The study subjects were 40 elderly people, whose information on general characteristics, anthropometric measurement, biochemical indices, nutrition knowledge, nutrition attitude, dietary habit, food intake and nutrient intake were obtained at baseline. The education group received 6 weekly visits of home-visiting nutrition education from 15 March to 25 April 2004. In the baseline-survey, the education group and non-education group showed no differences in their general characteristics, health-related characteristics, anthropometric measurements, biochemical indices, nutrition knowledge, nutrition attitudes, dietary habits, and food and nutrient intake levels. The difference of mean change of nutrition knowledge, nutrition attitude and dietary habit after home-visiting nutrition education had been studied. The nutrition knowledge score increased by 1.4 in the education group; however, those in the non-education group which increased by 0.4, thus, the differences of mean change were statistically significant (p < 0.05). The nutrition attitude score increased by 1.2 in the education group; however, those in the non-education group decreased by 0.4, thus, the differences of mean change were statistically significant (p < 0.01). The dietary habit score increased by 1.7 in the education group; however, those in the non-education group decreased by 2.8, thus, the differences of mean change were statistically significant (p < 0.01). The difference of mean change of anthropometric indices and biochemical indices in education group and the non-education group was not significant. Looking over the zcereals and their products, vegetables, seaweeds, meats and their products, and fish than the non-education group. The MAR increased by 0.06 in the education group; however, that in the non-education group increased by 0.01, thus, the differences of mean change were statistically significant (p < 0.05). The differences of mean change of fasting blood glucose and biochemical indices after home-visiting nutrition education were studied. Fasting blood glucose decreased by 7.6 mg/dL in the education group; however, in the non-education group which increased by 0.4 mg/dL, the difference of mean change was not significant (p = 0.051). The above findings suggest that home visiting nutrition education increases the nutrition knowledge and nutrition attitude, as well as, it is effective to change dietary habits. If the education period is extended, not fasting blood glucose improvement was insignificant, but fasting blood glucose improvement ability could be found by changing dietary habits.

  • The purpose of the study was to implement and evaluate a nutrition education program for preschool children. Applying the PRECEDE-PROCEED model, the nutrition education program was developed and focused on changing beliefs, increasing nutrition knowledge and consumption of vegetables & fruits (V/F) and dairy foods. Subjects were children attending a childcare center in Seoulwho were grouped into education (n = 33) and control group (n = 32). Education group received four sessions of nutrition education during 2011 fall. Both groups completed the questionnaire at pretest and posttest, measuring nutrition knowledge, beliefs, and preferences of V/F and eating behaviors. Compared to control group, education group made significant gains in total score of nutrition knowledge after the education (p < 0.05). In addition, the pretest-posttest changes in total score of beliefs regarding V/F consumption and eating behaviors were higher in the education group than in the control group (p < 0.05). Two groups were significantly different in the pretest-posttest changes in specific beliefs regarding the benefits of V/F consumption and some eating behavior. However, there were no changes in the preferences of vegetables or fruits between the two groups after the education. The consumption of V/F and dairy foods was not significantly different after the education. This study revealed that nutrition education for preschoolers was effective in improving nutrition knowledge and perceived benefits regarding V/F consumption and specific eating behavior. This study suggested that more intensive education is needed to induce changes in eating behaviors. This program can be used in nutrition education of children at the childcare centers or kindergartens.

  • The purpose of this study was to investigate dietary behaviors and nutritional knowledge among immigrant women in multicultural families. In addition, this study reveals a necessity for nutrition education, which is apparent to both immigrant women living in multicultural families as well as nutrition education experts. The survey was conducted with 30 immigrant women within multicultural families in Seoul. The dietary behaviors of the women were significantly different by their period of residence. The longer they had resided in Korea, the higher their dietary behavior score. However, there was no significant difference in nutrition knowledge by their period of residence. This study also conducted in-depth personal interviews with 8 immigrant women who lived in Seoul, and with 4 nutrition education experts. These interviews were performed to provide profound insights regarding the content and means of nutrition education for immigrant women. Nutrition education for immigrant women living in multicultural families should proceed at a basic level in terms of language and content, using bilingual (Korean and their native language) education materials. Education topics and content need to be developed differently according to the level of Korean comprehension and period of residence in Korea. Also, this multicultural approach should be adapted when planning nutrition education since immigrant women have various acculturation levels, and the content and means of education should be adjusted to these acculturation levels. Management after nutrition education is necessary for immigrant women who do not have sufficient understanding of the Korean language. Practical educational methods such as real cooking practices and food purchasing simulations must be developed. Finally, the results suggest that the government needs to establish a systematic plan for nutrition education among immigrant women living in multicultural families. Policy support such as training nutrition educators on multicultural individuals residing in Korea is necessary for active and effective nutritional education.
