24시간 회상법을 사용한 한국 성인의 식이섭취조사에서 재회상 단계 추가의 영향 분석 (Analysis of Foods and Nutrients Intake Obtained at the Final Probing Step in 24-hour Recall Method)

  • This study was conducted to examine the usefulness of adding final probing step (step3) in dietary assessment by 24-hour recall method among Korean adults. One-hundred fifty five adults (37 males and 118 females) above 30 years of age who visited hospitals for health examination were recruited at three hospitals in Korea. One day dietary intake was obtained using 24-hour recall method from each subject. Dietary interview was conducted in 3 steps, (1) quick list of foods eaten during the previous day, (2) detailed information of all the foods eaten, (3) the final probing for any items forgotten. Items added at the step3 were identified and contributions of energy and nutrient intakes were calculated. The average duration of interview was 10.5 min, and time spent for each step was 4.12 minute for step 1, 5.62 minute for step 2, and 38 second for step 3. The average number of dishes reported by the subjects added at the step 3 was 2.2. (Males = 2.6, Females = 1.6) Frequently reported dishes in the step 3 were Beverage, Tea, alcohol (37.1%) and Fruits (31.8%). From mean total energy intake of 1,589 kcal (Men = 1,846 kcal, Women = 1,509 kcal), 179 kcal (11.3%) was added at the step 3. In the step 3, nutrient intakes increased significantly except retinol in total subjects and except retinol and cholesterol in males but all nutrients increased significantly in females. The final probing step can add significant information on intakes of foods and many nutrients with only about 38 seconds of interview time. Confirmation of the results with larger samples of different age groups is needed.

Dietary intakes of adolescents from food insecure households: analysis of data from the 6th (2013-2015) Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: This study aimed at evaluating the dietary intakes of Korean adolescents affected by food insecurity, in comparison with those who were food secure. SUBJECTS/METHODS: The study used one day 24-hour dietary recall data from the $6^{th}$ Korea National Health and Nutrition Examination Survey. The study subjects consisted of 1,453 adolescents of whom 695 were middle school-aged and 758 were high school-aged. Food security status was assessed using the 18-item questionnaire. Nutrient intake was evaluated in terms of nutrient density, insufficient intake, and excessive intake for selected nutrients, in addition to meeting the appropriate range for total energy intake and energy intakes from carbohydrate, sugar, protein, fat, and saturated fatty acids. Food intake was evaluated in terms of food group servings and dietary diversity score (DDS). RESULTS: The percentages of food insecurity were 11.1% for middle school-aged adolescents and 16.8% for high school-aged adolescents. Food insecure middle school-aged adolescents had higher intake of carbohydrate (P = 0.006) but lower intake of fat (P = 0.010) and saturated fatty acids (P = 0.005) than their food secure counterparts although the intake of both groups was in the recommended ranges. Nutrient intake among high school-aged adolescents was generally similar regardless of food security status. Both food secure and insecure adolescents showed insufficient intake of vitamin A, vitamin C, and calcium, and excessive sodium intake. They additionally had low prevalence of meeting appropriate intake ranges for energy, carbohydrate, and sugar. Food intake in terms of food group servings and DDS was also similar regardless of food security status among both age groups, with low intakes of foods from fruit and dairy groups. CONCLUSIONS: Except for a few nutrients among the middle school-aged adolescents, dietary intakes among Korean adolescents did not differ by food security status in this study.

Effect of Lowering Dietary Protein with Constant Energy to Protein Ratio on Growth, Body Composition and Nutrient Utilization of Broiler Chicks

  • A trial was conducted to determine the effect of low crude protein (CP) diets with constant metabolizable energy to crude protein (ME:CP) ratio on growth, body composition and nutrient utilization of broiler chicks from 1 to 26 days of age. Four dietary treatments having four levels of CP and ME as 23, 22, 21 and 20% and 3,036, 2,904, 2,772 and 2,640 kcal/kg, respectively, were formulated and a ME:CP ratio of 132 was maintained in all the diets. Digestible lysine was maintained at 1.10 of the diet. A total of 1,760 day-old Hubbard broiler chicks were randomly divided into 16 experimental units and each diet was offered to four experimental units at random. Feed intake was increased (p<0.05) while weight gain and feed conversion ratio were adversely affected (p<0.05) when the diets with low CP and ME were fed to broilers. Total protein intake and total ME intake were linearly decreased (p<0.05) and protein efficiency ratio and energy efficiency ratio were lower (p<0.05) than in the chicks fed dietary regimen with 22% CP and 2,904 kcal/kg ME. The whole body analysis of the birds revealed that chicks fed the lowest dietary regimens retained less (p<0.05) nitrogen and more ether extract than chicks fed the control diet, however, body dry matter, total body ash and fat free body protein were not affected. Similarly, protein and energy utilization were also unaffected by the dietary treatments. In summary, chicks fed low CP diets with constant ME:CP ratio grew slower, used feed less efficiently and retained less protein and more body fat than chicks fed the control diet.

난소 절제 여성의 영양소 섭취 상태가 골밀도 및 골무기질 함량에 미치는 영향 (Effects of Nutrient Intake, Bone Mineral Density and Bone Mineral Content in Ovariectomized Women)

  • This study investigated associations between nutrient intake, lumbar bone mineral density (BMD) , and bone mineral content (BMC) among 33 ovariectomized women (mean age =47.2 y) . Forty-five premenopausal women participated as a control group. The BMD and BMC of the lumbar spine (L$_2$-L$_4$) were measured by dual energy x-ray absorptiometry. Nutrient intake was estimated by the convenient method and a quantitative food frequency questionnaire was designed for this study that included the most commonly consumed foods sources of calcium. Participants were asked to identify all daily physical activities, and the number of hours per activity. The participants were also grouped by calcium intake. The total calcium intake of all participants was estimated by dietary calcium intake and then the subjects were divided into quartiles to assess the lumbar BMD and BMC of the highest quartile and the lowest quartile of calcium intake. The ovariectomized women consumed 602 mg/d of calcium which is 86% of RDA. There were significant differences in lumbar BMD and BMC between control and ovariectomized group. Within ovariectomized group the highest quartile calcium intake group had significantly greater lumbar bone mineral density and bone mineral content than the lowest quartile calcium intake group. Correlation analysis revealed that the ALP was positively associated with calcium index in control women, while ALP was positively associated with energy intake in ovariectomized women. And body weight was positively correlated with the spinal BMD and BMC in all women. The spinal BMD was negatively associated with menarche age, number of child, and the age of last child delivery, and age in control women. However, neither menarche age nor the age of last child delivery were associated with both spinal BMD in ovariectomized women. These results confirmed that ovariectomized and low calcium intake is associated with poor bone mineral density. Energy and calcium intake and adequate body weight should be recommended in ovariectomized women to prevent osteoporosis.

가임기 여성의 영양섭취상태 및 혈액성상 : 비임신여성과 임신여성의 비교 (A Study on Nutrient Intakes and Hematological Status in Women of Child-Bearing Age Comparison between Non-Pregnant and Pregnant Women)

  • This study was conducted to evaluate nutritional status of Korean women of child-bearing age. A comparison was made between 113 non-pregnant and 200 pregnant women. Pregnant women of 24-28 weeks of gestation were recruited from prenatal clinic in Seoul. Nonpregnant women were included college students, nurses, office employers, and sales women. General characteristics, anthropometric measurements, dietary intakes, and hematological values were assessed. There was no difference in mean BMI for nonpregnant and pregnant (pre-gravid) women, which were 20.2 kg/m$^2$and 20.6 kg/m$^2$respectively. The pregnant women showed a tendency of better health-caring behavior, evidenced by stop smoking and drinking, and in taking nutrient supplements. The mean intakes of energy, vitamin A, vitamin B$_2$, calcium, and iron did not meet Korean RDA for adult women. In particular, calcium and iron intakes of both nonpregnant and pregnant women were under 60% of the Korean RDA. Judging by MDA score, dietary quality was better in pregnant than in nonpregnant women. Mean serum values of albumin, total cholesterol, LDL-cholesterol, HDL-cholesterol, Hb, IgA, IgG were in normal range. However, more than 13% of the nonpregnant subjects showed mild hypercholesterolemia (cholesterol > 200 mg/dl) and anemia (Hb < 12.0 g/dl) . The percentage of anemia in pregnant women were much higher; the subject with Hb < 11.0 g/dl were approximately 30%. The pregnant subjects showed significantly higher serum concentrations of triglycerides and cholesterol, and significantly lower concentrations of albumin, IgA, and IgG compared to nonpregnant women. Correlation analysis showed that Hb concentrations were correlated with the intakes of iron- and protein- containing foods such as meat and vegetables. This study strongly suggest that iron-deficient anemia is a major nutrition problem in Korean child-bearing women and this condition is correlated with dietary intakes.

중 고등학생 대상 영양교육 목표 설정을 위한 영양 관련 문제점 분석 (Setting Instructional Goals for Nutritional Education Program Through an Analysis of Problems Identified in Junior/senior High School Students)

  • For the purpose of developing 'Web-Based Nutritional Education Program', this study analyzed nutritional problems of junior/senior high school students and set appropriate instructional goals for nutritional education program. Survey questionnaires were distributed from October 21,2002 to October 26, 2002 to a total of 564 students at three junior high schools and five senior high schools located in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. According to the survey results, three student groups (male and female students at junior high schools and female students at senior high schools) had lower than an ideal body weight. In case of their Basal Metabolic Indices (BMI), the female students and junior high school students showed a tendency to be underweight, while the other three student groups were within the normal range. The result of the survey showed that all four groups of students showed a deficiency in nutrient intake of calories, calcium and thiamin when compared with Korean RDA. Particularly, in the case of the female students at senior high schools, the deficiency of iron intake was a problem. The survey about food attitudes and food habits of the students showed that the senior high school students had more problems when compared with their junior high school counterparts (p < .001). Therefore, the instructional goals of nutritional education program were set as follows: 1) To improve the level of understanding and the perception of junior and senior high school students about the importance of a dietary lifestyle. 2) To change food attitudes and nutritional knowledge related to individual dietary 1ifestyle, so as to maintain good health through the enhancement of the students' physical activities. We found out that it is critically important to factor in the existing problems of food attitudes and food habits, as well as nutrient intake among junior and senor high school students when setting objectives for nutritional education programs. 실제 하수조건에서 조류-세균 복합군집의 생태적 상호작용 및 영양염류 제거 특성 규명 (Characterization of Algal-Bacterial Ecological Interaction and Nutrients Removal Under Municipal Wastewater Condition)

  • 하수를 이용해서 배양된 조류는 바이오디젤 생산에 유용한 자원이다. 그러나 실제 하수에서 조류의 영양염류 신진대사와 하수 세균과의 상호작용에 관한 연구는 미흡하다. 본 연구에서는 하수로 배양되는 대표적 조류균주인 Ankistrodesmus gracilis SAG 278-2에 의한 하수 내 질소, 인 제거 거동을 평가하였고, 조류와 상호작용하는 하수 내의 세균 군집을 분석하였다. 하수 슬러지 세균 군집과 비교하였을 때, 조류-세균 복합 군집은 하수 내보다 높은 영양염류 제거를 보였다. 16S rRNA 유전자 분석 결과, 조류-세균 군집에서 조류가 성장함에 따라 Unclassified Alcaligenaceae 세균이 선택적으로 우점됨을 알 수 있었고, 조류에 의해서 선택적으로 우점화된 하수세균은 자연 수질 환경에서 조류와 공생적으로 상호작용 하는 것으로 알려진 Alcaligenes faecalis subsp. 5659-H와 계통학적으로 가까운 것으로 밝혀졌다. 본 연구의 결과, 하수 내의 높은 영양염류 제거를 보이는 조류-세균 복합 군집에서의 조류의 성장 및 신진대사가 특정 세균의 분포에 영향을 주는 것을 알 수 있었다.

Effects of Gamma Irradiation on Nutrient Composition, Anti-nutritional Factors, In vitro Digestibility and Ruminal Degradation of Whole Cotton Seed

  • Whole cotton seed (WCS) has become one of the major feed ingredients in TMR for dairy cattle in Korea, and WCS for feed use is mostly imported from abroad. Since this genetically modified oil seed is usually fed to the animal in raw state, its germination ability, if last long, often causes concerns about ecological disturbances. In the process of looking for effective conditions to remove germination ability of WCS this study had the objectives to evaluate the nutritional effects of gamma irradiation at doses of 8, 10 and 12 kGy on changes in nutrient contents, anti-nutritional factors, in vitro digestibility and ruminal degradability. No significant differences were found in proximate analysis of nutrients between raw WCS and gamma irradiated one. Glycine and threonine contents significantly increased when the WCS was exposed to gamma ray as compared to untreated WCS (p<0.05). As for fatty acid composition, no significant differences were observed with the irradiation treatment. Free gossypol in WCS was decreased (p<0.05) by gamma irradiation treatment. Of the 3 different levels of gamma irradiation, a dose of 12 kGy was found to be the most effective in reducing free gossypol concentration. Results obtained from in situ experiment indicated that gamma irradiation at a dose of 10 kGy significantly (p<0.05) lowered rumen degradability of both dry matter and crude protein as compared with raw WCS. However, there were no significant differences in rapidly degradable and potentially degradable fractions of crude protein due to 10 kGy gamma irradiation. Overall, this study show that gamma irradiation at a dose of 10 kGy is the optimum condition for removing germination ability of WCS, and could improve nutritive value for the ruminant with respect to the decrease in both ruminal protein degradability and gossypol content of WCS.

Nutrient Intakes and Hair Mineral Contents of Young Children

  • Purpose: This study was performed to evaluate the dietary nutrient intake status and hair mineral content of Korean young children. Methods: Fifty-five children who visited Seoul National University Bundang Hospital were divided into three groups by age: infants, toddlers, and preschoolers. The 24-hour recall method was used to collect the food intake data of the subjects. Hair mineral analysis was conducted using a Mass Spectrometer. Serum iron, ferritin, and calcium were also measured. Results: The mean energy intakes of the subjects were 730.3 kcal, 994.3 kcal, and 1,482.9 kcal for each age group. The mean percentage of energy intake compared to recommendation was 101.4% and was not different by age group. Toddlers of 37.8% and preschoolers of 54.5% consumed less than the Estimated Average Requirement (EAR) of calcium. Infants of 28.6%, toddlers of 10.8% and preschoolers of 9.1% consumed less than the EAR of iron. In the case of zinc, copper, and selenium, only 0% to 5% of toddlers and none of the preschoolers consumed less than the EAR of those minerals. The hair calcium, iron and copper concentrations were lower in toddlers and preschoolers than those in infants. Serum calcium levels of preschoolers were significantly lower than those of infants, whereas serum iron and ferritin levels were not. Conclusion: Hair calcium, iron, and copper concentrations were significantly lower in toddlers and preschoolers than in infants. Insufficient dietary intake of calcium and iron seems to be related with decreased hair mineral contents in young children.

지역순환농업을 위한 분뇨단위 설정과 질소부하 평가 -여주지역 사례- (Assessment of N-Loading and Manure Units for Regional Recycling Farming -Case Study in Yeoju-Gun Region-)

  • In this study, the assessment of livestock manure nitrogen loading for recycling farming in Yeoju-Gun carried out comparing manure units based on the cultivation areas and the N-amount of manure that are generated from livestock manure. Manure units (MU) are used in the permitting, registration, because they allow equal standards for all animals based on manure nutrient production. An MU is calculated by multiplying the number of animals by manure unit factor for the specific type of animal. The manure unit factor for MU determination was determined by dividing amounts of manure N produced 80kg N/year. In this study, manure unit by nitrogen concentration and amount of animal manure was calculated as follows: Hanwoo multiplied by 0.36, dairy cows multiplied by 0.8. swine multiplied by 0.105. The laying hens and broilers multiplied by 0.0079, 0.0049, respectively. The analysis of liquid manure unit per ha shows that the N loading by LMU is quite different by region. When it comes to nitrogen loading, the LMU per ha of cultivated land in excess of the N-amount was the highest in the Bukne-myeon province with 2.76 MU/ha, which is higher than the appropriate level. The Ganam-myeon province came next with 2.53 LMU. To be utilized as a valid program to build the environmentally friendly agricultural system, diverse measures shall be mapped out to properly determine manure units, evaluate N-loading and to properly manage their nutrient balance of each region.
