Determinants of consumers' purchasing intention toward organic foods: A study in Danang city, Vietnam

  • The term "Organic Food" is no longer strange to consumers around the world. Many people are concerned about their safety and health, so they have chosen this safe food. However, the decision to buy this product still faces some difficulties and challenges, such as the high price of organic products, short-time use, supply of products and so on. This study conducted an analysis to investigate the determinants of Danang City consumers' intention to purchase organic foods in Vietnam. The results show that, there are 6 influencing factors, including: subjective norm, food safety & health consciousness, consumer knowledge & environment consciousness, price of the product, availability product and trust in brands and certifications. The study uses a combination of 2 qualitative and quantitative methods. Qualitative methods are used through analysis, evaluation and synthesis of previous studies to build research models and scales for variables. Quantitative method with 250 samples applied SPSS 25.0 to test the scale by Cronbach's Alpha coefficients, to analyze the discovery factor EFA and regression analysis. The findings of the study provide useful information for consumers to buy organic foods and for marketers to increase sale of organic foods in Vietnam in general and Danang city in particular.

식품영양학 전공 여대생과 비전공 여대생의 영양지식 및 식습관의 차이 (Differences in Nutrition Knowledge and Food Habits between Nutrition Major College Women and Non-Major College Women)

  • This survey was carried out to investigate the effect of self-consciousness of nutrition knowledge and health on the nutrition knowledge and on food habits between two groups of college women, a nutrition majors and a non-majors. Questionnaires were completed by 214 nutrition majors and by 145 nutrition non-major, Nutrition majors group scored significantly higher than nutrition non-majors in the nutrition knowledge. And nutrition non-majors scored significantly higher than nutrition majors in the food habits. Most of the subjects belonged to 'Fair' and 'Poor' food habit group. And also there was a significant correlation between the nutrition knowledge score and food habits score in nutrition majors and non-majors. There was a significant and positive correlation between nutrition knowledge score and food habits score in majors but it was not observed in non-majors. The higher majors had a self-consciousness of nutrition knowledge, the higher they had habit score and nutrition knowledge score, but in non-majors it was not observed. And non-majors who had a self-consciousness of health were healthier, they were higher in the food habits scores than the jai ors. The main curriculum it is important for a good food habits that one has a responsible nutrition education in main curriculum. For the Improvement of nutrition education program we should transmit the nutritional information through an effective mass media (i.e. Radio, TV, Newspaper).

여대생과 그들 어머니의 영양지식 및 식습관이 영양 섭취상태에 미치는 영향 (Effects of Nutrition Knowledge and Food Habits on the Nutrient Intakes in College Women and Their Mothers)

  • This survey was carried out to Investigate the effect of the daily average nutrient intakes, self-consciousness of nutrition knowledge and health on the nutrition knowledge and food habits between college women and their own mothers, Questionnaires were completed by 214 college women who do major in nutrition and by 173 their mothers. The college women scored significantly higher than that of their mothers In the nutrition knowledge. And their mothers scored significantly higher than that of college women in the food habits. Most of the subjects belonged to 'Fair' food habit group, which was considered to be relatively good. The correlation of the scores between nutrition knowledge and food habits of the college women and their mothers was low. The daily average nutrient Intakes of all women were higher than the recommended dietary allowance except for that of Iron. There was a significant and negative correlation between the nutrition knowledge score and daily average nutrient intakes in college women. But there was not a significant correlation in the nutrient intakes in their mothers. And also there was a significant and positive correlation between food habits score in their mothers but there was not a significant correlation score in college women. The higher the women had a self-consciousness of health, the higher their mothers had a food habit score, but they had daily average nutrient intakes were lower than their daughter's(college women), And the women that had a self-consciousness of health were healthier, daily nutrient intakes in their own mothers were higher in the food habits scores than that of the college women. The main curriculum for a good food habits is that it is important that one has a responsible nutrition education.   • As the typical farming of the most Asian countries are of small and subsisting scale, the infrastructure is variable depending on the region and more complicated than in the industrialized countries. Except such basic statistics as acreage of farm land, farming population and production, there are no common standard methods to be used for indepth analysis on the farming status, the level of farming techniques, financial status of farming, consciousness of farmers and others. Therefore, it is necessary to develop survey models which can be commonly used to compare with different circumstances. The purpose of this report is to provide examples of survey models which are used to measure farming performances in Korea. Those are (1) Diagnosis and analysis on farming technique, labor utilization and farm income, (2) Management performance analysis, (3) Planning for farming, (4) Survey on the nutritional status of farming, (5) Survey on rural village status and planning regional agricultural development.

양육행동 개념 분석 (A Concept Analysis of the Caretaking Behavior for Children)

  • The purpose of this study is to analyze the concept of caretaking behavior for children. This study adopts the methode of Walker and Avant in analysis. Based on the results of the study, the attributes, precedents, and consequences of caretaking behavior for children are follows ; 1. The affirmative attributes of caretaking behavior are affection binding, nutritional guidance, education, caring, protection moral training and acquisition of parents' role. The negative attributes of caretaking behavior are inconsistent moral training, incapability of affection binding and overprotection. 2. The precedent of caretaking behavior are postpartum contact with their babies, cognizance capacity of child-caretaking, economic support, level of preparation for child-caretaking and self-consciousness as parents. 3. The affirmative consequences of caretaking behavior are promotion of child growth and development, formation of maternal-infantile attachment, development of children sociality, satisfaction of parental role and reinforcement of relationship between the members of family. The negative consequences of caretaking behavior are burden and conflict to parental role, children's illness, role conflict and role stress among the members of the family and family breaking up.

서울지역 초등학생들의 쌀음식에 대한 인지도 및 기호도에 관한 연구 (A Study on the Recognition and Preference for Rice Food of Elementary School Student in Seoul Area)

  • Rice is staple grain of our people and at the same time it is major source of income for Korean farmers. But recently various problems in connection with rice arose such as declining consumption etc. for this reason not only government but also related agencies are discussing about expanding vice consumption. This study is an attempt to provide basic data required for developing rice food and method of cooking it as a measure for increasing rice consumption and far this purpose survey has been conducted on primary school students in connection with their level of recognition, preference far rice food as well as their understanding and their consciousness on issues related to this topic. In terms of level of recognition of rice food majority of students which were subjected to this study stated that either they knew names of about 39 types of rice foods shown or had experience of eating them. They also stated in answers to question related to dietary habit that they prefer rice foods. Their reply on taste of rice food was plain and neat. But it was found their level of recognition on our traditional rice foods such as Ssal Dasik (rice cookies), Ssal Jinbyung (rice cakes) and Buggumi (fried rice cakes) etc. was very low. In connection with questions on their understanding of rice and consciousness of problems related to rice it was revealed that more than majority of primary school students in this research had erroneous idea on reason for the need of our effort for expanding rice consumption. Accordingly in order to expand rice consumption it is necessary to develop educational program addressing subjects of cultural and nutritional effect value of rice, effect of rice consumption upon rural economy and its application to school education concurrently with persistent study in order to diversify rice food restaurants and to improve method of cooking.

노인의 식이섭취실태와 건강상태에 관한 연구 I -서울지역을 중심으로- (Astudy on the dietary intake and health of aged person I -Based on elderly person in Seoul-)

  • The purpose of this study was to investigate the dietary-intake and that of health by mean of questionarie and interview for male and female old persons living in Seoul area. The contents of study included general aspects, physical status and health, nutrient intake, and food intake frequency. The results from the above survey are summarized as follows ; 1. The age group in the range of 60 to 79 years old was 71%, and the average number of family was 4.9. The educational level was 56% of elderly persons were elementary or middle school graduates . 42.8% of elderly persons had an average monthly income of \490,000 to 300,000. 2. The aged average height, weight, and physical index were 164.9cm, 55.8kg and 20.4 in male, 152.7cm, 46.0kg and 20.3 in female which were lower than the Korean average standard. (male; 167.0cm, 61.0kg, female; 156.0cm, 55.0kg) In the degree of health self-consciousness, percentage distribution of poor and very poor was 29% in male, 59% in female. Among the condition of disease, neuralgia was 23.8%, hypertension was 17.2%, diabetes was 5.4%. 3. Average daily calorie intake was $63.9{\sim}70.4%$ for male and $76.4{\sim}83.9%$ for female which were lower than the Recommended Dietary Allowances for Koreans. Protein intake was $42.9{\sim}57.3g$ (which was $72.8{\sim}82.6%$ RDA) for elderly person, the proportion of animal protein to total protein intake were $24.3{\sim}28.2%$($12.9{\sim}16.2g$). Iron, Vitamin $B_1$, $B_2$ Niacin intake exceeded the RDA, but the intake of Calcium, Vitamin C were far less than that of RDA. 4. In the correlations between nutritional intakes and environmental factors and health, economic living situations and educational level as the factors which might influence the condition of nutritional intake was significant(P<0.01). 5. Food intake frequency of meats, fishes, eggs, for average of $1{\sim}2$ days per week were $44.8{\sim}50.5%$, that of milk and milk products for scarecely week were 42.9.% Correlation of food intake frequency was divided three levels-good, fair, poor. Food intake frequency as the factors which might influence the condition of nutritional intake was significant(P<0.01). The results of the survey reveal that many of elderly show evidence of general nutrient intake deficiency, it requires first of all importance of nutrition to improve nutritional level through to promotion of elderly health.

건강관심도에 따른 외식업체 메뉴의 영양 표시 인지도 (Consumer Awareness of Nutrition Labelling in Restaurants according to Level of Health Consciousness)

  • This study was performed to investigate the level and recognition and interest in nutrition labeling in restaurants according to consumer interest levels in health and to suggest its application to restaurant lunches. By considering various statistics and data on the frequency of reasons for dining-out, this study examined worker restaurant lunches and investigated the level of recognition of interest in nutrition labeling, the type of nutrition information that is of interest and the preferred format of labeling according to the level of interest in health. According to the results, while the frequency of dining-out by workers was high, their consideration for health and nutrition labeling in restaurants was low. However, a high percentage of consumers responded that nutrition labeling was a customer right and necessary to improve the quality of menu items as well as public health. Therefore, active promotion of nutrition labeling in the dining industry is necessary. Interest levels in additives, product origin and menu ingredients indicated in restaurant menus were higher than for nutritional information such as nutrients and calories. When the preferred format for providing nutrition information was investigated, consumers preferred information written on a menu board, and they wanted to broaden the range of information included in nutrition labeling for menu items beyond calories and nutritional facts. Based on these results, recognition of nutrition labeling in restaurants was found to below and the interest level in health was also lower than expected. However, most consumers responded that nutrition labeling was helpful in choosing menu items can be a tool for nutrition education and can play a role in improving the recognition of nutrition. Therefore, active promotion of nutrition labeling by the dining industry is necessary.

학교 급식관리 및 영양교육에 대한 행정담당자 및 영양사의 의식 실태 조사 연구 (A Study on Consciousness of Administrator and Dietitian for School Food - Service Management and Nutritional Education)

  • School food service must be operated as the part of the education. But it seems that it is not to be considered as an important educational field from the perspective of educational administration. This study was conducted to suggest the effective plan to improve the quality of the school food service system. Questionaries were distributed to 51 administrators and 85 dieticians of primary schools in Incheon area from Aug 7th to Aug 31st 2000. Drawbacks of school food service system cited from the survey results were insufficient support from the authorities both in policy and in budget and shortage of specialists for food service administration. Both dieticians and administrators acknowledged that available facilities required for the school food service were insufficient. 85.9% of dietition and 51.0% of administrators thought dietition of school food service to be suitable for nutrition education. For effective nutrition education, they suggest to have teachers taking in charge of nutrition education, to have teaching system related with school food service and to develope visual auditorial teaching material. For improvement of the quality of school food service, it is necessary to acquire sufficient budget and political support from the government and to have specialists for food service administration. And regulations promoting dieticians to be teachers of nutrition education is required to be introduced in the near future.

간호학생의 운동수행여부, 건강에 대한 생각에 따른 자기효능감, 자아존중감 및 활력정도의 차이 (The Differences of Self Efficacy, Self-esteem and Vitality according to the Physical Exercise, Thinking about Health of Nursing Students)

  • 본 연구는 간호대학생의 운동수행여부, 건강에 대한 생각에 따른 자기효능감, 자아존중감 및 활력의 차이를 알아보기 위해 수행되었다. 연구 디자인은 서술적 조사연구로, 자료분석은 SPSS 22.0을 이용하였으며 카이제곱-test, t-test가 사용되었다. 자료수집 기간은 2019년 5월 1일부터 6월 30일까지로 K시에서 수집되었다. 대상자의 평균 나이는 23.7살이었다. 대상자 중 187명(85.0%)은 여자, 99명(45.0%)은 운동을 수행하고 있었으며, 138명(62.7%)은 자신들이 건강하다고 생각하고 있었다. 변수들에 대한 점수는; 건강자기효능감 2.93±0.35점; 신체자기효능감 3.16±0.37점; 자아존중감 2.94±0.43; 활력 3.78±0.52이다. 운동을 수행하는 경우 신체자기효능감(t=3.68, p=<.001); 운동적 기능(t=5.39, p<.001); 정신적 기능(t=2.10, p=.037), 영양적 기능(t=2.50, p=.013); 건강관리 효능감(t=2.37, p=.019) 그리고 활력(t=12.63, p=<.001)에서 유의한 차이를 나타냈다. 자신이 건강하다고 생각하는 경우 건강자기효능감(t=3.73, p=<.001), 운동적 기능(t=3.29, p=.001); 정신적 기능(t=4.01, p<.001); 영양적 기능(t=2.62, p=.009), 건강관리 효능(t=2.51, p=.013); 건강자기효능감(t=2.59, p=.010); 자아존중감(t=3.91, p=<.001) 그리고 활력(t=2.92, p=.004)에서 유의한 차이를 나타냈다. 운동 수행이 건강자기효능감과 활력을 높이는데 기여하였으며, 자신이 건강하다고 생각하는 것이 신체자기효능감, 자아존중감 및 활력을 높이는데 기여하였다.
