were the lowest in jujube fruits dried by sun thin those of others. The ratio of water uptake was the highest in jujube fruits dried by hot air drying than those of others. The hardness and rate of rotting of dried jujube fruits were the highest in sun (Dying than those of others. The browning of jujube fruits dried by sun was higher than that of jujube fruits dried by other methods. Ash content was the highest in sun dried fruits than those of others, and content of vitamin C was the lowest in nm dried fruits than those of others.

The Effect of interpersonal competency based self-understanding and acceptance of others, self-leadership and stress-coping on military adjustment (자기이해와 타인수용에 기반한 대인관계능력과 셀프리더십, 스트레스대처수준이 군생활적응에 미치는 영향)

  • This study would like to know the relationship among interpersonal competency based self-understanding and acceptance of others, self leadership, stress-coping and military adjustment. For this, 1289 military trainee in the army training station were surveyed. In results, The first, the acceptance of others did not have a significant effect on the perform-will, but had a significant effect on the job satisfaction and self leadership. The self-understanding had a significant effect on perform-will, job satisfaction and self leadership. The second, self leadership mediated between interpersonal competency and military adjustment. The third, in case of the perform-will, the moderating effect was showed in self leadership when the stress coping level was high. But in case of the job satisfaction, it was showed in both high group and low. Implications of this study is that the interpersonal competency based self-understanding and acceptance of others, self leadership and stress coping can be the positive potential variables on the military adjustment.

The Language of Monsters: Frankenstein and Dracula in Multiculturalism (괴물의 언어: 다문화시대의 프랑켄슈타인과 드라큘라)

  • Monsters cannot speak. They have been objectified and represented through a particular concept 'monstrosity' that renders the presence of monsters effectively simplified and nullified. In contemporary monster narratives, however, the site of monsters reveals that they could be the complex construction of society, culture, language and ideology. As going into the structure that concept is based on, therefore, meanings of monsters would be seen to be highly unstable. When symbolic language strives to match monsters with a unified concept, their meanings become only further deferred rather than valorized. This shows the language of monsters should disclose the self-contradiction inherent in 'monstrosity,' which has made others—namely beings we define as 'different' from ourselves in culture or physical appearance—embodied as abject and horrifying monsters. Unable to be understood, accepted, or called humans. I analyse Frankenstein and Dracula that firmly converge monstrous bodies into a symbolic meaning, demonstrating how this fusion causes problems in the multicultural society. I especially emphasize the undeniable affirmation of expurgated others we need to have empathetic relations with, because their difference, unfamiliarity, and slight divergences are likely to be defined as abnormalities. In the multicultural society, thus, we must learn to embrace diversity, while also having to recognize there are many others that have been thought of as monsters; ironically enabling us to think about an undeniable imperative of being responsive to other people. In this respect, the monstrous inhuman goes to the heart of the ethical undercurrent of multiculturalism, its resolute attempt to recognize and respect someone else's difference from me. A focus on empathetic relations with others, thus, can strengthen the process of creating social mechanisms that do justice to the competing claims of different cultural groups and individuals.

The Reciprocal Causal Relationship Between Cognitive Function and Depressive Symptoms Among Older Adults: Living with Others Versus Alone (노인의 인지기능과 우울 증상 간의 상호인과관계: 독거 여부를 중심으로)

  • Purpose: This study aimed to examine the differences in the reciprocal causal relationship between cognitive function and depressive symptoms depending on whether older adults lived with others or alone. Methods: We used panel data retrieved from the sixth (Time 1) and seventh (Time 2) waves of the Korean Longitudinal Study of Aging (KLoSA). The study sample included 2,638 older adults living with others and 628 older adults living alone. We conducted cross-lagged panel analyses (CLPA) to identify the bidirectional causal relationship between cognitive function and depressive symptoms in the groups of older adults living with others and those living alone. Results: In the group of older adults living with others, cognitive function and depressive symptoms showed significant reciprocal relationships. In the group of older adults living alone, although the CLPA confirmed that higher levels of depressive symptoms at Time 1 influenced lower levels of cognitive function at Time 2, cognitive function at Time 1 was not associated with depressive symptoms at Time 2. Conclusion: The results suggest that the strategies for preventing cognitive decline and depressive symptoms should be developed according to whether the older adults live alone. Moreover, further studies should identify factors influencing depressive symptoms among older adults living alone, which will ultimately enable the management of depressive symptoms.

  • Motherhood as an ideological construction has been regarded as an oppressing apparatus enforced by patriarchism. On the one hand, demystifying motherhood helps expose dehumanization of women, and accordingly liberate women from being an ideal mother. On the other hand, however, feminists' attempts to unearth the distorted images of mothers result in devaluation of such values as love and sacrifice attached to motherhood. "Tell Me a Riddle" by Tillie Olsen, who is a declared socialist as well as a feminist, occupies a significant position in a sense that it neither condemns motherhood as evil nor idealizes it. Through the main character, Eva, it examines the meaning of motherhood in a way that a real mother experiences it in a real life, and thus Olsen challenges the readers to ponder upon the mothers' dilemma: a conflict between a desire for self-fulfillment and sacrifice for others. Eva, a mother of seven grown-up children, and now dying, shows an ambivalent attitude toward motherhood. She realizes that she is a victim of idealized motherhood in that, toward the end of her life, she feels uncomfortable accepting her personal desires as they are. Yet at the same time, she appreciates her experiences as a mother in that she could consume her passion for the ideals as she has spent her youth working toward, trying to construct an idealistic socialist country. Eva's real ideal, as a human being, is to live "with" others, not just "for" others. In other words, she does not want to allow herself to live only for others in the name of the mother because she does not have any alternatives to do otherwise. Rather, she desires to live a life of voluntary sacrifice and love. In this way, through Eva, Olsen tries to help us to construct a community where we--not just mothers-can live "with" others.

When Do Consumers Follow Majority Choice? - Different Effect of Purchase versus Usage Situation - (어떤 상황에서 소비자는 다수의 선택을 따를까? - 구매상황과 사용상황이 미치는 상이한 영향을 중심으로 -)

  • People have competing desires. Hence, people not only chase others' choices due to the need for assimilation but also avoid others' choices due to the need for differentiation. This study attempts to uncover under which conditions consumers assimilate with or differentiate from others' choices. Specifically, the study extends previous research about the effect of others' choices by focusing on the effect of a choice situation (purchase vs. usage) based on the conformity theory and the uniqueness theory. It was found that purchase (vs. usage) situation makes people more conform to others in case of identity-irrelevant product (e.g., USB memory stick). Also, the effect of the choice situation was moderated by the perceived identity-relevance level in case of identity-relevant product (e.g., jeans).

Personnel's Perception toward Conducting an Autopsy in General Hospital (대학병원 직원들의 부검에 대한 인식도)

  • An autopsy is a postmortem assessment or examination of a body to determine cause of death or manner of death. The author had surveyed Personnel's perception toward conducting an autopsy in general hospital with autopsy at YeungNam University Medical Center, Daegu, Korea from April, to May, 2007. The total number of 286 personnel consisted of 121 men(42.3%), 165 women(57.7%). There were 57 doctors(19.9%), 71 nurses(24.8%), 83 medical technicians (29.0%), 58 office workers(20.3%), and 17 others(5.9%). 61.4% of doctors had an experience of education for autopsy more than 2 times, but nurses(1.4%), medical technicians(15.7%), office workers(1.7%), and others(5.9%) had little experience. Response of conducting an autopsy for sudden death of respondent or respondent's family member was 59.6% of doctors, 22.5% of nurses, 39.8% of medical technicians, 41.4% of office workers, and 35.3% of others. Response of conducting an autopsy for sudden death of respondent's companion was 66.7% of doctors, 33.8% of nurses, 39.8% of medical technicians, 43.1% of office workers, and 17.6% of others. Response of conducting an autopsy for sudden death of patients in general hospital was 50.9% of doctors, 8.5% of nurses, 19.3% of medical technicians, 24.1% of office workers, and 17.6% of others. Survey about a proper institution for autopsy showed 73.7% of doctors for department of forensic medicine in medical school, and 62.0% of nurses, 59.0% of medical technicians, 46.6% of office workers, and 58.8% of others for National Institute of Scientific Investigation. Most of the respondents agreed with the forensic pathologist as the director of autopsy:98.2% of doctors, 94.4% of nurses, 96.4% of medical technicians, 89.7% of office workers, and 88.2% of others. Survey for necessity for autopsy showed responsiveness of doctors, 23.9% of nurses, 47.0% of medical technicians, 34.5% of office workers, and 23.5% of others. Survey for donation of him- or herself after death to the medical school or institution for the death investigation revealed responsiveness of 22.8% of doctors, 11.3% of nurses, 24.1% of medical technicians, 22.4% of office workers, and 23.5% of others. The result of the survey questionnaire showed more negative awareness for autopsy in nurses, medical technicians, office workers, others and than doctors. To improve the negative awareness for autopsy and settle proper postmortem inspection system, education of professional manpower for forensic medicine and inaction of law which is adequate for the actual circumstance of Korea should be considered.

Thermal Comfort Aspects of Pesticide-protective Clothing Made with Nonwoven Fabrics

  • The purpose of this study was to evaluate the thermal resistance of pesticideprotective clothing and to investigate its subjective wear performance. Three different nonwoven fabrics, which provide barrier properties against water and pesticide, were used to manufacture the experimental clothing: spunbonded nonwoven (SB), spunbonded/meltblown/spunbonded nonwoven (SM), and spunlaced nonwoven (SL). The thermal insulation values of the experimental clothing were measured with a thermal manikin, and other wear trials were performed on human subjects in a climate chamber at $28^{\circ}C$, with 70% R.H. and air movement at less than 0.15m/s. Our results found that the thermal resistance was lower in the SB experimental clothing than in the others; that the mean skin temperature of subjects who wore the experimental clothing made with SL was significantly lower than that of subjects who wore the SB and SM clothing; and that the microclimate temperature and humidity with SB were significantly higher than that of the others. Overall, the experimental clothing made with SL was more comfortable than the others in terms of subjective wear sensations.
