경상북도 안동군 농촌지역 주부들의 영양지식, 식습관, 식품기호도 및 영양소섭취실태에 관한 조사 연구 (A Study on the Nutritional Knowledge, Food Habits, Food Preferences and Nutrient Intakes of Rural Housewives.)

  • This nutritional survey was conducted from January 20 to February 8, 1994, in order to investigate the nutritional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of housewives living in Andong district, rural area of Korea. The subjects of this survey were 181 rural housewives living in Andong area. The completely answered questionnaires were analyzed for nutritional knowledge, food habit, nutritional attitude, food preferences and nutrient intakes of rural housewives. The results obtained are summarized as follows: The subjects had a high level of perceived knowledge (79.9%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.6%. The average nutritional knowledge score was 7.93 out of possible 15 points, and food habit score was 5.08 out of 10 points. Most of the subjects belonged to "Fair" or "Poor" food habit group, which is considered to be relatively bad. With increasing age, the percentage of perceived knowledge, accuracy, and nutritional knowledge score were getting lower. Food habit score and nutritional attitude score were getting lower with increasing age, too. The correlation between nutritional knowledge score and food habit score was low(r=0.01). The correlation between nutritional attitude score and food habit was low, too(r=0.15). Food preferences for kimchi, cooked rice, potato, milk, beef, chicken, and carrot were high. Average calorie and protein intakes of the subjects were 1915.7㎉ and 77.0g respectively. The ratio of caloric nutrients intake was carbohydrate 65.9%, protein 14.9%, and fat 19.2%.

  • This nutritional survey was conducted from February 8 to March 10, 1994, in order to investigate the nutritional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of urban middle-aged women living in Daegu and Pohang district. The subjects of this survey were 164 urban middle-aged women living in Daegu and Pohang Area. The completely answered questionnaires were analyzed for nutritional knowledge, food habits, nutritional attitude, food preference and nutrient intakes of urban middle-aged women. The results obtained are summarized as follows: The subjects had a high level of perceived knowledge (82.9%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.1%. The average nutrition knowledge score was 8.26 out of possible 15 points, and food habit score was 5.50 out of 10 points. Most of the subjects belonged to 'Fair' or 'Good' food habit group, which is considered to be relatively good. With increasing age, the percentage of perceived knowledge, accuracy, and nutrition knowledge score were getting lower. But food habit score and nutritional attitude score were getting higher at 40's women than 30's women. The correlation between nutritional knowledge score and food habit score was low (r=0.0748). The correlation between nutritional attitude score and food habit score was low, too (r=-0.0653). Food preferences for kimchi, potato, cooked rice, beef, noodle, cabbage and milk were high. Average calorie and protein intake of the subjects were $1967.4{\pm}27.8\;Kcal$, $75.8{\pm}1.4\;g$ respectively. Carbohydrate, protein and fat ratio on energy composition was 63.3%:15.5%:21.2%.

충남지역 고등학생의 성별에 따른 영양지식, 식행동 및 식습관 연구 (A Study on the Nutrition Knowledge, Dietary Behaviors, and Dietary Habits according to the Gender in High School Students in Chungnam Area)

  • Aim of this study is to investigate the nutrition knowledge, dietary behaviors, and dietary habits by the gender in high school students in Chungnam province. Girls students had a higher score than boys students for nutritional knowledge, not in the significant difference. However, boys students had a higher score for dietary behaviors than girls students. Dietary habits showed a significant difference in the unbalanced food habit and eating speed by the gender, and the eating speed of boys students was faster than that of girls students. For boys students, the nutritional knowledge and dietary behaviors did not have the significant correlation. Otherwise, girls students had the positive correlation between the nutritional knowledge and dietary behaviors, and had the characteristics of behaviors that the higher the nutritional knowledge score, the better eating habit. In addition, the boys and girls students had the positive correlation between the score of nutritional knowledge and the frequency of breakfast, and the score of nutritional knowledge and the frequency/regularity of breakfast, respectively. Because some dietary habits/behaviors are related closely to their nutritional knowledge, the high school students need the systematic and steady nutritional education to apply their known nutritional knowledge to actual life.

청소년기 리듬체조 선수들의 영양소 및 식품 섭취 상태와 영양지식 (The Status of Nutrient and Food Intakes and the Nutritional Knowledge in Adolescent Rhythmic Gymnasts)

  • The objectives of this study were to investigate 1) the foods intake as well as nutrients intake, 2) the nutritional knowledge, and 3) the relations between the foods and nutrients intakes and nutritional knowledge in adolescent rhythmic gymnasts (RGs). The results are summarized as follows. Average daily intakes of energy, calcium, iron, vitamin A, vitamin B$_1$ vitamin B$_2$ and niacin were in 45-74% of the RDAs for Koreans. Average daily energy intake was only about 50% of energy expenditure by physical activities. Average daily intakes of each food group were generally lower, but intakes of breads and confectionaries, sugar and sweets, milks and dairy products, and instant foods were higher in the RGs compared to the nonathletic students of the same age from the National Health and Nutrition Suvey. The contribution of empty-calorie foods such as breads and confectionaries, beverage and instant foods to the major energy nutrients were high. Mean of total nutritional knowledge score of RGs was 28.4 of total score 50. In categorical score of nutritional knowledge, the RGs make a best score on food sources and they get the lowest marks for food exchange. Among the nutrients, intakes of crude fiber, animal Fe, Na, K, vitamin A, carotene, vitamin B$_1$ niacin and vitamin C and, among the food groups, intakes of mushrooms, fruits and meats had relations with one of the total or categorical nutritional knowledge scores in the RGs. In conclusion, nutritional status of adolescent RGs was poor due to their unbalanced diet composed of empty-calorie foods, and their undesirable food intake pattern was supposed to be related to the low nutritional knowledge score of them. These results indicate that the RGs should be given more nutritional knowledge to improve their nutritional status and the exercise performance.

Health Related Nutritional Knowledge and Dietary Behavior Regarding Caffeine Intake among High School Students in Yongin Region

  • Objectives: We aimed to examine health-related nutritional knowledge and dietary behavior related to caffeine intake among high school students (n = 310) in the Yongin region of Korea. Methods: Data were collected using a face-to-face survey, and analyzed using chi-square test, t- test, and logistic regression analysis. Results: The level of caffeine intake in respondents was divided into low (< 30 mg/d; n = 208) and high caffeine intake groups (> 30 mg/d; n = 102). Total nutritional knowledge related to bone disease was higher in the low intake group (score 2.75) than the high intake group (score 2.39; p < 0.05). The high intake group had lower scores for nutritional knowledge (score 0.70; p < 0.05) related to how caffeinated beverages affect sleep and for dietary behavior (score 3.25; p < 0.001), based on "I avoid caffeinated foods before sleep," than the low intake group (nutritional knowledge score, 0.80; dietary behavior score, 3.76). Conclusion: In the overall analysis, the low caffeine intake group had better nutritional knowledge related to bone and sleep health, and healthier dietary behavior related to sleep health compared with the high intake group.

  • The purpose of this study was to present the basic data for the education of nutrition to female teachers by surveying the degree of nutritional knowledge, the attitute toward nutrition and eating habits of the female teachers, and analyzing the present dietary food. 1. The average score of their nutritional knowledge was 17.53 (the highest mark was 25) and the percentage of the right answers was 73.6. 2. The nutritional knowledge was related to their ages, and whether or not they majored in domestic science. Younger and domestic science majors scores of nutitional knowledge were shown to be higher. 3. They had dinner more regularly than breakfast or lunch and the score of nutritional knowledge was higher in proportion to the regularity of their breakfasts. As nutritional knowledge was reflected in their daily lives and bread was used as a substitute of their meals, the degree of their nutritional knowledge was higher. 4. For self evaluation of nutritional knowledge, the higher the score of their nutritional knowledge was, the more they thought they knew and those with high scores seemed to get information about nutrition through specialized books and cookbooks.

여고생의 영양지식과 비만도 및 식이양상과의 관계 연구 (A Study on Nutritional Knowledge, Obesity Index and Dietary Paterns of High School Girls)

  • This study was performed to Investigate the nutritional knowledge and dietary patterns of 450 high school girls in some areas of Seoul. The survey conducted from September 20 to 25, 1993. The results obtained were summarized as follows ; The average height and weight of the subjects were 160.2$\pm$5.Ocm and 52.3$\pm$6.7kg respectively. The average obesity index of the subjects was 96.8$\pm$11.7%. Menarche was at 13 years of age in 35.6% of the subjects and at after 14 years of age in 37.3% of them. The average score of nutritional knowledge was 60.04 $\pm$ 14.49 and the average score of Perceived nutritional knowledge was 83.9$\pm$ 14.44. The mean score of nutritional knowledge was 49.61 $\pm$ 13.45. 35.6% of subjects ranked lecture of score as their primary sources of nutritional information. Major dietary problems of subjects were eating rapidly, skipping breakfast, unbalanced Inlet and choice of snacks according taste. Underweight group showed significantly higher than other groups In unbalanced diet(P<0.01) and showed significantly higher than other groups in taking a medicine(P<0.001). Obese group showed significantly lower than other groups in remaining meals and unbalanced diet (P<0.05) and showed significantly higher than other groups In voereating.

경남지역 학교급식 영양사의 영양지식 및 식생활 태도 (Nutrition Knowledge and Dietary Attitudes of the School Foodservice Dietitians Working in Kyungnam Area)

  • This survey was conducted in February 24, 1999, in order to investigate the nutritional knowledge and dietary attitude of the school dietitians working in Kyungnam area. Subjects consisted of 305 school dietitians of which 163 married and 141 unmarried. The results obtained are summarized as follows : The average nutritional knowledge score was 10.50 out of possible 15 points, and dietary attitude score was 69.36 out of 100 points. Most of the subjects belonged to "Fair" group in terms of nutritional knowledge and dietary attitude level. Married dietitians scored significantly higher on dietary attitudes than unmarried dietitians (p<0.05). The correlation between nutritional knowledge score and dietary attitude score was not statistically significant(r=0.107)

  • This study was carried out to investigate the level of nutritional knowledge dietary behavior and nutrient intakes of rural housewives and to analyze the relationship among each other. The data for this study collected by the interview with questionnaire in 1990 from the 303 rural housewives of 13 districts and 3 cities in Chunbuk province sampled by random sampling method. Statistics used in analysis were frequency, proportion, X2-test and statistical significance was tested at 0.05 level. The main results of the study were summairzed as follows : 1) Nutritional knowledge score of rural housewives was higher, in young age group than in old group and in high income group than in low income. 2) There were not the significant difference between the dietary behavior of the rural housewives and their nutritional knowledge score. 3) As the nutritional knowledge score of the subjects was higher nutrient intakes level of calcium and iron were higher, however, there were not the significant difference between the nutritional knowledge score and nutrient intakes levels of energy, protein and fat respectively. 4) As the level of meal management were high, only protein intake among various nutrients was increased. There were not the significant difference between the nutrient intakes and their food habits.

일부 초등학교 5,6학년생의 채소 선호도와 영양지식 및 건강관련 요인과의 관련성 (Vegetable Preferences and Their Associations with Nutritional Knowledge and Health-Related Variables in 5th and 6th Grade Schoolchildren)

  • With recent increases in demand for women's social participation, children have tended to favor western-style foods and dislike vegetables (Veg.). The objective of this study was to evaluate dietary behavior and Veg. intake in 612 elementary school children (339 boys; 273 girls) in Gyeonggi-do. 66.5% of the subjects reported that they liked Veg. The most frequent reason given for this preference in Veg. liking group was that vegetables were 'delicious' (35.6%), followed by 'nutritious' and 'frequent intake'. The most frequent reason given for disliking Veg. in the Veg. disliking group was that vegetables are 'not delicious' (94.6%). Approximately half of the subjects had correct knowledge about vegetables. The total score of general nutrition knowledge was 7.7 points (a perfect score is 10 points) and the majority of students generally had good dietary behaviors. The Veg. liking group scored higher on knowledge about Veg., general nutritional knowledge, dietary behavior, and Veg. preference than did the members of the Veg. disliking group (p<0.001). The 'active' group had the highest score for dietary behavior (p<0.001), and the scores for dietary behavior and Veg. preference increased with increasing self-rated health status (p<0.001). The score of normal BMI group for nutritional knowledge about Veg. was higher than that of the underweight group (p<0.05). The higher self-rated academic score group showed higher on knowledge about Veg., general nutrition knowledge, dietary behavior (p<0.001) and Veg. preference (p<0.05). Dietary behavior and preference of Veg. were positively correlated with nutritional knowledge. To improve health by increasing Veg. intake, education about the nutritional importance of Veg. should be needed, and continuous nutritional education is recommended to foster good food habits and Veg. preferences in children.
