The Effect of Physico - Chemical Environmental Parameters on Early Composting of Paper - Mill Sludge Cakes (이화학적 환경변수가 제지슬러지케이크의 조기부숙에 미치는 영향)

  • The paper manufactories in Sangpyeong Industrial Estates, Chinju, produce more than 80 tons of paper-mill sludge cakes every day, which costs about 840 million won for dump per year. Since the paper-mill sludge is biodegradable, the sludge can he utilized as an organic fertilizer if it is properly decomposed. This may lead to not only dramatic cut of the treatment cost but prevention from secondary environmental contamination due to dump. The primary objective of the study was to explore the quantitative range of major enviromental parameters influencing early composting of paper-mill cakes, naturally pretreated in warn and cold weather. The automatically-controlled reactor was designed, manufactured, and operated for nine days to decompose about 2201 of raw sludge cakes. Four tests(Test 1-Test 4) were implemented for the study of Phase I. Treatments of two levels of initial temperature (40˚C and 28˚C) and two levels of water content + C/N ratio (35% + 40 and 63% + 80) were made to test the significance of their parameters for decomposition of raw sludge cakes pretreated in warm weather. Another four tests (Test 5- Test 8) were implemented for the study of Phase II. Treatments of initial temperature and water content(W/C) + C/N ratio of raw sludge pretreated in cold weather were made to 16˚C and 13% +58 for Test 5, 6˚C and 53% +55 for Test 6, 7˚C and 36% +81 for Test 7, 31˚C and 30% +81 for Test 8. Natural weater condition(pretreatment condition) revealed the importance m composting of the paper-mill sludge cakes. Combination of water content adjustment to about 30% with C/N ratio amendment of about 20 and initial temperature of 30~40˚C was concluded to be the best for early composting of paper-mill sludge cakes with aeration rate and pH fixed. Temperature and C/N ratio were adapted as judging variables for composting degree. In addition, tests for microbial activity were performed to validate the experimental results. Since the temperature and C/N ratio did not coincide in some tests as judging variables for the maturity of the composting sludges, taking one of these parameters could mislead the concept of the maturity (composting conceptually new criterion to provide more reliable information for early composting of paper-mill sludge cakes.

Total content characteristics of inorganic and organic substances from wastes from thermal processes (열처리 공정에서 발생하는 무기·유기물질류의 함량특성)

  • In this study, heavy metals, PCDD/PCDFs, PAHs in wastes generated from thermal processes were analyzed. Waste from lead thermal metalurgy (EWC 10 04) inorganic metal substances in the regulation were detected in the highest concentrations of Pb. EWC 10 04 seems to be a result of the dust. Waste from zinc thermal metalurgy (EWC 10 05) inorganic metal substances in the regulation were detected in high concentration of Zn. EWC 10 05 seems to be a result of the dust. Waste from copper thermal metalurgy (EWC 10 06) Cu in the 651,77 mg/kg to 651 times higher than regulation standard appeared in the copper thermal metallurgy process seems to be a result of dust. The concentrations of PCDD/PCDFs ranged from 0.0005~11.748 ng-TEQ/g in dust, 0.0027 ng-TEQ/g in fly ash. PCDD/PCDFs content was not detected in excessive value in regulation standard. PAHs concentration was in the range of ND~118.9 mg/kg in Naphthalene, ND~9.6 mg/kg in Phenanthrene, ND~48.4 mg/kg in Benzo[b]fluoranthene, ND~62.6 mg/kg in Benzo[a]pyrene, ND~10.7 mg/kg in Fluoranthene, ND~11.5 mg/kg in Benzo[a]anthracene.

Correlation of Antioxidant and Antimutagenic Activity with Content of Pigments and Phenolic Compounds of Colored Rice Seeds (유색미 색소체 및 페놀성화합물 함량과 항산화.항변이원성 간의 상관관계)

  • Twenty-three cultivars of colored rice were collected from inside and outside Korea to determine the contents of pigments and phenolic compounds, and also to compare their correlations with antioxidativity and antimutagenicity. The pigment content decreased in the order of LK 1-3-6-12-1-1>LK 1D 2-7-12-1-1>Elwee>Mutumanikam>IR 1544-38-2-2-1-2-2>wx 124-163-45-7-1-1-1, LK 1A-2-12-1-1. Polyphenolic content was the greatest in IR 17491-5-4-3-3 with a ratio of 0.244 g per 100 g brown rice, followed by LK 1-3-6-12-1-1>LK 1D2-12-1>Elwee>Mutumanikam 7 IR 1544-38-2-2-1-2-2, LK 1A-2-12-1-1. The pigment contents for each colored rice cultivar showed a highly positive correlation with polyphenolics in colored rice seeds. For chromaticity, a positive correlation was exhibited between the lightness and hydroxyl radical scavenging activity. In contrast, a negative correlation was observed between the redness and the inhibitory effect of lipid peroxidation.

The Taste Compounds in Boiled-Dried Anchovy (시판 마른 멸치의 정미성분)

  • Boiled-dried anchovy is one of nation-widely consumed dried fish foods in Korea. In this study, the taste compounds including nucleotides and their related compounds, free amino acids, trimethylamine oxide and total creatinine were analyzed, and their roles in tasting activity were investigated. IMP content in large size, middle size, small size and least size boiled-dried anchovy was $22.7{\mu}mole/g,\;18.6{\mu}mole/g,\;20.3{\mu}mole/g\;and\;4.0{\mu}mole/g$, respectively, and the ratio of IMP to the total nucleotides and their related compounds in each sample was $55.0\%,\;51.0\%,\;69.1\%\;and\;47.0\%$, respectively. In the free amino acid composition of the four size groups of boiled-dried anchovy, abundant amino acids were histidine, lysine, alanine and proline, and the sum of these amino acids occupied $69.0\%,\;67.7\%$. $66.8\%\;and\;45.9\%$ of the total free amino acid in each sample, respectively. Among these. histidine was the most dominant in all samples amounting to 589.0 mg/100g in lage size, 373.9 mg/100g in middle size, 437.8 mg/100g in small sire and 101.0 mg/100g in least size, while aspartic acid and methionine were poor in content. Among the organic bases, total creatinine was abundant, and its nitrogen content ranged from $21\%\;to\;39\%$ of the total extractive nitogen. From the results of omission test, the taste-active compounds of the boiled-dried anchovy are assumed to be IMP and free amino acids.

Chemical Components of Gastrodia elata Blume Powder (천마 분말의 화학적 성분)

  • The chemical components in freeze dried Korean Gastrodia elata blume powder were analyzed. The proximate composition was composed of moisture(2.12%), crude protein (4.41%), crude fat(1.20%), crude ash(2.25%), crude fiber(4.60%) and N-free extract(85.15%). Free sugar was composed of glucose(1,314mg%), sucrose(1,081mg%) and fructose(869mg%). Total organic acid content was 2,095mg% and composed of succinic acid(1,238mg%), citric acid, malic acid, oxalic acid and fumaric acid in the order. Among the 11 fatty acids detected, linoleic acid was the most predominant one and unsaturated fatty acid was 80.55 area percent. 18 and 39 amino acids were detected from total and free amino acid, respectively. Arginine, asparagine, proline and sarcosine were the major components of free amino acid. The content of crude saponin and total phenol were 3,768mg% and 821mg%, respectively. Ascorbic acid(6.4mg%), vitamin B1(1.2mg%), vitamin B2(1.7mg%) and niacinamide(0.2m%) were detected as soluble vitamins of the powder. The content of vitamin A and vitamin E was 1.22mg% and 0.32%, respectively.

Quality Characteristics of Traditional Soybean Paste (Doenjang) Manufactured with Mixed Beans (혼합콩으로 제조한 전통된장의 품질 특성)

  • The effects of mixed beans on quality characteristics of traditional soybean paste (Doenjang) were investigated. The proximate composition of the soybean paste (Doenjang) met traditional food standard requirements. The range in salinity was 12.30~13.20%, and the salinity decreased with an increase in the amount of mixed beans. A significant difference in pH values occurred in all samples(p<0.05). The Hunter's 'L ($45.06{\pm}0.41$)' and 'b ($13.89{\pm}0.73$)' values of the TDM2 samples were higher than those of other samples. The highest amounts of malic acid of the organic acids are shown. The order of the amino acid content was aspartic acid > leucine > lysine, and that of free amino acid contents were proline > glutamic acid > arginine. The order of mineral content in the soybean pastes was Na > K > Ca > Mg, but levels of Co, Cu, and Zn were not detected. The traditional soybean paste (Doenjang) had an effective DPPH radical scavenging activity and higher phenolic content compared to those of the control sample. Overall acceptability score of the TDM2 (soybean 1 : mixed beans 1) was higher than that of the others. More research is needed to enhance the quality and functionality of traditional soybean paste.

Physicochemical and antioxidant properties in Allium hookeri by hot air-and freeze-drying methods (건조방법에 따른 삼채의 이화학적 성분 및 항산화 활성 비교)

  • The present study was undertaken to determine the changes of physicochemical and antioxidant activity using leaf and root in hot air-dried Allium hookeri (HA) and freeze-dried Allium hookeri (FA). The leaf of HA was higher level of moisture and crude fat compared with those of the leaf of FA. The crude fat content in root of HA was higher than that in FA. However, moisture, crude ash, crude protein and carbohydrate did not show any differences between two different drying methods. The organic acid contents of Allium hookeri root including oxalic acid, citric acid, tartaric acid, malic acid, succinic acid, lactic acid, formic acid, acetic acid showed the differences between hot air-drying and freeze-drying methods. The major minerals were Ca, K and Mg, which were higher level of the leaf of HA compared with those of FA. The leaf of HA showed the highest vitamin C content (801.65 mg/100 g). The content of vitamin E in the leaf of FA was higher than that of HA. The contents of total polyphenol and total flavonoid in the FA leaf were higher than that in HA. The DPPH radical-scavenging activity in leaf of HA (65.73%) was significantly higher than that of FA (57.73%).

Non-thermal treatment of Prunus mume fruit and quality characteristics of the dehydrated product (청매실의 비가열 전처리 및 건조매실의 특성)

  • To maintain the microbiological safety of Prunus mume fruit before it is processed, it was treated with a combination of 0.5% citric acid and 0.1% Tween 20, and stored at $4{\pm}1^{\circ}C$ for seven days. The combined treatment reduced total aerobic bacteria, yeast, and mold populations in the fruit by 2.20 and 1.70 log CFU/g, respectively, compared to those in the control. Organic acid contents and the Hunter $L^*$, $a^*$, and $b^*$ values were not affected by the treatment during the storage. In addition, the dried Prunus mume fruit prepared with 40% red algae extract (RAE) or maltodextrin (MD) treatment and hot-air drying were compared with respect to the fruit's physicochemical properties such as color, total phenolic and flavonoid content, and microstructure. The hot-air dried samples had undesirable color changes and inferior textures. The RAE-treated samples had a higher total phenolic content (225.15 mg gallic acid equivalent (GAE)/100 g) and total flavonoid content (49.25 mg quercetin equivalent (QE)/100 g) than the other treatments. The treatment of Prunus mume fruit with RAE can provide better-dried products than can MD treatment or hot-air drying. These results suggest that the combined treatment with citric acid and Tween 20 can be effective in preserving the microbiological safety of Prunus mume fruit, and its dehydration using RAE is an efficient drying method.

Growth Characteristics and Ginsenosides Content of 4-Year-Old Ginseng by Spraying Lime-Bordeaux Mixture in Panax ginseng C. A. Meyer (석회보르도액 처리에 따른 4년근 인삼의 생육과 진세노사이드 함량 특성)

  • An important factor in the production of organic ginseng is the control of $Alternaria$ blight and anthracnose, which mostly affect the leaves in the summer. We compared the effects of a lime-bordeaux mixture (LBM) and agricultural chemicals on the growth characteristics and ginsenoside content in 4-year-old ginseng plants when they were sprayed at 15-day intervals from mid-June to the end of September. The increases in leaf length, and survive-leaf ratio in plants sprayed with LBM were greater than the increases of the control plants, but less than those of agricultural chemicals treatment. The root weight per plant in the plants sprayed with LBM increased more distinctly than that in the control plants, while it was significantly lower than that in plants sprayed with agricultural chemicals. The root yield in plants sprayed with LBM increased by 21% compared to the root yield in the control plants, but decreased by 7% compared to that in plants sprayed with agricultural chemicals because of the decreases in leaf area and survive-leaf ratio. Spraying of LBM had a significant effect on the ginsenoside contents. The total ginsenoside content was highest in the control plants and lowest in the plants sprayed with agricultural chemicals and total ginsenoside contents was great relative to survive-leaf ratio and root weight.

Geochemical Characteristics of the Continental Shelf and Slope Sediments off the Southeastern Coast of Korea (한국 동남해역 대륙붕과 대륙사면 표층퇴적물의 지화학적 특성)

  • A total of 90 surface sediment samples, collected from the continental margin area bordering east and southeast coast of Korea, were subject to the geochemical analyses with the aim of filling the gap in our knowledge of this environment. The analyzed items included the major elements (Al, Fe, Mg, Ca, K, Na, p and Mn), organic carbon, and some trace metals (Ba, Co, Cu, Sr and Zn). The sediment grain-size exerted a predominant influence on the contents of most elements, with the exceptions of Ca, K, Sr and Ba. The Ca and Sr contents, being closely interrelated each other, were mainly controlled by the calcium carbonate content. The K content, on the other hand, appeared to be influenced by both illite and feldspar. The Ba content showed a certain relationship with that of K, suggesting a common source of these two elements; potassium feldspar. The R-mode factor analysis result also reaffirmed the above-mentioned controlling factors on the sediment geochemistry. The grain-size dependency of trace metals obscures their areal distribution pattern from the total contents. However, with the metal/aluminum ratios we could differentiate the subtle difference in the metal enrichment. Hence, sediments of the southern coastal area appear to receive some anthropogenic inputs of metals, though the effect is still negligible.
