정성적 소비자 조사를 통한 오미자에 대한 소비자 인식연구 (Consumer Awareness on Omija using Qualitative Consumer Research)

  • The objective of this study was to determine current consumer awareness of Omija (Schizandra chinensis Bailon) fruit in order to develop ready-to-drink (RTD) Omija-flavored beverages using qualitative consumer analysis. A series of four different focus group interview sessions were conducted using carefully chosen consumers with specific demographics, and each group involved eight respondents. Consumer's qualitative reactions regarding Omija fruit, Omija extract products, ready-to-drink beverages and Omija-flavored RTD beverages were explored. Distinct differences in consumer awareness and consumption patterns of Omija extract and RTD beverages were observed between consumers in their 20s and consumers in their 30s to 50s. The expected sensory characteristics of Omija-flavored RTD beverages were also different based on participants' age. Findings from the current study can aid product developers utilizing Omija fruit by providing valuable insights into current consumer behavior and consumer awareness regarding Omija.

오미자의 용출시간에 따른 풍미성분 변화에 관한 연구 (Changes in Flavor Component of Omija, Shizandra Chinensis Baillon, with Various Extraction times)

  • This study attempted to set up reasonable extraction time of Omija that was put in water for the various components to soak out. Changes of free sugars, organic acids, reducing sugar, total acid and tannin in Omija with various extraction times were investigated (together with the analysis of each components in Omija fruit). 1. High Performance Liquid Chromatography showed fructose, glucose, and sucrose to be the major free sugars of the Omija fruit. Free sugars and reducing sugar value in Omija beverage increased gradually in according with the extraction time, and marked 75.6% per total free sugars and 82.1% per total reducing sugar at 12 hours. 2. Gas Chromatography showed lactic acid, oxalic acid, fumaric acid, levulinic acid, succinic acid, malic acid, citric acid and pyroglutamic acid to be the major organic acids of the Omija fruit. Organic acids and total acids value in Omija beverage increased gradually on proportion to extraction time, and marked 97.0% per total organic acids at 9 hours and 79.0% per total acids at 12 hours. 3. Tannin content in Omija beverage was increased when extraction time was longer but it showed a low percentage as compared with the reducing sugar and total acid. Tannin content marked 48.8% per total tannin at 12 hours. 4. Sensory evaluation revealed that !1 hours of extraction produced the best quality products based in taste, flavor, color and over-all acceptability, considering the data, it seems possible to conclude that the optimum of time for extraction of Omija to water is 9 hours.

Effects of Fertilization and Co-Application of Compost Tea on Fruit Growth and Accumulation of Anthocyanin in Omija (Schisandra Chinensis Baillon)

  • This study was conducted to evaluate the influence of fertilization on characteristics of growth and accumulation of anthocyanin in fruit of Omija (Schisandra chinensis Baillon). Nitrogen supply mainly affected growth of fruit and the anthocyanin content in Omija respective of vegetative growth steps. The anthocyanin content in fruit was significantly low in high N supply and non-fertilization. The conjunctive supply of nitrogen and compost tea resulted in a higher anthocyanin content of fruit, total nitrogen content of leaf, and nitrate in soil. This result implies that nitrogen supply to Omija plant, affects the accumulation patterns of anthocyanin in different ways, e.g. it delays the quantitative biosynthesis at low nitrogen supply during fruit maturation or enhances anthocyanin degradation during the final maturation steps.

Compositional Characterization and Colorant Identification of Omija (Schizandra chinensis) Fruit Extract

  • A major polyphenolic compound extracted from omija (Schisandra chinensis) fruit was structurally identified, and its composition of major nutrients was investigated as well in this study. A dominating high performance liquid chromatography (HPLC) peak of water-extracted anthocyanin represented 94.1% of total absorbable compounds at 520 nm, which was further identified with HPLC-mass spectrometry (MS). As a result, mass-to-charge ratio (m/z) of the predominant anthocyanin was determined to be 727, and it was identical to molecular mass of cyanidin-3-xylosylrutinoside (Cya-3-O-xylrut). This is the first report that colorant of omija is predominantly composed of Cya-3-O-xylrut. Omija fruit contained exclusively 3 types of monosaccharide such as glucosc (0.68 g), galactose (0.01 g), and fructose (0.52 g) per 100 g of fruits. Several organic acids, citric (3.29 g), malic (1.4 g), acetic (0.4 g), and succinic acids (0.36 g) per 100 g of fruits, were detected by high performance anion exchange chromatography (HPAEC) analysis. During the compositional analysis of tree amino acid by HPLC, it was noticed that omija fruit contained substantial amount (0.01 g/100 g of fruits) of $\gamma$-amino butyric acid (GABA).

Effects of the Combined Extracts of Grape Pomace and Omija Fruit on Hyperglycemia and Adiposity in Type 2 Diabetic Mice

  • Grape products have been known to exert greater antioxidant and anti-obesity than anti-hyperglycemic effects in animals and humans. Omija is used as an ingredient in traditional medicine, and it is known to have an anti-hyperglycemic effect. We investigated whether the combined extracts of grape pomace and omija fruit (GE+OE) could reduce fat accumulation in adipose and hepatic tissues and provide beneficial effects against hyperglycemia and insulin resistance in type 2 diabetic mice. C57BL/KsJ-db/db mice were fed either a normal control diet or GE+OE (0.5% grape pomace extract and 0.05% omija fruit extract, w/w) for 7 weeks. GE+OE decreased plasma leptin and resistin levels while increasing adiponectin levels and reducing the total white adipose tissue weight. Furthermore, GE+OE lowered plasma free fatty acid (FFA), triglyceride, and total-cholesterol levels as well as hepatic FFA and cholesterol levels. Hepatic fatty acid synthase and glucose 6-phosphate dehydrogenase activities were decreased in the GE+OE group, whereas hepatic ${\beta}$-oxidation activity was increased. Furthermore, GE+OE supplementation not only reduced hyperglycemia and pancreatic ${\beta}$-cell failure but also lowered blood glycosylated hemoglobin and plasma insulin levels. The homeostasis model assessment of insulin resistance levels was also decreased and the decrease seems to be mediated by the lowered activities of hepatic glucose-6-phosphatase and phosphoenolpyruvate carboxykinases. The present data suggest that GE+OE may have the potential to reduce hyperglycemia, insulin resistance, and obesity in patients with type 2 diabetes.

오미자(Schisandra chinensis)의 리그난 함량과 생육특성 간의 상관관계 연구 (Study on the Correlation between the Growth Characteristics and Lignans Contents of Schisandra chinensis)

  • Schisandra chinensis is a fruit which is called Omija in South Korea. The Korean word Omija means "five flavors" (sweet, spicy, sour, bitter, and salty). The aim of his study was to investigate the correlation between growth characteristics and lignans (gomisin A, gomisin N, schisandrin) contents of Schisandra chinensis. The method for determining lignans was validated by measuring the linearity, limit of detection (LOD), limit of quantification (LOQ), precision and accuracy using UPLC-UV. Growth characteristics of S. chinensis such as number of fruits per fruit bunch, length of fruit bunch, width of fruit bunch, fresh weight of fruit bunch, length of fruit, width of fruit, fresh weight of fruit, fresh weight of 30 fruits, and sugar contents of fruit were measured. From the results of correlation analysis, it was found that the contents of lignans showed a significantly negative correlation with fresh weight and sugar contents of fruit. These results will be used to study for quality control of S. chinensis fruit.

Dual effects of a mixture of grape pomace (Campbell Early) and Omija fruit ethanol extracts on lipid metabolism and the antioxidant defense system in diet-induced obese mice

  • BACKGROUND/OBJECTIVES: We investigated the effects of a combination of grape pomace (Vitis labrusca, Campbell Early) and Omija fruit (Schizandra chinensis, Baillon) ethanol extracts on lipid metabolism and antioxidant defense system in diet-induced obese mice. MATERIALS/METHODS: Forty male C57BL/6J mice were divided into four groups and fed high-fat diet (control group, CON) or high-fat diet added 0.5% grape pomace extract (GPE), 0.05% Omija fruit extract (OFE) or 0.5% GPE plus 0.05% OFE (GPE+OFE) for 12 weeks. RESULTS: In contrast to the GPE- or OFE-supplemented groups, the GPE+OFE group showed significantly lower body weight and white adipose tissue weights than the CON group. Moreover, GPE+OFE supplementation significantly decreased plasma total cholesterol and increased the plasma HDL-cholesterol/total-cholesterol ratio (HTR) compared to the control diet. The hepatic triglyceride level was significantly lower in the GPE+OFE and GPE groups by increasing ${\beta}$-oxidation and decreasing lipogenic enzyme compared to the CON group. Furthermore, GPE+OFE supplementation significantly increased antioxidant enzyme activities with a simultaneous decrease in liver $H_2O_2$ content compared to the control diet. CONCLUSIONS: Together our results suggest that supplementation with the GPE+OFE mixture may be more effective in improving adiposity, lipid metabolism and oxidative stress in high-fat diet-fed mice than those with GPE and OFE alone.

오미자즙과 매실즙을 이용한 두부제조 및 저장 (Preparation and Shelf-life of Soybean Curd Coagulated by Fruit Juice of Schizandra chinensis RUPRECHT(Omija) and Prunus mume(maesil))

  • 두부 제조를 위한 응고제로 오미자즙과 매실즙을 이용하여 적정 제조조건, 텍스쳐, 색도, 기호성 및 저장성을 검토하였다. 오미자두부는 가수량 12.5배, 두미 가열시간 5.0분, 오미자즙 첨가량 0.9% 일 때, 매실두부는 가수량 10.0배, 두미 가열시간 5.0분, 매실즙 첨가량을 1.5%로 하여 제조하였을 때 가장 높은 수율을 나타내었다. 오미자즙과 매실즙 두부의 물성은 $CaSO_4$로 응고시킨 두부 보다 견고성, 부착성, 씹힘성, 검성이 낮았으나 관능특성은 맛, 색, 향, 조직감 모두 우수하였다. 두부 저장 중 침지액의 pH는 증류수의 경우 저장초기에는 낮아졌다가 높아졌으며 침지액의 탁도는 증류수 및 0.1% acetic acid 모두 저장기간이 길어질수록 증가되었는례 특히 과즙 두부가 $CaSO_4$ 두부 보다, 0.1% acetic acid 침지액이 증류수 보다 pH와 탁도가 낮았다. 두부의 세균수는 저장기간이 길어질수록 지수적으로 증식되었는대 응고제로 과즙 두부가 $CaSO_4$두부 보다, 침지액으로 0.1% acetic acid용액이 증류수보다 세균의 증식이 지연되어 과즙두부를 0.1% acetic acid용액에 침지하였을 매 저장성 향상 효과가 있었다.

국내 시판 과일 및 야채 주스의 항균, 항산화 및 항혈전 활성 (Evaluation of Antimicrobial, Antioxidant, and Antithrombin Activity of Domestic Fruit and Vegetable Juice)

  • 본 연구에서는 건조 근채류 절편을 천연과일주스에 침지 후 건조하여 과일주스의 관능성과 유용활성을 동시에 나타내는 근채류 칩 개발을 목표로, 먼저 국내 시판주스 8종에 대한 이화학적 특성과 다양한 생리활성을 조사하였다. 사과, 오미자, 포도, 머루, 오렌지, 토마토, 홍삼 및 흑마늘 주스의 평균 수분함량, pH, brix 및 산도는 각각 $85.59{\pm}5.80%$, $3.90{\pm}0.64$, $12.19{\pm}4.70%$, 및 $0.49{\pm}0.19%$였다. 총폴리페놀 함량의 경우, 흑마늘 주스 및 포도 주스가 각각 1.50 및 1.21 mg/ml으로 8종 주스 평균인 0.57 mg/ml보다 매우 높았으며, 총플라보노이드 함량도 흑마늘 주스 및 포도 주스가 가장 높게 나타났다. 주스들의 항혈전 활성 평가 결과, 오미자 주스에서만 아스피린 1.5 mg/mL에 상당하는 활성이 인정되었으며, 항균 활성 평가 결과, 오미자, 포도, 및 오렌지 주스에서 우수한 항세균 활성이 나타났으나 항진균 활성은 모든 주스에서 인정되지 않았다. 항산화 활성 평가 결과, 포도>흑마늘>오렌지>머루>토마토>사과>오미자>홍삼 주스 순으로 나타났으며, nitrite 소거능은 머루>흑마늘>포도>홍삼 의 순으로 나타났다. 본 연구결과는 항혈전 활성이 우수한 오미자 주스, 항산화 활성이 우수한 포도 및 흑마늘 주스를 이용한 관능성과 기능성이 강화된 근채류 칩 제품개발의 기초자료로 이용될 것이다.

오미자를 이용한 식초발효 및 품질특성 (Quality Characteristics of Vinegar Fermented Using Omija (Schizandra chinensis Baillon))

  • 본 연구는 건조 오미자 추출액을 이용하여 오미자 식초를 발효하였다. 산패한 오미자 와인에서 식초산균 OV1과 OV2를 분리하고 분리균의 식초산 생성능력을 비교하였다. 분리균 OV1은 알코올농도 8%까지 발효 가능하였으며, 알코올 농도 6%의 오미자 와인으로부터 산도 5.21%의 식초를 발효하였다. 발효 오미자 식초는 시판 중인 타 식초에 비하여 관능성이 보다 우수한 것으로 평가되었다. 오미자 와인 및 식초의 항균력을 paper disc법으로 검정한 결과 식초는 4종의 검정균(B. subtilis, S. aureus, E. coli 및 P. fluorescens)에 대하여 직경 9.5~17.00 mm의 clear zone을 형성한 반면에 오미자 와인은 S. aureus와 P. fluorescens에 대해서만 clear zone을 생성하였고 clear zone의 직경 또한 9.5 mm 이하로 추출물과 비슷하였다. 오미자 와인 및 오미자 식초의 DPPH free radical 소거능은 오미자 와인(80배수)이 70.25%로 발효 전 추출액에 비하여 약 1.6배 증가하였으나 오미자 식초는 추출액과 비슷한 수준이었으며, 아질산염 소거능 또한 와인에서 높고 식초에서 낮아지는 경향을 나타내었다. 이상의 결과로부터 보당한 건조 오미자 추출액을 사용하여 기호성과 기능성을 갖춘 고품질의 식초를 제조할 수 있는 것으로 판단된다.
