노화 관련 근감소증과 노쇠함의 원인과 예방을 위한 운동과 영양의 역할 (Causes of age-related sarcopenia and frailty: the role of exercise and nutrition for prevention)

  • 이 연구의 목적은 노화 관련 근감소증과 노쇠함의 정의와 원인뿐만 아니라 규칙적인 운동과 올바른 영양을 통한 예방과 지연을 탐색하고자 한다. 근감소증과 쇠약함은 노화에 따른 근량과 근기능이 감소하여 쇠약함과 악액질, 골다공증, 대사적 증후군과 조기 사망을 일으키는 것으로 알려져 있다. 두 질환은 활성화 산소로 알려진 산화적 스트레스 양의 증가에 따른 근육 내부에서의 신경계 손상과 단백질 합성 부족, 부적절한 영양 및 신체활동의 부족 등과 관련성이 있었다. 그러한 증후군을 예방하고 개선하기 위한 올바른 영양과 신체활동(유산소운동, 저항운동 등)의 역할과 중요성이 강조되고 있다. 결론적으로 노화와 관련한 근감소증과 노쇠함을 예방하고 극복하기 위한 가장 유익한 방법으로서 규칙적인 운동을 포함한 양질의 단백질 공급을 제안한다.

일부 초등학교 급식 식단의 평가(1): 구성 식품의 다양성과 영양소 공급량 (Evaluation of Elementary School Lunch Menus (1): Based on Food Diversity and Nutrient Content)

  • The sound dietary habit is formed in childhood, which is basic foundation for keeping health. The school foodservice is practiced to provide proper nutritions, to establish the sound dietary habit. Continuous evaluation and improvement are necessary to operate school foodservice effectively. This study was conducted to evaluate the quality of meals served in elementary school based on nutrient content, food diversity. A questionnaire was mailed to dietitian of each school requested for menus of one week. Menus served in 77 schools from each province and major cities in Korea were analyzed. The results of this study were summarized as follows; Compared to 1/3 of RDA for children, many schools provide lower amounts of energy, calcium and Vitamin A. Proportions of energy from carbohydrate, protein and fat were 59.64%, 17.43% and 20.11%, respectively and were not significantly different by the area, the foodservice system, and the number of persons served. NAR(nutrient adequacy ratio) were lowest for calcium(0.67) and Vitamin A(0.65). MAR(mean adequacy ratio) was 0.83. The results of comparison of NAR and MAR by the area, the foodservice system, and the number of persons served were similar to those of nutrient contents. Comparing foods served by the nutrient density were different by nutrient contents, NAR and MAR. Mean nutrient density per meal were higher in large cities than in small cities and rural area, in conventional than in commissary foodservice system. Mean number of dishes and food items per meal were 5.86 and 19.87, respectively. The mean of total quantity of each food group per meal was 352g. The mean of total quantity of each food group per meal were higher in small cities and rural area than in large cities, in commissary than in conventional foodservice system. This study is based only on served menus, and the evaluations of meals based on actual consumption of children are needed. These results suggest that in order to improve the quality of school food service, realistic standard should be suggested and basic study should be done continuously.

표고 봉지재배에 있어서 영양원에 따른 재배적 특성 비교 (Comparison in Cultural Characteristics on Different Nutritions in Bag Cultivation of Lentinula edodes)

  • 표고 봉지재배시 적정한 영양원을 선발하기 위하여 참나무톱밥과 혼합하여 실험한 결과 T5의 pH는 4.7로서 T1(대조구)과 대등하였다. 균사 생장량은 T5에서 배양 35일경에 모두 생장하였으며, 대조와 비슷한 경향을 나타내었다. 혼합배지에 따른 배양특성은 T5가 배양일수 87일로 T1(대조)과 대등하였으며, T1, T2 및 T5의 갈변정도가 다른 처리구에 비해 우수하였고, 배양율도 100%이었다. 혼합배지에 따른 재배기간을 조사한 결과 초발이 소요일수, 생육기간, 재배일수 모두 T5처리구가 T1(대조)과 대등하였다. 혼합배지에 따른 수확주기별 수량 및 상품화율은 T5에서 수량이 348g/kg으로 T1(대조구)에 비해 높았으며, 생물학적 효율은 34%로 다른 처리구들에 비해 가장 높았다.

  • Human needs energy to maintain metabolisms, and these energy sources were uptake foods or nutritions. The most effective source was known for glucose among the nutrients, furthermore the glucose is an important source of energy for blood cells and control brain maintenences cells. But as food is plentiful and eating habits become more westernized, fast food and irregular meal times by works. Nowadays, diabetes were rapidly increased by malnutriton and obesity. Diabetes was the sixth highest on the list of causes of death in Korea, released by the Statistics Korea in 2015, which is considered a serious social problem for adult diseases. Therefore, this study aims to establish the optimal hot water extraction conditions of mixed herbs extract mixture compounds that are effective in diabetes. The independent factors were extraction temperature (X1: $40-120^{\circ}C$), extraction time (X2: 2-10 hrs.), and the ratio of water to sample (X3: 40-200 mg/mL). Their effects were assessed on dependent variables of the extract properties, which included soluble solid contents, Brix of sample extract, total polyphenols content, total flavonoids content and DPPH Radical scavenging activity. As a result, the content of total polyphenol content was the highest in No.12(6 hrs, $120^{\circ}C$, 67 mg/mL) and the highest total flavonoid contents was found in No.16(6 hrs, $80^{\circ}C$, 40 mg/mL). DPPH Radical scavenging activity showed the highest activity in No.7(8 hrs, $100^{\circ}C$, 100 mg/mL).

호텔 양식당의 스타메뉴 개발에 관한 탐색적 연구 -서울지역 특1급 호텔을 중심으로- (A Exploratory Study on the Development of Star Menus in the Western Restaurants of the Hotels Focused on the Tourism Hotels in Seoul)

  • This exploratory study is to analyze the status of star menus and suggest the development strategy of star menus in the western restaurants of the tourism hotels in Seoul. The data was collected from the chefs who have been working over 15-years in tourism hotels in Seoul by judgement sampling. The questionnaire was composed of Miller and Pavesic's 'Fifty tips for a successful menu' and Khan's 'The evaluation of menu item development', The 30-menu items were selected from the 1st survey on the menu items that were high in both popularity and contribution margin by menu engineering method. The selected menu items were analyzed by 14 lists: simplicity, ready availability of ingredients, quality, flavor, presentation, preparation, service method, nutrition quality, preference, profitability, serving temperature, descriptive copy of menu and publicity. As a result of the study, appetizer category was recorded the highest score by 4.09. Smoked salmon, Tomato and mozzarella cheese, Cream of mushroom, Cream of asparagus, French onion soup, Grilled beef tenderloin, Grilled rib-eye steak, Roasted lamb rack, King prawn, Seafood spaghetti, Chef's salad, Caesar salad, Organic salad, Fruit plate, Italian tiramisu and Yogurt ice cream were recorded high score. The development strategy of star menu is belows : the menu writer must consider the productivity, effectiveness, popularity and profitability, the regular customers want varieties and creativity in the menu and the operators have to include the star menu items in the set menu.

명아주과 3종 식물의 염 환경에 대한 적응특성의 비교 (Adaptations and Physiological Characteristics of Three Chenopodiaceae Species under Saline Environments)

  • 건조 및 염 환경에 우점종으로 분포하고 있는 명아주과 식물의 염 및 무기 영양 농도에 따른 생리적 적응특성을 비교하기 위해 염습지에 널리 분포하는 칠면초(Suaeda japonica), 퉁퉁마디(Salicornia herbacea) 및 채소로 재배되는 근대(Beta vulgaris var. cicla)를 재료로 하여 염 농도(0, 50, 100, 200, 400 mM NaCl) 및 무기영양염 농도(Hoagland 용액의 1/1, 1/5, 1/10배액)를 달리하여 식물의 엽생장과, 질소, 무기 이온, 전기 전도도 및 삼투조절물질의 변화를 정량적으로 분석하였다. 3종 명아주과 식물은 무기영양 및 염의 농도변화에 대해 식물체에 상당량의 염을 축적하였으며, 높은 내염성 기구를 통해 400 mM NaCl 처리에서도 현저히 생장을 촉진하는 호염성의 퉁퉁마디와 200 mM NaCl 처리까지 약간의 생장 촉진을 보이는 근대 및 높은 내염성을 가지면서 50 mM NaCl 이상 처리구에서 약간의 생장 저해를 보이는 칠면초의 세가지 염내성의 종 특성을 보였다. 무기이온의 동태에 있어서 3종 식물은 무기 영양 및 염 농도와 무관하게 체내에 소량의 수용성 Ca을 함유하였고($<10{\mu}M/g$ plant water), K이온은 염 농도가 증가함에 따라 다소 감소하였으며, $Na^+$$Cl^-$은 배지의 무기 영양과는 무관하게 염 농도가 증가함에 따라 현저히 증가하였다. 총 질소 함량은 무기 영양 및 염의 농도가 증가함에 따라 감소하는 경향을 보였으며, 전기 전도도와 삼투몰농도는 무기영양보다 염의 농도가 증가함에 따라 증가하는 양상을 보였다. Glycinebetaine과 proline의 함량은 각각 $0.2{\sim}2.5{\mu}M/g$ plant water와 $0.1{\sim}0.6{\mu}M/g$ plant water였고, 50 mM NaCl 처리구에서 최대치를 보였다.

水稻(수도)에 대한 질소(窒素) 및 인산효율증진(燐酸效率增進)에 관한 연구(硏究) -(수도(水稻)에 대한 Amo-1618 처리(處理)가 수량(收量), 무기영양요소(無機營養要素)의 동태(動態) 및 $P^{32}$ 표식중과석(標識重過石)의 이용율(利用率)에 미치는 영향(影響))- (Effects of Amo-1618 on the Yield, Behavior of Mineral Nutritions and Uptake Ratio Employing P-32 Labelled Double Calcium Super-phosphate in Rice Plants)

  • 수도(水稻) 증산(增産)의 관건(關鍵)을 이룰 질소효율(窒素酵率)의 증진(增進)을 위하여 생장억제물질(生長抑制物質)로 알려진 Amo-1618(4-hydroxyl-5-isopropyl-2-methyl-phenyl-trimetyl-Ammonium Chloride 1-piperidine Carboxylate)를 수도(水稻)에 처리(處理) 할 때 수량(收量) 및 수량구성요소(收量構成要素)와 질소효과(窒素效果)및 인산(燐酸) 기타 몇가지 무기영양요소(無機營養要素)의 동태(動態)에 미치는 영향을 조사검토(調査檢討)하고자 본실험(本實驗)을 시도(試圖)하였다. 공시품종(供試品種)으로써 수원(水原) 82호(號)를 사용하고 Pot시험(試驗)에 의(依)하였으며 Amo-1618은 10000ppm 농도(濃度)로 분얼초기(分蘖初期) 1 회엽면공급(回葉面供給)하였다. $P^{32}$$Ca(H_2P^{32}O_4)_2.\;2H_2O)$ 형태(形態)로 $80\;{\mu}c/pot$ 식 pot 내(內) 토양(土壤)에 공급(供給)하였다. 얻어진 실험결과(實驗結果)는 다음과 같다. 1) Amo-1918은 수도초장(水稻草丈)에 대하여 순이(巡異)를 가져오지 않았으나 분얼수(分蘖數)는 증가(增加)하였고 질소(窒素)와의 상보적(相補的) 효과(效果)(Synergistic effect)를 나타내고 있다. 2) 입중(粒重)과 임실율(稔實率)도 Amo-1618 처리가 이를 증가(增加)시키고 특히 질소다시구(窒素多施區)(3 배량구(倍量區))에서 그 증대효과(增大效果)가 현저(現著)하였다. 3) 수량(收量)도 질소관행구(窒素慣行區)및 다시구(多施區)에 비(比)하여 Amo-1618 처리(處理)한 다시구(多施區)에서 유의성(有意性) 높게 증가(增加)되었고 이 증수효과(增收結果)는 Amo-1618의 각종(各種) 수량(收量) 구성요소(構成要素)에 대한 효과(效果)과 질소효율(窒素效率) 증대효과(增大效果)에 의존(依存)하는 것으로 보인다. 4) Amo-1618에서는 수확기(收穫期)의 이삭의 질소함량(窒素含量)이 증가(增加)되고 특히 Amo-1918 처리(處理)한 질소다시구(窒素多施區)에서 유의성(有意性)있게 증가(增加)하였었으며, 잎과 줄기의 함량(含量)은 많은 차이(差異)가 있었다. 5) 인산(燐酸) 함량(含量)도 이삭에서 Amo-1618 처리(處理)로 현저(現著)히 증가(增加)되었고 이삭으로의 전류(轉流)를 촉진(促進)하고 있다. 6) 가리(加里), 칼슘, 마그네슘, 함량(含量)은 일반적(一般的)으로 Amo-1618 처리(處理)에 의하여 뚜렷한 변화(變化)를 나타내지 않았으나 생육초기(生育初期)의 가리(加里) 함량(含量)은 증가(增加)되었다. 7) $P^{32}$를 사용(使用)한 인산(燐酸) 이용률(利用率)은 Amo-1618 처리(處理)한 질소다시구(窒素多施區)에서 유의성(有意性) 높게 증가(增加) 되었다. 8) 생장조절제(生長調節劑) 또는 생장억제제(生長抑制劑)의 일종(一種)으로 알려진 Amo-1618은 수도수량(水稻收量), 기타, 수량(收量) 구성요소(構成要素)에 대하여 질소다비(窒素多肥)와의 현저한 상보적(相補的) 효과(效果)로 증수(增收)를 가져온다는 것이 밝혀졌으나 그 원인(原因)으로써 Amo-1618이 대사과정(代謝過程)에서 질소다시(窒素多施)와 관계하는 내비성(耐肥性)의 증대(增大), 내병성(耐病性) 증가(增加)들에 영향을 미칠뿐아니라 흡수능(吸收能)과 이삭에 대한 전류(轉流)를 증대(增大)하는 효과(效果)에 의한다는 점(點)등 그 근거(根據)를 제문헌(諸文獻)에 입각(立脚) 고찰(考察)하였다.

소아 총정맥영양의 간담도계 합병증에 대한 Ursodeoxycholic acid의 예방효과에 대한 연구 (Ursodeoxycholic Acid in the Prevention of Pediatric Parenteral Nutrition-associated Cholestasis)

  • Cholestatic liver disease is a frequent complication of prolonged parenteral nutrition, especially in premature infants. Numerous factors have been cited as contributing to TPN associated cholestasis. However the exact etiology remains obscure. Ursodeoxycholic acid (UDCA) has been reported to be beneficial far children and adults with various chronic cholestatic liver disease. The aim of this prospective, randomized, double-blind, placebo-controlled study was to determine the preventive effects of UDCA administration during TPN. Seventeen pediatric patients (8 boys and 9 girls) undergoing TPN were assigned randomly to two groups, UDCA and placebo group. UDCA group (n=9) received 15 mg/kg/day UDCA and placebo group (n=8) received 15 mg/kg/day placebo enterally during the TPN period. Liver function tests (total bilirubin, aspartate aminotransferase, alanine aminotransferase, alkaline phosphatase) were per-formed before TPN and weekly or three times a week. The patients' weights, complete blood count, composition of TPN, and the infusion rate of TPN and lipid were monitored everyday. Calcium and phosphate were monitored twice a week. Between the UDCA and placebo groups, there were no differences in weight at the onset of TPN, birth weight, duration of TPN, respiratory distress syndrome associated with prematurity, age at the onset of TPN, gestational age, the number of days the patients received antibiotics, the number of patients received enteral nutritions and the composition of TPN. In contrast, there was a significant difference between the UDCA and placebo groups in alanine aminotransferase levels during TPN. It doesn't seem that UDCA administration during TPN correlates directly with improvement of liver function. But the preventive administration of UDCA may be effective in reducing liver enzyme, alanine aminotransferase and has no adverse effects.

동지나해, 황해의 참조기 어장분포와 해황과의 관계 (The Relationship between Oceanographic Condition and Fishing Ground Distribution of Yellow Croaker in the East China Sea and the Yellow Sea)

  • 동지나해,황해에 있어서 최근 10 개년간($1970\sim1979$) 안강망에 의한 참조기 어획통계자료로부터 어장의 평균분포와 해황과의 관계 및 계절만화를 제사한 결과는 다음과 같다. 참조기의 중요어장은 제주도 서-남서방 $40\sim150$마일 해역의 9개 해구이며, 이 어장에 있어서의 어획양 영동계수는 $0.8\sim2.1$로서 크나, 년 평균어획양의 약 $70\%$가 여기에 집중되고, 그 면적은 어획이 있었던 전어장면적의 겨우 $11\%$에 지나지 않으며, 또 CPUE의 평균(27kg/hau1)이 비교적 컸다. 참조기의 어획양과 CPUE는 비슷한 계절변화를 하며, 주어기는 춘추 양어기가 있으며, 춘계($13\sim5$월)쪽이 추절 ($9\sim10$월)쪽 보다 어획양 및 CPUE가 크다. 어업의 중심은 주년 제주도 서-북서방에 집중하고 있다. 어장의 분산은 동서방향보다 남북방향이 크며, $10^{\circ}C$등온선이 남하하면 작아지고, 북상할 때 커지는 경상을 나타내어 황해저층냉수의 지표인 $10^{\circ}C$ 등온선의 소장과 밀접한 관계가 있음을 보였다.

시판 포장가공 식품의 영양표시 현황에 관한 조사연구 (A Study on the Current Nutritin Labeling Practices for the Processed Foods Retailed in the Supermarket in Korea)

  • Our current food hygiene law mandates nutrition label (NL) for the special nutrition foods, health support foods, instant foods, and foods with certain nutrient emphasized note, only. Currently more processed foods are bearing nutrition labels though the format is quite inconsistant. This study examined the status on current nutrition labeling practices for the processed foods that are retailed in the supermarket. The obtained information was assessed in the aspects of numerical data presentation on nutrients content, descriptive terms, health claim, and the format. The results are summarized as follows. 1) Foods with NL are limited to the food category specified by current hygiene law while voluntary nutition labeling is few. 2) Descriptive terms such as free, low, and sufficient are not substantiated with quantitative data. The efficacy of microelements which has not been clalified yet are overemphasized but major nutrients are ignored. 3) The regulations for the descriptive terms are set on the base of the nutrient content per 100g or 100ml under current nutrition labeling act. It would mislead consumers thus the definition for these descriptor be better set on the unit of the amount of food customary eaten at one time. For this the standard serving size should be set officially. 4) Quantitative nutrition information given on food products is difficult to compare because of the lack in formality. The title of NL, load and kinds of nutritents, order of nutrients listed, the unit of expression, RDA comparision, and reference RDA are inconsistant among the foods similar in dietary property. Uniform format is needed to give NL the credibility and usefulness. Proividing nutrition information to the consumers with NL is a worldwide practice though its efficacy has been controversial. Under newly legistered health promotion law in Korean nutrition education is esxpected to take part in to improve national nutrition condition and NL would education is expected to take part in to improve national nutrition condition and NL would be a potent tool for public nutritions education. It appears to be the time to mandate NL to all the processed foods in the market. The result of present study would initiate further consumer experiments related to NL. Various interest groups such as food and nutrition professions, public health organizations, government regulatory agencies, food producers and marketers, and consumer groups need to particepate and communicate for the legislation of NL and the development of NL format.
