Performance of Crossbred Gilts Fed on Diets with Higher Levels of Fat and Fibre through Addition of Rice Bran

  • Crossbred gilts (n=54) of about $26.38{\pm}0.85kg$ body weight and 25 weeks of age were randomly divided into 18 groups of 3 animals each. Three dietary treatments viz., $T_1$, $T_2$ and $T_3$ were formulated. The treatment $T_1$ containing maize grain (35%) and wheat bran (47%) along with soybean meal and fish meals served as control diet. Rice bran (RB) was selected as a single source of fat (13.02%) and fibre (17.12%), which was gradually increased in diets $T_2$ (41%) and $T_3$ (82%) replacing maize grain and wheat bran of $T_1$ at 50% and 100% in the diets $T_2$ and $T_3$, respectively. The fat and fibre levels of the diets were thus 3.46 and 5.24, 9.31and 9.69 and 11.61and 13.26% in $T_1$, $T_2$ and $T_3$, respectively. All the diets, however, contained almost similar concentration of CP (18.35${\pm}0.29%$). Each dietary treatment was offered to six replicated groups of 3 piglets in following completely randomized design and feeding was continued for 112 days during the growing phase. Growth, feed utilization, reproductive performance, nutrient utilization and different blood biochemical parameters were studied. Growth rate, feed intake and feed conversion were lower (p<0.01) in $T_3$ in comparison to $T_1$ or $T_2$. Digestibility of all the nutrients except EE was reduced significantly (p<0.01) in $T_3$. Serum glucose level decreased (p<0.01), whereas the urea and cholesterol concentration in the blood increased (p<0.01) in $T_3$. The duration of estrus of pigs fed diet containing 82% RB ($T_3$) was highly variable within the group, but all the groups showed statistically similar duration of estrous. Feed cost per unit gain was found to be comparable between control ($T_1$) and $T_2$ group. The results indicated that RB can be included up to 41% in swine diets replacing 50% of maize and wheat bran. Higher concentrations of ether extract and fibre beyond 9.31 and 9.69% in diet had detrimental effect on growth, nutrient utilization and reproductive performance.

  • The experiment was conducted to evaluate CM (Cell Mass from Lysine Fermentation), which is used to produce synthetic lysine in industry, as an alternative protein source in broiler diets. Three different production conditions were employed to produce CMs (CM I, II, III). Treatments were control, CM I -1 (1 % of CM in the diet), CM I -3 (3% of CM in the diet), CM I -5 (5% of CM in the diet), CM II (3% of CM in the diet), and CM III (3% of CM in the diet). It was found that CM products were all high in crude protein content and especially high in lysine and methionine contents, while very low in minerals. For the starter period, all CM groups showed better weight gain, chicks fed CM I -1 diets were especially high in weight gain (p < 0.05). CM groups consumed 14.4 to 18.0% more feed than chicks fed control diets (p < 0.05). The best FCR was found in CM I -1 groups (p < 0.05), but as CM level was increased, FCR was also increased. For the finisher period, weight gain was similar through all treatments. Through whole experimental period, weight gain and feed intake were higher in all CM groups than control group (p < 0.05), however, as CM level was increased, FCR was also increased. Generally chicks fed CM diets showed higher utilizabilities of gross energy, dry matter, crude protein and crude fat. The best nutrients utilizability was obtained in CM I -1 group, and the worst was found in the control group. During the finisher period, the utilizabilities of crude protein, crude ash and phosphorus were not affected by the dietary treatments. Amino acids utilizability was not significantly affected by the treatments except CM I -5 group. In all amino acids tested, chicks did not show the big difference in utilizabilities. Only in the CM I -5 group, amino acids utilizability was significantly lower than control group. However, among CM I groups, the mean value of the amino acids utilizability was decreased as the level of CM inclusion in the diet was increased. During the finisher period, similar trend was found in amino acids utilizability.

Effects of Extrusion Conditions of Corn and Soybean Meal on the Physico-Chemical Properties, Ileal Digestibility and Growth of Weaned Pigs

  • Two experiments were conducted to evaluate the effects of different extrusion conditions of corn and soybean meal on physico-chemical properties, ileal digestibility of amino acid and growth performance in weaned pigs. In Expt. 1, to compare physico-chemical properties and ileal digestibility of extruded corn and soybean meal, ground corn (2 mm screen) and soybean meal were separately extruded in four different conditions: (1) no preconditioning, low water supply (3.0 l/min) (NCLW), (2) no preconditioning, high water supply (7.0 l/min) (NCHW). (3) preconditioning (steam 3.0 l/min) with low water supply (3.0 l/min) (CLW), and (4) preconditioning (steam 3.0 l/min) plus high water supply (7.0 l/min) (CHW). Twenty-five cannulated pigs ($L{\times}Y{\times}D$, 7.62 kg BW for soybean meal, 8.80 kg BW for corn) were employed to determine nutrients digestibility of the extruded feedstuffs. In Expt. 2, a total of 90 pogs ($L{\times}Y{\times}D$, 9.18 kg BW) were used for a 28 d feeding trial to compare growth performance of pigs as affected by different extrusion conditions. Before mixing, corn and soybean meal were blended and extruded by the same conditions as described in Expt. 1. corn extruded with NCLW showed the highest (p < 0.05) degree of gelatinization (DG), compared to the lowest values observed for NCHW. Extrusion of corn with preconditioning (CLW and CHW) increased (p < 0.05) the DG as compared to the extrusion condition of NCHW. Extruded SBM with NCLW showed the lowest (p < 0.05) degree of texturization among treatments. The ileal digestibility of GE in SBM was higher with NCHW and CHW as compared to NCLW. The ileal digestibility of CP was lower in extruded corn, but was higher in extruded SBM, compared to untreated sample. Lysine digestibility of extruded corn (except corn with NCHW) was in general significantly improved. Extrusion of SBM resulted in no improvements in ileal digestibility of amino acids, but extruded SBM with NCLW had lower lysine digestibility compared to other treatments. In growth responses, pigs fed a diet with CLW had higher, but not significant, average daily gain (ADG) than other treatments during first 2 weeks. From d 15 to 28, pigs fed a diet with CHW had significantly less (p < 0.05) average daily feed intake (ADFI) than others except NCHW. In conclusion, the proper extrusion condition for corn and SBM in terms of ileal digestibility of amino acids and growth performance of weaning pigs seems to be the combination of preconditioning and a low water supply (3.0 l/min).

A Study on the Obesity Incidence Rate and Fat Intake, Serum Total Cholesterol/Triglyceride Concentrations by Obese Index in the Elementary School Students (초등학생의 비만 이환율 및 비만도에 따른 지방 섭취량ㆍ혈청 총콜레스테롤/중성지질 수준 연구)

  • The obesity incidence rate of children in Korea has increased from 2 to 3% in 1970 to 15% in 2004. The purpose of this study was to evaluate the effect of diet on obesity, and serum cholesterol and triglyceride concentrations by obese index in Korean elementary school students. The subjects were three hundred and thirteen students(male 157, female 156). Height, weight and body fat were measured. Dietary records by the 24-hr recall method were taken for 3 days, and serum cholesterol and triglyceride concentrations were determined. The obesity index was calculated by the Korean of Pediatrics Association standards. Nutrient intakes were calculated by CAN PRO. Almost twenty percent(19.8%) of the subjects were underweight, 60.1 % were normal, 10.2% were overweight and 9.9% were obesity. The obesity incidence rate of the males was not different from the females. Energy and nutrients intakes containing fatty acids were not significantly different by the obesity index. All the subjects had 59.7%~61.1% of carbohydrate and 24.2%~25.6% of fat for energy. Serum cholesterol concentrations of the obesity group(177.3 mg/dl) was higher than those of the underweight group(161.8 mg/dl) and normal weight group(163.5 mg/dl) and overweight group(163.8 mg/dl). Twenty nine percent of the obesity group had serum cholesterol concentrations over 200mg/dl, as compared with 4.8% of the normal and underweight group. Serum triglyceride in the obesity group(103.0mg/dl) was higher than those of the underweight group(79.7 mg/dL), normal weight group(81.0 mg/dl) and overweight group(81.1 mg/dl). Serum total cholesterol concentrations were correlated with the obese index, PIBW, R hrer index at p<0.001, with BMI at p<0.01 and with waist/hip ratio at p<0.05. Serum triglyceride concentrations were correlated with the obese index, PIBW, R hrer index at p<0.01. It is concluded that obesity increases serum total cholesterol concentrations and triglyceride concentrations, and that the obesity preventive program for normal weight children, and weight reduction program for obese children are necessary for elementary school children's education.

Influence of Supplemental Vitamin D3 on Production Performance of Aged White Leghorn Layer Breeders and Their Progeny

  • An experiment was conducted to elucidate the effect of graded levels of vitamin $D_3$ in White Leghorn (WL) layer breeders on egg production, shell quality, hatchability of eggs and juvenile performance of offspring during their late laying period (72-88 wk). White Leghorn breeder females were randomly divided into 5 groups of 50 each and were housed in individual California cages in an open-side housing system. Considering birds in five cages as a replicate, 10 such replicates were randomly allotted to each treatment. A basal diet was formulated containing all the nutrients as recommended for WL layers except vitamin $D_3$, which served as control. Another, four diets were formulated by supplementing graded levels of feed grade crystalline cholecalciferol to the basal diet that contained 300, 600, 1,200 and 2,400 ICU of vitamin $D_3$ per kg. Each diet was offered ad libitum to one of the above five treatment groups. The egg production, egg weight, daily feed consumption and the feed intake per dozen eggs or kg egg mass of the birds fed diet without any supplemental vitamin $D_3$ was comparable with those of supplemental groups. Similarly, the level of vitamin in the diet did not have any effect on any of the above parameters. However, the specific gravity of eggs laid by the birds fed the diet without supplemental vitamin $D_3$ was comparable with either 600 or 2,400 ICU supplemental groups but significantly higher when compared to the 300 and 1,200 ICU groups. The egg -shell breaking strength was significantly lowered in the 600 ICU supplemental groups as compared to the strength of other dietary groups. The Haugh unit, egg shell weight, shell thickness, tibia breaking strength, bone ash and calcium content were not influenced by vitamin $D_3$ concentration in the diet. Serum Ca concentration was influenced by vitamin $D_3$ level in the diet. The serum Ca concentration of birds fed either control or the vitamin supplemented diet up to 1200 ICU/kg diet was comparable. However, increasing the concentration of vitamin $D_3$ to 2,400 ICU/kg diet significantly enhanced the concentration of Ca in the serum, which was significantly higher compared to other dietary groups. The serum concentration of P and protein, however, was not influenced by level of vitamin $D_3$ in the diet. Neither fertility nor hatchability was influenced by vitamin $D_3$ concentration in the diet. Feeding a vitamin $D_3$ deficient diet or supplementation of vitamin to hens did not have any influence on their progeny chicks. It can be concluded that dietary supplementation of vitamin $D_3$ may not be essential for optimum production, shell quality, hatchability, and juvenile performance of WL breeders during 72 to 88 weeks of age.

A Study on Kindergarten's Meal Service Program and Children's Food Intake (유아 교육기관의 급식 운영실태와 유아의 식사 섭취량 조사)

  • Today, the role of kindergarten is more important as nutrition provider through snack and meal services. Desirable kinds and amounts of food items at school lunch menu were important factors of nutrients intakes in children. This study was performed to assess the kindergarten's meal service program (snack and lunch) and the consumption amount of lunch according to each dishes. Twenty four institutions that cared over one hundred children were observed at Seoul and Kyunggido area. Well-trained observers checked meal and snack serving activity and foodservice facilities by formal checklist. And using the weighing method assessed the consumption levels of food items at lunch. During 3 days, 30 children in each kindergarten were selected randomly according to age, observers measured serving and residual weight of each food. The data was compiles by performing ANOVA-test using SPSS WIN 10.0. The result were as follows: 1) Foodservice facilities in kindergarten was limited to provide qualified foodservice. $91.7\%$ of institution had kitchen, $41.7\%$ had dinning. The kitchen equipment possession rate was $12.5\%$ (oven), $30.8\%$ (heating cabinet), $58.3\%$ (refrigerator). The rate of using document about foodservice was used $83.3\%$ (menu list), $41.7\%$ (daily foodservice record), $25\%$ (standard recipe). $41.7\%$ of institution employed licensed dietitian. Only $41.7\%$ of subjects preserved meal after daily meal service. 2) Meal serving size was decided by teacher, $54.5\%$ at snack and $43\%$ at lunch and pre-divided individual portion type was $36.4\%$ at snack and $28.6\%$ at lunch. The rate of cleaning activity before meal was $72.2\%$ at snack, $90.5\%$ at lunch. And nutrition or sanitation education activity was more performed at lunch time, for examples brushing teeth activity was $12.5\%$ at snack $85.7\%$ at lunch. 3) The consumption amounts of plain cooked rice was $112.7{\pm}26.1{\cal}g$, cooked rice and cereal was $93.06{\pm}27.97{\cal}g$, curry rice was $208.35{\pm}64.84{\cal}g$ and the consumption amounts of these main dishes was significantly different by age (p < 0.001). The consumption amounts of soup was very different according to children's preference. The consumption amounts of seaweed soup was $120.18{\pm}82.13{\cal}g$, wild sesame and bean-paste soup was $40.64{\pm}23.16{\cal}g$. The consumption range of kimchis was from $6{\cal}g\;to\;13{\cal}g$, jorim (braised food) was from $3{\cal}g\;to\;25{\cal}g$, fried food (include stir fried, deep fat fried, pan fried) was from $14.5{\cal}g\;to\;22{\cal}g$, vegetable dish was from $3{\cal}g\;to\;16{\cal}g$. These consumption amount of each dishes was not reached recommended portion size of nutritionally planning menu by nutritionist.

Use of Awamori-pressed Lees and Tofu Lees as Feed Ingredients for Growing Female Goats

  • Okinawan Awamori is produced by fermenting steamed indica rice with black mold, yeast, and water. Awamori-pressed lees is a by-product of the Awamori production process. Tofu lees is a by-product of the Tofu production process. This research consisted of two experiments conducted to elucidate whether or not dried Awamori-pressed lees and Tofu lees can be used as a mixed feed ingredient for raising female goats. In experiment 1, digestion trials were conducted to ascertain the nutritive values of dried Awamori-pressed lees and dried Tofu lees for goats. The digestible crude protein (DCP) and total digestible nutrients (TDN) contents of dried Awamori-pressed lees and Tofu lees were 22.5%, 22.5% (DCP), and 87.2%, 94.4% (TDN) respectively. In experiment 2, 18 female goats (Japanese Saanen${\times}$Nubian, three months old, body weight $15.4{\pm}0.53$ kg) were divided into three groups of six animals (control feed group (CFG), Awamori-pressed lees mixed feed group (AMFG), Tofu lees mixed feed group (TMFG)). The CFG control used feed containing 20% soybean meal as the main protein source, while the AMFG and TMFG treatments used feed mixed with 20% dried Awamori-pressed lees or dried Tofu lees. The groups were fed mixed feed (volume to provide 100 g/d increase in body weight) twice a day (10:00, 16:00). The klein grass hay and water was given ad libitum. The hay intake was measured at 08:00 and 16:00. Body weight and size measurements were taken once a month. At the end of the experiment, a blood sample was drawn from the jugular vein of each animal. The DCP and TDN intakes in AMFG and TMFG showed no significant difference to the CFG. Cumulative measurements of growth in body weight, withers height, chest depth, chest girth, and hip width over the 10 mo period in the AMFG and TMFG were similar to the CFG. By contrast, cumulative growth in body length and hip height in the AMFG and TMFG tended to be larger than the CFG. Cumulative growth in chest width in the AMFG was significantly larger (p<0.05) than the CFG. Blood parameter values were similar to those in normal goats reported by other scientists. The coats of the AMFG and TMFG animals looked shinier than the animals in the CFG. The results demonstrate that dried Awamori-pressed lees and Tofu lees can be used as a feed ingredient for the raising female goats.

A Change of Serum Folate and Vitamin $B_{12}$ Concentrations of Maternal and Umbilical Cord Blood during Pregnancy (임신 중 모체와 신생아 제대 혈청의 엽산과 비타민 $B_{12}$ 농도 변화)

  • Folate and Vitamin $B_{12}$ are essential nutrients important during pregnancy. This study was conducted to evaluate the folate and vitamin $B_{12}$ nutritional status of Korean pregnant women and to investigate the relationship between maternal­umbilical cord serum folate and vitamin B12 levels and pregnancy outcomes. Dietary intakes of the pregnant women were estimated by 24 hour-recall (3 times). Serum folate and vitamin B12 levels in maternal blood and umbilical cord of 27 pregnant women at 1'st-, 2'nd-, 3'rd-trimester and delivery were measured by RIA (radioimmuno assay), respectively. Means of folate and vitamin $B_{12}$ intake were $283.53\pm58.01{\mu}g/day\;and\; 2.99\pm1.32mg/day$, respectively. Maternal mean serum folate levels of the trimester and delivery were $9.75\pm3.60ng/ml,\;10.46\pm4.63ng/ml,\;10.71\pm4.14ng/ml\;and\;15.05\pm7.04ng/ml$. Those maternal levels were significantly lower than that of umbilical cord blood $(23.99\pm9.42ng/ml)$. Serum vitamin $B_{12}$ levels of maternal trimester and delivery were $479.07\pm137.56 pg/ml,\;310.96\pm137.56pg/ml,\;308.22\pm74.65pg/ml,\;and\;295.67\pm93.36pg/ml$, which were significantly lower than those of umbilical cord blood $(500.13\pm185.60ng/ml)$. This finding indicates that the uptake of folate and vitamin $B_{12}$ in the fetus may be due to an active placental transport mechanism. Maternal serum level correlated positively with those of umbilical cord blood, showing that folate and vitamin $B_{12}$ concentration of umbilical cord blood might be affected by maternal status. There was no significant correlation between the serum folate levels in maternal-umbilical cord blood and the pregnancy outcomes. However, maternal vitamin $B_{12}$ level at l'st trimester was significant positive correlation between the gestational age except for birth weight and weight gain.

Dietary Effect of Puer Tea Extract on the Body Weight in Rats

  • Puer tea is a traditional beverage originating from Yunnam area of China. It supplies basic nutrients such as vitamin C. It has been well reported that daily drinking of Puer tea can help the digestion and ease the stomachache after food intake. Puer tea also contains various polyphenols which may exert antibacterial activity against Staphylococcus aureus and Listeria monocytogenes. Because of these functional effects on digestive system we suspected if Puer tea can display any dietary effect or decrease the obesity after long-term drinking. We employed 6-week old SD rats as experimental animal and treated them with extract of Puer tea in relation to the body weights. Rats were divided into 5 groups (NC, PC, E, E+P, E+P5). NC group was experimental control and rest of them are as follows: water only (PC), water with exercise (E), water with exercise and Puer tea extract (E+P), water with exercise and 5X extract of Puer tea (E+P5). Feeding was carried out every day for 5 weeks by oral administration. Reduction rate of body weights was highest in E group. Relative ratio of losing weight was as follows: PC group (100.78%), E group (95.57%), E+P group (94.53%) and E+P5 group (74.22%), respectively. Exercise was more helpful to control the body weight. The result strongly suggests that Puer tea is highly effective to control the body weight and could be used for pharmaceutical purpose to treat obesity without side effects.

Development of a Korean Diet Score (KDS) and its application assessing adherence to Korean healthy diet based on the Korean Food Guide Wheels

  • The most critical point in the assessment of adherence to dietary guidelines is the development of a practical definition for adherence, such as a dietary pattern score. The purpose of this study was to develop the Korean Diet Score (KDS) based on the Korean Food Balance Wheel and to examine the association of KDS with various lifestyle characteristics and biochemical factors. The dietary data of 5,320 subjects from the 4th Korean National Health and Nutritional Examination Survey were used for the final analysis. The food guide was composed of six food group categories; 'grain dishes', 'fish and meat dishes', 'vegetable dishes', 'fruits', 'milk' and 'oils and sugars'. Based on the recommended serving numbers for each group, the scores measuring adherence to this food guide were calculated from the dietary information from the 24-hour dietary recall questionnaire, and then its correlation with various characteristics was assessed. KDS was significantly associated with several clinical, lifestyle and socioeconomic factors as well as diagnosed disease history. The higher quintile group of KDS showed a significantly lower level in fasting blood glucose, systolic blood pressure, triglycerides, current smoking and drinking as well as higher leisure time activity, house income and education. Furthermore, the KDS quintile group of women was inversely associated with hypertension, osteoporosis and diabetes. A higher KDS quintile was characterized with a higher intake of several critical nutrients, such as Ca, Fe and vitamins as well as a desirable nutrition balance such as the ratio of macronutrients. Our results demonstrate that KDS is a beneficial tool in assessing the adherence to a healthy diet based on the Korean dietary guidelines. We suggest that KDS could be a useful indicator for evaluating the dietary balance of the Korean population.
