염장미역의 미생물적, 관능적 품질에 대한 감마선 조사의 영향 (Effect of Gamma Irradiation on the Microbiological and Organoleptic Qualities of Salted Sea Mustard (Undaria pinnatifida))

  • 염장미역은 염농도 감소와 저장조건의 완화를 위한 연구의 일환으로서 2~4kGy의 감마선을 조사하고 ${30{\pm}2^{\circ}C와\;10{\pm}1^{\circ}C$에 저장하면서 미생물적, 관능적 품질을 평가한 결과는 다음과 같다. 염장미역의 변질에 관련된 원인 미생물은 호염성 세균과 효모로 확인되었으며, 2~4kGy의 감마선 조사는 초기의 미생물 수준을 1~2 log orders 감소시켰으나 저장 기간 중 증식에는 뚜렷한 영향이 없었다. 관능적 품질에서도 감마선 조사에 의한 미역조직의 연화현상으로 비조사군보다 낮은 기호도를 나타내어 저장 중 품질 안정성 향상에 별 효과가 없는 것으로 나타났다.

전자공여작용과 관능적 특성을 고려한 산국(山菊) 에탄올 추출물의 제조조건 최적화 (Optimization for Electron Donating Ability and Organoleptic Properties of Ethanol Extracts from Chrysanthemum Petals)

  • 반응표면분석에 의하여 야생국인 산국 꽃잎의 추출조건에 따른 추출물의 전자공여작용 및 관능적 특성을 모니터링하고 에탄올 추출조건을 최적화하였다. 중심합성 실험계획에서 시료에 대한 용매비$(X_1)$, 에탄올 농도$(X_2)$, 추출시간$(X_3)$을 요인변수로 하고 추출물의 품질 즉, 전자공여작용$(Y_1)$, 관능적 색상$(Y_2)$ 및 관능적 향$(Y_3)$을 각각 종속변수로 하여 $60^{\circ}C$에서 추출을 실시하였다. 조건별 실험 결과는 회귀분석하여 4차원 반응표면으로 나타내었다. 종속변수들에 대한 결정계수$(R^2)$$0.8180{\sim}0.9696$ 범위로 나타났다. 산국의 에탄올 추출물의 전자공여 작용은 50 mL/g, 61%, 16 hr에서, 관능적 색상은 88 mL/g, 21%, 16 hr에서 그리고 관능적 향은 55 mL/g, 73%, 19 hr의 조건에서 추출물의 특성이 가장 높은 값으로 예측되었다. 산국의 에탄올 추출물에서 전자공여작용과 관능적 품질을 고려한 최적 추출조건 범위는 시료에 대한 용매비 $65{\sim}78\;mL/g$, 에탄올 농도 $90{\sim}100%$, 추출시간 $15{\sim}25\;hr$으로 나타났다. 예측된 조건에서 얻어진 추출물의 예측값들은 실제 측정값과 유사한 것으로 확인되었다.

파프리카즙 첨가가 생면의 기호와 품질에 미치는 영향(I) (Effect of Paprika(Capsicum annuum L.) Juice on the Acceptability and Quality of Wet Noodle(I))

  • In an attempt to introduce paprika in wet noodles for improved organoleptic and other quality characteristics, the juices of orange paprika was added as a raw ingredient for wet noodle at 0(control), 15, 30, 45, and 60%(v/w). Overall, the cooked wet noodles containing 15 to 60% paprika juices showed higher sensory scores than control(noodle without Paprika juice), and the acceptabilities for color and overall preference of the products were significantly(p<0.01) higher at the addition levels of 45% and 30 and 45%, respectively. The intensity analysis for the organoleptic quality characteristics of wet noodles with orange paprika juice showed that as the addition levels increased, there were significant(p<0.001) increase in the values of acceptances for color and flavor of the products, but not in the tenderness and chewiness. Other quality characteristics like water absorption ratio, weight, volume, and turbidity of the broth after cooking of wet noodles increased in values as affected by the addition of paprika juices. In the Hunter's colorimetric characteristics of the products, the decreased lightness(“L”) along with the increased redness(“a”), yellowness(“b”), and ΔE were caused as the amounts of orange paprika juice increased in wet noodles. For toughness, no significant differences(p<0.001) were noticed among the samples as measured by Waner-Bratzler blade attached to Texture Analyzer. The results of this study suggested that adding orange paprika juice to wet noodles, most preferably at 45%, increases the acceptance and organoleptic qualities of noodle by affecting the color and flavor of the final products.

단감 분말을 첨가하여 제조한 고추장의 미생물학적 특성 및 관능적 특성 (Microbiological and Organoleptic Characteristics of gochujang, Korean Traditional Red Pepper Paste Added with Different Levels of Sweet Persimmon Powder)

  • 전통고추장의 품질을 개선하고 기호성을 높이기 위하여 단감을 분말화 하여 고추장에 0, 3, 4, 5% 첨가하여 단감 분말을 첨가한 고추장을 제조하고 $20^{\circ}C$에서 90일 동안 숙성시키면서 미생물학적 특성 및 관능적 특성을 조사하였다. 고추장의 숙성 중 총균수는 숙성 초기부터 숙성 마지막 단계까지 서서히 증가하여 $10^8$ CFU/g 수준을 유지하였고 모든 숙성 과정에서 대조구와 단감 분말 첨가한 것 사이에 유의적 차이는 없었다(p <0.05). 효모 및 곰팡이 수는 숙성기간 동안 $10^4-10^5$ CFU/g을 유지하였다. 고추장의 관능검사를 숙성 30, 60, 90일 째 실시한 결과, 관능적 특성에 있어서 단감 분말의 첨가는 고추장의 색에 긍정적인 영향을 미치지 않았으나, 단맛의 경우에 단감 분말 첨가량에 비례적으로 높아지는 경향을 보였고, 감칠맛의 경우에도 비슷한 경향을 보였다. 전체적 기호도 측면에서 보았을 때 숙성 30일 경에는 유의적 차이가 없었으나(p <0.05), 숙성이 진행됨에 따라 4% 단감분말 첨가구가 관능적으로 높은 값을 나타냈으며 숙성 최종 단계에서 단맛과 감칠맛 그리고 전체적 기호도에서 높은 선호도를 보여 단감 분말을 첨가한 고추장을 제조 시 단감 분말을 4% 첨가하는 것이 적절할 것으로 생각된다.

양식산 넙치와 자연산 넙치의 관능적 특성 및 저장중 신선도 변화 연구 (A Study on the Organoleptic Characteristics and Changes in Freshness of Cultivated and Wild Paralichthys olivaceus During Storage)

  • This study was conducted to investigate the physicochemical and organoleptic characteristics and freshness of wild and cultivated Paralichthys olivaceus during storage. By the results of morphological observation, wild Paralichthys olivaceus had white abdomen, light black skin and transparent muscle, but cultivated Paralichthys olivaceus had black spotted abdomen, dark black skin and dark pink muscle. Moisture contents of wild and cultivated Paralichthys olivaceus were similar, but the lipid content was higher in cultivated Paralichthys olivaceus than that of wild Paralichthys olivaceus. Sensory scores of appearance, taste, texture and overall acceptability were higher in wild Paralichthys olivaceus than that of cultivated Paralichthys olivaceus. The reason was that lipid content was higher in cultivated Paralichthys olivaceus The freshness of cultivated Paralichthys olivaceus seemed to last shorter than that of wild one due to rapid increase of the volatile basic nitrogen content, pH and total microbial count during storage.

콜리플라워를 이용한 피클제조 최적화 (Optimization on Organoleptic Charateristics of Cauliflower Pickles)

  • The purpose of this study was to determine the organoleptic charateristics of cauliflower pickles made in various compounding ratio according to central conposite design for optimum organoleptic characteristics of the cauliflower pickles. The optimum mixing condition of cauliflower pickles were optimized, using central composite design with 3 variables and 3 levels, by response surface methodology. The various kinds of cauliflower pickle were made in various compounding ratio of vinegar, salt and sucrose - critical ingredients of pickle recipe - and were presented to reliable panels, who graded the subjects in 7 degrees for 4 items : color, flavor, hardness and overall quality. The optimum mixing conditions of cauliflower pickle were 603.50g of vinegar, 80.13g of salt and 251.07g of sucrose in the maximum point of overall quality.

Gross, organoleptic and histologic assessment of cadaveric equine heads preserved using chemical methods for veterinary surgical teaching

  • Background: Preservation of biological tissues has been used since ancient times. Regardless of the method employed, tissue preservation is thought to be a vital step in veterinary surgery teaching and learning. Objectives: This study was designed to determine the usability of chemically preserved cadaveric equine heads for surgical teaching in veterinary medicine. Methods: Six cadaveric equine heads were collected immediately after death or euthanasia and frozen until fixation. Fixation was achieved by using a hypertonic solution consisting of sodium chloride, sodium nitrite and sodium nitrate, and an alcoholic solution containing ethanol and glycerin. Chemically preserved specimens were stored at low temperatures (2℃ to 6℃) in a conventional refrigerator. The specimens were submitted to gross and organoleptic assessment right after fixative solution injection (D0) and within 10, 20, and 30 days of fixation (D10, D20, and D30, respectively). Samples of tissue from skin, tongue, oral vestibule, and masseter muscle were collected for histological evaluation at the same time points. Results: Physical and organoleptic assessments revealed excellent specimen quality (mean scores higher than 4 on a 5-point scale) in most cases. In some specimens, lower scores (3) were assigned to the range of mouth opening, particularly on D0 and D10. A reduced the range of mouth opening may be a limiting factor in teaching activities involving structures located in the oral cavity. Conclusions: The excellent physical, histologic, and organoleptic characteristics of the specimens in this sample support their usability in teaching within the time frame considered. Appropriate physical and organoleptic characteristics (color, texture, odor, and flexibility) of the specimens in this study support the use of the method described for preparation of reusable anatomical specimens.

버어리종 잎담배의 숙성기간이 색상, 화학성분 및 끽미에 미치는 영향 (Effect of Aging Period on Chromatic, Chemical and Organoleptic Properties of Burley Leaf Tobacco)

  • This study was carried out to examinate the effect of aging period on chromatic, chemical and organoleptic characteristics, and to evaluate of optimum aging period for each grade in burley leaf tobacco. The leaf tobaccos were produced in 2000, and threshed, redried and packed in carton box under the current methods. Four grades of processed leaf(A3T, B1T, C1W and D3W) were stored during 24 months (May 10, 2001 to April 31, 2003) in warehouse of Chungju Leaf Tobacco Processing Factory. The leaf tobaccos were sampled at three month intervals for analysis of chromatic, chemical and organoleptic properties. pH values of four grades, and Yellow(b) of A3T and BIT were also significantly decreased during the aging. Filling values, tar, nicotine and CO contents of tobacco smoke, and puff number of cigarettes were not significantly changed during the aging. Positive correlation coefficients were significantly observed between irritation of the calculated attributes from contents of volatile oil components in leaf tobacco and that of the panel sensory attributes. The ratio of maximum change in irritation attribute was larger than that in taste attribute during aging. The calculated irritations of 18~24 months aging for A3T and B1T were significantly lower than zero-aging, while those of C1W and D3W were not significant among aging periods. The panel irritations of 12~15 months aging for four grades were low tendency. The results suggest that decrease of aging period for thin leaf from 21~24 to 12~15 months may be beneficial to save storage cost in burley tobacco.

Yellow(b), pH values and total sugar contents of four grades were significantly decreased during the aging. Positive correlation coefficients were significantly observed between taste and irritation of the calculated attributes from contents of volatile oil components in leaf tobacco and those of the panel sensory attributes. The ratio of maximum change in taste attribute was larger than that in irritation attribute during aging. The optimum aging periods estimated by taste for A3O, B1O, C1L and D3L were 17.8, 14.9, 10.8, and 9.8 months, respectively. The thin leaf(Primings and Cutters) undergo satisfactory aging earlier as compared to bodied leaf(Leaf and Tips). The results suggest that decrease of aging period for thin leaf from 18~21 to 9~12 months may be beneficial to save storage cost in flue-cured tobacco.

반응표면 분석법을 이용한 바질 첨가한 홈메이드 파스타 제조의 최적화 (Optimization of Homemade Pasta with Addition of Basil using Response Surface Methodology)

  • The purpose of study was to determine the organoleptic characteristics of homemade basil-pasta made in various compounding ratio according to central composite design. The optimum mixing condition for basil-pasta was optimized by response surface methodology. The texture, including color, flavor, elasticity and overall quality, was measured as sensory evaluation. The optimum mixing rates of durum wheat semolina, basil and egg were 73.97g, 5.95g and 36.17g for color, 53.14g, 4.52g and 35.85g for flavor, 48.75g, 2.95g and 36.85g for elasticity. The organoleptic overall quality of basil-pasta showed the maximum score in the mixing condition of 55.52 g durum wheat semolina, 4.55g basil paste and 35.51g egg.
