Nutrition labeling can provide information in order for people to select products suitable for their own health, and sodium content labeling for processed foods is important since sodium is one of the main causes of cardiac diseases. This study had carried out to propose the desirable sodium content labeling by conducting surveys on the awareness of sodium content in processed foods, understanding of sodium content labeling, and requirements for new sodium comparative claims. The survey period was from 12th of September, 2016 through the 24th, during which a self-administered questionnaire survey was given to 1,003 persons through demographic quota sampling by age and region. As a result of the survey, 66.0% of respondents assuring nutrition labeling answered they check sodium content labeling, whereas 83.2% were aware of excessive intake of sodium having a negative effect on health. Exactly 49.9% of respondents answered that the current system for nutrition labeling on processed foods does not help one to understand the content of sodium, whereas 72.9% answered they wanted to compare sodium contents with those of other products when buying or taking processed foods. As 92.5% cited the importance of sodium comparative claims made by processed foods, preparation of a new system for food labeling should be considered by which consumers can easily compare sodium contents with those of other similar products.
This study surveyed 266 housewives residing in a Gyeonggi-provincial area for their dietary attitudes, dietary habits, nutrition knowledge, and application of nutrition information to daily life according to whether they use nutrition labeling. The survey on the dietary attitudes of the subjects showed that the points of "think that nutrition affects health", "quite interested in nutrition and health information", "like developing and trying new diverse recipes", and "persistently try new foods" were higher among those who check out nutrition labeling (Check group, n=112) than those who do not check out nutrition labeling (No check group, n=154). Reason for snacking, the Check group reported higher in the reasons of "for taking nutrients" but lower in the reasons of "do not eat enough meal" and "impulsively" than the No check group (p<0.01). Asked about why they check the nutrition labeling, the Check group answered "to compare products with each other" and "to purchase healthy food" whereas the No check group said "to decide whether the food is safe or not" and "to reduce body weight" (p<0.01). The Check group showed more recognition on the significance of the nutrition labeling and application to their actual daily lives than the No check group. Therefore, our results suggest that proper use of nutrition labeling is expected to improve dietary attitudes and dietary habits as well as enhance the application of nutrition information to actual daily life and promote health not only for the housewives but also for their family members as well.
This study was conducted to compare the awareness, satisfaction, and usage patterns of female-consumers for food-nutrition labeling in Busan. The survey was conducted from April 15 to June 10, 2018 by questionnaire. Degree of perception of food-nutrition labeling was higher among individuals in their 30s, 40s and 50s than those in their 20s, 60s and 70s. The score of verification degree was highest among respondents in their 40s and lowest among those in their 20s and 70s. Degree of demand of individuals in their 70s was lower than that of those in their 60s. Degree of reliability of individuals in their 30s, 40s and 50s was higher than that of those in their 20s, 60s, 70s. Satisfaction degree did not differ significantly among groups. Overall the most common reason to review food labeling was 'to confirm expiry date' (30.8%). Among those in their 20s, the main reason for reviewing nutrition labeling was 'weight control', while it was 'nutrients' among those in their 30s, 40s, 50s, and 60s, and 'health improvement' among those in their 70s. Additionally, 51.3% of the subjects reported that the major reason for difficulty understanding the labeling was 'small letter, various form'. The demand for nutrient contents was highest in sodium. Age was negatively correlated with perception of food-nutrition labeling, demand, need for education and publicity, and nutrition knowledge (P<0.01), whereas it was positively correlated with dietary attitude (P<0.01). There was a strong correlation between demand for food-nutrition labeling and the need for education and publicity regarding food-nutrition labeling (r=0.546). Therefore, education materials and improvement plans based on age should be developed and implemented to inspire individuals to choose more nutritious food and develop a healthy dietary life.

The propose of this study was to investigate the status of current nutrition labeling on the packaging of processed foods. The 2432 processed foods purchased at various retail markets in Jeonju and Daegu during June, 2004, were classified by food category according to the 2004 Food Codes and evaluated for the type of nutrition composition labeling and nutritional content claims. The results are summarized as follows: The percentage of processed food products with nutrition labeling was $27.5\%$ and $71.6\%$ of noodles had nutrition composition labeling, which was the largest number among the food category. Various unit of measurements were used in the nutrition labeling of the processed foods, per 100g or 100ml being the most common($51.8\%$) under the currently practiced nutrition labeling. Nutrition claims were made for $9.5\%$ (231 items) of the products. Drinks bad the largest number of nutrition claims of $27.3\%$ The most frequently used technology was 'contained' among the claims ($36.0\%$) and 'added' was the next ($30.7\%$). 'High in calcium' or the equivalent was the most popular nutritional claim Other nutrients for which content claims were made included: lipid, vitamin C, DHA, camitine, taurine etc.
This study had carried out to investigate the usage status of customer, the positive effects and problems, and the most important items of the nutrition labeling at purchasing the food etc. on the current nutrition labeling system in order to establish the customer-centric nutrition labeling system. Survey was carried out by questionnaire method that is targeted on adult female above 20 years old in Seoul and Kyeongnam area from May to June, 2004. For the experience of checking the nutrition label of the processed domestic and imported processed food, 82% and 75.4% of the respondents were replied 'have checked' respectively. For the positive effects due to enforcement of the nutrition labeling system, the respondents agreed highly with 'easy to compare with other products' and 'improve the products quality'. For the problems of the nutrition labeling system, the respondents agreed highly with 'different criteria for each product' and 'incendiary purchasing due to false or exaggerated labeling', and gave the higher scale for the positive effects than the problems relatively. For the necessity of the nutrition labeling system, 96.2% of the respondents were replied 'necessary', and it was indicated a significant difference on age and marital status(p<.01). For the price rising due to enforcement of the nutrition labeling system, 55.2% of respondents agreed, and it was indicated a very significant difference on age and monthly income(p<.001). For the most important nutrition labeling items at purchasing the food, the respondents were replied 'total calorie' on most of the food, and in addition, they checked carefully the lipid, cholesterol, protein, Ca, and Fe.
The objective of this study is to provide direction in the improvement of sodium labeling in an effort to reduce consumption. We surveyed confirmation and importance of food labeling and nutrition information and we also analyzed the willingness to pay on new nutrients labeling. Consumers checked the sell-by-date, product name, method of intake, but not nutritional information. They also checked for calories and carbohydrates but they were not interested in sodium, sugar, and trans fat which are health hazard nutrients. It is necessary to improve nutrition labeling, because consumers are experiencing difficulties in obtaining sodium information under the nutrition labeling system. Consumers will pay about 0.66% more if new sodium labeling is introduced. In conclusion, food labeling system can be improved by smooth and efficient access of information. for health-hazard nutritional components, such as sodium, it is important to introduce policies that reduce their intake. This can be done by providing consumers with clear and concise information. The social costs of high sodium intake could be reduced, hence improving the national health.
Bakery nutrition labeling has been implemented in the company, but most consumers have no idea about it due to lack of promotion of the product nutrition labeling information or do not have a big interest in it. As a result, various studies based on the forecast about changes in consumption patterns of the bakery market due to nutrition labeling information are needed. Especially nowadays, when buying bakery products the involvement of consumers in health and nutrition is growing. So, we need to understand that nutrition labeling information makes any causal relationship between consumer attitude and confidence, purchasing behavior in bakery products. It can be said to be a very important research. For that reason, I think this research will help to settle and activate the nutrition labeling information system for the rational purchasing decisions of consumers in the bakery market. In addition, this research could be a base material for various marketing strategies.
The awareness of the nutrition labeling of 82 food producers and 668 government officials was assessed and compared, from May to June in 1994, to that of consumers. Compared to 82.4% of cosumers, 48.1% of producers and 47.8% of officials answered that nutrition labeling is necessary. 48% of producers expected a modest food price rise, but 70% thought food sales would not be affected with nutrition labeling. While being worried about the regulatory difficulties and the increased work load given the inadequate implementation of the current food labeling system due to insufficient personnel, 50.2% of officials wanted the new nutrition labeling system to be introduced within $1{\sim}2$ years. Contrary to the general dissatisfaction with the system and the lack of confidence in it on the part of consumers, producers thought that they currently provide sufficient food information for consumers, and that consumers had much confidence in it. Producers and officials were more found worried about consumers' inadequate understanding and inactive use of the system in contrast to the widespread and welcome support on the part of consumers. But it was fully agreed by all that education and awareness is crucial for the successful implementation of nutrition labeling system.
Many countries such as The Republic of Korea have established their own nutritional standards, collectively termed Nutrient Reference Values (NRVs), and they vary due to the science which was reviewed, the purposes for which they are developed, and issues related to nutrition and food policy in the country. The current effort by the Codex Alimentarius Committee on Nutrition and Foods for Special Dietary Uses (CNFSDU) to update the NRVs that were established following the Helsinki Consultation in 1988 represents an opportunity to develop a set of reference values reflecting current scientific information to be used or adapted by many countries. This paper will focus on possible approaches to selecting or developing reference values which would serve the intended purpose for nutrition labeling to the greatest extent possible. Within the United States, the Food and Drug Administration (U.S. FDA) is currently reviewing regulations on nutrition labeling to better address current health issues, and is expected to enter into a process in the next few months to begin to explore how best to update nutrient Daily Values (DVs), most of which are still based on the Recommended Dietary Allowances (RDAs) of the Food and Nutrition Board, U.S. National Academy of Sciences, last reviewed and revised in 1968. In this presentation, I review the current purposes in the U.S. for nutrition labeling as identified in the 1938 Food, Drug, and Cosmetic Act as amended, the scientific basis for current nutrition labeling regulations in the United States, and the recommendations made by the recent Committee on Use of Dietary Reference Intakes in Nutrition Labeling of the Institute of Medicine (2003) regarding how to use the DRIs in developing new DVs to be used on the label in the United States and Canada. Based on these reviews, I then provide examples of the issues that arise in comparing one approach to another. Much of the discussion focuses on the appropriate role of nutrient labeling within the Nutrition Facts panel, one of the three major public nutrition education tools in the United States (along with MyPyramid and Dietary Guidelines for Americans).
The aim of this study was to develop and evaluate a nutrition education program that was designed to increase the knowledge, attitudes, and skills of Korean adults regarding nutrition labeling. The education program was 45 minutes of short-term training, which was conducted in the form of lectures and exercises. The contents of the program were as follows: in the introduction stage, talking about status and reasons for checking nutrition labels; in the development stage, explanation of nutrition labeling and their content, reading, and identifying sample nutrition labels, as well as comparing nutrition labels and selecting better foods; in the closing stage, summary of nutrition labeling and a pledge to check nutrition labels when purchasing processed food. A total of 53 adults (88.5% female) aged 30 years and over participated in this study. The nutrition labeling awareness of the subjects was increased significantly from 55.8 to 96.2% after the education. After the education, the correct recognition rate of a nutrition label was increased significantly from 26.9 to 78.8% for the amount of food, from 25.0 to 73.1% for the calorie content, from 36.5 to 69.2% for the nutrient contents, and from 30.8 to 82.7% for the percent daily value. The self-efficacy of checking nutrition labels was also increased significantly compared to that before the education. The overall satisfaction score of the nutrition education program was 4.2 out of 5. The outcome showed that the nutrition education program of nutrition labeling improved the participants' awareness and self-efficacy towards checking nutrition labels.
