Implementation and Evaluaion of Nutrition Education Program for Elementary School Children

  • This study was designed to develop, implement and evaluate a nutrition education program for elementary school children. Subjects consisted of 47 children in the 6th grade in Seoul, Korea. They received five sessions of nutrition education from June to July, 1999. Topics for nutrition education included function of nutrients, food sources of nutrients, balanced diet, meal planning, and adequate energy intake. Each session lasted 40 minutes. To evaluate program effectiveness, one group pretest-posttest design was used. Subjects were given a pretest and a posttest on nutrition knowledge, eating attitudes, eating behavior, and dietary intake. All data were statistically analyzed mainly using the paired t-test and $\chi$$^2$-test. There was a significant difference between pretest and posttest score on nutrition knowledge(p<0.001), subscales of nutrition knowledge including food sources of nutrients, function of nutrients, and balanced diet(p<0.001). These changes in nutrition knowledge were also shown both in boys(p<0.001) and in girls(p<0.001). Eating attitudes, subscales of eating attitudes, and eating behavior were not significantly changed after nutrition education, although some changes were observed in these variables. Dietary intakes were not significantly were not significantly changed after nutrition education for all subjects ; however, different patterns in dietary intakes were observed when examined by sex. There was an increase in nutrient intakes among boys, while there was a significant decrease in nutrient intakes among girls after program implementation. Especially, it was noted that girls had diets deficient in iron, calcium, and vitamin A, even after nutrition education. It was concluded that a five-week nutrition education program can improve nutrition knowledge or some dietary intake, but this might not be enough to induce changes in food attitudes, eating behavior or dietary intakes. It might be necessary to incorporate diverse approaches, targeting sub-groups of children, and follow-up in nutrition education for elementary school children. 노인 영양증진전략연구 : 평균영양소 적정도에 따른 식행동 비교 분석 (Strategies to Improve Elderly Nutrition : Comparisons of Dietary Behavior according to the Mean Nutrient Adequacy Ratio)

  • A deep understanding of the dietary patterns and nutrient intake is important for assessment of possilbe nutritional risk and for establishing nutrition improvement strategies. This study was conducted toexamine the dietary characteristics of a nutritionally poor elderly group compared to the middle-and highly-nourished group. Elderly participant was recruited from local elderly centers in Suwon city in 1998. Trained dietitians interviewed 119 elderly(35 males, 84 females) aged 60 years and over for collecting dietary data(24-hour recall) and related variables. Male and female subjects were grouped into high, middle, and low according to the mean nutrient adequancy ratio(MAR) tertiles. An analysisof the percentage of RDA(Recommended Daily Allowances of Korea) for each of the 10 nutrients showed that the male low-MAR group consumed below the RDA in all kinds of nutrients, and the female low-MAR group consumed nutrients below the RDA except vitamin C. An evaluation of nutrient density by Index of Nutritonal Quality(INQ) also showed a similar tendency. Thus, the INQ level of the male low-MAR group was significantly lower than the middle-or high-MAR group, especially in protein, vitamin A, thiamin, riboflavin, and phosphorus(p<0.05). Moreover, INQ level of female low-MAR group was significantly lower than that of the high group(p<0.05) in all nutrients. The female low-MAR group's daily food intake were also lower than those of the high-MARgroup in gains, fish, fruits, oil and beverages. The energy distribution from carbohydrates, fats and proteins showed that the male low-MAR group had significantly higher carbohydrate and lower fat proportions compared to each gender high-MAR group, respectively. The male and female low-MAR group had low scores about eating all side dishes. These findings indicate that a moderate increase of the meat/egg/fishes intake was needed by the male low-MAR group for improving nutrition adequacy, and an overall increase of the food quantity and quality was desired for the female low-MAR group. These data could be used for planning a community elderly nutrition program and establishing strategies for tailored guidelines for the individuals.

Gender and age group differences in nutrition intake and dietary quality of Korean adults eating alone: based on Korean National Health and Nutrition Examination Survey Data, 2013-2016

  • BACKGROUND/OBJECTIVES: This study investigated gender and age differences in nutrient intake and dietary quality of people eating alone. SUBJECTS/METHODS: From Korean National Health and Nutrition Examination Survey 2013-2016 data, 2,305 adults aged 20 years and older that ate meals alone were included in this study. Their energy and nutrients intakes, as well as their nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ) were analyzed. Food group consumption pattern, dietary variety score (DVS), dietary diversity score (DDS) were also analyzed. All data were compared among gender and age groups. RESULTS: Men consumed more energy and nutrients than women, except for vitamin C, and the NARs showed similar gender differences. The INQs of 4 nutrients (calcium, vitamin A, vitamin C, and riboflavin) were lower than 1.0 in men, whereas only the calcium INQ was lower than 1.0 in women. Men had a lower DDS (3.6) than women (3.9) (P < 0.001) and had more 'undesirable' food group consumption patterns than women (P < 0.001). The intakes of calcium, vitamin A, and vitamin C were relatively low in the young-aged group (INQs less than 1.0). In the old-aged group, the MAR level was relatively low, and the INQs of calcium, riboflavin, and niacin were below 1.0. The old-aged group consumed more menu items, but their DVS was the lowest. CONCLUSIONS: Compared to women, the dietary quality and food diversity among men were poorer. There were poorer quality and diversity patterns in the young-aged group compared to those of the older groups. An overall low intake of nutrients and the low nutrient density of meals were the main dietary problems among the old-aged group who eat alone. Therefore, men, particularly young- and old-aged, need to be prioritized in nutritional policies directed toward those who eat alone.

  • This study was aimed to investigate the relations between self-selected intake of 3 macronutrie-nts and body weight gain and body fat accumulation in male rats given three isocaloric diets differing carbohydrate protein and fat contents concurrently. Also the effect of dietary restriction was observed. Forty two male rats of Sprague-Dawley strain weighing 68.7$\pm$6.1g were randomly divided into 2 groups and were allowed to have foods from 3 different cups for 8-hours a day or ad libitum, After 12 weeksthey were decapitated and their brains were quickly removed and frozen until they were assayed for serotonin and its metabolite 5-HIAA The carcass was dried at 105$\pm$2$^{\circ}C$ and measured the contents of body water and body fat. The animals chose a moderately high and constant carbohydrate level and showed the increase of percent protein intake with age and great individual variations. Protein in the diet seemed to trigger appetite and increase food intake which resulted in higher weight gains and in more fat deposition in the body. The concentration of brain serotonin did not show any correlations with the intake of nutrients. the accumulation of body fat and the gain of body weight.

사회복지 시설 여자 노인의 영양 건강 상태 -I. 영양소 섭취량 및 생화학적 건강상태- (The Nutritional Status of the Female Elderly Residents in Nursing Home -I. Nutritional and Biochemical Health Status-)

  • Nutritional and health status was assessed in the 86 healthy elderly women who aged 65 through 96 and resided in nursing home in chonbuk area. Nutritional status was determined by dietary intake, anthropometric and hematological indices and hair elements. Correlation analysis among nutritional indices were performed to identify the factors which related specifically to nutritional status of the elderly. Nutrients intake below two-thirds of the RDA were Ca, riboflavin and niacin. Especially mean Ca intake was only 51.9% of RDA and most of nutrients intake were decreased as theri age increased. Height, body weight and mid upper arm circumference were decreased with age but W/H ratio did not differ among age groups. These data suggested that body fat accumulation did not change with age but lean body mass was decreased with age in the elderly. Waist circumference was positively correlated to dietary fat intake, and body weight, BMI, waist and hip circumferences and total body fat were positively correlated with serum LDC/HDL ratio. It could be concluded anthropometric indices were good indicator that reflect the lipid nutritional status in elderly women. Hematological indices, Hb, RBC, MCH, albumin, globulin, transferrin levels, belonged to normal ranges of aged women. However, the lowest Hb level showed in the oldest-old group(aged 85 and over years group). The avalilavilty of hair analysis to measure nutritional status was tested. There were not found any significant correlations between many kinds of nutritional indices and hair elements except hair Zn content which was positively correlated with BMI.

식품성분표 차이에 따른 섭취 영양소 추정 비교 연구 (Comparative Study of Nutrient Intakes Estimated by Difference of Nutrient Database)

  • This study was conducted to investigate the influence of different nutrient databases in estimating nutrient intake. A nutrient survey with Food Frequency Questionnaire containing 65 food items was conducted with 2,426 subjects over 30 years of age living in Yeonchon-gun, Kyungki province. The nutrient intakes were first estimated by using one (A) nutrient database which was based on the Korean Food Composition Table, 4th edition. With the other (B) nutrient database which was based on the Korean RDA(Recommended Dietary Allowances) 6th edition, it was reestimated and two resu1ts were compared. For most nutrients except carbohydrate, calcium, vitamin C and $eta$-carotene, mean nutrient intake level estimated from database B was significantly higher than that from database A(p<0.05). Mean intake level of most nutrients from two databases were significantly correlated by Pearson's correlation coefficients(p<0.001). Results from the ranking of nutrient intake levels of the subjects by two databases were highly correlated ( P >0.9, p<0.001). Weighted kappa values representing measures of agreement ranged from 0.55 databases ranged from 45% for vitamin C to 96% for carbohydrate. This result implies that different nutrient database may produce substantial differences in estimating the absolute nutrient intake but may not be crucial in ranking or classifying individuals with regard to specific nutrient intake.

아동비만에 영향을 미치는 일반요인 및 식이섭취 실태에 대한 비만군과 대조군의 비교 연구 -인천시내 초등학교 중심으로- (A Comparative Study of Obese Children and Normal Children on Dietary Intake and Environmental Factors at an Elementary School in Inchon)

  • The purpose of this survey was to investigate the relationship among obese children, dietary intake and environmental factors. Therefore, this survey compared obese children with normal children on dietary intake and environmental factors. The survey were 110 obese children and 110 normal children whose age, height, and sex were same as the obese children of 21 elementary school in Inchon. The statistical analysis of data was completed using SAS program. The results were summarized as follows : 1) The student's obesity was related to parent's obesity and number of their siblings. There were significant differences between obese groups and normal group for these two factors. 2) Meal time of the obese group showed more irregularity than that of the normal group. Otherwise, the normal group were more "piclity" about special food than the obese group(p<0.05). Also obese children showed unconsious eating while reading or watching TV(p<0.01). The normal group attended physical education class more eagerily the obese group(p<0.001). There was no significant difference between obese children and normal children for learning habits. 3) Obese children shoed higher intake of nutrients compared to normal children. Among all the nutrients, minerals and vitamins showed significant differences. Therefore, further study on obese children and their intake of minerals and vitamin is needed. Also, in order to prevent factors which influence obesity, nutrition education at home as well as school was needed.as needed.

카메라폰을 이용한 식이섭취 조사방법에 대한 연구 (A Study on the Dietary Intake Survey Method Using a Cameraphone)

  • This study was conducted to investigate the validity of using a cameraphone for a dietary intake survey method. The subjects were 28 female college students. After eating a standard lunch meal which consisted of plain rice, seaweed soup, bulgogi, cucumber salad, roasted anchovy and kimchi, the quantity of dietary intake, calorie intake & nutrients intake were analyzed by weighed method, diet record method and cameraphone method by dietitian with k without cameraphone analysis training. There were no significant differences in the quantity of 6 foods intake between weighted method and cameraphone method by dietitians with camera phone analysis training. However, the quantity of seaweed soup, bulgogi & cucumber salad intake analyzed by diet record method was significantly lower than the weighed method. And the quantity of seaweed soup, bulgogi, cucumber salad, roasted anchovy and kimchi intake analyzed by the cameraphone method by dietitians without cameraphone analysis training was significantly lower than the weighed method. There were no significant differences in the calorie intake and nutrients intake between the weighted method and camera phone method by dietitians with camera-phone analysis training. However, protein, calcium, iron, phosphorous, Vitamin A, Vitamin $B_2$, Vitamin E and cholesterol intake analyzed by diet record method was significantly lower than the weighed method. And fat and Vitamin $B_2$ intake analyzed by the camera phone method by dietitians without cameraphone analysis training was significantly lower than the weighed method. Therefore, this study suggests that the use of the camerephone may be a valid and convenient method fur evaluating a dietary intake survey. However, systematic and standard education is necessary about the size and volume of dishes and angle of photo for more accurate results.

Dietary intakes of adolescents from food insecure households: analysis of data from the 6th (2013-2015) Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: This study aimed at evaluating the dietary intakes of Korean adolescents affected by food insecurity, in comparison with those who were food secure. SUBJECTS/METHODS: The study used one day 24-hour dietary recall data from the $6^{th}$ Korea National Health and Nutrition Examination Survey. The study subjects consisted of 1,453 adolescents of whom 695 were middle school-aged and 758 were high school-aged. Food security status was assessed using the 18-item questionnaire. Nutrient intake was evaluated in terms of nutrient density, insufficient intake, and excessive intake for selected nutrients, in addition to meeting the appropriate range for total energy intake and energy intakes from carbohydrate, sugar, protein, fat, and saturated fatty acids. Food intake was evaluated in terms of food group servings and dietary diversity score (DDS). RESULTS: The percentages of food insecurity were 11.1% for middle school-aged adolescents and 16.8% for high school-aged adolescents. Food insecure middle school-aged adolescents had higher intake of carbohydrate (P = 0.006) but lower intake of fat (P = 0.010) and saturated fatty acids (P = 0.005) than their food secure counterparts although the intake of both groups was in the recommended ranges. Nutrient intake among high school-aged adolescents was generally similar regardless of food security status. Both food secure and insecure adolescents showed insufficient intake of vitamin A, vitamin C, and calcium, and excessive sodium intake. They additionally had low prevalence of meeting appropriate intake ranges for energy, carbohydrate, and sugar. Food intake in terms of food group servings and DDS was also similar regardless of food security status among both age groups, with low intakes of foods from fruit and dairy groups. CONCLUSIONS: Except for a few nutrients among the middle school-aged adolescents, dietary intakes among Korean adolescents did not differ by food security status in this study.

강원도 일부지역의 영양섭취실태에 관한 연구 (A Study on Nutrient Intakes in Kang Won Province)

  • The survey was conducted for the period from 25 th to 29 th July, 1990. The survey area were selected the mountain area in Kang Won Province. Intake of foods and nutrients of all members in the households surveyed by means of questionnaire was computed based on number of meals a day. On the other hand, daily intake of nutrients by an individual was calculated by sex, age and type of work based on the conversion rate of RDA (Korean Recommended Dietary Allowances for Adult). 1. Status of food intake. The average food intake per person per day in surveyed area was 1103.49 g. The total intake of food was consisted of 44.17% grains, 23.31% vegetables, 10.66% fruits, respectively. These findings led us to the conclusion that people in the surveyed area depended heavily on plant foods. 2. Status of nutrient intake, 1) The average intake of Calorie was 2567.54 Cal Per day, which was slightly higher than 2500 Cal of RDA. 2) The average Intake of protein was 82.92g per day, which was higher than 70g of RDA. Though the quantity was above the RDA, it was largely from plant foods 3) The average intake of calcium was 383.93 mg per day, which was much lower than 500 mg of RDA. 4) The average intake of iron was 11.88 me per day, which was nearly the same quantity as 10 mg of RDA. 5) Intake of vitamin group were high among the inhabitants than recommended by RDA 3. The Kinds of food intake The kinds of food intake in surveyed area were totally 66 different kinds. 4. Economic status. As for the education level, almost of the food handlers finished the primary school and the average monthly income was 364,600 in surveyed area. Households used gas(100%) for fuel.
