Socio-economic status is associated with the risk of inadequate energy intake among Korean elderly (노인의 에너지 섭취 부족과 관련된 사회환경요인 분석)

  • Purpose: This study was conducted to evaluate the factors influencing inadequate energy intake among Korean elderly. Methods: Our study included 1,869 elderly people (over 60 years old) who completed a dietary survey from the fifth Korean NHANES (2010). Factors that could affect the nutritional status of the elderly included age, family status, socio-economic factors (education, family income, livelihood security, employment), and health related factors (having chronic disease, functional status, diet therapy, depression, and suicidal thoughts). Energy and protein intake were assessed using the dietary intake data from 24hr recall method. Results: The percentage of people who consumed energy less than 75% of EEA for Koreans was 23.7% in men, 31.1% in women. The carbohydrate contribution to the total energy intake in the inadequate energy intake group was significantly higher than that in the adequate intake group (p < 0.05). Factors significantly related to inadequate energy intake after adjusting for age, family status, education, family income, employment, functional status, and suicidal thoughts were education (OR: 1.480 in men, 1.614 in women) and employment (OR: 1.751 in men, 1.464 in women), age 70 years or older in men (OR: 1.475), and living with family but without spouse in women (OR: 1.496). Conclusion: In summary, the results imply that energy intake of elderly would be affected by the status of social environment with aging and nutrition-related policy for Korean elderly should be based on the social status as well as health related conditions.

  • Experiment were conducted to study the photosynthetic ability of several rice varieties and the influence of the drymatter production on the yield components of the rice plant, especially in ripening period. The photosynthetic ability at the ripening period, the varieties were classified into two groups as relatively high capacity and low capacity. With the earlier the transplanting date and the higher the N-content leaf blade, the greater the ratio of reserved assimilates befere heading time to the ear. This could be support the fact that the rate of full-ripened grains or grain yield of 'Tongil' variety may increased by the change of environment condition.condition.

METHYLMERCURY EXPOSURE IN CURRENT JAPANESE: ESTIMATION FROM HAIR ANALYSIS

  • Methylmercury (MeHg) is an environmental pollutant with neurotoxic effects on the central nervous system. The major exposure route of MeHg to humans is via consumption of fish and shellfish which accumulate the chemical through the food web in an aquatic environment. Hair mercury level is an excellent marker for MeHg exposure. We have been conducting a survey on hair mercury contents among general populations from 14 districts to estimate the current Japanese MeHg exposure level. Total mercury levels of all hair samples collected (12923 in total) were analyzed by the oxygen combustion-gold amalgamation method using an atomic absorption mercury detector. Multiple regression analysis revealed that mercury levels were significantly correlated with several covariates, such as sex, age, the amount of daily intake of total fish/shellfish, a preference for certain fish such as tuna or bonito, and artificial waving. The geometric means for the population without artificial waving were 2.47 and 1.65 ${\mu}g/g$ for males (n = 5623) and females (n = 3470), respectively. Hair mercury levels varied with age, and the variations were more significant in males. Since the difference between sexes was not evident at younger ages, some hormonal control might also be involved in the mercury uptake by human hair. The average mercury levels in our hair samples varied among the sampling districts. Tuna is a major carnivorous fish with high mercury accumulations that is often consumed in Japan. The amount of fish consumption and the preference rate far tuna would appear to be responsible far the regional variation in hair mercury levels in Japan. Recently, a provisional tolerable weekly intake (PTWI) of MeHg was revised by 61st JECFA to 1.6 ${\mu}g/kg/week$, which was about half that of the Japanese standard, and corresponded to a hair level of 2.2 ppm. The distribution of hair mercury levels in Japanese populations in the present study indicated that 25% of the Japanese females of child-bearing age were estimated to be exposed to MeHg over the PTWI level. This would reflect the high Japanese consumption of marine products. However, not only mercury contamination, but also the nutritional benefit may have to be considered when discussing the risk involved in the current level of fish and shellfish consumption in Japan.

Spring Bloom of Skeletonema costatum and Lake Trophic Status in the Hwajinpo Lagoon, South Korea (화진포호의 돌말 Skeletonema costatum 대발생과 영양상태)

  • In the spring (March to June) in 2010, one diatom Skeletonema costatum occurred outbreaks in Lake Hwajinpo, one of the typical lagoons on the east coast of South Korea. We compared the characteristics of the phytoplankton community during the bloom and extinction period of S. costatum, and evaluated the water quality based on nutritional indices. Results indicate that 1) this bloom showed the highest cell density ($>10^5$ cells $mL^{-1}$) among outbreaks of S. costatum occurred Korea, 2) occurred in below or over $20^{\circ}C$ water temperature, and 3) was destroyed in the early summer with higher temperature than the bloom period. Water quality or trophic status of the lake was eutrophic to hypertrophic with high salinity, BOD, COD and phosphate, and low N/P ratios and transparency. Phytoplankton community in the spring bloom had a high dominance and low diversity, but rightly recovered to low dominance and high diversity in the summer season. Therefore, we temporarily conclude that the bloom of S. costatum in Hwajinpo was triggered by the extended spring drought and the reduced influx of river water, and appeal that the bloom can happen repeatedly every year.

Foreign Customers' Attitudes Towards Overseas Korean Restaurants - Focusing on Korean Restaurant Experiences and Cross-national Differences - (해외 한식당 마케팅 커뮤니케이션 매체 및 한식당 이용에 대한 태도 분석 - 한식당 이용 경험 및 국가별 차이를 중심으로 -)

  • The purpose of this study was to propose effective marketing communication strategies for overseas Korean restaurants through a multilateral comparison analysis of American, Chinese, and Japanese consumers' attitudes towards communication media and Korean restaurants. The survey was written in English, Chinese, and Japanese, with guideline for surveyors, and conducted using both online and offline methods. Samples were collected from five major cities - Los Angeles, New York, Tokyo, Beijing and Shanghai, which are the foothold for the globalization of Korean food. When it comes to attitudes towards communication media, word-of-mouth showed a high mean value, indicating it as the most useful and reliable media recognized by consumers who visited Korean restaurants. Furthermore, the necessity of recognizing the importance of visual communication in the physical environment of Korean restaurants and specialized websites, featuring restaurants and gourmet food, was observed. Consumers in all three nations chose word-of-mouth as the most useful and reliable media for learning about Korean restaurants. In addition, American consumers highly depended on signage and restaurant exteriors. Chinese consumers highly recognized the usefulness and reliability of offline media, such as newspapers, magazines, and events, while Japanese consumers considered online media, such as gourmet websites, blogs and social networks, as useful and reliable sources. A significantly positive attitude and high value was observed in all who had visited Korean restaurants. American and Japanese consumers had a significantly higher rate of intention to visit Korean restaurants in the future and to tell others about their satisfaction with Korean restaurants. Meanwhile, the average rate of prior preference for Korean restaurants (when choosing restaurants) was the lowest in all three countries. This study is useful for both the Korean government and food enterprises abroad to plan and develop marketing communication strategies properly for overseas Korean restaurants.

The Physio-chemical Variation of the Host Plants and Feed Preference of the Ussur Brown Katydid, Paratlanticus ussuriensis (Orthoptera: Tettigoniidae) (갈색여치(Paratlanticus ussuriensis) 기주식물의 이화학적 특성변화와 먹이선호 구명)

  • In 2006 and 2007, there was a big outbreak of the Ussur Brown Katydid, Paratlanticus ussurriensis in the central part of Korea attacking some orchard trees. Until 2000, the katydid had not been regarded as an agricultural pest because they were distributed widely in Korea with low population density and their habitats were confined mainly to hillsides of forested areas. The fact that katydid attacked orchard trees with a higher population density seemed to be related to a change in feeding environment. And the shift of their habitats from oak woodlands to commercial orchards was thought to be related to the nutritional contents of their feed. In an attempt to understand these relationships, we conducted an ecological study of the affected areas. When the katydids changed their habitats in early May of 2008 and 2009, they shifted their host plants from oak trees to peach trees. The habitat shift was closely related to the nitrogen (N) content of the host plant leaves. When katydid moved to the hillside adjacent to orchard farm, N content of oak tree leaves decreased dramatically from 5.3% to 2.2%. At that time N content of peach tree leaves were higher than the 2.2% of oak leaves, showing 3.5~5.0%. This range of N content of peach tree leaves has been consistent until late June. And feed preference analysis carried out in the laboratory showed that katydid prefered peach tree leaves to peach fruit to oak tree leaves.

Studies on the chlorella in Korea (한국 Chlorella에 대한 연구)

  • According to the experiment on pure-isolation and the related contaminants of Chlorella, the phenomena of the ecological distributions of Chlorella in Korea have been manifested in several areas and also the aim that in going to do culture, biological and physiological study of Chlorella is carried out. Contaminants very oftenly occupied on the colony of the strains taken in order to fulfil pure-isolation of Chlorella, but in accordance with being piled up the minute research on this subject, I can obtain the desirable results as follows: 1. For the pure-isolation, the duration chose the time from May to September 1957 so that may easily isolate from contaminant water with utilizing the antibiotic substances. 2. To take long time, 36-48 hours until growth of nascent through the non-sporulated, it originates from the difference of the cultured media. In addition to the above mention, the mechanism of growth until nascent through the sporulated must not always require the ligh. However the supply of metabolic energy depend upon its nutritional conditions per phase. 3. The culture of Chlorella should be based on the lower culturing except adding especial conditions such as reagent concentration of media, artifical shake of media and other facts due to the natural conditions. And also these strains grew not only in distilled water but 2% NaCl solution without any abnormality in cell it self. I, therefore, guess it is possible to culture in sea-water under phasic environment. 4. In the experiment of ammonia detection, it is caused by the sampling surroundings to contain the minute quantity of ammonia in strain No. M 918; that is the place to be plenty of Carbohydrate on behalf of protein. 5. To compare the absorption curve of chlorophyll of higher plant with that of Chlorella, the absorption zone made mostly the Same ones each other but a little absorption grade dose not clearly appear. The colony which formed giant type grows with intensive colour and green band on surrounding of the colony and after that it was changed into all the green colour and developed up to end. 6. At first phase for a week, the development of Chlorella suspends the normal condition as in vivo but after a few days, the colour of chlorophyll gradually changed into blue-yellow which secrete the mucous substances on the agar media. The cell was flew out the contained substances itself on leaving the cell wall only, or the various micro-organism diffused on the outer-region of the cell.

Status and Issues on Disaster Preparation Programs in Public Health Center (보건소의 재난관련 대비-대응 사업의 실태와 과제)

  • Objectives: The purpose of this study was to review the disaster preparation and response programs and the status of disaster preparation in public health center. Methods: In depth interview was performed in September 2017 using 5 open questions to the persons who are in charge of disaster response services in 5 public health centers of different levels in Korea. The questions included general characteristics of public health center, disaster programs and future issues. The research hired a quality method. Results: In general, the persons in charge recognized the cooperative agency of local government in disaster management. There were no disaster preparation programs developed by the public health centers. Most of the preparation were passive activities such as emergency support, crisis management on communicable disease and quarantine, participation in biological disaster response training, and education etc. The persons in charge emphasized necessity of disaster preparation programs. Conclusions: Disaster preparation and responsiveness is an evolving issue in public health centers in Korea. Medical support system and communicable disease management system are being set up in the national level. A comprehensive system covering health management, nutritional support, mental health, environment management of shelter, and volunteers supports on public health center level needs to be developed along with a easy-to-follow manual.

Electron Donating Ability and Nitrite Scavenging Activity of Materials in a Traditional One-dish Meal (Bibimbab) (한국 전통 한 그릇 음식(비빔밥) 및 그 재료들의 항산화성과 아질산염 소거능)

  • The electron donating ability and nitrite scavenging activity were measured in ethanol extracts from the raw, simple cooked and seasoned materials of Bibimbab (mixed rice), a Korean traditional one-dish meal. The ethanol extracts of raw fragrant edible wild aster exhibited the highest electron donating ability $(80.28\%)$, as measured by the DPPH method. When Bibimbab was compared with Kimbab and hamburgers, which are popular food, it showed the highest antioxidative activity by the DPPH method. The nitrite scavenging ability was measured in an environment similar to in human digestive organs, i.e. pH $1.2\~6.0$. Generally, the antioxidative activity decreased in the sequence pH 1.2, 3.0 and then 6.0. The simple cooked materials, with the exception of fragrant edible wild aster, increased the antioxidative potential. The seasoned materials also had a tendency to increase the antioxidative potential. In conclusion, the ethanol extract of Bibimbab showed the highest nitrite scavenging activity. Therefore, the nutritional superiority of Bibimbab was confirmed through its electron donating ability, as measured by the DPPH method, and nitrite scavenging effect.

The Effects of Feeding Acacia saligna on Feed Intake, Nitrogen Balance and Rumen Metabolism in Sheep

  • The aim of this study was to determine the feeding value to sheep of Acacia saligna grown under temperate conditions. Pen trials were undertaken to determine the effects of feeding A. saligna, which had been grown in a Mediterranean environment, on feed intake, nitrogen balance and rumen metabolism in sheep. Sheep were given ad libitum access to A. saligna with or without supplementation with PEG 4,000 or PEG 6,000. PEG 4000 appears to be the major detannification agent used in trials involving high tannin feed despite the fact that PEG 6000 has been shown to be more effective, in vitro. For this reason it was of interest to compare the two, in vivo. Dry matter intake was greater (p<0.05) in sheep supplemented with either PEG 4,000 or PEG 6,000 compared to the control. There was no difference, however, in intake between those supplemented with either PEG 4,000 or 6,000. Although animals were not weighed throughout the trial, a loss in body condition was obvious, in particular in the control group. Intake of N was greater (p<0.05) in sheep supplemented with either PEG 4,000 or PEG 6,000 than in the control. There was no difference in N intake between those supplemented with either PEG 4,000 or PEG 6,000. There were no significant differences in either the faecal or urinary N output between any of the treatment groups and all treatment groups were in negative N balance. Neither the average nor maximum pH of ruminal fluid of the control group was different to those supplemented with PEG. The minimum pH for the control group, however, was significantly higher (p<0.05) than for either of the PEG treatments. The average and the maximum ammonia levels were lower (p<0.05) in the control group compared with those in either of the PEG treatment groups. For all dietary treatments ruminal ammonia levels were well below the threshold for maximal microbial growth. Feeding A. saligna, without PEG, had a definite defaunating effect on the rumen. For all dietary treatments ruminal ammonia levels were well below the threshold for maximal microbial growth. It was concluded that A. saligna was inadequate as the sole source of nutrients for sheep, even with the addition of PEG 4,000 or PEG 6,000. The anti-nutritional effects on the animals were largely attributed to the excessive biological activity of the phenolics in the A. saligna leaves. There is a need to determine other supplements that may be complimentary with PEG to enhance the nutritive value of A. saligna to maintain a minimum of animal maintenance.
