Association between Eating Speed and Scores of Nutritional Quotient for Korean Adolescent (NQ-A) among High School Students in Chungbuk (충북지역 일부 고등학생의 식사속도와 청소년 영양지수 점수와의 관련성)

  • This study aimed to investigate the relationship between eating speed and nutritional status among Korean high-school students using Nutrition Quotient for Korean Adolescents (NQ-A). In this study, a questionnaire survey was conducted in 453 high-school students (227 boys and 226 girls) from September 2019 to October 2019 in Chungbuk area. Based on the self-reported speed of eating data, subjects were classified into a fast group (n=180), a medium group (n=184), and a slow group (n=89). NQ-A scores for each group were measured in each speed group. In the environment section, girls showed a significant difference in usage time of electronic devices, such as TVs and smartphones: the fast group spent significantly more time than the medium group (p=0.035). In the practice section, among boys, the slow group had significantly higher scores for washing hands before eating than the medium and the fast groups (p=0.022). This study suggested that eating speed of high school students is associated with health-related environment factor and practice factor of NQ-A, such as time spent on smart devices or washing hands before eating. The study results can provide baseline data for nutrition education on health management of high school students.

  • The first option in manure management is developing an environmentally sound nutritional management. This includes proper feeding programs and feeds which will result in less excreted nutrients that need to be managed. Critical components that should be controlled are N, P and minerals that are used at supranutritional levels. Amino acid supplementation and protein restriction reduce N excretion in the monogastric animals. Supplementation with enzymes, such as carbohydrases, phytase and proteases, can be used to reduce excretion of nutrients and feces by improving digestibility of specific nutrients. Growth promoting agents, such as antibiotics, beta-agonists and somatotropin, increase the ability of animals to utilize nutrients, especially dietary protein, which results in reduced excretion of N. Some microminerals, such as Cu and Zn, are supplemented at supranutritional level. Metal-amino acid chelates, metal-proteinates and metal-polysaccharide complexes can be used at a much lower level than inorganic forms of metals without compromising performance of animals. Deodorases can be used to avoid air pollution from animal manure. Nutritional management increases costs to implement. It is necessary to assess the economics in order to find an acceptable compromise between the increased costs and the benefits to the environment and production as well.

Nutritional Intake and Biochemical Status in Blood and Urine of Elderly Women

  • The present paper resents information on the dietary intake and biochemical status of elderly who are living in different types of residence. On hundred and sixty five women(age 65-80 years old) were divided into three groups ; those who are living alone (LA) , living with family (LF) , and living in institutions (LI) within the same general community. Nutrient intake, body fat content, and biochemical measurements in blood and urine were examined statistically and potential environment-related influence are discussed. Elderly women living alone had significantly lower intake of nutrients than elderly women were not living alone LF group showed significantly higher fat consumption than LA and LI groups. Body fat content, plasma albumin and calcium levels in elderly women who lived with other people were significantly higher than those in elderly women living alone, but fat weights and lean body mass between groups were not different. None of the plasma lipid fractions were significantly different among the three groups except LDL-cholesterol (LDL-C) concentration. In the LI group, LDL-C was lower than that of LF and LA groups. From the above results, serious nutritional deficiency has been shown in elderly women that live alone. Therefore, nutritional education and social help should be carried out to improve these situations for elderly people.

  • To evaluate the nutritional status of the children in socioeconomically high apartment com-pound a nutritional survey of 276 children in the YunJung elementary school was undertaken in July of 1990. Yunjung elementary school is situated in Youido-dong Youngdeungpo-ku of Seoul and offers school lunch program The results were as follows : Anthropometric data of subjects showed higher results than the Korean standards : 11.0% of subjects were proven to be overweight and 21.6% belonged to obese group. Mean urinary the RDA's except for intake of was 10.2$\pm$3.7 Total daily energy and nutrient intake exceeded the RDA's except for intake of iron. Carbohydrate provided 57% of total energy intake; protein accounted to for 17 ; fat provided 27% The between meals provided 27.4% of total energy intake. The survey clarified that school lunch largely contributed to the nutritional balance of these children. Family environment and anthropometric data were positively correlated with nutrient intake. The survey emphasizes the urgent need to improve the nutrition education of these children.

The Nutrition Assessment and Care for the Elderly in Japan

  • In Japan, a new nursing insurance system was enforced in April 2000, where premiums were paid according to the level of necessary care. Our project, Nutrition Care and Management(NCM) for the elderly was started in 1995, funded by the Ministry of Health and Welfare of Japan. The NCM project was to provide appropriate nutrition care for the elderly and to see that it effectively functions as part of the health care services. There were 4 stages to the project : the first stage was to find out the PEM status among the elderly patients in hospital and home-care settings in Japan. The 2nd stage was to develop and evaluate nutritional assessment methods, anthropometry, resting energy expenditure measuring methods using of portable indirect calorimeter, and the convenient protein energy intake assessment methods, etc. for the elderly patients with PEM risk. The 3rd stage was to examine the effectiveness of the nutrition care plan induced of protein energy supplement and team care in improving nutrition among the elderly patients. The last stage was to develop the NCM set for the elderly patient based on the past three years of scientific evidence. it is expected that the NCM system for the elderly will provide adequate nutritional care management, improve the elderly care environment and create effective resource management.

Relationship of Environmental Factors, Genetic Factors and Obesity with Sexual Maturity among Elementary School Girls (초등학교 여학생의 환경과 유전적 요인 및 비만도와 성적성숙도와의 관련성에 대한 연구)

  • The purpose of this study was to identify the factors that related to obesity among 6th grade elementary school girls. The study subjects were 337 girls residing in Seoul. Not only variables of nutritional environment such as eating habits, health related behavioral variables, nutritional feeding methods during infancy, and genetic factors but also sexual maturity had been included as a obesity related factors. Association between obesity and related variables were analyzed by $x^2$(Chi-square) test. The obesity prevalence of the study subjects were 16% based on Röhrer Index(RI). Fifty-three percent of the study subjects experienced menarche at the time of data collection. Result of analysis showed that not only the nutritional enviromental variables such as eating habits, specific food preferences, and habit of exercise but also genetic factors did not show any statistically significant association with obesity. Above finding may imply that more variables other than the variables included in this study might have influenced on the obesity of the children. However sexual maturity in term of breast development showed significant association with obesity.

Yield, Nutritional Content, and Antioxidant Activity of Pleurotus ostreatus on Corncobs Supplemented with Herb Residues

  • Improper disposal of herb residues in China has caused severe problems to the surrounding environment and human safety. Three herb residues, i.e., compound Kushen injection residues (CKI) and part one and part two of Qizhitongluo Capsule residues (QC1 and QC2, respectively), were used for the cultivation of Pleurotus ostreatus. The effect of the supplementation of corncobs (CC) with different herb residues on yield, nutritional composition, and antioxidant activity of P. ostreatus was investigated. Compared to the control, the higher mycelial growth rate was observed on substrates CC +30% CKI and CC +30% QC1, while the higher yield was obtained from substrates CC +30% QC2 and CC +30% CKI. Moreover, chemical analysis of fruit bodies revealed that the addition of herb residues to CC significantly increased proteins, amino acids, ashes, minerals (Na and Ca), and total phenolic contents but significantly reduced carbohydrates and $IC_{50}$ values of DPPH radicals. In addition, no heavy metals (Pb, Cd, and As) were detected in the fruiting bodies harvested from different substrate combinations. These results demonstrated that mixtures of CC with herb residues might be utilized as a novel, practical, and easily available substrate for the cultivation of P. ostreatus, which is beneficial for the effective management of herb residues.

Awareness and Consumption Behavior of Vegetarians and Omnivores on Plant-based dairy alternatives (식물성 대체 유제품(Plant-based dairy alternatives)에 대한 채식주의자와 잡식주의자의 인식 및 소비행동)

  • This study investigated the awareness and consumption behavior of 118 vegetarians and omnivores toward plant-based dairy alternatives. The preference and choice attribute questionnaires were compared. Significant differences were obtained between the two groups when considering the purchase experience, preference, and selection attributes of plant-based dairy alternatives. Vegetarians had more experience purchasing plant-based dairy alternative products. In both groups, environmental and animal protection were the major factors that influenced the highest response rate for purchasing plant-based dairy alternatives. The preference score of vegetarians for plant-based dairy alternative products was high, indicating that vegetarianism had a significant effect on their preference for plant-based dairy alternative products. Analysis of selection attributes revealed that price, product weight, appearance, and manufacturer were considered important by vegetarians, whereas nutritional components and labeling, manufacturing environment, composition of ingredients, and taste and texture were considered more important by the omnivores. Results of this study can be used as basic data for the future development of the fast-growing industry producing plant-based dairy alternative products.

Development of evaluation items for adolescents' dietary habits and nutritional practices reflecting eating behaviors and food environment (식행동, 식생활 환경을 반영한 청소년의 식생활·영양 실천 평가 항목 개발)

  • Purpose: A comprehensive evaluation item was developed to assess adolescent dietary habits and nutritional practices, considering food intake, eating behaviors, and food culture, such as social support and food environment. Methods: The 59 candidate items of the evaluation checklist were obtained based on the results of the eighth Korea National Health and Nutrition Examination Survey data, Korea Dietary Reference Intakes, dietary guidelines for adolescents, Youth Risk Behavior Survey data, national nutrition policies and dietary guidelines, and literature reviews. Four hundred and three middle and high school students residing in metropolitan areas participated in a survey using the 58-item checklist, which was selected through expert evaluation and content validity ratio analysis. The construct validity of the assessment tool for the quality of adolescent diets was assessed by exploratory factor analyses to determine if the checklist items were organized properly and whether the responses to each item were distributed adequately. Results: The Bartlett sphericity test was significant for each area (p <0.001), and the eigen values were greater than one. The Kaiser-Meyer-Olkin and cumulative proportions by areas were food intake (0.765 and 56.8%, respectively), eating behaviors (0.544 and 64.8%, respectively), and food environment (0.699 and 62.4%, respectively). Twenty-two checklists were determined for the final evaluation items for the adolescents' dietary habits and nutritional practices and were categorized into three distinct factors: food intake (10 items), eating behaviors (4 items), and food environment (8 items). Conclusion: The evaluation items for adolescent dietary habits and nutritional practices is a useful checklist for easily and quickly assessing the dietary qualities and reflecting Korean adolescents and their food environmental factors related to a sustainable diet.

Nutritional Components, Antioxidant and ACE Inhibitory Activity of Five Kinds of Wild Vegetables (the Sprouts of Aralica elata, Kalopanax pictus, Acanthopanax cortex, Cedrela sinensis, Rhus vernicifera) in Spring (봄 산채 5종(두릅, 엄나무, 오갈피, 참죽, 옻 새순)의 영양성분, 항산화 및 ACE 저해 활성)

  • This study analyzed the chemical characteristics and physiological activity of five kinds of fresh vegetables produced in trees in early spring and tried to use them as basic data for wild vegetable producers and processed food manufacturers using wild vegetables. The crude protein, minerals, ascorbic acid, folate, total phenol, total flavonoid, DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity and ACE (angiotensin converting enzyme) inhibitory activity were determined. Five spring wild vegetables contain high protein and phosphorus, indicating that they are useful food ingredients as sources of protein and phosphorus. Vitamin C content was high in R. venicifera and C. sinensis shoots, and in particular, R. venicifera and A. cortex shoots have high folic acid (folate) contents of 1,903.91 ug% and 1,525.35 ug%, respectively, which is considered a good food for folic acid intake in spring. The total phenol content was between 0.52% and 1.27%, and it was the highest in C. sinensis of 1.27%, followed by the order of R. venicifera, A.cortex, K.pictus, and A. elata, which tended to be consistent with the total flavonoid content. As for DPPH radical scavenging ability, C. sinensis (55.93%) showed the highest activity, and ACE inhibitory activity showed the highest activity in A. cortex (88.04%).
