Effects of High Pressure and Sodium Nitrite Levels on Cured Color Development and Residual Nitrite Concentration in Pork Homogenates

  • This study investigated the effects of high pressure with or without thermal treatment on the cured color development and residual nitrite contents of model meat systems (pork, NaCl and sodium nitrite). At low nitrite levels (${\leq}50{\mu}g/g$), 200 MPa of pressure alone (P) did not develop the cured meat color (p>0.05). Thermal treatment (T) showed curing pigmentation (higher CIE L* and CIE a*), and the impacts were more effective when pressure was combined with thermal treatment (PT). In contrast, nitrite levels did not contribute to the cured meat color when ${\geq}200{\mu}g/g$ of nitrite was added to the meat. At high nitrite levels, although the typical cured color that is induced by thermal treatment did not present by pressure alone, the PT treatment still showed a pinker color with low residual nitrite content compared to the T treatment. The higher the pressure level (300 MPa), the greater the cured meat pigmentation with lower residual nitrite. Therefore, the present study demonstrates the possible application of high pressure, both for cured pigmentation and reducing residual nitrite, respective to typical thermal treatments.

녹즙추출물의 아질산염 소거능에 대한 연구 (Nitrite Scavenging Effect of Methaol Fraction Obtained from Green Yellow Vegetable Juices)

  • The objectives of this study were to investigate biological activities such as nitrite scavenging effect of water and methanol fractions obtained from each green juice(Angelica keiskei, kale, carrot) under different pH conditions, and antioxidant vitamin contents in green juice made of green yellow vegetables. The result shows that nitrite scavenging effect of each green juice was 14.0~91.2% in model system. The methanol fraction provided higher effect than the water fraction. The nitrite degradation was the highest at pH 1.2. Nitrite scavenging effect of methanol fraction obtained from kale juice was 91.2% at pH 1.2 which was the highest among tested samples in this experiments. Consequently, extracts of kale juice were shown to provide the greatest functional properties among the vegetables tested. Contents of vitamine E and C in the extracts of kale were higher than the others.

김치류의 저장(貯藏)중 pH 및 질산염(窒酸鹽)과 아질산염(亞窒酸鹽) 함량(含量)의 변화(變化) (Effect of Storage on pH and the Contents of Nitrate and Nitrite of Various Kimchi)

  • Nitrate accumulated in vegetables can, via $NO_2$ during storage and after their ingestion, cause the formation of methemoglobin and many of which are carcinogenic in human body. Especially such vegetables with the highest consumption in Korea as chinese cabbage and raddish frequently showed that high contents of nitrate and nitrite could accumulate. Therefore, pH and the content of nitrate and nitrite of Korean pickles made of upper vegetables, viz, Baiechu Kimchi, Yulmookimchi and Kakdooki were estimated during storage at the conditions of $5^{\circ}C$ and $25^{\circ}C Storage at $25^{\circ}C$ generally led to the more rapidly than that at $5^{\circ}C$. But changes of nitrite level showed very low variation in all tested Kimchi.

Effects of Dongchimi Powder as a Natural Nitrite Source on Quality Properties of Emulsion-Type Sausages

  • The use of nitrite as a conventional curing agent is decreasing because of the negative consumer perception of synthetic compounds in foods. Therefore, this study was conducted to investigate the efficacy of dongchimi as an alternative to synthetic nitrite and its effect on the qualitative properties of emulsion-type sausages. Under all tested fermentation conditions, both nitrite and nitrate contents were the highest when dongchimi was fermented at 0℃ for 1 wk. The fermented dongchimi was powdered and added to the sausages. Emulsion-type sausages were prepared with 0.25% (treatment 1), 0.35% (treatment 2), 0.45% (treatment 3), or 0.55% (treatment 4) dongchimi powder, with 0.01% sodium nitrite-treated (control 1) and 0.40% celery powder-treated (control 2) sausages as controls. There were not different (p>0.05) in the pH, cooking yield, CIE L*, and CIE a* between the control 1 and treatments 2, 3, and 4. CIE b* was significantly higher (p<0.05) in the control 2 and lower (p<0.05) in the control 1 than that in the other groups. Treatment 4 and control 1 had similar contents of residual nitrite, nitrosyl hemochrome, and total pigment. Additionally, treatment 4 exhibited a significantly better (p<0.05) curing efficiency than the control 1. However, naturally cured sausages showed higher (p<0.05) lipid oxidation than the control 1. This study suggests that the use of more than 0.35% dongchimi powder could replace sodium nitrite or celery powder as curing agents for emulsion-type sausages.

채소류와 과칠류 중의 질산염 및 아질산염의 함량 (Contents of Nitrate and Nitrite in Vegetables and fruits)

  • 질산염 및 아질산염의 주요 급원인 각종 채소류 및 과실류에서 이들의 분포를 조사하고자 엽채류 23종, 과채류 4종, 근채류 $\boxUl$종, 향신채소류 7종 및 과실류 15종의 질산염, 아질산염을 Ion-Chromatography(IC)를 이용하여 분석하였다. 엽채류에서 아질산염은 총 10종에서 검출 되었으며,재래종 상치가 평균 0.6 mg/kg으로 가장 낮은 함량이었고 개량종 상치가 평균 349 mg/kg으로 가장 높은 함량이었다. 질산염은 취나물이 평균 578.3 mg/kg으로 그 함량이 가장 높았으며, 다음이 겨자잎(415.7mg/kg), 청경채(348.6 mg/kg)의 순이었다. 과채류 중 아질산염은 본 실험의 조건에서는 검출되지 않았으며 질산염은 애호박이 평균 86.2 mg/kg으로 가장 높은 함량이었으며 오이가 0.6~24.7 mg/kg(평균 5.5 mg/kg)으로 가장 낮았으나 모든 시료가 개체에 따라 함량의 차이가 컸다. 근채류에서도 아질산염은 검출되지 않았고 질산염은 무가 0.2~ 580.0 mg/kg으로 월등히 높은 함량이었고 향신채소류는 질산염의 함량이 대체로 낮은 반면 마늘을 제외한 전 시료에서 아질산염이 불검출에서 29.8 mg/kg까지 검출되었다. 파의 경우 아질산염은 잔파가 더 높은 함량이었으나 질산염은 대파가 평균 4.3 mg/kg으로 잔파에 비해 약 6배 더 높은 함량이었고, 고추에서도 아질산염은 적고추가 더 높은 함량이었으나 질산염은 청고추가 약 7배나 더 높았다. 과실류의 질산염은 사과가 평균 0.5 mg/kg으로 가장 낮은 함량이었고 자두가 1.6~206.2 mg/kg, 평균 76.6 mg/kg으로 다른 시료에 비하여 월등히 높은 함량이었다.

자리젓 중 N-Nitrosamine 생성에 관한 연구 (Studies on the Formatiion of N-Nitrosamine in the Salt-Fermented Damsel fish Chromis notatus)

  • N-Nitrosamines have been known to be strong carcinogens and are formed by the reaction of nitrous acid with amines. In this experiment the changes in the contents of nitrate nitrite trimethylaminoxide(TMAO) trimethylamine(TMA) and dimethylamine(DMA) during femen-tation of damsel fish were analyzed periodically and N-nitrosamines in a commercial products. N-Nitrosamines were determined by mineral oil distillation methods using gas chromatography-thermal energy anlyzer(GC-TEA) in a commerical product. Nitrate nitrite and amines were quantitate by colorimetric methods. Level of nitrate-N were gradually decreased but nitrite-n was not detected or trace. Contents of dimethlamine(DMA) and trimethlamine were mar-kedly increased while trimethylaminoxide nitrogen was decreased during the fermentation of damsel fish. The change of pH was in the ranges of 5,5-7.0 during fermentation of salted damsel fish. It was out of the optimum pH(3.0-3.4) for the formation of nitrosamine. N-Nitrosamines were not detected in salt-fermented damsel fist but much N-nitrosodimethyla-mine(NDMA) could be detected in salt-fermented damsel fish after adding 0.05M NaNo2 in the acidic condition. The identifaction of NDMA in it was confirmed by mass spectrophotometry. Nitrate decrea-sed during the fermentation of damsel fish. however nitrite was trace level and nitrosamines were not formed in its. This could be supposed that it was due to the rapid consumption of nitrite by amino acid and bacteria.

육제품의 저장 중 아질산이온 잔류량, TBARS 함량과 육색의 변화 (Changes in Residual Nitrite, TBARS and Color of Meat Products during Storage)

  • 육제품의 아질산이온 잔류량 저감화와 육제품 섭취의 안전성 확보 방안 연구의 일환으로 국내산 육제품의 저장 중 아질산이온 잔류량의 변화와 함께 TBARS 함량과 색도를 살펴본 결과 비엔나소시지, 베이컨, 스모크햄, 냉동육제품 등 4종류의 육제품 모두 아질산이온 잔류량이 국내 규제 허용량 70ppm 보다 매우 낮은 값을 보였으며, 저장기간이 길어질수록 잔류량은 더욱 감소하였다. 감소폭은 저장 온도와 제품의 종류에 따라 차이가 있어 $4^{\circ}C$에서 냉장 저장할 경우는 비엔나소시지에서 아질산이온 잔류량의 감소폭이 가장 컸고 베이컨에서 가장 작았다. 반면 $-20^{\circ}C$에서 냉동 저장한 경우에는 베이컨에서 아질산이온 잔류량 감소폭이 가장 컸고 냉동육제품에서 가장 작았다. 또한 저장 온도에 따른 각 제품의 아질산이온 잔류량 감소 속도를 보면 비엔나소시지, 스모크햄 및 냉동육제품은 $4^{\circ}C$에 저장할 때가 $-20^{\circ}C$에 저장할 때보다 더 빠른 속도로 아질산이온 함량이 감소하였다. 반면, 베이컨의 경우는 $-20^{\circ}C$에 저장할 때가 $4^{\circ}C$에 저장할 때보다 더 빨리 아질산이온 함량이 감소하였다. 이러한 결과들은 육제품의 제조 후 저장기간이 길어짐에 따라 잔존 아질산이온이 감소하고 저장 온도에 따라 영향을 받는 것을 보여준다. 또한 국내산 육제품의 아질산이온 함량은 대부분 법적기준보다 매우 낮은 수준이며 우리나라의 경우 육제품 섭취에 의한 아질산염의 위해는 현 시점에서 크게 우려할 바는 아니라고 사료되나 앞으로 아질산이온 잔류량을 감소시키기 위한 연구가 지속적으로 수행되어야 하고 더불어 아질산염의 대체물질을 개발하는데 많은 연구력과 재원이 투자되어야 할 것이다.

당귀와 승검초의 기능성 성분과 아질산염 소거능 (Effective Components and Nitrite Scavenging Ability of Root and Leaves a Angelica gigas Nakai)

  • This research was conducted to examine the usability of Dangui (Angelica gigas Nakai, Root) and Seungumcho (Angelica gigas Nakai, Leaf) as functional food in aspects of their functional components and nitrite scavenging ability. Analysis of proximate composition showed that Dangui contains more moisture, crude lipid and crude protein than Seungumcho. On the other hand, Seungumcho contains more than twice mont of crude ash and crude fiber than Dangui. Dangui showed higher contents in phosphorus, iron, magnesium, and Seungumcho showed higher contents in copper, calcium, sodium, potassium compare to each other. Substances such as calcium, magnesium and iron that showed high contents in Dangui and Seungumcho are the most important inorganic substances. Total dietary fiber(TDF) of Dangui, sum of IDF and SDF, was 24.2%, and Seungumcho showed 28.18%. vitamin C contents of a 29.690.33 mg/100g appeared only in Seunggumcho. Total phenol contents of Dangui was 0.100${\pm}$002% and that of Seungumcho 0.0900${\pm}$008%. Nnitrite Scavenging ability of both water soluble and methanol soluble extracts were more than 90% at pH 1.2, and it decreased as pH level adjusted to pH 4.2, pH and 6.0.

미나리과 산채의 아질산염 소거능 (Nitrite Scavenging Effect of Umbelliferaeceae)

  • 미나리과 산채인 참나물, 신선초, 방풍의 조단백은 22.99~31.00%, 조지방은 3.51~5.08%였으며, $\beta$-carotene은 5.40~19.81 mg%, ascorbic acid는 미량 함유하였고, Selenium은 모든 시료에서 검출되지 않았다. 총 페놀 함량은 617.87~875.77 mg%를 나타내었으며, 이 중 방풍이 가장 높은 함량을 보였다. 참나물, 신선초, 방풍의 지방산 조성은 전 지방산 중 linoleic acid와 linolenic acid가 66.46~77.44%를 차지하였다. 아질산염 소거능은 참나물, 신선초, 방풍 모두에서 메탄을 가용성 획분이 수용성 획분에 비하여 높은 소거능을 보였고, pH 1.2〉 4.2〉6.0 순으로 소거능이 높았다. 방풍의 메탄을 가용성 획분의 아질산염 소거능이 pH 1.2에서 95.3%로 가장 높았으며, 다음이 참나물, 신선초 순이었다. 총 페놀과 아질산염 소거능은 높은 상관관계를 나타내었다.

Effect of Swiss Chard (Beta vulgaris var. cicla) as Nitrite Replacement on Color Stability and Shelf-Life of Cooked Pork Patties during Refrigerated Storage

  • In this study, the effects of pre-converted nitrite from Swiss chard powder (PS) on the color stability and shelf-life of cooked pork patties during refrigerated storage for 28 d were investigated. Nitrite was added at a concentration of approximately 120 ppm. Five treatments were formulated as follows: Control (120 ppm nitrite), T1 (2% PS), T2 (2% pre-converted nitrite from celery powder; PC), T3 (1% PS + 60 ppm nitrite), and NC (nitrite-free). The T1 and T3 samples had higher nitrosoheme pigment contents, which were associated with the redness of the samples (p<0.05). T1 resulted in the highest redness value (p<0.05). The redness and yellowness of the cooked pork patties increased with increasing PS levels. The pH of the samples subjected to all treatments decreased with progress of the storage period (p<0.05). The pH of the T1 and T3 samples treated with PS was lower (p<0.05) than that obtained with other treatments, as PS has a lower pH value. The treatments in which PS was added were most effective for reducing the level of thiobarbituric acid reactive substances (TBARS) and the residual nitrite content relative to the control. T1 resulted in the highest flavor, off-flavor, and overall acceptability scores during storage (p<0.05). The total viable bacterial count for all treatments was below 1 Log CFU/g, and E. coli and coliform bacteria were not detected during storage. Therefore, these results suggested that pre-converted nitrite from Swiss chard powder is a potential replacement for nitrite in meat products.
