Aroma and Quality Characteristics of Cheongporang White Wines using Grapes at Different Stages of Ripening (포도 숙성 정도에 따른 청포랑 화이트 와인의 향기 및 품질 특성)

  • To investigate the aroma and quality characteristics of wine bestowed by the degree of ripening of Cheongporang grapes, the general quality composition, color, organic acid, physiological activity, aroma component and sensory evaluation were analyzed. The general characteristics of the wine assessed were pH 3.34~3.50, total acidity 0.46~0.67%, color intensity 0.074~0.116, lightness 98.99~99.74, redness -0.39~0.01, and yellowness was 1.52~3.10. Malolactic fermentation was not relative to the contents of malic acid and lactic acid. The total polyphenol content and antioxidant activity were lowest in C3 wines made with ripe grapes and highest in C4 wines made with mixed grapes. Aroma analysis identified 6 alcohols, 15 esters and 5 miscellaneous compounds. Compounds with higher odor activity value (OAV) were 3-methyl-1-butanol, ethyl butanoate, isopentyl acetate, ethyl hexanoate, ethyl octanoate, ethyl decanoate and octanoic acid. The C4 wine, a mixture of grapes with different degrees of ripening, had the highest ester content and ratio. The lowest values were found in the C3 wine made with ripe grapes. Results of the sensory evaluation related the C4 wine, containing a large amount of ester compounds having high OAV values as the aroma component, as the best and most preferred wine.

Forest Site Environments and Soil Properties of Allium victorialis var. platyphyllum in Ullengdo (울릉도 산마늘 자생지의 산림입지환경과 토양 특성)

  • The purpose of this study was to provide basic data for the cultivation of Allium victorialis var. platyphyllum in the area covered with forest vegetation. The populations of A. victorialis var. platyphyllum in Ulleungdo were naturally growing in the communities of Fagus japonica var. multinervis, Acer okamotoanum, Pinus parviflora, Tsuga sieboldii, Pinus densiflora, Pinus thunbergii, Tilia amurensis, and Alnus maximowiczii. On average, the study area of A. victorialis var. platyphyllum population was located in the places of 563 m above sea level, and in the slope area of $27.8^{\circ}$. Soil texture of its inhabitation site mainly consisted of sandy soil, sandy loam, loamy sand, and loam. The depth of the organic layer was 6 cm on average, soil pH 5.4, available phosphate content 18.5 ppm, and cation exchange capacity $18.6cmol_c/kg$. The correlation between the site factors and soil factors by CCA analysis showed that the community of beech tree indicated positive correlation with carbon, nitrogen, sand content, and cation exchange capacity.

Chemical Components in Leaf and Fruit Stalk of Hovenia dulcis Thunb. (헛개나무 잎과 과병의 화학성분)

  • The chemical components of Hovenia dulcis leaf and fruit stalk naturally growing in Korea, were determined. Crude protein of leaf and total sugar of fruit stalk was 7.30 and 51.64%, respectively. The major mineral components were K, Ca, Mg, Na and Mn in that order. The content of vitamin C was 4.8 mg% for leaf and 3.8 mg% for fruit stalk and that of free sugar was 1.37% of fructose for leaf and 8.83% of sucrose for fruit stalk. The highest organic acid in leaf and fruit stalk was malic acid and its content was 1,715.21 mg% and 439.18 mg%, respectively. The highest component of total amino acids in leaf and fruit stalk was glutamic acid(497.99mg%) and proline(751.78mg%), respectively. The highest lady acid in leaf and fruit stalk was 43.54% of linolenic acid and 23.15% of palmitic acid, respectively. trans-Geraniol(124.36 ppm) and isobutyric acid(292.67 ppm) were predominant volatile compounds in leaf and fruit stalk, respectively.

Boron deficiency of sunflower (Helianthus annuus.) (해바라기의 붕소결핍(硼素缺乏))

  • Boron deficiency appeared as a cause of poor growth of sunflower(Helianthus annuus) according to soil and plant analysis. The investigated results are as follows; 1. Boron deficiency was due to low content of available boron (hot water soluble) in soil and clitical concentration appeared as 0.17 ppm. 2. Clitical concentrations in plant appeared to be 20 ppm for head(flower), 25 for leaf, 15 for stem and 10 for root. Boron concentration among positional leaves was greatly decreasing in the upper leaves. 3. Soils low in boron were relatively higher in calcium, silica and pH than in normal soil but relationship between boron and organic matter or other nutrients was uncertain. 4. The content of Ca and P is high in the head of boron deficient plant but low in root. Plants deficient in boron also showed a tendency of high N and low K but no clear tendency was shown in Mg and Fe. 5. Symptoms of boron deficinicy were yellowing of upper leaves, browning and drying of upper part of stem, cracking and blackening of stem and roots resulting short stem and poor growth.

Diapause hormone of the silkworm, Bombyx mori : Structure and function

  • Diapause hormone (DH) is a neuropeptide hormone which is secreted from the suboesophageal ganglion (SG) and is responsible for induction of embryonic diapause of the silkworm, Bombyx mori. DH is isolated from SGs and determined to be a 24 amino acid peptide amide. The cDNA encodes the polyprotein precursor from which DH, pheromone biosynthesis activating neuropeptide (PBAN) and three other neuropeptides are released and become matured. The C-terminal FXPRL-NH2 sequence of DH is essential but not sufficient for expression of full activity. Recently, we have isolated a unique hydrohobic peptide (VAP peptide) with a slight diapause egg induceing activity from organic solvent extracts of the male adult heads of the silkworm. The VAP peptide itself has no diapause inducing activity, but enhances DH activity through reducing ED50 value and the threshold concentration of DH. The DH-PBAN gene is composed of 6 exons interrupted by 5 introns and is expressed in 12 neurosecretory cells of the SG. The incubation of eggs at 25$^{\circ}C$, which induces embryonic diapause in the progeny, caused DH-PBAN mRNA content to increase at 5 different stages in the life cycle. By contrast, a 15$^{\circ}C$ incubation only induced expression of the gene at the late phrase adult stage. The temperature-controlled expression of DH-PBAN gene is closely correlated to the incidence of diapause, indicating that DH-PBAN gene expression is the initial event leading to diapause induction. DH acts to stimulate trehalase activity in developing ovary to bring about hyprglycogenism in mature eggs, a prerequisite metabolism for diapause initiation. Using in vivo and in vitro systems, DH is clearly shown to induce trehalase gene expression in developing ovaries. New protein synthesis is not needed for this process, but a Ca2+-dependent proteinkinase seems to be involved. Quite recently, we have sucessfully applied a new and potent trehalase inhibitor (Trehazoline) to reudce glycogen content in developing ovaries. The eggs deficient in glycogen were also able to enter diapause as the natural eggs do, so that we could provide the new egg system to reconsider the diapause associated metabolism other than the glycogen-sorbitol metabolic system.

Dual Culture Inoculation Enhanced Quality of Silage Produced from Leguminous Plants

  • Ensiling is the most preferred technology to preserve the silage quality with high nutrients by the presence of lactic acid bacteria. In this study, lactic acid bacteria RJ1 and S22 were used to make the silages from different leguminous plants such as alfalfa, hairy vetch and red clover. Experimental groups were divided into control and LAB inoculated groups. LAB inoculated group; all legumes treated with a mixture of RJ1 and S22 and made an anaerobic condition for 45d. Without the addition of LAB considered the control group. The results showed that the lactic acid content was higher in all silages in response to LAB treatment and acetic acid content was slightly increased except red clover by LAB compared to control silages. A poor silage quality marker butyric acid was reduced all legume silages in response to LAB inoculation than control silages. The organic acid is closely associated with microbial population experimental silages. We noted that higher LAB and lower yeast were found in the silage in response to LAB treatment. The contents of crude protein (CP), acid detergent fiber (ADF), neutral detergent fiber (NDF), and total digestible nutrient (TDN) were not altered significantly between control and LAB treated silages. Overall data suggested that the inclusion of additional LAB potentially enhance the silage quality and preserved the nutrients for long period.

Effective Component Contents and Antioxidative Activities of Unripe Apple by Extraction Methods (추출방법에 따른 미숙사과 추출물의 유용성분 함량 및 항산화 활성)

  • The purpose of this study was to determine the optimum extraction method suitable for the availability of biological activities in unripe apples known to be rich in functional components. Unripe apples 'Hongro' picked on May 28th, 2019 were extracted by various extraction methods (hot water, ethanol, enzymatic pre-treatment, ultrasonic wave, and subcritical water) and their extracts were investigated yield, effective component contents, and antioxidant activities. Overall, the yields by the extraction solvent were higher in water than in organic solvent(ethanol) because water-soluble compounds were eluted from a polar solvent. Total phenol contents of the ultrasonic wave (ethanol) extracts were significantly higher in 6 times than hot water extract. Contents of flavonoid were highest in the ethanol extract at 29.14 mg QE/g. Contents of tannin and ursolic acid were also significantly higher in the ultrasonic wave (ethanol) extract. The DPPH radical and ABTS radical scavenging activities were the strongest in the ultrasonic wave (ethanol) extract. Correlation between effective components and antioxidant activities was high in the total phenol content with ABTS and the ursolic acid content with DPPH (p<0.01). The above results suggested that ultrasonic wave (ethanol) extract of unripe apples has the potential to act as a functional material.

School Health Teachers' Experience of Coping with the COVID-19 Pandemic (보건교사의 COVID-19상황 대응 경험)

  • Purpose: This study was conducted to describe the experience of school health teachers in regard to the COVID-19 pandemic in South Korea. Methods: We conducted a qualitative study using content analysis. Ten school health teachers were recruited from 6 elementary schools, 2 middle schools and 2 high schools in Seoul, using purposive sampling. They participated in semi-structured in-depth interviews in person or using an online communication system from January to February, 2021. Interviews were transcribed verbatim and analysed using qualitative content analysis. Results: Three main categories and nine generic categories emerged from the analysis. Firstly, it was discovered that school health teachers had psychological and physical stress to cope with COVID-19 due to the 1) fear of the unexpected infectious disease, 2) burden of having to deal with it alone, 3) breakdown of personal life and physical exhaustion and 4) heavy duty as a health teacher caused by the lack of an organic cooperation system with institutions related to school infectious diseases. Secondly, school health teachers had an increased sense of empowerment in regard to infectious disease management as a result of 1) feeling rewarded and appreciated and 2) gaining confidence and trust in infectious disease management. Finally, school health teachers experienced the urgent need for an effective response strategy for infection control because of the 1) confusion over infectious disease response due to lack of practical manuals applicable to the field as well as training, 2) disappointing response system without an expert response team dedicated to managing infectious diseases in schools, and 3) growing awareness of the need for change. Conclusion: It is expected that school health teachers' experience of COVID-19 will be used as important data for building effective and advanced school infectious disease response systems.

Drying Characteristics of Soil by Microwave (Microwave에 의한 흙의 건조 특성 고찰)

  • Water content is one of the significant engineering properties of soil for predicting the behavior of soil matrix. Conventional drying oven can be widely used to obtain the values by drying the soil specimens for 16 to 24 hours at $105^{\circ}C$. Although a number of experimental data has been accumulated for the conventional method of drying soil for water contents, shortcomings of the method are still hard to overcome such as long drying time for in situ use and the difficulty of taking prompt actions against emergency cases. Recently, ASTM and JGS have established microwave oven drying techniques for obtaining water contents to cope with those problems. And the reliability evaluation study has been also performed on the microwave oven drying for water contents. Feasibility study of the microwave oven drying was performed to confirm the process of the technique with Jumunjin sand, kaolinite, bentonite, weathered granite soil, and organic soil. Investigation was also conducted on the factors affecting and enhancing the reliability of the technique.

Physicochemical and Antibacterial Effects of Curcuma aromatica Salis b. with or without Fermentation on varied calorie levels of HMR Bibimbap set (열량 수준별 간편가정식 비빔밥세트에 첨가된 일반 및 발효 강황의 이화학적 항산화적 효과)

  • Physicochemical and antioxidant properties of the three different calorie types of HMR curry rice using fermented turmeric were analyzed in this study. The general tumeric added sample groups showed significantly higher carbohydrate content than the fermented turmeric sample group. In all sample groups, the ratio of protein, fat, and carbohydrate was found to be appropriate according to the nutritional composition ratio as one meal recommended by the Ministry of Health and Welfare. The brightness L value of the general turmeric-added sample group was measured to be significantly brighter than the fermented turmeric-added sample group. The fermented turmeric sample group showed a slightly lower pH value than the general sample group due to organic acids generated during fermentation. As a result of analyzing the radical scavenging activity of ABTS, LFTC, MFTC, and HFTC of the fermented turmeric group were 40.20, 40.46, and 36.16%, respectively, compared to those 32.41, 37.75, and 36.16% of LNTC, MNTC and FNTC of the general sample groups, respectively, consistently indicating that more free radicals were generated in the fermented sample group (p<0.01). Relatively unstable to heat and acid, DPPH scavenged radicals showed similar results to those of ABTS radical scavenging activity in terms of activity. Similar results were also shown in the measurement of total flavonoid and phenol content, which are known to have antioxidant antiviral and anticancer effects. Thus we could conclude that pilot products of the high quality varied calorie levels of HMR Bibimbap set with tumeric, which is helpful for antioxidant action have been developed to meet various customer needs.
