Quality Characteristics of Yakju with Nuruk Extracts (누룩추출물로 제조한 약주의 품질특성)

  • We investigated the fermentation characteristics of yakju made with nuruk extracts. Alcoholic fermentation was performed in an incubator set at $25^{\circ}C$ for 14 days. The study results are as follows: the alcohol content of yakju made with modified nuruk (18.67%) was higher than that made with other nuruk extracts (14.80-17.50%). The pH value of this modified nuruk (4.13) was higher than that of traditional nuruk (3.70-4.00). The yakju containing modified nuruk showed the highest acidity (3.64 mL/10 mL), amino acidity (4.72 mL/10 mL), soluble solid ($1.20^{\circ}Bx$), and color difference (39.78). The concentration of organic acids in traditional nuruks was 212.25-312.97 mg/100 mL, whereas that in modified nuruk was 295.92 mg/100 mL. Nitrogen compound concentrations in modified nuruk (2285.89 mg/L) were 2-14 times higher than that in traditional nuruk. Nitrogen compound concentration and amino acidity are the physiochemical characteristics with the highest impact on off-flavor and browning of yakju. In order to reduce these unfavorable characteristics, material with a lower protein content should be used.

Influence of Rice-soybean Rotation on Soil Chemical Properties and Crop Growth in Silt Loam Soil (미사양토에서 벼-콩 윤작재배가 토양화학성과 작물생육에 미치는 영향)

  • This study was carried out to investigate the changes in soil chemical properties and yields of crops by rice-soybean rotation cropping system at silt loam soil. There were 4 rotation cropping systems; continuous rice cultivation, annual, biennial and triennial rotation of soybean and rice. There were little change in pH, organic matter, $Ca^{2+}$ and $K^+$ contents with decrease in available phosphate content in the continuous rice cropping. The cropping system of soybean-rice caused to increase in available $P_2O_5$, $K^+$ and $Ca^{2+}$ in the soil after harvest. Content of $NH_4-N$ in the soil also increased after the rotation of soybean than the continuous rice cropping in the soil during the rice growth period. These chemical change in the soil caused to increase rice growth in number of the panicles and the spikelet per square meter. The yield of rice was increased by the rotation with soybean, and was gradually increased in the triennial rotation of soybean and rice. But the yield of soybean was decreased in continuous cultivation for two or three years in the paddy field. It was recommended for annual rotation to prevent the yield of soybean from decrease.

Effect of Harvesting Time and Making Method on Feed Value and Fermentative Quality in Silage of Whole Crop Barley (수확시기와 조제방법이 청보리 사일리지의 사료가치 및 발효품질에 미치는 영향)

  • This experiment was conducted to obtain basic a information on feed value and fermentative quality of whole crop barley with different harvesting time and making method. As a result, in case of feed value, crude protein, NDF and ADF content were decreased with late harvest, but TDN was increased. In the silage, the results were similar and these patterns showed the same before and after the silage making. Thus, there was no significantly difference in bale and chopper. In case of fermentative quality, pH of the silages showed increasing with late harvesting time but the contents of organic acid did lower, and those tendencies were the same in both bale and chopper condition. But the lactic acid content were approximately 23 percent higher in chopped condition. In conclusion, ensiling at yellow ripe stage is better than other stages, chopped ensiling could improve fermentation quality.

Developing the Quality of Traditional Fermented Liquor Using Acanthopanax chiisanensis (지리오갈피 발효주의 숙성 중 품질변화)

  • This study was carried out to potentially improve the quality of traditional Korean fermented liquor using different concentrations of the root, stem, and fruit of Acanthopanax chiisanensis to simultaneously develop this local product and promote its consumption. The fermented liquor used for this study was matured at 5~10℃ for a period of 60 days, and its pH was in the range of 3.6±0.3~3.9 in thReduction of the liquor's sugar content decreased slightly while total acids increased slowly during the maturation. The organic acids in order of prevalence measured in the A. chiisanensis liquor were lactic, formic, malic, tartaric, and acetic, and free sugars such as sucrose, glucose, and mannose were detected, glucose content being highest across all the test groups. The total free amino acids in liquors with 10% root, stem, or fruit were 1,858.9, 2,855.1 and 2,672.2 mg/l, respectively. In examining the saturation of the matured liquor, that which had been fermented using the root and stem showed similar L, a and b values and was of comparable color. The fruit liquor was very red, with a low L value and high a value. The results obtained in this study are a meaningful contribution to local product development and promotion of their consumption.

Survey on the General Physical and Chemical Characteristics of Apple Orchard Soils (사과원토양(園土壤)의 일반이화학적성질(一般理化學的性質)에 관(關)한 조사연구(調査硏究))

  • General physical and chemical characteristics of eleven apple orchard soils derived from granite, granodiorite, diorite, arkose sandstone and shale were investigated in relation to soil profile. The results are summerized as follows: 1. Soils were mostly sandy and showed pH 4.35 to 6.75, 1.14 to 5.58 of organic matter, 0.065 to 0.209% of nitrogen. All properties decreased with depth. 2. Total exchangeable bases of surface soils were comparablly low (4.89 to 17.81me/100g, Ca>Mg>K>Na). Cation exchange capacity ranged from 7.74 to 21.72 mg/100g and base saturation percentage from 22.52 to 94.62%. 3. Phosphorus content of surface soil was very low (less than 35.5 mg/100g). The contents of potassium (7.2-79.2 mg/100g), available copper (1.0-16.9 ppm) and water soluble boron (0.18-0.72 ppm) were high in surface soil but low with depth. The content of manganese showed clear difference with pH, that is, at pH 4 to 6 water soluble manganese ranged from 0.42 to 17.8 ppm and exchangeable manganese from 9.82 to 66.38 ppm but above pH 6 the water soluble was less than 0.70 ppm and the exchangeable less than 22.25 ppm.

A Study on the Moisture Evaporation and Property Change Depending on the Composting Temperature for the Escalator Reversing Composting System (기계교반 퇴비화시설에서의 구간별 발효온도에 따른 수분 증발량 및 특성 변화 연구)

  • This research was carried out to investigate the moisture evaporation and property change depenging on the composting temperature for the escalator reversing composting system. The system was supported by the Y livestock cooperative composting factory. According to the test, the composting remperature eas varied in the range of $65\~80^{\circ}C$. The water content was de-creased to $75\%$ and became about $60\%$ at the end of the phase. Total nitrogen became $0.58\%$, total phosphoric acid $1.47\%$ and potashium $0.49\%$ at the end of the phase.

Controls on Diagenetic Mineralogy of Sandstones and Mudrocks from the Lower Hayang Group (Cretaceous) in the Daegu Area, Korea (대구 부근 하부 하양층군(백악기) 사암과 이암의 속성 광물과 속성 작용의 규제 요인)

  • Authigenic minerals found in sandstones and mudrocks of the Lower Hayang Group (Cretaceous) in the central part of the Kyungsang Basin are carbonate minerals (calcite, dolomite), clay minerals (illite, chlorite, C/S, I/S and kaolinite), albite, quartz and hematite. Characteristic diagenetic mineral assemblages are as follows: albite-chlorite (including C/S)-hematite in the Chilgog Formation, albite-illite-calcite in the Silla Conglomerate, illite-chlorite-hematite in the Haman Formation and albite-chlorite-dolomite in the Panyawol Formation, respectively. Among clay minerals reflecting the physical and chemical change of the diagenetic process, illite, the dominant clay mineral, occurs in every formation in the study area. Chlorite occurs mainly in green or gray sandstones and mudrocks, or in sandstones and mudrocks of the Chilogok Formation which contains a high content of volcanic materials. Based on the mineral assemblage, diagenetic minerals are strongly related with source rocks. Judging from the illite crystallinity, diagenesis of sandstones and mudrocks in the study area reached the late diagenetic stage or low grade metamorphisim. The diagenetic process was much influenced by intrusion of the Bulguksa granite, content of organic materials, grain size, and depositional environment rather than burial depth.

Geochemical Study on the Alluvial Aquifer System of the Nakdong River for the Estimation of River Bank Filtration (강변여과수 개발을 위한 낙동강 충적층 지하수의 지구화학적 특성연구)

  • Geochemical studies on the alluvial aquifer system near the Nakdong River were carried out for the basic investigation of the estimation of artificial recharge for the river bank filtration. In-situ data do not show any distinct difference between the pumping well and river. Most of waters belong to $_3$ and Ca-$SO_4$ types and show high Mn concentration. In the borehole installed with Multi-Ca-HCOPacker (MP) system, Na, Ca, Mg, $HCO_3$ contents of the groundwater are increased with depth increasing. Cl and $SO_4$ contents of the groundwater show the lowest values at the bottom level (18m depth) and Mn content is very high at the middle level (13.5 m depth) of MP system. There is no distinct difference in the ${\delta}^{18}O$ and D values and tritium content between MP, borehole and surface water samples. The sulfur isotope data indicate that the possible sulfur source is dissolution of sulfate mineral from sedimentary rock. Strontium isotope ratio shows a little differences between the pumping well and observation borehole samples. Nitrogen isotope data indicate that the nitrogen of water samples is originated from fertilizer or organic materials.

  • With different salt concentration (18, 22, 26 & 30%), the changes of the chemical components for fermentation of the Korean native and modified soy sauce were investigated. Color intensity (absorband and pH were lower in the modified soysauce than in the native one. Total nitrogen content was high in the modified soysauce and with the lower salt concentration. Reducing sugar and total nitrogen were produced more in the modified soysauce. Reducing sugar attained to the maximum content at 4 wee and thereafter decreased. Total volatile acid in the higher salt concentration was produced much in the initial stage and decreased until 4 weeks, but slowly increased thereafter. Acetic acid showed the higher yield in the modified soysauce. Butyric acid and propionic acid were produced 18 and 19 times more the native soysauce than in the modified soysauce, and those were produced much with the lower salt concentration.

Distribution Pattern of Eupatorium rugosum in Various Forest Types and Soils in Mt. Namsan (남산에서의 임형과 토양 환경에 따른 서양등골나물의 분포 양상)

  • This study was carried out to investigate the relationship of occurrence and distribution of Eupatorium rugosum by forest types and soil characteristics in Mt. Namsan in Seoul, Korea. E. rugosum is designated as a harmful non-indigenous plant in ecosystem by the Natural Environment Conservation Act in Korea. E. rugosum grew along roadside and in valleys with some favorable light conditions. E. rugosum occurred in aggregations under Pinus densiflora and Robinia pseudoacacia communities. And it was sparse in forests of Quercus mongolica and P. koraiensis. The representative herb layer species were Oplismenus undulatifolius, and Parthenocissus tricuspidata in the E. rugosum communities. There was a significantly negative correlation between the coverage of E. rugosum and the coverage of tree layer. However, the result of ANOVA of E. rugosum coverage by dominant species of tree layers did not show a significant difference (p>0.05). The level of soil moisture content, organic content, and pH, was slightly higher in communities with E. rugosum than without, but it was statistically non-significant difference. However, it was found that the coverage of E. rugosum was very significantly negative correlated with the depth of top soil profile (litter and fermentation layer, p<0.05).
