A Study on Excavation and Transmission of Native Local Foods in the Namhae Region - Recipes and Nutrients of Various Fish Soups - (남해군의 전통 향토 음식 발굴 및 전승에 관한 연구 - 생선국 및 탕의 조리법과 영양 성분 -)

  • The purpose of this study was to develop and succeed local foods such as Yangte miyuck-gook, Getjango-tang, Boongjango-gook, Sook doenjang-gook, Mulmegi-gook and Mukjang-gook in the Namhae region. To derive standardized recipes; first, a test recipe was prepared based on the information obtained from literature material, personal interviews of Namhae natives, and surveys of restaurant recipes through restaurant owners and chefs in the Namhae area. After that, standardized recipes were made in accordance with the collected data. Then, CAN Program 2.0 was used for the nutritional evaluation. Most of these fish soups contained high percentages of protein, minerals and vitamins. Getjango-tang and boongjango-gook were higher than the other foods in most of nutrition contents, which were particularly good sources of calcium and iron.

Studies on Various Egg Traits of Korean Native Chicken (한국 재래계의 난 형질에 관한 연구)

  • The present study was conducted to estimate average weights, and corrlation and regression coefficients among various traits of eggs obtained from Korean native and imported chicken. Data were obtained from 360 layers (180 of Korean native origin, and 180 of imported Decalb Brown) between November 8, 1994 to February 8, 1995. The results obtained are summerized as follows : 1. The mean weights of whole egg, yolk, dense white, thin white, and egg shell of native chicken were lighter (P<0.01) than those of Decalb Brown. 2. The coefficients of variability in each egg trait were lower in native chicken than in Decalb Brown, indicating the higher ability of native chicken to adapt to the local environment. 3. The phenotypic correlation coeffcients between whole egg and weights of yolk, dense white, thin white, and eggshell were 0.842∼0.992(P<0.01) in native chicken, and 0.865∼0.985(P<0.01) in Decalb Brown. 4. The average eggshell thicknesses of native and imported Decalb Brown were 362.5 $\mu\textrm{m}$ and 407.9 $\mu\textrm{m}$, respectively. 5. The regression coefficients of most of the traits of eggs from native chicken were lower than those from Decalb Brown layers, suggesting that Korean native chicken should be improved further in various egg traits measured in this study.

Productivity of Native White Lotus Leaves and Root Grown in Hoesan, Muan of Jeonnam Districts (전남 무안 회산지 자생 백련의 잎과 연근의 생산력)

  • This study was conducted to examine the yield of lotus leaves and roots per one native white lotus grown in Hoesan, Muan of Jeonnam districts, which were promoted by Muan-Gun, Jeonnam as a local speciality. We planted the rhizomes with 2 internodes in a rubber pot in the middle of April. Then on September, 24, 2008, we dug out the main rhizomes and it had grown by 810cm. From the data, the leaf area was $34,442\;cm^2$, the fresh leaf weight was 1,230g, and the dry leaf weight was 235.4g. The weight of the edible fresh stalk and dry weight leaf were 1,325g and 164.3g. Yield of the white lotus root were 1,480g on Sept. 4, 3,880g on Sept. 20 and 4,172g on Oct. 18. Native white lotus are able to be harvested early as September, however, it is be better that it is harvested in the middle of October based on the yield.

Temporary Dominance of Exotic Plant Species on Overburden Coal Mines in South Kalimantan

  • Primary succession on bare rocks is a challenge for invaders, including one of which was plants. The invasion of bare rock by exotic species raises the question of whether their presence hinders or facilitates succession. This study aimed to determine the role of exotic species in primary succession in six overburden (OB) coal mines using a chronosequence approach. Vegetation analysis was undertaken using line transects. Measurements were carried out on the absolute and relative coverage of each species. Native and exotic species were identified and grouped using information from local communities, identification books, and websites. The relationship between time and number of species, time, and relative dominance of exotic and native species was analyzed using Pearson's correlation. Species number and dominance data were analyzed descriptively. The number of native species from the six OB heaps was higher (57) than that from exotic heaps (50). Neither the number of species nor the coverage showed a significant relationship with time. Exotic species predominated throughout the age of the embankment but tended to decrease over time. Temporary dominance by exotic species plays a role in assisting primary succession in the OB. This process might be prolonged without the temporary dominance of exotic species during early primary succession.

  • The purpose of this study was to gather useful information for establishing an efficient marketing direction by investigating the flavor, serving patterns, price and cooking method of Dong-rae Pajeon which is a native local food of Pusan area. A questionnaire was answered by 226 citizens who experienced Dong-Lae Phajeon. The study data were analyzed by frequency analysis, t-test, ANOVA, and multiple regression analysis. The findings are summarized as follows: The flavor, presentation, types of oil, and price of Dong-rae Pajeon had influence on the satisfaction of respondents. To globalize Dong-rae Pajeon, 'developing its cooking method', 'decreasing its price', and 'developing its serving patterns' should be considered.

The Relationships among Food Image, Tourist Satisfactions and Destination Loyalty Intention: A Case of Hanoi Local Cuisine

  • The purpose of this study was to examine tourist satisfaction towards Hanoi local food image as well as examine the relationship between those two variables with tourist destination loyalty intention. A self-administered survey was carried out in Hanoi, Vietnam. Of the distributed 400 questionnaires, a total 393 respondents of foreign tourists were used to data analysis by a convenience sampling method. Factor analysis was performed to identify underlying dimensions of what foreign tourists expect most from Hanoi local food image. The results showed that foreign tourist perceived Hanoi local food image as, food quality, food culture, contexture features and atmospheric. The finding showed that Hanoi local food image had a direct effect on foreign tourist's satisfaction and destination loyalty intention. In addition, tourist satisfaction had a positive influence on destination loyalty intention. At last, considering the results from this study, it is suggested that it is necessary to create and maintain the identity of image by formulating appropriate strategies and it is instrumental to promote local food image based on its distinctiveness and diversity which stands for the unique native culture.

Study on Recognition and Development of Native Local Foods in the Young-ju Area (영주 지역 향토음식의 인지도 분석 및 개발방안)

  • This study was conducted in order to better understand the local and specialty foods of the Yeong-ju region. This study provides basic data for new menu development and commercialization. The results of 384 surveys, which were conducted to determine traditional rice cake production methods and their traits, were analyzed. Samgyetang was ranked top in the survey on recognition, public interest, and frequency of the local foods. Dakjuk was ranked second, followed by Baechujeon and Bopguk, in order. The levels of recognition and preference of specialty foods were in the order of hasuo, peach, apple, and meat. Among the answers in the survey on the popularization and commercialization of local foods, changing of the cooking style for younger generations' taste was considered to be the most important. Holding events to promote regional specialty foods and initiate the public to traditional cooking styles were listed sequentially by importance. The survey results show that promotion of local foods through education, and as well as incorporation of new ingredients are both highly effective ways to commercialize local foods for tourism. The results also indicate that taste, nutrition, and appearance of food should be considered in order to improve quality.

Appearance of globule leukocytes in tracheal and broncheal mucosa in Korean native cattle with pneumonia and rats experimentally infected with Klebsiella pneumoniae (폐렴우와 Klebsiella pneumoniae 실험적 감염 랫드의 기관 및 기관지 점막층에서 Globule leukocyte의 출현양상)

  • The study was aimed at identifying the globule leukocytes (GL) of tracheal mucosa layer of Korean native cattle showing symptom of pneumonia which have died as enterotoxemia and normal Korean native cattle in Kyungpook local area. In another set of experiment, Isolated Klebsiella pneumoniae from suddenly died cattle specimens was subjected to rat for a determining globule leukocyte appearance by using histochemical and immunohistochemical method. In histochemical study, globule leukocytes generally was existed in all the case of postmortem of Korean native cattle and 3 heads of slaughtered cattle which showing symptoms of pneumonia and it showed significant increase in tracheal mucosa of rats experimentally infected with Klebsiella pneumoniae. These increased number of globule leukocytes was moderately remained on early infection stage and gradually decreased in timedependent manner after infection. The granule patterns were also determined as an acidmucopolysaccharide. In immunohistochemical study, serotonin intensity in the treacheal mucosaepithelial cells of rat experimentally infected observed a strong immunoreactivity during early infection and gradually decreased in dependent of infection stage while no IgE immunoreactivity observed. These data show that globule leukocytes were increased in a pneumonia, therefore it was considered as a valuable cell that was associated with early stage of inflammatory response.

On Phylogenetic Relationships Among Native Goat Populations Along the Middle and Lower Yellow River Valley

  • This paper is based on the 9 goat colonies along the middle and lower Yellow River valley and 7 local goat colonies in the Northeast, Tibet and the Yangtze valley. After collecting the same data about the 22 goat colonies in China and other countries, it establishes and composes the matrix of fuzzy similarity relation describing the genetic similarities of different colonies. It also clusters 38 colonies according to their phylogenetic relationship. The establishment of the matrix and the cluster are effected in terms of the frequency of 18 loci and 43 allelomorphs in blood enzyme and other protein variations. The study proves that the middle Yellow River valley is one of the taming and disseminating centers of domestic goats in the South and East of Central Asia. Compared with other goat populations in this vast area, the native goat populations in the west of Mongolian Plateau, the Qinghai-Tibet Plateau and the middle Yellow River valley share the same origin. The colonies in the lower Yellow River valley and those in the middle valley, however, are relatively remote in their phylogenetic relationship. The native goat colonies in the southeast of Central Asia can be classified into two genetic groups: "East Asia" and "South Asia" and the colonies in Southeast Asia belong to either group.

Cultural Awareness of Native English Teachers Who Work at Regular Kindergartens in Korea (한국 유치원에서 근무하는 원어민 영어교사의 문화 인식)

  • Korean National Level Kindergarten Curriculum does not include English education in regular class time. On the other hand, more than 90% kindergarteners are taught English. This study examined the Native English Teachers' (NETs') cultural aspects of their teaching at regular kindergartens in Korea. Data was collected through in-depth interviews with four NETs who were working at regular kindergartens in Korea, their partner Local English Teachers (LETs) and kindergarten principals. All interview data was transcribed and categorized based on the grounded theory method. The results showed that NETs are not required to be culturally prepared to teach in Korean kindergartens. Consequently, most of them do not consider the students' culture in their teaching activities. Moreover, Korean kindergartens, where research participants work, are not prepared well to invite NETs into their regular curriculum. These results will have significant implications on Korean kindergarten's English education practice.
