  • The present study was conducted to evaluate feeding value of brown rice in Korean native beef steers (Hanwoo) fed concentrates and orchardgrass hay (50:50 on a wet basis) as a basal diet. Either 50% or 100% of corn in concentrates was substituted for brown rice, and ruminal fermentation characteristics, in situ degradability of feeds and in vivo digestibility of concentrate were investigated. The digestibility and nutritive values of corn and brown rice feeds were similar, whereas rumen degradability of brown rice was higher than that of corn. Compared with corn-based diets, the brown rice substitution decreased (P<0.05) ruminal NH3-N concentration, but did not affect rumen pH. Total volatile fatty acid content in ruminal digesta for the corn based diet was higher than those for the brown rice-contained diets. The brown rice substitution increased (P<0.05) the ratio of ruminal acetic acid to propionic acid (A/P) compared with corn-contained diets.Present results indicate that corn might nutritionally be substituted for brown rice as cattle feeds. In addition, we expect that relatively high A/P with brown rice may produce affirmative effects in rumen physiological aspect, particularly under the grain based feeding system for beef cattle in Korea.

  • "Onnuri" is a new orchardgrass (Dactylis glomerata L.) cultivar developed by the National Institute of Animal Science (NIAS) in 2011. To develop the new variety of orchardgrass, 5 superior clones were selected and polycrossed for seed production. The agronomic growth characteristics and forage productivity of "Onnuri" were examined at Cheonan from 2009 to 2011, and regional trials were conducted in Cheonan, Pyeongchang, Jinju and Jeju from 2009 to 2011, respectively. "Onnuri" showed medium type growth habit in fall and spring, and medium in length of flag leaf and long upper internode. Plant height of "Onnuri" was 5cm more than that of the standard cultivar, "Amba" and the heading date was 5 days earlier than that of Amba (16th May). Characteristics, such as waterlogging and disease resistance, of "Onnuri" were stronger or better than those of Amba, Especially, dry matter yield of "Onnuri" (14,775 kg/ha) increased by 18% compared to that of Amba (12,523 kg/ha). Nutritive values appeared to be similar in both varieties.

  • As a part of investigation for quality improvement of surimi gel from fish with a red muscle by addition of calcium-based powder from fish bone, we investigated the processing condition of calcium-fortified mackerel surumi gel and its quality stability during storage at $5^{\circ}C$. Judging from the results of the soluble calcium content and jelly strength, the reasonable addition concentration of calcium-based powder from Alaska pollack bone for improvement of functional properties in surimi gel was revealed 0.9% on the weight basis of the chopped mackerel meat. The soluble calcium content of the calcium-fortified surimi gel (105.0 mg/100 g) was more than that of the ordinary surumi gel (2.9 mg/100 g). During cold storage of calcium-fortified surumi gel, the moisture contents, amino acid compositions, soluble calcium and phosphorus contents were little changed, the pH, volatile basic nitrogen contents, histamine contents, peroxide values and brown pigment formation were slightly increased and viable cell counts and coliform groups were not detected. The calcium-fortified surimi gel was superior in the lysine and calcium contents, EPA and DHA compositions to the ordinary surumi gel. Judging from the results, it was suggested that calcium-fortified surumi gel was nutritive, functional and safety foods.

  • The plant height of hairy vetch was high to comparing with crimson clover, and that of crimson clover was the lowest while that of hairy vetch was the highest with one application of rare earth. The dry matter content of crimson clover and hairy vetch were 20.3% and 18.1%, respectively and the dry matter content between two species had little difference. In this study, the fresh yield of hairy vetch was higher than that of crimson clover, while the dry matter yield of crimson clover was higher than that of hairy vetch. But there were not significant difference between two species. Although the fresh and dry matter yield of both species were the high with one application of rare earth, there were not significant difference between three treatments of rare earth. The nutritive values of hairy vetch were higher than that of crimson clover Neural detergent fiber (NDF) and acid detergent fiber (ADF) content decreased with one application of rare earth. But crude protein (CP) and digestibility were not significant between rare earth applications.

  • This study was carried out to investigate the effect of harvest stage of rape on nutritive values and quality of round baled rape silage in field of forage crops of Department of Animal Resources Development, National Institute of Animal Science, RDA. Rape was harvested at three different growth stages (flowering, milk and dough stage) and ensiled at each harvest stages. The content of moisture of rape increased with delayed harvest maturity. However, the content of moisture of rape was controlled by pre-wilting (24 hr. and 48 hr). The content of moisture in dough stage was similar to that of haylage. The content of crude protein in round baled rape silage increased with delayed harvest maturity, but the contents of acid detergent fiber, neutral detergent fiber and total digestible nutrient decreased. The pH in all rape silage ranged from 3.8 to 4.4 at three different harvest stages, and pH in dough stage was higher than that of flowering and milk stages (p<0.05). The content of lactic acid of all rape silage increased with delayed harvest maturity (p<0.05), but the content of acetic acid decreased (p<0.05). And then, flieg's score revealed that there was an increase in order; flowering stage (100) = milk stage (100) > ripen stage (88).

  • This study was conducted to investigate the effect of addition of lactic acid bacteria inoculants on quality of rye silage harvested at early heading stage. The nutritive values in lactic acid bacteria (LAB) inoculated group showed similar results to control. The pH of rye silage in LAB inoculation significantly decreased as compared to control (p<0.05). In addition, the content of lactic acid in LAB inoculation significantly increased (p<0.05), but the content of acetic acid in LAB treatments decreased. In addition, lactic acid bacterial counts in LAB inoculation significantly increased as compared to control (p<0.05). Therefore, we suggest that rye silage could be improved by LAB inoculation.

  • This study was conducted to evaluate the dry matter yield, quality and utilization of nutrients of wild Korean lespedeza as a forage legume sources. Dry matter(DM) yield of stages, chemical composition and DM digestibility were observed, also DM intake, digestibility and utilization of nitrogen and energy by Korean native goats were determined. Experimental diets include three treatrnents ; mixture grass hay(GS), GS 80% + lespedeza(LA) 20% and GS 60% + LA 40%, respectively. The DM yield of Korean lespedeza(LA) with advancing the growing stage tended to significantly increase(P<0.05). The average DM yield was observed 7,336kg/ha. CP content of LA tended to decrease, but fiber content tended to increase at growing stage advanced(P<0.05). The tannin content of LA was highest in bud stage (54.5mg/g), but tended to decrease at growing stage advanced, lowest in seed ripe stage(26.8mg/g) (P<0.05). With increasing the level of LA supplementation, DM intake by Korean native goats slightly increased, but no differences were observed in all diets. The digestibility of DM, cellular constituents and NDF were slightly lower for GS 100% diets than LA 20% and 40% supplemented diets(P<0.05). Apparently digested N% was not detected significant differences in all diets, but retained N and biological value were higher for LA supplemented diets than for GS 100% diets (P<0.05). Utilization of DE and ME was not detected significant differences in all diets. Above the results, it could be suggested that LA have a potential to provide as forage legume sources considering the DM yield, DM digestibility and nitrogen utilization.

  • This study was conducted to evaluate the dry matter yield, quality and utilization of nutrients of crabgrass (Digitaria sanguinalis L.) dominant swards as a roughage sources. Dry matter yield of stages, chemical composition, DM digestibility was obserbed, and DM intake, digestibility and utilization of nitrogen and energy by Korean native goats was determined. Average DM yield of crabgrass dominant swards was obtained 8,473kg/ha, and average contents of CP, NDF, ADF and lignin was 13.0%, 74.1%, 38.6% and 10.4%, respectively. DM intake by Korean native goats was lower for crabgrass dominant swards than for sown grass swards(P>0.05). Digestibility of DM, celluar constituents, NDF and ADF by Korean native goats was significantly lower for crabgrass dominant swards than for sown grass swards(P<0.05). Utilization of nitrogen and energy by Korean native goats was significantly lower for crabgrass dominant swards than for sown grass sward(P<0.05). Above the results, although crabgrass dominant swards was lower than in DM yield, digestibility, and utilization of N and energy, but the DM yield of crabgrass dominant swards was obtained 8,471kg/ha without fertilizer. Therefore it appears that crabgrass dominant swards have a potential to provide roughage sources.

  • The Chinese red-headed centipede Scolopendra subspinipes mutilans, a member of the arthropod class Chilopoda, is a traditional medicine used for the treatment of several allergic diseases, such as atopy. S. subspinipes mutilans samples were collected from different regions of South Korea: Sancheong, Gyeongnam; Yeonggwang, Jeonnam and Jeju-do. The nutritional values of the centipedes were analyzed to extend the species' applications. The crude protein and fat contents of all samples were high and ranged from 54.9-55.8% and from 26.8-30.6%, respectively. Essential amino acids were present; lysine was the most common and accounted for 3.4-3.6% of the essential amino acids. Glutamic acid, which assists in improving concentration, memory and other cognitive abilities, was the most common non-essential amino acid at 6.8-7.1%. It had a similar content percentage in all three regions' samples. Additionally, unsaturated fatty acids were present, and oleic acid, which prevents cancer and cardiac disease, was the most common at 41.3-48.6% of each sample. Mercury, a hazardous substance, was detected at a range of 0.08-0.11 mg/kg in all samples; the amount was lower than the standard food allowance. Additionally, no pathogenic microorganisms, such as Escherichia coli and Salmonella spp., were detected. There were no significant differences between the nutritional factors of the S. subspinipes mutilans samples from the three regions. Based on the nutritional analysis, Chinese red-headed centipedes have the potential to be food and medicinal ingredients due to their proteins, essential amino acids, unsaturated fatty acids and nutritive capacities.
