감즙 염색 한지의 특성 (Properties of Hanji Dyed with the Persimmon Juice)

  • The Hanji dyed with persimmon juice were useful goods in the past, but they are not widely used nowadays despite of their many strong points such as antibacterial and water-resistant properties. The object of this study is to provide useful data for developing new products by using them. We dyed traditional Korean hand-made papers (Hanji) with colorants extracted from fruits of Diospyros kaki and investigated the effect of various dyeing factors (mordant, mordanting method, pH of dyeing solution, light exposure time etc.) on optical and mechanical properties of the dyed Hanji. Changing mordant affected the color of dyed Hanji. The dyed Hanji after-mordanted with Cu mordant had the highest K/S value and showed the deepest yellow and red shade. The best mordanting method was an after-mordanting. The K/S value of dyed Hanji increased with decreasing pH of dyeing solution. The tensile index and size degree values of the Hanji were increased after dyeing.

Natural Scavengers of Reactive Oxygen Species in Rumex crispus as natural colorant

  • The aims of this study were to examine the efficacy of phytochemicals of Rumex crispus as anti-oxidant and anti-browning agent. The bioactive properties of Rumex crispus as natural colorants were studied by total phenolic contents, DPPH radical scavenging, ABTS radical scavenging,lipid peroxidation, cell viability, singlet oxygen quenching and photoprotection effect. Among all of the results ($IC_{50}$: the concentration of various extracts required to exert 50% reducing effect), the higher activity of the extract was found in the ethyl acetate and butanol extracts. Anti-browning activity was evaluated by monitoring the change $L^*$, $a^*$, $b^*$ values and total color differences(${\Delta}E$). It was found that ethyl acetate and butanol extracts effectively inhibited browning in apple juice at a concentration below 0.3 mg/ml. Rumex crispus extracts used natural colorants could be of good resources as anti-oxidant and anti-browning agents. The results suggest that our study may contribute to the development of natural and functional materials with potential application to reduce oxidative damage.

Gastric Ulcer Healing Effects of Dioscorea japonica, Halloysite and Ostrea gigas Mixtures

  • A novel gastric ulcer healing formulation, a mixture of Dioscoreae Rhizoma, Halloysitum Rubrum and Ostreae Testa (Dihaos), was examined for gastric ulcer healing effects. The effect of Dihaos was assessed in various gastric ulcer models in rats. Oral administration of Dihaos significantly reduced HCl-ethanol-induced gastric ulcers. Dihaos also significantly reduced gastric and duodenal ulcers induced by cysteamine. Ostreae Testa decreased secretion of gastric juice and increased the pH of gastric juice. Furthermore, the extracts of Dioscoreae Rhizoma affected the cell proliferation of MKN 74 cells. These results suggest that the healing effect of Dihaos on gastrohemorrhagic lesions results from its protective effect against acid secretion and proliferation of mucosal cells in induced gastric ulcers in rats.

  • This study was performed to investigate the single and combined effect of concentrations of garlic juice according to the pH and temperature on the growth of Salmonella enteritidis in brain heart infusion broth, and to develope Response surface model for the effect of concentrations of garlic extract. The results of electric conductibility of Salmonella enteritidis growing in the range of incubation temperature ($25~42^{\circ}C$), pH (5.5~9.0) and concentration of garlic Juice (0~0.8%) showed that a badge with high temperature had low D.T.value and concentration of garlic extract were significantly correlated with D.T.value (p<0.01). Growth of Salmonella enteritidis in the condition of $37^{\circ}C$ and pH 7.0 presented the lowest D.T.value.

Chemical Constituents of Fermented Noni (Morinda citrifolia) Juice Exudates and Their Biological Activity

  • In a continuing study of the fermented noni (Morinda citrifolia) juice exudates, five compounds, heptanyl $2-O-{\beta}-{\small{D}}-xylofuranosyl-(1{\rightarrow}6)-{\beta}-{\small{D}}-glucopyranoside$ (1), n-butyl ${\beta}-{\small{D}}-glucopyranoside$ (2), (1S)-(3-ethenyl-phenyl)-1,2-ethanediol (3), (2S)-2-hydroxybutanedioic acid (4), and daucosterol (5) were isolated from the buthanol partition of the extract. The structures of the isolates were identified by 1D and 2D NMR, and MS experiments, as well as by comparison of their data with the published values. Among the isolates, compounds 1 - 3 were isolated for the first time from the plant species. The isolated compounds were evaluated for their cancer chemopreventive potential based on their ability to inhibit nitric oxide (NO) production and tumor necrosis factor alpha ($TNF-{\alpha}$)-induced $NF-{\kappa}B$ activity, and quinonone reductase-1 (QR1)-inducing effect.

차조기 추출물의 면직물에 대한 염색성과 항균기능성 평가 (The Dyeing Properties and Antibacterial Function of Perilla frutescens var. acuta Extract on Cotton)

  • This study investigated the proper dyeing conditions, fastness and functionality of cotton fabrics dyed with Perilla frutescens var. acuta extract. Repeat dyeing, combination dyeing of persimmon juice and fermentation dyeing were conducted as dyeing conditions. It was confirmed that the ΔE and the K/S value of cotton fabrics dyed with Perilla frutescens var. acuta extracts depending on repeat dyeing and combination dyeing slightly increased. Furthermore, the fastness to washing of persimmon combination dyeing and fermentation dyeing was very good. The fastness to rubbing was shown to be above grade 4 in all methods, and the fastness to light was not as good as grade 3 or lower. The persimmon juice dyeing, Perilla frutescens var. acuta extract repeat dyeing 4 times and combination fermentation dyeing showed very good antimicrobial abilities. Thereafter, additional studies are needed to improve the fastness to light and alternatives to further improve the dyeing properties.

국내외 포도즙 및 포도주의 주요 페놀계 화합물 함량 비교분석 (Determination of Major Phenolic Compounds of Grape Juice and Wine of Different Geographic Origins)

  • 본 연구에서는 국내외 주요 포도 가공품인 포도즙과 포도주의 일반분석 및 대표적인 폴리페놀화합물인 레스베라트롤, 쿼세틴 및 카테킨에 대한 함량 분석을 실시하였다. 한국산 포도제품과 외국산과의 색도, pH, 산도, 에탄올 함량 등은 제품, 품종, 제조국가 간에 유의적인 차이가 있었다. 유리당 조성은 포도즙과 포도주 사이에 큰 차이를 보였으며, 포도주 내에서도 통계적으로 유의한 결과를 나타났다. 레스베라트롤과 쿼세틴 함량에서는 국내산 포도즙 사이에 유의적인 차이를 발견할 수 있었으며 포도주가 포도즙보다 대체로 높은 경향이었다. 에피카테킨 함량 및 조성에서도 제품, 품종, 제조국가 간에 유의적인 차이가 인정되었다. 이러한 결과는 향후 포도 육종가, 재배 농가나 판매자들에게 유용한 정보가 될 것으로 기대된다.

Effects of Probiotic Fermented Fruit Juice-Based Biotransformation by Lactic Acid Bacteria and Saccharomyces boulardii CNCM I-745 on Anti-Salmonella and Antioxidative Properties

  • Fermentation is an effective process for providing various beneficial effects in functional beverages. Lactic acid bacteria and yeast fermentation-based biotransformation contribute to enhancement of nutritional value and digestibility, including lactose intolerance reduction and control of infections. In this study, the probiotic fermented fruit juice (PFJ) was produced by Lactobacillus plantarum TISTR 1465, Lactobacillus salivarius TISTR 1112, and Saccharomyces boulardii CNCM I-745 while mixed fruit juice (MFJ) was used as the basic medium for microorganism growth. The potential function, the anti-salmonella activity of PFJ, was found to be effective at 250 mg/ml of MIC and 500 mg/ml of MBC. Biofilm inhibition was performed using the PFJ samples and showed at least 70% reduction in cell attachment at the MIC concentration of Salmonella Typhi DMST 22842. The antioxidant activities of PFJ were determined and the results revealed that FSB.25 exhibited 78.40 ± 0.51 mM TE/ml by FRAP assay, while FPSB.25 exhibited 3.44 ± 0.10 mM TE/ml by DPPH assay. The volatile compounds of PFJ were characterized by GC-MS, which identified alcohol, aldehyde, acid, ester, ketone, phenol, and terpene. The most abundant organic acid and alcohol detected in PFJ were acetic acid and 2-phenylethanol, and the most represented terpene was β-damascenone. The sensory attributes showed scores higher than 7 on a 9-point hedonic scale for the FPB.25, illustrating that it was well accepted by panelists. Taken together, our results showed that PFJ could meet current consumer demand regarding natural and functional, fruit-based fermented beverages.

The Effect of Opuntia ficus-indica var. saboten Fruit on Gastric Lesion and Ulcer in Rats

  • The effects of the dried fruit powder of Opuntia ficus-indica var. saboten (OF-f) were investigated on gastric lesion and ulcer models in rats. It showed significant inhibition in HCl ethanol and HCl aspirin induced gastric lesion at a dose of 600 mg/kg, p.o. OF-f also showed significant inhibition in indomethacin induced gastric lesion at the doses of 200 and 600 mg/kg, p.o. However, it did not affect aspirin and Shay ulcer in rats. It also did not affect the gastric juice secretion, acid output and pH. These data suggest that OF-f possesses pronounced inhibitory action on gastric lesion of rats.

Gluconacetobacter hansenii CV1에 의해 발효된 감귤식초의 관능적 특성 (Sensory Characteristics of Citrus Vinegar fermented by Gluconacetobacter hanenii CV1)

  • 제주 감귤복합가공공장에서 제조한 감귤농축액을 재료로 감귤식초를 발효하고 관능검사를 실시하였다. 감귤농축액은 신선과즙에 비하여 naringin 및 hesperidin 함량이 낮을 뿐만 아니라 당도와 산도가 높아 식초발 효용으로 적합하였다. 6배 희석한 감귤농축액에 효모(CMY-28)를 접종하고 $28^{\circ}C$에서 3일간 발효하여 알콜도수 $5.6\~6.3\%$의 식초산 발효용 원주를 제조하였다. 여기에 분리한 식초산 발효균(Glucoacetobacter sp. CV1)을 접종하여 $30^{\circ}C$에서 8일간 발효하여 산도 $5.8\~6.2\%$의 감귤식초를 제조하였으며, 관능검사에서 국내에서 유통되는 천연과즙식초 중에서 가장 우수한 것으로 평가되었다. 다만, 식초발효 과정에서 알콜 잔류량이 $2.5\%$를 상회하여 이의 개선이 필요한 것으로 판정되었다.
