Quality Characteristics of Mackerel Surimi Prepared by Alkaline Washing under Reduced Pressure (감압 알칼리 수세하여 제조한 고등어 Surimi의 품질 특성)

  • An attempt was made in this study to investigate the optimum condition of washing for preparation of mackerel surimi by alkaline washing of 1, 3, 5, and 7 times under atmospheric (760), 660, and 560 mmHg pressure. The qualities of surimis were examined by analyzing the factors such as water content, crude lipid, pH, volatile basic nitrogen (VBN), expressible drip, protein extractability, $Mg^{2+}-$, $Ca^{2+}-$ and EDTA-ATPase activity, transglutaminase (TGase) activity, gel strength and color. The contents of moisture, crude lipid, pH and VBN in surimis prepared by alkaline washing under atmospheric, and reduced pressure went up to $72.0{\sim}72.9%$, $4.8{\sim}5.7%$, $6.9{\sim}7.0$ and $6.7{\sim}7.0\;mg/100\;g$, respectively. Protein extractability, ATPase activity and TGase activity were highest in surimis prepared by alkaline washing under 560 mmHg. Gel strengths of surimi setting gel and cooked gel from five times washing under 560 mmHg were 420 g cm (atmospheric, 330 g cm) and 485 g cm (atmospheric, 412 g cm), respectively. For the preparation of mackerel surimi, optimum washing condition was five times washing under 560 mmHg.

  • For determination the optimum manufacturing condition Fe4N powder for magnetic recording media, we have studied the following important conditions : the effect of particle size of metal powder on the nitridation, the condition of nitridation on the formation and magnetic properties of Fe4N, and stability of Fe4N powder against temperature and change on standing. The results can be summarized as : 1) Single phase Fe4N is formed at 50v/o of ammonia concentration during the nitridation reaction, 2) Single phase Fe4N is formed above 40$0^{\circ}C$, 15min regardless of the metal powder sizes, 3) Coercivity and saturation magnetization of Fe4N powder almost constant value until 20 day-passing from preparation date.

  • The effect of reaction parameters in the characteristic of $Pb(Zr_{0.52}Ti_{0.48})O_3$ (below nominal PZT) powders by SHS was investigated in this study. In the preparation of PZT, the effect of starting material contents, pressure, additive on phase fraction and morphology was investigated respectively. The optimum condition of PZT powders were prepared by SHS is $0.37Pb_3O_4+0.52ZrO_2+0.48TiO_2+0.35KClO_3+0.5C,\;(P_{Ar}= 50 atm)$. The PZT powder synthesized in this condition had an spherical shape and the particle size of 0.8$\mu$m.

Synthetic Conditions and Rheological Characteristics of Barium Sulfate (황산바륨의 합성조건과 유동학적 특성)

  • Optimal synthetic condition of barium sulfate were investigated from the viewpoint of yield and bulkiness according to a randomized complete block design proposed by G.E.P. Box and K.B. Wilson. Barium chloride and magnesium sulfate were utilized as reactants in order to prepare barium sulfate in this study. It was found that optimum temperature range of reactant solutions was $60{\sim}100^{\circ}C$ and the optimum concentration range of the reactant solutions was $10{\sim}17.3%$ and $10{\sim}20%$ respectively, on the viewpoint of yield and bulkiness. The optimum mole ratio of $BaCI_2$ to $BaSO_4$ was in the range of $1.50{\sim}2.0$ and the optimum mole ratio of $BaCI_2$ to $BaSO_4$ was in the range of $1.50{\sim}2.0$ and the optimum reacting time range was $15{\sim}20$ minutes. The optimum drying temperature range was $110{\sim}130^{\circ}C$ from the viewpoint of yield, but it was $90{\sim}110^{\circ}C$ on the basis of bulkiness. Apparent viscosity of barium sulfate suspensions dispersed in various concentrations of Na. CMC was measured by using Brookfield synchrolectric viscometer model LVT, the relative equation, log ${\eta}_{sp}=A+B.{\phi}$ was examined and the equation was found to agree fairly well. 1 w/v% Na. CMC aqueous solution and 0.1 volume fraction of $BaSO_4$ powder were optimum in the preparation of $BaSO_4$ suspension showing highest viscosity at infinite shearing.

  • In this paper studied was the piezoelectric properties of the $\beta$-PVDF organic thin films prepared by physical vapour deposition method. The molecular orientation of organic thin films was controlled by the application of an electric field and variation of substrate temperature during the evaporation process. Optimum conditions of manufacturing $\beta$-PVDF organic thin film by physical vapor deposition method is to keep at the substrate temperature of $80^{\circ}C$, at the applied electric field of 142.8 kV/cm. The voltage output coefficient increased from 1.39 to 7.04V increasing the force moment.

Optimization on Organoleptic Properties of Red Pepper Jam by Response Surface Methodology (반응표면분석에 의한 홍고추잼의 관능적 특성 최적화)

  • Four dimensional response surface methodology was applied to determine the optimum conditions on organoleptic properties to develop red pepper jam into Korean type jam. The organoleptic color of red pepper jam showed maximum score of 8.08 in 14.24g pectin, 256.2g sucrose and 8.31ml citric acid(50% citric acid solution). The organoleptic taste of red pepper jam showed maximum score of 6.77 in 14.23g pectin, 202.1g sucrose and 8.19ml citric acid. Optimum conditions on the organoleptic mouth feel of red pepper jam were 14.34g in pectin, 255.6g in sucrose and 8.39ml in 50% citric acid solution. Maximized overall palatability of red pepper jam was 7.25 in 14.15g pectin, 257.08g sucrose and 8.19ml of 50% citric acid solution. The optimum preparation condition ranges on organoleptic properties of red pepper jam were 14.0~15.5g pectin, 225.0~257.0g sucrose and 8.0~8.2ml of 50% citric acid solution.

A Study on Preparation of Water in Oil in Water (W1/O/W2) Emulsion Containing Titrated Extract of Centella asiatica (센텔라 아시아티카 정량추출물을 함유한 Water in Oil in Water (W1/O/W2) 에멀젼 제조에 관한 연구)

  • Titrated extract of Centella asiatica (TECA), which is poorly soluble in water is well known for wound healing and anti wrinkle agent. This study was conducted to find the optimum condition for the preparation of water in oil in water ($W_1/O/W_2$) emulsion containing TECA. Solubility of TECA were measured by UV spectrophotometer. 2.55 g of TECA was dissolved in solution composed of dipropylene glycol (40.0 g), ethanol (20.0 g), and water (10.0 g). Factors affecting stability of the emulsions ($W_1/O$, $W_1/O/W_2$) was investigated. The optimum conditions for the preparation of $W_1/O$ emulsion was composed of dipropylene glycol : ethanol : water : TECA in a weight ratio of 40.0 : 20.0 : 10.0 : 2.5 for water phase and squalane : cetyl PEG/PPG-10/1 dimethicone : cetearyl alcohol in a weight ratio of 22.5 : 4.0 : 2.5 for oil phase. The optimum conditions for the preparation of $W_1/O/W_2$ multiple emulsion was composed of water : $W_1/O$ emulsion : polysorbate 80 : carbomer : triethanolamine in a weight ratio of 55.8 : 40.0 : 4.0 : 0.1 : 0.1.

Optimization of Extraction and Clarification Condition for Preparation of Liquid Extract Tea from Artificially Cultivated Phellinus linteus (인공재배 상황버섯 액상추출차 제조를 위한 최적추출 및 청징화 조건)

  • Optimum extraction condition and clarification process were investigated to manufacture liquid extract tea using Phellinus linteus. Carbohydrates content in the raw Phellinus linteus was 80.9%. Major minerals were K, Ca, Fe and Na, but vitamin B$_1$, B$_2$, and C were not detected. The best extraction condition was 5% raw material at 10$0^{\circ}C$ within 3 hr. To clarify the extract, three methods of filtration with depth filter pad, centrifugation and addition of several filter aids were studied. Filtration with depth filter pad and centrifugation were highly effective on the clarification and the changes in the turbidity for 7 weeks at 4$0^{\circ}C$ were not occurred. The optimum clarification condition was centrifugation above 6,000 rpm or filtration with 8 ${\mu}{\textrm}{m}$ depth filter pad.

Wastepaper Liquefaction Using Ethylene Glycol and Polyester Preparation from the Liquefied Wastepaper (Ethylene glycol을 사용한 폐지의 액화 및 액화물로부터 polyester 제조)

  • A novel method to prepare polyester from wastepaper through liquefaction and crosslinking stages was studied. At the first stage, the liquefaction of wastepaper was carried out in the presence of ethylene glycol under acidic conditions. The factors that affect on liquefaction yield were found to be reaction time, temperature, and acid concentration, and their ranges were 60~120 minutes, $150{\sim}170^{\circ}C$, and 2~4%, respectively. The optimum condition was found to be 100 minutes, $160^{\circ}C$, and 3% sulfuric acid concentration, and the liquefaction yield at this condition was 67%. At the second stage, polyester was prepared from the liquefied wastepaper obtained at the optimum liquefaction condition by crosslinking with succinic anhydride. The effect of reaction time and carboxylic group/hydroxyl group ratio on crosslinkage were investigated at conditions covering 30~50 minutes of reaction time and 1.5~2.5 of carboxylic group/hydroxyl group ratio. The crosslinkages of polyester prepared were 80~90%, which were almost same regardless of reaction conditions.

Chiral Separation of Ibuprofen by Supercritical Fluid Chromatography (초임계유체 크로마토그래피를 이용한 Ibuprofen의 키랄분리)

  • The separation method using chiral stationary phase in preparation of chiral compound was wildly used, but in this work, supercritical fluid chromatography was suggested in the stability to resolve the chiral mixtures. To determine the optimum operating condition of the racemic ibuprofen, the retention factor and resolution with change in pressures, temperatures and the contents of IPA % (vol.) in CO$_2$ were investigated. The retention factor was decreased with increase in pressure and decrease in temperature. The factor was also influenced by the content of IPA in mobile phase, while the resolution was worse with a increase in IPA %. From the experimental results, the desirable separation condition was 130 bar, 311.15 K and 4% IPA in CO$_2$. Compared to the asymmetric peak shape by liquid chromatography, that of supercritical fluid chromatography was symmetric which was a favorable condition for preparative separation.
