A Study on the Evaluation of Food Intake of Middle School Students in Kangneung (강릉지역 중학생의 식품섭취 평가에 관한 연구)

  • To assess the food intake and diet quality of middle school students who live in Kangneung area, a dietary survey using 3-day food record was conducted with 226 subjects. Seventy five percent of total food intake was in the form of plant foods and the rest in the form of animal food. Diet qualify was assessed by food group pattern, dietary diversity score (DDS), and dietary variety score (DVS). When counting the major food groups consumed, 53% of subjects had a DDS of 3 and 35% of subjects had a DDS of 4. When investigating the consumption pattern of the major five food groups, only 10.2% of subjects consumed foods from all five groups. The groups most frequently missed were dairy products (73.0%) and fruits (71.7%). On average, subjects habitually consumed 22.6 different foods daily, with the mean score of diet variety for males (22.1) being significantly lower than for females (22.9). Correlation coefficients between nutrient adequacy ratio (NAR) and DVS ranged from r=0.40 for vitamin B$_1$to r=0.61 for phosphorus. NAR also improved as the number of foods or food groups consumed increased (p<0.001). Associations between the NAR and high level of DVS was more positive than those between the NAR with DDS. When assessing the dietary quality of subjects using DDS and DVS, many people appeared not to have a desirable food intake. Therefore, to lead them to have nutritionally balanced diet, educating students and their parents on nutrients and suggesting guidelines for a desirable diet is considered to be essential so that they can intake from all of major food groups and have various foods in their diet.

Changes in Marine Environmental Factors and Phytoplankton Community Composition Observed via Short-Term Investigation in a Harbor in the Eastern Part of the South Sea of Korea (남해동부연안항만에서 하계 단주기 조사에 따른 해양환경 및 식물플랑크톤 군집조성의 변화)

  • To understand the relationship between environmental factors and phytoplankton community structures and why early outbreaks of Cochlodinium polykrikoides occur in the inner bay of Korea, short-term investigations were conducted at 17 stations in the eastern part of the South Sea of Korea, with sessions every two weeks from July 7 to August 24, 2016. The water temperature increased from $22.3^{\circ}C$ in the first survey to $28.4^{\circ}C$ in the fourth survey, which was a rise of about $6.01^{\circ}C$. Salinity was relatively high at Stns. 8 13 in the inner bay. In the first survey, rainfall of about 150 mm was observed, so nutrients were supplied at a high level and a high concentrate of Chl. a was observed. Cryptophyta (Crpytomonas spp.) represented 58.3 % of the community, followed by Bacillariophyta at 33.8 %. In particular, at Stn. 5, Dinophyta Prorocentrum spp. accounted for a very high percentage, 32.2 %. In the second survey, low phytoplankton populations were observed, and Bacillariophyta (Chaetoceros spp.) accounted for 61.0 %. At Stn. 4, Skeletonema spp. showed high populations but did not appear at other stations even at a low density. In the third and fourth surveys, phytoplankton populations were very low. Bacillariophyta represented 78.0 % in the third study and 73.3 % in the fourth. Interestingly, although the appearance of C. polykrikoides was investigated at the beginning of the red tide in the coastal area, they were not observed inshore, implying that the likelihood of inflow by the germination of resting cysts was low for the inner bay during this study period. In addition, environmental characteristics such as salinity and nutrient presence were significantly different between sampling stations due to the existence of a semi-closed bay in the southern sea, resulting in dominant phytoplankton species and community composition differing in these short-term investigations.

Association of coffee consumption with health-related quality of life and metabolic syndrome in Korean adults: based on 2013~ 2016 Korea National Health and Nutrition Examination Survey (한국 성인 남녀의 커피 섭취와 건강관련 삶의 질 및 대사증후군과의 관련성 : 2013 ~ 2016 국민건강영양조사 자료를 이용하여)

  • Purpose: This study examined the association of the type and frequency of coffee consumption with the health-related quality of life and metabolic bio-markers in adult men and women from the 2013 ~ 2016 Korea National Health and Nutrition Examination Survey (KNHANES). Methods: A total of 11,201 subjects (4,483 men and 6,718 women) were classified according to the type of coffee consumption (non-coffee, black coffee, 3-in-1 coffee) and type and frequency of coffee consumption (non-coffee, ${\leq}2$ times/day of black coffee, > 2 times/day of black coffee, ${\leq}2$ times/day of 3-in-1 coffee, > 2 times/day of 3-in-1 coffee) using food frequency questionnaires. Dietary nutrient intake data were assessed using food frequency questionnaires. The health-related quality of life was measured using the EuroQol-5 dimension (EQ-5D) and EQ-5D index score. Data on metabolic bio-markers were obtained from a health examination. Results: Among men and women, the proportion of subjects with an energy intake below the estimated energy requirement (EER) was lower among the 3-in-1 coffee consumption group, and the proportion of subjects with iron intakes below the estimated average requirements (EAR) was lower among the 3-in-1 coffee consumption group. Women (OR: 0.810, 95% CI: 0.657 ~ 0.998) with the ${\leq}2$ times/day of 3-in-1 coffee had a lower risk of impaired health-related quality of life (lowest 20% level in the EQ-5D score) compared to the non-coffee consumers after a multivariable adjustment. In both men and women, the type and frequency of coffee consumption was not associated with metabolic bio-markers risk after multivariable adjustment. Conclusion: These results suggest that 3-in-1 coffee consumption may be associated with a lower risk of impaired health-related quality of life and may not be associated with the metabolic bio-markers risk in adult men and women.

Selection of Excellent Genetic Resources Based on Comparison of Caffeic and Rosmarinic Acid Contents and Antioxidant Activity in Perilla Accessions (들깻잎의 caffeic acid와 rosmarinic acid 함량과 항산화 활성 비교를 통한 우수 유전자원 선발)

  • Perilla is an annual plant in the family Lamiaceae and are widely cultivated in Asian countries. Perilla leaves are important sources of bioactive compounds and are reported to exhibit anti-inflammatory, antibacterial, anti-cancer and antioxidant effects, drawing attention as functional food materials. We examined caffeic acid, rosmarinic acid, total phenol content, and antioxidant activity in the leaves of 18 perilla accessions obtained from the gene bank of the National Agrobiodiversity Center, Jeonju, Korea. The caffeic acid content ranged between 9.86-27.52 mg/g with an average content of 17.75 mg/g while the level of. rosmarinic acid was in the range between 49.14 and 90.30 mg/g with an average content of 61.88 mg/g. The total polyphenol content ranged between 138.39 ㎍ GAE/mg dried extract (DE) and 378.19 ㎍ GAE/mg DE with an average content of 225.93 ㎍ GAE/mg DE. Cluster analysis based on the content of caffeic acid, rosmarinic acid. and antioxidant activity showed that the accessions collections were grouped in two distinct classes. The first group contained six genetic resources with high content of rosmarinic acid, and antioxidant activities respectively. The second group contained 12 genetic resources with high content of caffeic acid. These results could help develop new varieties of nutrient dense perilla resources.

  • Purpose: Adult Korean men belonging to the main economically active population are known to have long sedentary hours. This study was undertaken to determine the difference and relevance of sedentary hours on the nutrition, diet, and health status of adult men, and to suggest how to prevent health risk factors. Methods: Subjects (n = 1,068) were classified into 4 groups based on their sedentary hours, ranging from the first quartile (Q1) having the least hours spent sitting, to the fourth quartile (Q4) spending the longest hours. Results: Subjects belonging to Q4 had the lowest average age, the largest waist circumference, and the highest level of education. Among those engaged in economic activities, the ratio of white-collar workers was significantly higher in Q4. Accordingly, the rate of not doing high-intensity or moderate-intensity physical activity while working was also the highest in Q4. A significant difference was obtained in the drinking frequency between groups, but this was found to be associated with the average working hours rather than sedentary hours. The proportion of not doing aerobic exercise was higher with longer sitting hours. The highest diagnosis of diabetes (8.8%) was obtained in the Q4 group. Among the factors related to cardiovascular disease, only low density lipoprotein-cholesterol showed a significant difference, with Q4 being significantly higher than Q1. Considering energy and nutrient intake, vitamin B1 and calcium intake were the lowest in the group with the longest sitting hours, as well as the least consumption of vitamin C than the recommended estimated average requirement. Conclusion: The results of this study suggest that the health and nutritional status of Korean adult men are affected by sedentary hours. This should be recognized as a health risk factor and guidelines need to be developed for sedentary lifestyle management.

Literature review and future tasks necessary to establish of Korean Dietary Reference Intake for choline (콜린의 한국인 영양소 섭취기준 제정 검토를 위한 문헌 고찰 및 향후 과제)

  • Choline, an essential nutrient for humans, is required for the structural integrity of the cell membranes, methyl-group metabolism, synthesis of the neurotransmitter acetylcholine, synthesis of the membrane phospholipid components of the cell membranes, and the transport of lipids and cholesterol. Choline can be synthesized in the body, but it is insufficient to meet the daily requirements and hence it must be obtained through the diet. In the United States/Canada, Australia/New Zealand, Europe, China, and Taiwan, the adequate intake (AI) and tolerable upper intake level (UL) of choline have been established, while the establishment of the 2020 Dietary Reference Intakes for Koreans (KDRI) for choline was postponed due to the lack of a choline database for Korean foods and studies on the choline intake of Koreans. However, as part of the preparation work for the 2020 DRI revision and finalization, choline intake and the possibility of disease occurrence were verified through analysis of published data. The groundwork for the subsequent establishment of a choline DRI was laid through a literature search, evaluation, and review of the literature reported from 1949 up to 2019. This can be regarded as the culmination of this project. According to the results of randomized controlled trials (RCTs), cohort studies, case-control studies, and cross-sectional observational studies in humans, approximately 400-500 mg/day of choline intake was effective in preventing liver function damage (fatty liver), neural tube damage, cardiovascular disease, breast cancer, and cognitive function improvement. The same amount of choline intake, however, also correlated with the risk of prostate and colorectal cancer. At present, there is limited information available on choline intake and health outcomes, particularly for the Korean population. More human studies, including clinical trials on the requirements and the physiological benefits associated with dietary intake, are needed to establish the KDRI for choline.

Intestinal segment and vitamin D3 concentration affect gene expression levels of calcium and phosphorus transporters in broiler chickens

  • Two experiments were conducted in this research. Experiment 1 investigated the spatial expression characteristics of calcium (Ca) and phosphorus (P) transporters in the duodenum, jejunum, and ileum of 21-day-old broilers provided with adequate nutrient feed. Experiment 2 evaluated the effects of dietary vitamin D3 (VD3) concentration (0, 125, 250, 500, 1,000, and 2,000 IU/kg) on growth performance, bone development, and gene expression levels of intestinal Ca and P transporters in 1-21-day-old broilers provided with the negative control diet without supplemental VD3. Results in experiment 1 showed that the mRNA levels of calcium-binding protein 28-kDa (CaBP-D28k), sodium-calcium exchanger 1 (NCX1), plasma membrane calcium ATPase 1b (PMCA1b), and IIb sodium-phosphate cotransporter (NaPi-IIb) were the highest in the broiler duodenum. By contrast, the mRNA levels of inorganic phosphate transporter 1 (PiT-1) and 2 (PiT-2) were the highest in the ileum. Results in experiment 2 showed that adding 125 IU/kg VD3 increased body weight gain (BWG), feed intake (FI), bone weight, and percentage and weight of Ca and P in the tibia and femur of 1-21-day-old broilers compared with the negative control diet (p < 0.05). The rise in dietary VD3 levels from 125 to 1,000 IU/kg further increased the BWG, FI, and weights of the bone, ash, Ca, and P (p < 0.05). No difference in growth rate and leg bone quality was noted in the broilers provided with 1,000 and 2,000 IU/kg VD3 (p > 0.05). Supplementation with 125-2,000 IU/kg VD3 increased the mRNA abundances of intestinal Ca and P transporters to varying degrees. The mRNA level of CaBP-D28k increased by 536, 1,161, and 28 folds in the duodenum, jejunum, and ileum, respectively, after adding 1,000 IU/kg VD3. The mRNA levels of other Ca and P transporters (PMCA1b, NCX1, NaPi-IIb, PiT-1, and PiT-2) increased by 0.57-1.74 folds by adding 1,000-2,000 IU/kg VD3. These data suggest that intestinal Ca and P transporters are mainly expressed in the duodenum of broilers. Moreover, the addition of VD3 stimulates the two mineral transporter transcription in broiler intestines.

Evaluation of Cultivation Characteristics according to NO3- Ratio of Nutrient Solution for Korean Melon in Hydroponic Culture (양액의 NO3- 비율이 수경재배 참외의 생육과 수량에 미치는 영향)

  • Korean melon (Cucumis melo L.) is grown mostly in Northeast Asia area, and as a fruit mainly produced in Korea, the yield per unit area continues to improve, but the cultivation method is limited to soil cultivation, so it is necessary to develop hydroponic cultivation technology for scale and labor-saving is needed. As the ratio of NO3- increased, the plant height, the leaf length, the leaf width, and the internode length became longer and larger. On the other hand, the SPAD value decreased. The lower the ratio of NO3-, the faster the female flower bloom, and there was no difference in fruit maturity between treatments. There was no difference in the shape of fruit according to the ratio of NO3-, and the hardness was higher as the ratio of NO3- was lower. The total yield from March to July was KM3 5,650 kg/10a and KM1 4,439 kg/10a, 27% higher in KM3 and, in particular, 36% higher in quantity from March to May, when Korean melon prices were high season. Therefore, it was judged that it would be appropriate to supply NO3- suitable for hydroponic cultivation of Korean melon, which was formalized in December and produced from spring, at the level of 6.5 to 10 me·L-1.

Bone Density and Related Factors of Vegetarian and Non-vegetarian University Students in Seoul Area (서울지역 채식.비채식 대학생의 골밀도에 미치는 영향요인에 관한 연구)

  • This study was conducted to investigate factors affecting bone density of food and nutrition vegetarian and non-vegetarian university students in Seoul area. Data for food habits, dietary and health-related behaviors were obtained by self administered questionnaires. BQI(bone quality index) of the subjects was measured by an Quantitative Ultrasound (QUS). The results are summarized as follows: The average height, weight, BMI and osteopenia percentage of the vegetarian and non-vegetarian male and female student were 172.61cm, 62.42kg, 20.98 and 24.2%; 175.38cm, 72.52kg, 23.71 and 16.7%; 160.47cm, 55.76kg, 21.66 and 55.9%; 161.77cm, 56.34kg, 21.53 and 37.6%, respectively. The BQI of the subjects were 101.73 and 107.43 in male student group, and 84.15, 89.64 in female student group, respectively. The BQI, Z-score value of bone density was significantly different in female group. Weight and BMI were positively related with BQI in male and female group. BQI was positively affected by nutrition supplement and negatively affected by seafood in vegetarian male student group. In vegetarian female student group, amount of meal was positively related with BQI and meal regularity was negatively related BQI. The result of this study revealed that the desirable food habits, dietary behaviors and health-related lifestyles may have a beneficial effect on bone density. They should have practically and systematically organized nutritional education on optimum body weight, good eating habits, weight bearing exercise and intakes of good quality nutrient for higher bone density level.

Comparison of the health behavior and nutrition status of young-old women according to the vitality in their quality of life: based on the 2019, 2021 Korea National Health and Nutrition Examination Survey (전기노인 여성의 삶의 질 중 기운에 따른 건강행태와 영양상태 비교: 2019년, 2021년 국민건강영양조사 자료를 이용하여)

  • Purpose: This study aimed to identify the general characteristics, chronic diseases, health behavior, mental health, and nutritional status of young-old women based on their vitality. Methods: This study used data from the 2019 and 2021 Korea National Health and Nutrition Examination Survey (KNHANES). The subjects were 1,113 young-old women aged 65 to 74 years old. The health-related quality of life concept with an 8-item questionnaire was used to measure the quality of life. Subjects were categorized into 4 groups (always, often, sometimes, never) based on their vitality. General characteristics, chronic diseases, health behavior, dietary behavior, food intake, and nutrient intake were compared among the groups. Results: Age, education level, household income, employment, fruit intake, dietary supplements, abundance of food, and nutrition labeling recognition were associated with the vitality of the subjects. Young-old women with arthritis, diabetes, and osteoporosis displayed lower vitality. Moreover, subjective health status, exercise, activity restrictions, and average daily sitting hours were related to vitality, while no significant difference was found in vitality between smoking and drinking. In terms of mental health factors, higher vitality was associated with 6-8 hours of sleep, lower stress levels, and reduced depression. The high-vitality group exhibited a higher intake of potatoes, starch, mushrooms, fruits, meat, milk, animal oils, and beverages than the low-vitality group. Additionally, the group with higher levels of vitality showed a higher intake of protein, fat, saturated fatty acids, monounsaturated fatty acids, polyunsaturated fatty acids, n-6 fatty acids, dietary fiber, sugars, phosphorous, potassium, magnesium, iron, zinc, and riboflavin. Conclusion: This study suggests that the vitality of young-old women is related to socioeconomic factors, health behavior, mental health, and food intake. To maintain a vibrant lifestyle in elderly women, it is necessary to have social and economic stability, prevent arthritis, diabetes, and osteoporosis, exercise regularly, get sufficient sleep, maintain mental health, and have a balanced diet.
