The Effects of Restaurant and LOHAS Images on Customer Satisfaction and Loyalty: Focusing on the Incremental Information Content of LOHAS Image

  • Since protecting the environment became a major issue in modern society, an increasing number of individuals have engaged in lifestyles of health and sustainability (LOHAS). The purpose of this study is to investigate the effects of restaurant and LOHAS images on customer satisfaction and loyalty. Particularly, this study analyzes the incremental information content of LOHAS image in the relationship between restaurant image and customer satisfaction/loyalty. A self-administered questionnaire was distributed to customers of casual-dining restaurants in three major cities (i.e., Seoul, Daegu, and Busan) in South Korea. The empirical findings suggest significant incremental information content of LOHAS image beyond general restaurant image in explaining customer satisfaction and loyalty.

  • The purpose of this study was to figure out the characteristics of dietary habits and lifestyles related to the development of insulin resistance syndrome(IRS). The participants in this study were 595 adults with one or more abnormal data from a health examination and 215 normal adults. When IRS was defined as a condition in which the subjects have 2 or more abnormalities among obesity, hyperlipidemia, hypertension and hyperglycemia, the prevalence rate was 37.8%. We classified the 595 adults by the number of components of IRS components they had, the higher age and obesity index they had. Total cholesterol and glucose levels in the blood were also positively related to the number of IRS components. IRS subjects tended to practice less habitual drinking and more exercise and weight control. Coffee consumption and dining out frequency were also lower in the IRS group. An analysis of food habits by odds ratio indicated that total food score was better in the IRS group. However, it appeared that food habits such as \"frequent snacking\" and \"never rejecting offered foods\" need to be improved in IRS subjects. Other undesirable food habits were related to the consumption of eggs, dairy products, fried foods, garlic and onion. Dietary intake of Ca, Fe, riboflavin, Vit A, and energy were less than 75% of the Korean recommended allowance for more than half of the subjects. Nutrient intake was lower, Ca/P ratio from food intake was worse in the IRS group. Our results indicated that nutrition counseling for IRS need to be focused on balanced food intake to supply sufficient amount of each nutrient.nt of each nutrient.

여대생들의 식습관, 영양상태 및 건강상태에 관한 비교 연구 (Dietary Habits, Nutrition Status, and Health of Female Students)

  • This study focused on the yearly-dietary habits, nutrition status, and health of female students residing in Seoul. A number of classes were assess based on their dietary behaviors in oder to attempt to determine differences in their attitudes to nutrition, according to age. The students of class 2011 (sophomore) ate meals more regularly than the female students of the 2008 class (p<0.05). It was found that sophomore female students of class 2008 consumed higher than average nutrient intake. Sophomore female students of the 2011 class consumed lower than average vitamin $B_2$, C, Ca, and Fe intakes. Folic acid in take was lower than average in both groups. Phosphorus and sodium intakes in both groups were excessive (p<0.05). When surveyed, sophomore female students of the 2008 class believed that the most important thing for health was exercise, whereas students of class 2011 believed that nutrient intake was the most important factor (p<0.05). Female students of the 2008 class exercised 1~2 times a week generally, whereas students of class 2011 exercised three times (43.2%) (p<0.05). Therefore, it is necessary to study changes in dietary habits and health status according to the age of students, and develop specific nutrition education programs for female students.

코로나19에 따른 초등학교 급식 메뉴 제공 빈도의 변화 (Changes in Serving Frequency of Elementary School Meal due to COVID-19 Pandemic in Korea)

  • The purpose of this study was to examine changes in serving frequency of elementary school meal before and after the COVID-19 pandemic. Number of menus provided in June and July of 2019 and 2020 were compared for 300 elementary schools in Korea. As a result, the serving frequency of la carte and dessert was increased after COVID-19. In addition, frequencies of main dishes such as pork cutlet, chicken, sweet and sour pork, hamburger steak, and so on using processed food were increased after COVID-19. Because of the longer serving time due to staggered serving, cook's working time for serving meals became longer. Therefore, it was judged that the number of servings of processed food was increased rather than the menu with a large amount of preprocessing work. Moreover, among desserts, fruits showed increased serving frequency. Serving frequencies for juice and dairy products were also increased. However, increased servings of juice and dairy products could increase sugar intake. Thus, a careful plan for menu composition is needed to provide balanced nutrients to students under emergency situations such as an infectious disease.

  • The aim of the study was to explore the current status as well as personal views, attitudes, and beliefs regarding daily meal consumption (DM) and food supplement use (FS) in conjunction with the improvement of health condition of the women. Eight focus group interviews were performed and the interview material was condensed systematically with the aim to extract core meanings related to DM, FS, and menopause-associated health. Participants were 40 in number and showed ages ranging from 45 and 60 years with various menopausal status. Current status and beliefs about DM, resources of purchase motivation of FS, types of FS that are currently used, and perceived effects and personal beliefs about FS are discussed. Theme content analysis revealed 3 themes for beliefs about DM, 5 themes for beliefs pertaining FS, and 4 themes for the association between DM and FS. Non-dietary factors such as positive mental attitude and exercise appeared to be also important to maintain good health. The bottom line message from this study may be that proper nutrition through daily meals is essential for good health, while food supplement are used merely to supplement the diet. Findings from this study may deepen our understanding of how women who translate their lifespan through "menopause" perceive the roles and meaning of DM and FS, suggesting health professionals need to monitor and evaluate DM and implement strategies targeting the improvement of daily meal quality of middle and older aged women.

초등학교 고학년 학생의 구강보건에 관한 인식 및 행동 (A Study on the Oral Health Awareness and Behavior in the Higher Grades of Elementary School)

  • The purpose of this study was to collect basic data for the development of effective oral health education program in elementary school. The subjects in this study Were 604 fourth-year, fifth-year and sixth-year students of an elementary school in Seoul, Oral health awareness and behaviors were surveyed and analyzed. The findings of this study were as follows: 1. The most common time for toothbrushing was after dinner(62.0%) and before bedtime(62.3%). By school year, the largest number who brushed their teeth after dinner were fourth and fifth graders while the greatest number who did so after breakfast were sixth graders. Seventy-four percent of respondents brushed the teeth twice or more a day. By school year, the fifth-year students brushed their teeth the least while girls outperformed the boys in daily toothbrushing frequency(p<0.05). Regarding the intake of cariogenic food, 62.1% took that kind of food once or more a day. By school year, the fifth graders took the most (p<0.05), and girls took more cariogenic food than the boys(p<0.05). 2. Ninety percent of the respondents had visited a dental clinic. By grade, the sixth-year students had visited a dental clinic more frequently and girls more frequently than boys. Eighty percent of the respondents visited a dental clinic to receive treatment but just 12.3% visited a dental clinic to prevent oral diseases. Concerning the fear of dental treatment, only 14.4% expressed fear. School year made no difference, yet the percentage of girls who experienced fear was higher than that of boys(p<0.05). Regarding preventive treatment, 39.7% experienced pit and fissure sealing and 24.2% experienced the application of fluorides. All the students hadn't much experience in preventive treatment regardless of school year -- gender didn't make a difference. 3. Fourty-six percent of respondents had a preference for the fluoride mouth rinsing program; 38.4% wanted that program to continue. As to the reason for preference, 38.2% preferred it because of the prevention of dental caries, 43.0%, the largest percentage, didn't favor it because they found it too much trouble to do(some of the respondents gave two different answers). 4. Despite an increase in the frequency of toothbrushing at the right time, they still took cariogenic food frequently. Their visit to a dental clinics also aimed at treatment more than at prevention, and they had very narrow experience of preventive treatment Furthermore, the fluoride mouth rinsing program failed to draw their interest Therefore, it is recommended that a successful oral health education program should be developed.

Dietary Supplementation with Acanthopanax senticosus Extract Modulates Cellular and Humoral Immunity in Weaned Piglets

  • This study was conducted to test the hypothesis that dietary supplementation with an herbal extract of Acanthopanax senticosus (AS) enhances the immune response in weaned piglets. Sixty piglets weaned at 21 days of age were randomly assigned to 3 treatment groups representing the addition of 0 or 1 g/kg of the AS extract or 0.2 g/kg of colistin (an antibiotic) to maize- and soybean meal-based diets (n = 20 per group). On days 7, 14 and 28 after initiation of the addition, total and differential counts of leucocytes, proliferating activity of peripheral lymphocytes, serum levels of immunoglobulins (Ig) and cytokines and the spleen index were determined. The AS extract decreased (p<0.05) the number of neutrophils on days 7 and 28 in comparison with the control group and reduced (p<0.05) serum interleukin-$1{\beta}$ level on day 28 compared with the other 2 groups. Dietary supplementation with the AS extract increased (p<0.05) the lymphocyte/leukocyte ratio on day 28 compared with the control group and increased the proliferating activity of lymphocytes on days 14 and 28 compared with the other 2 groups. The AS extract increased (p<0.05) the serum content of IgG on day 7 and of IgG and IgM on day 28 compared with the other 2 groups, as well as increasing the serum content of tumor necrosis factor on day 7 and spleen index on days 7 and 28 compared with the control group. Collectively, these findings suggest that the AS extract as a dietary additive enhances the cellular and humoral immune responses of weaned piglets by modulating the production of immunocytes, cytokines and antibodies.

농촌노인의 치아상태에 따른 건강상태 및 식이섭취 평가 (Evaluation of the Health Status and Dietary Intakes of the Elderly in Rural Areas by Dental Status)

  • In Korea, there has been a rapid increase in the number and proportion of elderly people, especially in rural areas, due to improvements in the standard of living and medical technology. One of the main health problems for the elderly people is dental health, which can cause nutritional and health problems. Thus, in this study, the dental health status and health status in relation to nutritional intake were analyzed. A total of 155 rural-dwelling elderly people (68 males, 87 females) over the ages of 65 participated in this study. The subjects were classified into three groups; the no denture no teeth group, denture user group, and natural teeth group. The dietary intake, biochemical health status, and anthropometry were evaluated. Can-pro 3.0 was used to assess dietary intakes and the SPSS 12.0 program was used for statistical analysis. The results showed that the natural teeth group had better nutritional and dietary intake status than the no denture no teeth group. The dietary assessment showed that there were differences in food intakes among the groups, which depended on their dental health status. In conclusion, dietary management is required for the elderly since each group has a different ability to chew food depending on their dental health status. In addition, the elderly will need different therapeutic diets because of the high prevalence of chronic degenerative diseases.

Household food insecurity and coping strategies in a poor rural community in Malaysia

  • This cross-sectional study assessed household food insecurity among low-income rural communities and examined its association with demographic and socioeconomic factors as well as coping strategies to minimize food insecurity. Demographic, socioeconomic, expenditure and coping strategy data were collected from 200 women of poor households in a rural community in Malaysia. Households were categorized as either food secure (n=84) or food insecure (n=116) using the Radimer/Cornell Hunger and Food Insecurity instrument. T-test, Chi-square and logistic regression were utilized for comparison of factors between food secure and food insecure households and determination of factors associated with household food insecurity, respectively. More of the food insecure households were living below the poverty line, had a larger household size, more children and school-going children and mothers as housewives. As food insecure households had more school-going children, reducing expenditures on the children's education is an important strategy to reduce household expenditures. Borrowing money to buy foods, receiving foods from family members, relatives and neighbors and reducing the number of meals seemed to cushion the food insecure households from experiencing food insufficiency. Most of the food insecure households adopted the strategy on cooking whatever is available at home for their meals. The logistic regression model indicates that food insecure households were likely to have more children (OR=1.71; p<0.05) and non-working mothers (OR=6.15; p<0.05), did not own any land (OR=3.18; p<0.05) and adopted the strategy of food preparation based on whatever is available at their homes (OR=4.33; p<0.05). However, mothers who reported to borrow money to purchase food (OR=O.84; p<0.05) and households with higher incomes of fathers (OR=O.99; p<0.05) were more likely to be food secure. Understanding the factors that contribute to household food insecurity is imperative so that effective strategies could be developed and implemented.

한국인의 식품 및 영양섭취상태 추이(1969-1989) -제 1보, 국민영양조사보고서의 조사방법을 중심으로- (The Trend of Food and Nutrient Intakes of Korean(1969-1989) -The First Report, Survey Methods in the Annual Report of the National Nutrition Survey-)

  • 국민영양조사가 실시된 1969년부터 최근 조사보고서가 나온 1989년까지의 대상지역, 규모, 조사내용 등을 중심으로 한 조사방법면에서의 연도별 변화 차이를 비교 고찰해보았다. 국민영양조사의 주관부서는 보사부내에서 조직이 바뀜에 따라 방역국 보건과, 의정국 지방의정과, 보건국 식품위생과를 거쳐 모자보건관리관실에서 담당하다가 1981년부터는 보건국 보건교육과에서 담당하고 있다. 조사내용은 식품 섭취조사, 식생활조사, 건강조사로 나누어 실시하고 있으며 이중 건강조사항목이 많이 바뀌어 오히려 줄어들었고, 표본추출방법은 2회의 개편을 거쳐 1987년 이후로는 확률비례추출법으로 실시되고 있다. 조사지구수와 가구수의 연도별 변화는 초창기 1974년까지는 지구수와 가구수가 적었으며, 1988년부터는 2,000세대를 조사하고 있다. 인원수는 역시 초창기 74년까지와 그 이후 74, 83, 88년으로 가면서 변화하였으며, 88년부터는 8,000명 정도가 된다. 조사시기는 여름과 가을이 대부분이나 78년 이전은 주로 여름에, 그 이후는 가을에 조사하고 있다. 이상의 결과 내용으로 보면 영양조사는 시기별로 변해왔으며, 그 결과의 비교분석시 세심한 주의가 요구된다.
