We investigated the physicochemical quality characteristics of apple juice upon sterilization using hot water, and under various storage conditions. None of sugar content, acidity, or pH differed significantly among various sterilization conditions but chromaticity was considerably reduced in sterilized juice compared with control material. The chromaticity of non-sterilized juice decreased significantly after sterilization compared with material supplemented with vitamin C (0.1%, w/v). Fungi, yeast, and aerobic bacteria were detected in juice sterilized at $65^{\circ}C$ for 10 or 20 min, but no microorganisms were observed in juice sterilized by other procedures. Vitamin C content affected sterilization temperature to a greater extent than sterilization time. When juice was stored at $4^{\circ}C$ or $37^{\circ}C$ for 3 weeks after application of different sterilization conditions, almost no change in acidity, sugar content, or pH was observed, regardless of sterilization mode or storage period. However, chromaticity decreased with longer storage. Vitamin C levels were reduced by higher sterilization temperatures. However, longer storage periods had the greatest effect on reduction of vitamin C levels, which tended toward lower values regardless of differences in sterilization and storage conditions. In sensory evaluation tests, all of taste, color, and overall preference were highest for juice sterilized at $75^{\circ}C$ for 20 min. The ASC value was low at a storage temperature of $4^{\circ}C$ and at high sterilization temperatures, and a long storage period was associated with a greater ASC value. Thus, the quality of apple juice was excellent when juice was hot water-sterilized, with additional vitamin C, at $75^{\circ}C$ for 20 min, followed by storage at $4^{\circ}C$.

The purpose of this study was to investigate the effects of fertilizer application on the content of functional materials, such as fatty acids and organic acids in perilla leaves. (1) As compared to the controlled with Ammonium sulfate fertilizer, the yield of Perilla frutescens leaves increased by 7.3% and 12.8% of biomass at 2000 and 1000 times liquid respectively, but decreased by 7.6% at 500 times. The lipid and protein contents of perilla leaves were higher than those of Portunus trituberculatus liquid at 1000 times. The average contents of minerals (mg/100g) were as follows; K (638.4) > Ca (561.6) > P (145.4) > Mg (133.5) > Fe (36.2) > Zn (1.9) > Mn (1.6) > Na (1.4 mg). However, the correlation between the controlled with P. trituberculatus liquid was relatively low. (2) The fat-soluble vitamin E content of P. frutescens leaves was 3.4, 3.9, 3.3, and 3.9 mg in the controlled with liquid by 500, and 1000, 2000 times respectively; Vitamin A contents were 6.4, 8.9, 10.9, and 8.5 mg respectively, which was more than twice as much as the corresponding vitamin E content. The water soluble vitamin C contents were 177.9, 172.6, 195.2, and 163.5 mg respectively. (3) Amino acid contents of P. frutescens leaves in 100 g of fresh weight were 3821.7 mg in the controlled with Ammonium sulfate fertilizer and 3918.8, 4054.0, and 4005.4 mg in the controlled with P. trituberculatus liquid at 2,000, 1000, 500 times respectively. Amino acid contents of each controlled group with P. trituberculatus liquid above were as small as 2.5~6.1%, and these contents of amino acid were as follows: Glutaminic acid > Aspartic acid > Leucine > Arginine > Phenylalanine. In further study, it is necessary to develop an effective microorganism and a variety of amino acid fertilizer to supplement the study on new manufacturing.

It is necessary to explore the possibility of alternative habitats and research the characteristics of basic habitats due to seeding, culturing and harvesting of blood clams (Tegillarca granosa) in tidal flats. Currently, dependence on naturally occurring spat is much higher than in other species, which may lead to a reduction in biological resources. In this study, we selected a total of 5 sites (Changgi, Hopo in Cheonsu Bay and Dangsan, Sachang, Wangsan in Garolim Bay) and examined habitat suitability factors for suitable site selection. Also, we considered the relationship of habitat suitability factors (Environment: water content, organic content; survival: mud content, mean size; growth: chlorophyll a). As a result, Wangsan had the highest score of the main habitat of blood clams (Habitat suitability score, Wangsan: 87; Dangsan: 86; Sachang: 81; Hopo: 78; and Changgi: 73). The sediment in Garolim Bay was fine-grained and the seasonal variation was lower than Cheonsu Bay. Therefore, it is considered that Garolim Bay is more suitable as a potential area and easy to utilize the space. In the future, search and selection of potential suitable sites could be considered to solve problems caused by the reduction of biological resources and the production for blood clams.
This study was conducted to investigate the characteristics of yogurt prepared with different mixing ratios of 'Jinpum ' bean and sword bean(Canavalin gladiata). The crude protein content of 'Jinpum' bean used raw material was 38.0%, whereas that of sword bean was 27.5%. The pH and sugar content of ferment solution were deceased significantly up to 4 hours after strain inoculation but reduced slowly artier 8 hours. The content of organic acid and lactic ferments were increased. After 20 hours fermentation there was no significant differences between yogurt processed with 100% 'Jinpum' bean and yogurt processed with 95% 'Jinpum' bean and 5% sword bean. The number of lactic acid bacteria in yogurt processed with 95% 'Jinpum' bean and 5% sword bean was increased up to 20 hours but thereafter was decreased rapidly, showing the similar values compared to that of yogurt processed with 100% 'Jinpum' bean. The color values of yogurt processed with 95% 'Jinpum' bean and 5% sword bean artier 20 hours fermentation were similar to that of yogurt processed with 100% 'Jinpum' bean whereas those of yogurt processed with 90% 'Jinpum' bean and 10% sword bean were no little difference before and after fermentation. In the result of sensory test of yogurt prepared with 95% 'Jinpum' bean and 5% sword bean, adding strawberry syrup was more preferred than apple syrup.
To find out the basic data for the possibility of agricultural utilization for GSA (Glutamine Synthetase Activity), the effect of nitrogen on the GSA in wheat leaf discs, the variation of GSA after light treatment and the comparative activity of GS during preservation were studied. The result of this study suggested that GSA could play an important and direct regulatory role in the nitrogen assimilation by wheat. During the growth stage of wheat its integral activity was found to closely match the organic nitrogen content. GS may therefore be the rate limiting enzyme in inorganic N assimilation. Moreover, integral GSA was closely correlated with grain yield and grain nitrogen. GSA could be suitable to utilize as a parameter for super type selection and an indicator for optimum nitrogen fertilization. Throughout the experiment, the contents of NO; were increased by N fertilization so that the NO; content was not attributable to change in the level of GSA. At investigation during dark-light transition of culture, no change in the level of GSA was observed until after 8-14 hours in the light treatment. And the level of GSA in wheat leaf discs during preservation at refrigerated storage $(-20^{\circ}C)$ was stable until 12 weeks, when its leaf discs were sampled with liquid nitrogen.
This study was conducted to establish a low-input fertilization technique and increase of fertilization efficiency using the band spotty applicator(1999-2000) during the cultivation of mulching for chinese cabbage(Brassia campestris L.). The obtained results such as nitrogen efficiency, yield and soil improvement after cultivation of chinese cabbage were as follows. The content of $NO_3-N$ in soil increased in band spotty fertilization(BSF) by increasing application rate from the beginning stage to the middle stage. The content of total nitrogen increased but content of organic matter, available phosphate and exchangeable potassium decreased in comparison with the soil before experiment. Growth rate of Chinese cabbage increased in band spotty fertilization plot and uptake amount of nitrogen fertilized for chinese cabbage increased by increasing of the application rate. N use efficiency was higher by 5-21% in band spotty fertilization plot than in conventional fertilization(CF) plot. Yield of chinese cabbage increased by 16% in 70% band spotty fertilization plot and increased by 20% in 100% band spotty fertilization plot. It was found that 70% band spotty fertilization was more effective as fertilization method to reduce both environmental pollution and chemical nitrogen fertilizer in plastic film mulching cultivation.
The results of COLE(Coefficient of Linear Extensibility) measurement on various paddy soils in Korea are summarized as follows; 1. The COLE values of paddy soil in Korea varied from 0.024 to 0.094 in the surface soil while in the sub-surface soils those were ranging from 0.022 to 0.115. The poorer the relative drainage and the finer the texture caused, the greater the COLE values. 2. The matured clayey soils on fluvio-marine plains and local alluvium derived from the Tertiary materials have COLE values more than 0.09 which is demonstrated that the necessity of COLE measurement throughout profiles so that could be considered the characteristic in the characteristic of those soils. 3. The clay content has the highest positive correlation (r=0.81~0.76) values. The content of organic matter, water content at 1/3 bar, Atterberg limits, water stable aggregate etc. also have significant positive correlation with COLE values while the context of sand and silt show negative correlation. 4. Although the COLE values measured on horizontal linear bases were slightly greater than those measured on volume bases practicability was for granted. For more accurate measurement of COLE, it is reasonable to have the average values of COLE calculated from the horizontal and vertical bases.
Four crossbred Sindhi heifers with an average body weight (BW) of 135 kg and a mean age of 17 months were used to investigate the effect of feeding different combinations of rice straw and ensiled water hyacinth (EWH) supplemented with a source of protein in the form of cottonseed cake (CSC) on intake and digestibility. Four treatments consisting of graded levels of EWH were arranged in a $4{\times}4$ Latin square. The levels of EWH were set at: 0 (EWH0), 15 (EWH15), 30 (EWH30), and 45% (EWH45) of an expected total dietary dry matter (DM) intake of 30 g total DM per kg BW per day. Rice straw was offered ad libitum, while CSC was given at a fixed level of 5 g DM/kg body weight (BW). Voluntary intake and digestibility were measured consecutively in the 4 experimental periods which each lasted 28 days. The crude protein (CP) content of EWH, rice straw and CSC were 174, 53 and 370 g/kg DM, respectively. Rice straw had the highest neutral detergent fibre (NDFom) content (666 g/kg DM), followed by EWH (503 g/kg DM) and the lowest content was 418 g/kg DM in the CSC. The actual EWH contents in the consumed diets were 0, 17, 32 and 52% for EWH0, EWH15, EWH30 and EWH45, respectively. Rice straw intake decreased with level of EWH offered from 3049 for EWH0 to 1014 g/day for EWH45. Crude protein intake was 16, 25 and 33% higher (p<0.001) in EWH15, EWH30 and EWH45 treatments, respectively, as compared to EWH0. Digestibility of organic matter (OM), CP, NDFom and acid detergent fibre (ADFom) increased with increasing level of EWH offered. The highest OM digestibility (72.2%) was found for treatment EWH45 and the lowest (47.4%) for treatment EWH0. In spite of similar dietary CP contents, CP digestibility increased by 21 (EWH15), 31 (EWH30) and 40% (EWH45) with increasing level of EWH in comparison with treatment EWH0. It is concluded that increasing level of EWH in cattle diets considerably improved CP intake and digestibility of nutrients.
This study was conducted to evaluate the shoot height at which the yield and nutritive value of wormwood (Artemisia montana) is optimized in order to provide information on its potential to support animal production (Experiment 1). A second objective was to determine how the essential oil (EO) concentration in wormwood hay and silage differ (Experiment 2). In Experiment 1, Artemisia montana was harvested at five different shoot heights (20, 40, 60, 80 and 100 cm) from triplicate $1.8{\times}1.8m$ plots. Dry matter (DM) yield was measured at each harvest date and the harvested wormwood was botanically separated into leaf, stalk and whole plant fractions and analyzed for chemical composition and in vitro dry matter digestibility (DMD). Values for total digestible nutrients (TDN), digestible energy (DE) and metabolizable energy (ME) were subsequently calculated using prediction equations. Dry matter yields of stalk and whole plant increased linearly (p<0.001) and leaf yield increased quadratically (p<0.01) with shoot height, whereas the leaf/stalk ratio decreased linearly (p<0.001). As shoot height increased, there was a linear increase (p<0.001) in leaf DM, ether extract (EE) and neutral detergent fiber (NDF) contents and a quadratic increase (p<0.05) in leaf acid detergent fiber (ADF) and nitrogen free extract (NFE) contents, and stalk and whole plant DM (p<0.001), organic matter (OM, p<0.01 and p<0.05), NDF (p<0.001 and 0.05) and NFE (p<0.05) contents. However, there were decreases in leaf crude protein content (CP, quadratic, p<0.001) and stalk and whole plant EE content (linear, p<0.001), CP (quadratic, p<0.05) and ash (quadratic, p<0.05) contents. Digestibility of DM and TDN, and DE and ME value in leaves were not affected by increasing shoot height, but these measures linearly decreased (p<0.001) in stalk and whole plant. In Experiment 2, the hay had higher DM and CP concentrations, but lower EE concentration than the silage. Essential oil (EO) content in wormwood silage (0.49 g/100 g DM) was higher (p<0.05) than that in wormwood hay (0.32 g/100 g DM). Wormwood hay contained 25 essentail oils (EO) including camphor (10.4 g/100 g), 1-borneol (11.6 g/100 g) and caryophyllene oxide (27.7 g/100 g), and wormwood silage had 26 EO constituents including 3-cyclohexen-1-ol (8.1 g/100 g), trans-caryophyllene (8.6 g/100 g) and ${\gamma}$-selinene (16.8 g/100 g). It is concluded that the most ideal shoot height for harvesting wormwood is 60 cm based on the optimization of DM yield and nutritive value. Wormwood silage had a greater quantity and array of EO than wormwood hay.
Two experiments were conducted to determine i) the fermentation characteristics of catfish by-product (C) ensiled with rice bran (RB) or sugarcane molasses (M) in different ratios, and ii) the digestibility of the silages in growing pigs. In the ensiling experiment, there were three ratios of C, ensiled with RB or M, of 8:2, 7:3 and 6:4 (wet basis for C and air-dry basis for RB and M). The six treatments were CRB8:2, CRB7:3, CRB6:4, CM8:2, CM7:3 and CM6:4, with 3 replications per treatment and seven sampling times. The pH of CRB7:3 and CRB6:4 decreased (p<0.05) from the first week and stayed stable until 8 weeks of ensiling, but the pH did not decrease in CRB8:2. The pH of CM8:2, CM7:3 and CM6:4 decreased rapidly from the first week until week 8. Dry matter (DM) and crude protein (CP) contents were slightly lower when catfish by-product was ensiled with RB than with M. Ammonia content in all treatments increased (p<0.05) during ensiling. Lactic acid content in silages with molasses increased from the first week, with the highest value at week 4. However, the lactic acid content in CRB8:2 did not increase with time and had the lowest value of all treatments. Acetic acid proportions of total volatile fatty acids were low at day 0, with the highest value at day 7, decreasing slowly until 8 weeks. The butyric acid proportion was highest at day 0 and decreased up to week 8. The proportion of propionic acid increased during ensiling. The digestibility experiment had a 4${\times}$4 Latin-square design and included 4 castrated crossbreed (Yorkshire${\times}$Landrace) male pigs fed four diets. The basal diet (BD) included rice bran, broken rice and maize meal, and the other three diets included fish meal (FMD) or catfish by-product ensiled with rice bran (CRBD) or sugarcane molasses (CMD). The silages chosen were those which gave the best results in the ensiling experiment for each additive. The coefficient of total tract apparent digestibility (CTTAD) of DM and organic matter (OM) was not significantly different among treatments. The CTTAD of CP was not different among the silage diets, but was lower in BD (p<0.01). The CTTAD of ether extract (EE) was higher in the catfish by-product silage diets than in FMD and BD. There was no significant difference in the digestibility of DM, OM, CP and EE between the fish meal and the by-product silages. In conclusion, catfish by-product can be successfully preserved by ensiling. Moreover, the total tract apparent digestibility of OM, CP and EE in ensiled catfish by-product was comparable with that of fish meal.
