This study was conducted to monitor the quality characteristics of Acai (Euterpe oleracea Mart.) ethanolic extracts by a response surface methodology. The independent variables in the extraction experiments were ethanol concentration (0~100%), extraction temperature ($35{\sim}95^{\circ}C$), and ratio of solvent to sample (10~30 mL/g). The coefficients of determinations ($R^2$) were 0.9596 (p<0.01), 0.9356 (p<0.01), and 0.8842 (p<0.05) for total polyphenol, total flavonoid, and electron donating ability, respectively. The electron donating ability and nitrite scavenging effect improved with an increase in ethanol concentration as opposed to extraction temperature. Anthocyanin content with extraction conditions was 74.421~291.841 mg/L and the coefficient of determinations ($R^2$) was 0.9792 (p<0.01). ORAC (oxygen radical absorbance capacity) with extraction conditions was 137.73~562.94 ${\mu}moles$ TE/g and increased with an increase in ethanol concentration and a decrease in the ratio of solvent to sample content. Estimated conditions for maximum extraction including yield, total polyphenol, total flavonoid, electron donating ability, anthocyanin content, and ORAC were 28~58% for ethanol concentration, $60{\sim}68^{\circ}C$ for extraction temperature, and 10~12 mL/g for ratio of solvent to sample.
We investigated changes in doenjang quality upon addition of rice fermented with Poria cocos mycelium. Sensory evaluation showed that rice addition to 15% (w/w) was optimal. The content of free amino acids was 1,899.17 mg% in doenjang fermented for 90 days with P. cocos mycelium. The rice contained seven essential amino acids: leucine, valine, phenylalanine, isoleucine, lysine, threonine, and methionine. The levels of essential amino acids increased after fermentation with P. cocos mycelium. Vitamin A (7.47 RE/100 g), Vitamin D (0.45 mg/100 g), and Vitamin E (5.73 mg/100 g) were detected in the experimental preparation but not in the control. In terms of electron-donating ability, the highest scores were 73.8% (in a water extract) and 76% (in an ethanolic extract) of doenjang fermented with P. cocos mycelium. Nitrite-scavenging ability was higher in the ethanolic extract than in the water extract of rice fermented with P. cocos mycelium.
This study was carried out to investigate the physiological activityof the water extract from EA. The present study was done to investigate the effects of EA on cultured hepatocyte cell system and lipid peroxidation in $A{\beta}$ treatment conditions. Pretreatment of EA attenuated in cell cytotoxicity enhanced by increasing concentrations of $A{\beta}$. MDA level induced by $A{\beta}$ treatment was significantly increased and the level was slightly reduced by pretreatment of EA. The ability of EA to reduce cell death and MDA level induced by $A{\beta}$ suggest that EA may be a protective agent against free radical generating compounds such as $A{\beta}$. EA exhibited anti oxidative activity at all concentration tested.The extract was as good as antioxidative activity of the synthetic antioxidants, butylated hydroxy toluene and ascorbic acid. Furthermore, this was superior to that of natural antioxidant, a-tocopherol. In the presence of heavy metal ions ($Fe^{2+},{\;}Zn^{2+}$), EA showed strong antioxidative activity. The extracts showed about 3075% in the nitrite scavenging effect under pH 1.2 and $37^{\circ}C$ for 1 hr. There was significant difference among concentration of extracts.
The purpose of this study was to evaluate the antioxidant activity of Metaplexis japonica by using hot-water and ethanol extracts of its leaf and stem. Yields of hot-water and ethanol extracts of M. japonica leaf were high at 6.89 and 6.23%, respectively. The polyphenol and flavonoid contents in ethanol extracts of M. japonica leaf (ALEE) were high (86.96 and 60.73 mg/g, respectively). The electron-donating ability of all M. japonica extracts increased with an increase in extract concentration, with the highest electron-donating ability of 36.20~68.19% shown by hot-water extracts of M. japonica leaf (ALWE). The superoxide dismutase (SOD)-like activities of ALWE and ALEE increased with an increase in extract concentration. The nitrite-scavenging ability of the extracts was the highest at pH 1.2 and that of ALWE was higher than that of ALEE. The reducing power of $62.5{\mu}g/mL$ ALEE was 0.09 and that of $1,000{\mu}g/mL$ was 0.44. The inhibitory effect of an ethanol extract of M. japonica stem (ASEE) on tyrosinase was 13.81% at a concentration of $62.5{\mu}g/mL$ and that of $1,000{\mu}g/mL$ ALEE was 57.04%.
Fermented compost made from medicinal herb wastes (MHWC) as an environment-friendly manure resource was applied to determine physiological activities of Rubus coreanus Miquel (Bokbunja). MHWC, poultry manure compost (PMC), and MHWC+PMC (1:1, w/w) were applied to 2 year-old Bokbunja plant at levels of 0, 20, 40 Mg/ha, respectively. Physiological activities of Bokbunja were investigated at 15, 20 and 25 days after flowering (DAF). Content of total phenolics in fruit was high in order of 25 > 20 > 15 DAF, showing highest value in fruit treated with MHWC at 40 Mg/ha. The flavonoid level showed same pattern to total phenolics. Electron donation abilities at fruits at 15 and 20 DAF were higher than at 25 DAF. Nitrite scavenging ability (NSA) was increased on in order of pH 1.2 > 4.2 > 6.0. NSA in fruit at 15 and 20 DAF was higher than at 25 DAF. Tyrosinase inhibition ability at fruits treated with MHWC showed the highest value among all composts. Xanthine oxidase inhibition ability in fruit treated with MHWC at 25 DAF was the highest. In conclusion, physiological activities of Rubus coreanus Miquel (Bokbunja) were improved in MHWC group.

This study was conducted to examine the antioxidant activities of the extracts from aerial parts and roots of Syneilesis palmata. The ethanol extract of aerial parts showed the highest content of flavonoid compounds (31.72 mg/g), and the ethanol extract of roots has the highest content of total polyphenol compounds (68.11 mg/g). The water extract of S. palmata roots showed the highest xanthine oxidase inhibition of 99.29% and the ethanol extract of aerial parts showed 98.48% at 1.0 mg/mL. The ethanol extract of roots showed the highest value of nitrite scavenging ability of 70.89% at pH 1.2, SOD-like activity of 13.06% and electron donating ability of 98.58% at 1.0 mg/mL concentration. The effect of tyrosinase inhibition was found at only the ethanol extracts of roots (9.33%). We found that root extracts contain abundance polyphenol compounds and their antioxidant activities were greater than those of the extracts of aerial part.

Gardeniae Fructus (GF) is a fruit of Gardenia jasminoides Ellis (Rubiaceae) which has been used in traditional medicine. It contains not only geniposide but also resveratrol, a kind of stilbene as a natural antioxidant. In this study, we investigated physiological activities of GF extracts by measuring electron donating ability (EDA), nitrite scavenging ability (NSA), super oxide dismutase (SOD)-like activity and inhibitory effect of tyrosinase activity (ITA). As a solvent, it was extracted with water, 50 and 100% ethanol using microwave. At the concentration of 6 mg/mL, EDA was the highest at 50% ethanol extract but the lowest at 100% ethanol extract, $96.43{\pm}0.25%\;and\;77.06{\pm}0.22%$ respectively. NSA showed the strongest activity at 50% ethanol extract like EDA (6 mg/mL: $75.26{\pm}0.28%$). ITAs were below 20% in all samples and their activities reduced according to increasing concentration. Likewise, SOD-like activities decreased with increasing concentration of extracts in all samples. In conclusion, GF extracts showed low SOD-like activities and ITAs but EDAs and NSAs were fairly high; especially EDA of 50% ethanol extract (6 mg/mL) was high as those of 0.1 and 1% L-ascorbic acid. Therefore the results suggest that GF extracts may be useful as potential sources of natural antioxidants.
The purpose of this study was to determine antioxidant and physiological activities of water and 70% ethanol extracts from Ligularia fischeri by extraction methods. The yield of water and ethanol extracts from Ligularia fischeri was 15.23% and 17.45%, respectively. The polyphenol and flavonoid contents of ethanol extracts of Ligularia fischeri (LEE) were $17.17{\pm}4.38mg/g$, $35.06{\pm}6.69mg/g$, respectively. The electron donating ability and SOD like activity, and ABTS radical ability of all Ligularia fischeri extracts were increased in a dose dependent manner, and those was the highest in LEE. Nitrite scavenging ability was higher in pH 1.2 than that in pH 3.0, and ethanol extract showed higher ability in pH 1.2 and 3.0. The xanthine oxidase and inhibition effect of all Ligularia fischeri extracts on tyrosinase were dose-dependently increased, and those was the highest in ethanol extracts of Ligularia fischeri. Reducing power was 1.2 at extract concentration $1,000{\mu}g/mL$ in water and ethanol extracts of Ligularia fischeri and the highest in water extract of Ligularia fischeri at concentration of $62.5-500{\mu}g/mL$. These results may contribute to development of processed food and health functional food with Ligularia fischeri.
Chemical components and physiological activities Bamboo (Phyllostachys bambusoides Starf) extracts obtained by burning, dry heating or extracting with water or 70% ethanol and were investigated. Contents of soluble solid and total phenolic compounds were highest in the ethanol extract. Contents of polyphenols such as catechin, chlorogenic acid, caffeic acid, 3-hydroxy benzoic acid and ferulic acid were determined. Free sugars consisted of galactose, glucose, fructose, and sucrose. Organic acids including citric, tartaric, malic, succinic, and acetic acid were present in the bamboo extracts. Antioxidant activities of dry heat and ethanol extracts were higher than those of BHA or ${\delta}-tocopherol$. Nitrite- scavenging effect of extracts ranged from 84.7 to 99.6% at pH 1.2 ana 3.0. Tyrosinase-inhibitory activity was higher in the water extract, and SOD-like and ACE-inhibitory activity were highest in tile dry kent extract. Antimicrobial activities of the bamboo extracts were strong against Bacillus subtilis, Escherichia coli O157, and Staphylococcus aureus.
This study was conducted to monitor the quality characteristics of mate (Ilex paraguarensis) ethanolic extracts via the response surface methodology. In the extraction conditions that were based on the central composite design with variations in the ethanol concentration (0-100%), extraction temperature($35-95^{\circ}C$), and the ratio of the solvent to the sample (10~30 mL/g). The extraction yield and total polyphenol content improved with the increase in the ethanol concentration than in the extraction temperature. The caffeic acid content increased with the decrease in the solvent ratio. The coefficients of determinations ($R^2$) were 0.8842 (p<0.05), 0.8729 (p<0.05), and 0.9205 (p<0.05) in terms of the electron donating ability, nitrite scavenging effect (pH 3.0), and SOD-like ability, respectively. The estimated conditions for the maximized extraction, including in terms of the yield, total polyphenol content, caffeic acid content, and electron donating ability, were a 21-48% ethanol concentration, a $76.4^{\circ}C$ extraction temperature, and 10-14mL/g solvent-to-sample ratio.
