Nutritional Risk of the Elderly Receiving a Home-Delivered Meal Service Program and the Factors for Nutritional Risk (가정배달급식 수혜 노인의 영양위험도와 영양위험도에 미치는 요인)

  • Objectives: This study examined the characteristics and nutritional risk of the elderly who receive home delivery services. We then analyzed the effects of the characteristics of the elderly who receive the home-delivery meal service on their nutritional risk. Methods: A total of 220 respondents who receive home-delivery meal service in Seoul participated in the survey. The survey consisted of the characteristics of the elderly (health status, tooth condition, physical activity, social participation activity, depression and relationship with neighbors), nutritional risk assessment and other general matters. The data was analyzed by using the SPSS program. Cross-tabulation analysis, t-test, correlation analysis and regression analysis were all conducted. Results: 47.0% of the subjects were under 80 years old and 53.0% were over 80 years old, The nutritional risk score, as evaluated by a Nutrition Screening Initiative (NSI) checklist was 10.7 points, and the high nutrition risk group was 91.5% of the subjects. The subjective self-health status score was 2.24 points (out of a total of 5 points) and the tooth status score was 3.30 points. The physical activity level was 2.17 points for the under 80 years old group and 1.76 points for the over 80 years old, and there was a significant difference according to age (p<0.01), The higher the health status, tooth condition, physical activity and social participation activity level, the lower was the nutritional risk. Further, the higher the degree of depression, the higher was the nutritional risk. Conclusions: For the healthy life of the elderly in the community, various welfare policies should be planned to increase social participation as well as to promote physical health and reduce depression.

  • Estimating the nutritional requirements for pediatric patients requires a comprehensive approach with various factors including age, gender, body mass index, and physical activity level, due to the significant growth and developmental changes observed in this population. This complexity renders the use of a simplistic generalization or a standard formula impractical. A number of methodologies have been established to calculate nutritional needs for the pediatric population. However, the application of these methodologies is challenging due to the variability in the aforementioned factors. Determining nutritional requirements for pediatric patients with underlying medical conditions is complicate, influenced by variables such as the nature of the illness, treatment modalities, and the patient's overall condition. Nutritional support in severely traumatically brain-injured pediatric patients is directly correlated with prognosis and growth outcomes. Therefore, this case study aims to validate existing methodologies for estimating nutritional requirements in pediatric patients with severe traumatic brain injury and to provide primary data for the development of effective nutritional support strategies. A case of a 5-year-old male patient admitted to the intensive care unit due to severe traumatic brain injury is examined. Future case studies and ongoing research are imperative to ensure the safe and effective nutritional support of pediatric patients with severe traumatic brain injury.

  • Apoptosis has been implicated as an important mediator in immunosuppression observed in a depleted nutritional state. The recent report has indicated that IFN-$\gamma$ treated bone marrow macrophages were protected from apoptosis induced by several stimuli in complete medium condition. However, our previous study demonstrated that IFN-$\gamma$ treated peritoneal macrophages were enhanced the apoposis in a depleted nutritional state. Therefor, we investigated the apoptotic regulatory mechanism of IFN-$\gamma$ in malnutrition-induced macrophage. (omitted)

Variation of Nutritional and Antioxidant Characteristics of Extract of Lycium barbarum produced by using Different Extraction Processes

  • Lycium barbarum extract has a high potential to be developed as a health functional food due to the various health-promoting effects of Lycium barbarum. This study analyzed changes in nutritional and functional components depending on the extraction solvent (purified water and a mixture of purified water and alcohol) and the condition of the sample. The nutritional components (carbohydrates, protein, fat, ash), organic acids, amino acids, total phenolic compounds, and total flavonoids of the extract produced during the extraction process were analyzed. The nutritional composition and functional substances of the extracts showed some differences depending on the type of solvent and the condition of the sample. The amounts of crude protein (7.61%), crude fat (1.63%), carbohydrate (90.22%), and ash (0.54%) of dried Lycium barbarum extract using purified water as a solvent were similar to those of the powder sample extract. The highest content of citric acid was 4.31 mg/mL, similar to the case of acetic acid, when the powder sample used a mixture of purified water and alcohol as a solvent. The highest amino acid content was 357.39 mg/mL when the powder sample was mixed with purified water and alcohol as a solvent. The total amount of phenolic compounds was 686.16 g/L when the powder sample was extracted with a mixture of purified water and alcohol as a solvent. The highest total flavonoid content was 111.32 g/L when the powder sample was extracted with a mixture of purified water and alcohol as a solvent.

  • Pediatric patients require specialized attention and have diverse demands for proper growth and development, and thus need a different approach and interest in nutritional assessment and supply. Enteral nutrition is the most basic and important method of nutritional intervention, and its indications should be identified. Also, the sites, modes, types, and timing of nutritional intervention according to the patient's condition should be determined. In addition, various complications associated with enteral nutrition supply should be identified, and prevention and treatment are required. This approach to enteral nutrition and proper administration can help in the proper growth and recovery of pediatric patients with nutritional imbalances or nutritional needs.

Effects of School Lunch Program on Nutritional Knowledge and Attitude, and Dietary Behavior of Korean Middle School Students (학교급식이 남녀 중학생의 영양 지식과 태도, 식행동에 미치는 영향)

  • School Lunch Program (SLP) should provide adequate and qualitative nutritional food for student's growth and proper food habit. With this fact, this study divided 524 middle school students who resided in Jeonju, Jellabukdo into two groups, SLP or non SLP according to whether they were provided SLP or not. Then this research estimate each group's nutritional knowledge, nutritional attitude, dietary behavior, balance of three meals, and health checking their clinical symptom to investigate the effects of the SLP. This research applied anthropometric data, questionnaires and food intake data using 24 hours recall method. Each group's age average was same as 14.0 years old respectively. The average score of nutritional knowledge and condition of balance of lunch were significantly higher in SLP group than those of non-SLP group, although, there were no significant differences in the scores of nutritional attitude, dietary behavior, and balance of breakfast and dinner within both groups. This research showed that SLP had positive role on nutritional knowledge and balanced lunch. However, current SLP is not sufficient to cause change the nutritional attitude and dietary behavior. To make more applicable and effective result of SLP leading nutritional attitude changes and development of appropriate dietary behavior, certain level of nutritional education to the student may be important.

Oral health factors affecting the nutritional status of the elderly (노인의 영양상태에 영향을 미치는 구강건강 요인)

  • Objectives: The study aimed to identify the oral health factors that affect the nutritional status of the elderly. Methods: The study was conducted over ten months from September 2013 to June 2014, and included senior citizens who were supported by the visiting health service. The rate of saliva release, the number of remaining teeth, and the ability of the elderly to identify nutritional conditions were evaluated. Statistical analyses were performed using the t-test, ANOVA, and multiple linear regression using SAS 9.4 (SAS Institute Inc., Cary, NC, USA.). Results: The study participants had an average irritation saliva secretion rate of $2.26{\pm}1.11mg$ per minute. The higher the rate of saliva secretion, the higher the mini nutritional assessment (MNA) score (p<0.001). The average number of remaining teeth was $8.21{\pm}9.76$. The MNA scores were highest in groups with 11 or more remaining teeth (p=0.001). The factors that affected the nutritional condition of the elderly were their ability to perform activities of daily living, saliva flow rate, and number of remaining teeth. The highest correlation among them was that of the standardized regression coefficient was - 0.386 by activity daily living, followed by a 0.170 saliva secretion rate and 0.118 remaining teeth in daily life performance. Conclusions: Activities of daily living and rate of saliva secretion showed the highest correlations to nutritional status of the elderly.

Dietary Habits and Factors Associated with Depression in Yangpyeong-gun Elderly (양평군 노인에서 우울 지수, 영양불량과 식생활 실천 요인)

  • This study was conducted to analyze relationships between depression indices, mini nutritional assessment scores, and nutritional quotients among 80 elderly in Yangpyeong-gun and to identify factors that help prevent depression and malnutrition. Nutrition assessment scores were low in the high-risk group (PHQ-9 score ≥10), and nutritional quotient scores were lower in the high-risk group than in the normal group (PHQ-9 score ≤4). Interestingly, the consumption frequencies of fruits, eggs, and nuts were low in the high-risk group, and subjective health awareness, dental condition, and sleep were poorer. The total PHQ-9 score was correlated with malnutrition, body mass index, calf circumference, weight change, independent daily living, reduced meal amount, water intake, and the need for help when eating. Analysis of correlations between items of the PHQ-9 and nutritional status evaluation indices showed that a self-perceived feeling of depression, low energy, difficulty controlling sleep or appetite, negative thoughts (e.g., failure, disappointment), and difficulty concentrating were negatively correlated with total nutritional status scores. These results show that attention is required when food or water intake decreases and that deviation from normal sleep and appetite cycles flags the need to prepare guidelines to prevent depression.

Development of Computer-based Nutritional Counseling Program for Farmers (농업 종사자를 위한 영양상담 프로그램 개발)

  • The purpose of this study is to develop a software program for nutritional counseling by assessment of nutrients intake status and health degree by using semi-quantitative frequency food intake method and the questionnaire of Cornell Medical Index(CMI) and farmers' syndrome. This program is composed with three parts, nutrients intake, health status with body complaints, and nutrition counseling contents for diet therapy of each body condition states. First, nutrient intakes with percentage of Korean Recommended Dietary Allowances, and quantities of other nutrients intake were calculated and presented in an out-put screen. Second, the different body complaints(farmers' syndrome, anemia, hypertension, gastrointestinal problem, and cardiovascular complaints) were divided 3 groups of health status as normal. suspected and ailment. The contents of nutritional counseling with recommended food kinds. intake quantities. and recommended preparation methods were shown by button click of each health state of body complaints. And also this program could serve several times for one person to compare nutrition education and counseling effect by use of pre and post presentation results. This programs would be effect to home extension workers of rural development administration for farmers' nutrition counseling.

Estimation of Standard Length-Weight Relationships of 10 Freshwater Fish in the South Korea for Application of Relative Weight Index (한국 담수어류 10종의 상대 무게지수(Relative weight index) 활용을 위한 표준 길이-무게 상관관계(Standard Length-Weight relationships) 산출)

  • The Relative weight index is an index for evaluating nutritional condition of fish by calculating a ratio of observed weight to standard weight. The purpose of this study is estimating standard Length-Weight relationships (standard LWRs) to calculate standard weight for application of relative weight index and analyze frequency distribution of relative weight index of 10 freshwater fish in the South Korea. The standard LWRs for each species was calculated by the Length-Weight data sets from 798 times of captures at 141 sites. The correlation of determination (r2) for all species was over 0.9 and values of parameter b were within the expected range according to Froese (2006). We calculated in increments of 10 from 10 to 90 percentile of relative weight index for each species, and it could be used as a standard for quantitative assessment of nutritional condition of freshwater fish.
