Knowledge concerning the nutritional requirements and nutritional problems of fanned deer is limited. Nutritional recommendations must be based on data from domestic ruminants and fanned deer. An understanding of the biology and adaptative characteristics of wild deer is essential for sensible application of sheep and cattle nutritional principles. Nutritional requirements of deer are generally separated into five categories: energy, protein, minerals, vitamins and water. Research on deer nutrition has primarily focused on energy, protein and minerals (phosphorus and calcium). Changes in the nutritional requirements that occur with gestation, lactation, breeding and antler growth should be coordinated with seasonal changes in nutrient availability from forage plants. This paper describes aspects of current knowledge of energy, protein, minerals, vitamins and water requirements. Nutritional problems of. fanned deer are described with recommendations for prevention or control. A comparison of production efficiency of deer, lamb, beef cattle and dairy cattle is included.
The job characteristics and competencies of 285 dietitians in employee foodservices were investigated by worker-oriented job analysis methodology. The purposes of this study were to : a) determine the knowledge, abilities, skills and other characteristics(KASO, hereafter) needed for dietitians in two types of employee foodservice groups(self-operated vs. contracted) and b) the analysis of the degree of frequency and importance and entry requirements of KASO items listed below : their degree of frequency, the level of importance and their function as entry requirements. The 134 KASO items would be divided into 12 task categories. The questionnaire was mailed to 250 dietitians who are members of The Korean Dietetic Association Practice Group in self-operated foodservices(hereafter group A) and 250 dietitians who are employed in contracted foodservice companies(hereafter group B). Completed questionnaires were received from 285 dietitians(121 in self-operated, 164 in contracted) ; with a response rate of 57%. Statistical data analysis was completed using the SPSS/win and the SAS/win packages. The results of this study can be summarized as follows. 1) Analysis of the degree of frequency, importance and entry requirements of 134 KASO items in group A showed a high priority(score〉4.0) placed on 14 items in relation to dietetic tasks and 9 items in relation to human attributes, whereas in group B 19 items in relation to dietetic tasks and 11 items in relation to human attributes. 2) Comparing responses about the KASO items in the 12 task categories, there was a significant difference between the two sample groups with regard to degree of frequency : group A scored 3.29, group B scored 3.50(p〈0.01). With regard to importance of KASO items in 12 task categories, group A scored 3.78 and group B scored 3.88 showing no significant differences. With to entry requirements of KASO items in 12 task categories, group A scored 3.29 and group B scored 3.46 showing a significant difference(p〈0.05). The nutritional value of protein varies between feedstuffs. It is possible to feed animals using crystalline amino acids as a sole nitrogen source, but in practice only some limiting amino acids are added to the diet. In order to use feedstuffs efficiently, it is important to determine exact amino acid requirements. Reported values differ widely because the requirements are affected by various factors. In this report, therefore, the factors affecting amino acid requirements are reviewed as follows: 1) availability of dietary amino acids, conversion factors of nitrogen to protein, interaction of amino acids, and strain, sex and age of animals; 2) amino acid requirements for maximum performance and maintenance, usefulness of non-essential amino acids; 3) plasma amino acid concentration as a parameter to determine amino acid requirements; and 4) nitrogen excretion to reduce environmental pollution. These factors should be considered, it is to improve the dietary efficiency, which is to reduce excess nitrogen excretion for environmental pollution.
BACKGROUND/OBJECTIVES: The purpose of this study was to assess the accuracy of a dietary reference intake (DRI) predictive equation for estimated energy requirements (EER) in female college tennis athletes and non-athlete students using doubly labeled water (DLW) as a reference method. MATERIALS/METHODS: Fifteen female college students, including eight tennis athletes and seven non-athlete subjects (aged between 19 to 24 years), were involved in the study. Subjects' total energy expenditure (TEE) was measured by the DLW method, and EER were calculated using the DRI predictive equation. The accuracy of this equation was assessed by comparing the EER calculated using the DRI predictive equation ($EER_{DRI}$) and TEE measured by the DLW method ($TEE_{DLW}$) based on calculation of percentage difference mean and percentage of accurate prediction. The agreement between the two methods was assessed by the Bland-Altman method. RESULTS: The percentage difference mean between the methods was -1.1% in athletes and 1.8% in non-athlete subjects, whereas the percentage of accurate prediction was 37.5% and 85.7%, respectively. In the case of athletic subjects, the DRI predictive equation showed a clear bias negatively proportional to the subjects' TEE. CONCLUSIONS: The results from this study suggest that the DRI predictive equation could be used to obtain EER in non-athlete female college students at a group level. However, this equation would be difficult to use in the case of athletes at the group and individual levels. The development of a new and more appropriate equation for the prediction of energy expenditure in athletes is proposed.

Broiler chickens grow rapidly, and their nutrient requirements change daily. However, broilers are fed three to five diet phases, meaning nutrients are under or oversupplied throughout production. Increasing diet phases improves production efficiency as there is less time in the production cycle that nutrients are in under or over-supply. Nevertheless, the process of administering four or more diets is costly and often impractical. New technologies are now available to blend feed to match the daily nutrient requirements of broilers. Thus, the aim of this review is to evaluate previous studies measuring the impact of increasing feed phases on nutrient utilisation and growth performance, and review recent studies taking this concept to the extreme; precision nutrition - feeding a new diet for each day of the production cycle. This review will also discuss how modern precision feeding technologies have been utilised and the potential that new technologies may bring to the poultry industry. The development of a precision nutrition regime which targets daily requirements by blending dietary components on farm is anticipated to improve the efficiency of production, reduce production cost and therefore improve sustainability of the industry. There is also potential for precision feeding technology along with precision nutrition strategies to deliver a plethora of other management and economic benefits. These include increased fluidity to cope with sudden environmental or market changes, and the ability to alter diets on a farm by farm level in a large, integrated operation. Thus, the future possibilities and practical implications for such technologies to generate a paradigm shift in feed formulation within the poultry industry to meet the rising demand for animal protein is also discussed.
Objective: A study was conducted to test six threonine (Thr) levels (0.39%, 0.44%, 0.49%, 0.54%, 0.59%, and 0.64%) to estimate the optimal dietary Thr requirements for Longyan laying ducks from 17 to 45 wk of age. Methods: Nine hundred Longyan ducks aged 17 wk were assigned randomly to the six dietary treatments, where each treatment comprised six replicate pens with 25 ducks per pen. Results: Increasing the Thr level enhanced egg production, egg weight, egg mass, and the feed conversion ratio (FCR) (linearly or quadratically; p<0.05). The Haugh unit score, yolk color, albumen height, and the weight, percentage, thickness, and breaking strength of the eggshell did not response to increases in the Thr levels, but the albumen weight and its proportion increased significantly (p<0.05), whereas the yolk weight and its proportion decreased significantly as the Thr levels increased. Conclusion: According to a regression model, the optimal Thr requirement for egg production, egg mass, and FCR in Longyan ducks is 0.57%, while 0.58% is the optimal level for egg weight from 17 to 45 wk of age.
There is currently no reference for intake of lysine for Chinese people; therefore, the present study was conducted to determine the lysine requirement of Chinese young male adults on a habitual Chinese mixed diet based on the modified indicator amino acid oxidation method. Seven young men with a mean age of $23.7{\pm}2.2$ years that were healthy based on questionnaire, physical examinations and screening tests were evaluated. Subjects were evaluated over five consecutive 7 day periods, during which time they were administered decreasing amounts of lysine via the diet (65, 55, 45, 35, $25mg{\cdot}kg^{-1}{\cdot}d^{-1}$). Subjects were allowed to adapt from day 1 to 6 and the isotopes were measured on day 7 in each period. The subjects' body weights, body compositions and plasma proteins were also examined during the study. Amino acid kinetics were measured based on the indicator amino acid oxidation technique using the $^{13}CO_2$ release rate and phenylalanine oxidation rate to estimate lysine requirements. Body weights, body compositions, and plasma proteins of subjects did not change significantly relative to those at baseline. The mean and the upper 95% CI of lysine requirements of Chinese habitual diets were determined to be 58.41 and $70.09mg{\cdot}kg^{-1}{\cdot}d^{-1}$, respectively, based on the $^{13}CO_2$ release rate and 54.28 and $65.14mg{\cdot}kg^{-1}{\cdot}d^{-1}$, respectively, based on the phenylalanine oxidation rate.
A study was conducted to investigate nitrogen balance and to estimate daily nitrogen requirement in 43 Korean female college students students maintaining their usual diet and activity levels. Nitrogen intake and excretion were measured in two separate peroids about one month apart, each period lasting for 3 days. Nitrogen intake was assessed by duplicate portion analysis of diet, and N excretion in faces and urine were measured during the study period. Mean daily nitrogen intake level was 129.3mg/kg B.W and the apparent digestibility of nitrogen was 76%. Mean daily urinary nitrogen excretion was 113.5mg/kg BW. 895 of total nitrogen intake. Mean daily nitrogen balance of subjects was -14.5mg/kg BW. Mean daily requirements of nitrogen for 0 balance, calculated by regression analysis of N balance and energy-adjusted N intake. were 1) 197.mg/kg B.W with the present energy intake level of the study subjects. 2) 157mg/kg B.W when energy intake is sufficient to maintain energy balance, and 30 130mg/kg B.W. when energy intake is Korean RDA level for moderate activity. When energy intake level is sufficient to meet their requirement, daily protein requirement for 0 balance is about 1.0g/kg B.W. The results of this study indicate that nitrogen intake level of young female college students is not sufficient to meet their requirements, and they should increase protein intake together with increase in energy intake.

In this study the information requirements of the personnel of Korean general hospitals are investigated. The results of the survey reveal that the information requirements of the general hospital personnel are quite different from each other according to their occupation type. The results show that the integrity of information about patients and the pervasiveness of information regarding to overall hospital operations are two major factors that differentiates the information requirements variation among occupation types of general hospital personnel. The results show that doctors, nurses, and medical technologists can be grouped into a occupation group, and that the admission department personnel and the patient affairs personnel can be grouped into another group. The results also show pharmacists and nutrition technicians constitute separate occupation groups of their own, respectively.
The purposes of this study were to assess hospital foodservice quality and to identify causes of quality problems and improvement strategies. Based on the review of literature, hospital foodservice quality was defined and the Hospital Foodservice Quality model was presented. The study was conducted in two steps. In Step 1, nutritional standards specified on diet manuals and nutrients of planned menus, served meals, and consumed meals for regular, diabetic, and low-sodium diets were assessed in three general hospitals. Quality problems were found in all three hospitals since patients consumed less than their nutritional requirements. Considering the effects of four gaps in the Hospital Foodservice Quality model, Gaps 3 and 4 were selected as critical control points (CCPs) for hospital foodservice quality management. In Step 2, the causes of the gaps and improvement strategies at CCPs were labeled as "quality hazards" and "corrective actions", respectively and were identified using a case study. At Gap 3, inaccurate forecasting and a lack of control during production were identified as quality hazards and corrective actions proposed were establishing an accurate forecasting system, improving standardized recipes, emphasizing the use of standardized recipes, and conducting employee training. At Gap 4, quality hazards were menus of low preferences, inconsistency of menu quality, a lack of menu variety, improper food temperatures, and patients' lack of understanding of their nutritional requirements. To reduce Gap 4, the dietary departments should conduct patient surveys on menu preferences on a regular basis, develop new menus, especially for therapeutic diets, maintain food temperatures during distribution, provide more choices, conduct meal rounds, and provide nutrition education and counseling. The Hospital Foodservice Quality Model was a useful tool for identifying causes of the foodservice quality problems and improvement strategies from a holistic point of view.
