Physicochemical Properties of Traditional Kochujang Added with Naked Oat Flours (쌀귀리 분말을 첨가한 재래식 고추장의 이화학적 특성)

  • The physicochemical properties of traditional kochujang added with naked oat flours (0, 5, 10, 15%) were periodically examined during fermentation for 20 weeks at 25℃(± 2 ℃). The proximate composition of roasted naked oat flours were as follows: water 0.67%, ash 1.63%, fat 10.37%, protein 13.63%, carbohydrates 73.70%. The water contents of traditional kochujang added with naked oat flours decreased gradually according to the addition level. The pH of traditional kochujang added with naked oat flours increased according to the added level, whereas pH decreased gradually during fermentation. The acidity was opposite to pH. The L (lightness), a (redness) and b (yellowness)-values of samples increased according to the amount of added naked oat flours, whereas they decreased gradually during fermentation. The salinity and sweetness of samples decreased according to the amount of added naked oat flours. Amino acid composition of traditional kochujang added with naked oat flours was higher than that of the control during fermentation. Aspartic acid, alanine, leucine, and arginine were high in the case of traditional kochujang added with 0% naked oat flours, and aspartic acid, leucine, alanine, proline. And arginine were high in the case of traditional kochujang added with 15% naked oat flours. The dietary fiber content was 5.38g/100g in the case of 0% addition and 5.75g/100g in the case of 15% addition. As a result of the above results, it was found that the physicochemical properties of traditional kochujang added with naked oat flours could be improved, and the possibility of developing a traditional kochujang beneficial to health was confirmed.

Quality Characteristics of Kochujang During Storage by the Level of Naked Oat Flours Added (쌀귀리 분말 첨가수준에 따른 고추장의 저장 중 품질특성)

  • The quality characteristics of kochujang by the level of roasted naked oat flours added were periodically examined during storage for 20 weeks at 25℃(± 2 ℃). The water contents of kochujang with roasted naked oat flours decreased gradually as the level of added roasted naked oat flours increased (p<.05), whereas they increased gradually by time during storage. The pH of kochujang with roasted naked oat flours increased gradually according to the added level(p<.001), whereas pH decreased gradually by time during storage. But the acidity changed opposite of pH. The L(lightness), a(redness) and b(yellowness)-values of samples increased according to the amount of added naked oat flours, while decreased gradually by time during storage. The salinity and sweetness of samples decreased gradually according to the amount of added naked oat flours(p<.001). Amino acid composition of kochujang with roasted naked oat flours was higher than that of the control sample during storage. In the kochujang with roasted naked oat flours after 20 weeks of storage at 25℃(± 2 ℃), 17 kinds of amino acid contents were examined, and the glutamic acid was found to increase as the level of added naked oat flours increased: 959.69 mg/100 g for control, 983.55 mg/100 g, 1,070.72 mg/100 g for 5%, 10% and 1,169.62 mg/100 g for 15%. As a result of the above results, it was found that the quality characteristics of kochujang by addition level of roasted naked oat flours could be improved, and the possibility of developing kochujang beneficial to health was confirmed.

Study on Bioactive Property of a Naked Oat Cultivar, Daeyang (Avena sativa L.), Which is Enhanced by Spring Seeding

  • This study was aimed to investigate the content of avenanthramides(AVNs) and other phenolic compounds in the grains of a naked oat cultivar, Daeyang, which were seeded in the fall and spring, and examine the effects of alcohol extracts from the grains on natural killer(NK) cell activity in vitro. The content of AVN-A, AVN-B, and AVN-C in the spring-seeded oat grains was 2.2 folds higher than the fall-seeded oat grains on average. Among these AVNs, the content of AVN-C was 1.9-folds higher in the spring-seeded oat grains(66.1㎍/g), comparing to the content in the fall-seeded oat grains(34.8㎍/g). The content of other phenolic compounds, such as phenolic acids and flavonoids in the spring-seeded oat grains was 1.1~4.7-folds higher than the fall-seeded oat grains. In particular, sinapinic acid was the most abundant phenolic acid in the spring-seeded oat grains(50.0㎍/g) and its content was 2.4-folds higher than its content in the fall-seed oat grains. Furthermore, NK cell activity in vitro treated with the spring-seeded oat grain extracts was 158%, and it was 18%p higher than NK cell activity treated with the extracts from the fall-seeded oat grain extracts. Our finding suggest that the bioactive properties of naked oat grains would be enhanced by spring seeding.

Varietal and Annual Variations of β-Glucan Contents in Korean Barley (Hordeum vulgare L.) and Oat (Avena sativa L.) Cultivars

  • Varietal and annual variations in the contents of ${\beta}$-glucan fractions per weight grain samples were examined in sixteen covered and eighteen naked barley and five oat cultivars developed in Korea. Also, the effect of pearling on ${\beta}$-glucan content was investigated. Average contents of total, soluble and insoluble ${\beta}$-glucan fractions were 5.25, 3.72, and 1.53%, respectively, in covered barley, and 5.86, 3.51, and 2.35%, respectively, in naked barley. Soluble ${\beta}$-glucan content was higher in covered barley, though total ${\beta}$-glucan content higher in naked barley. The total and insoluble ${\beta}$-glucan contents were higher in pearled grains. Total ${\beta}$-glucan content was higher in waxy barley than in non-waxy barley. Duwonchapssalbori, a two-rowed and waxy naked barley cultivar, was highest in total, soluble and insoluble ${\beta}$-glucan contents. Highly significant positive correlations were observed between total ${\beta}$-glucan and soluble ${\beta}$-glucan contents both in covered and naked barley. There were significant annual variations in total ${\beta}$-glucan content in barley. Average contents of total, soluble and insoluble ${\beta}$-glucans of oat cultivars were 4.33, 3.44, and 0.89%, respectively. Contents of all fractions of ${\beta}$-glucans were higher in barley than in oat. These results would be useful for the breeding of high ${\beta}$-glucan variety and also for the use barley and oat as valueadded food ingredients.

Nutritional Components and Physicochemical Properties of Hulled and Naked Oat Flours according to Particle Sizes (겉귀리 및 쌀귀리 분말의 입자크기별 영양성분 및 이화학적 특성)

  • Hulled oat (Chohan) and naked oat (Choyang) flours were analyzed according to particle size to investigate nutritional components and physicochemical properties. Particle size of naked oat flours was larger than that of hulled oat flours. As the mesh of the crushed ones decreased, particle sizes increased in value. The content of total ${\beta}$-glucan was highest in hulled oat flour (4.23%) with 60 mesh and in naked oat flour (4.26%) with 100 mesh. Most total ${\beta}$-glucan was soluble ${\beta}$-glucan in both flours (over 76%). Total starch of hulled oat flours (63.64~69.82%) was higher than that of naked oat flours (52.45~63.71%). Whereas amylose contents showed a negative correlation with total starch contents. Contents of free amino acids increased according to particle size, and each component was dependent on each type of amino acid. Moreover, while fatty acid composition was not significant, the content of most naked oats was higher than that of hulled oats. Besides, the ratio of unsaturated fatty acids (oleic acid and linoleate) in both types of oat flours was relatively higher than that of other grains. The pasting properties of peak viscosity, trough, and breakdown showed the highest value in both oats with 100 mesh. Further, the values of final viscosity and the setback were higher with relatively larger particle size. In addition, peak time exhibited a lower value with larger particle size, whereas it showed the opposite value for pasting temperature. Starch digestibility did not show any specific trend according to particle size, whereas expected glycemic index of hulled oats was lower than that of naked oats. Moreover, lower values were investigated at larger particle sizes. The results of this study provide basic useful information for processing of oat products to improve consumption of oats grown in Korea.

Production and Quality Parameters of Oat Grown in Conventional/Organic Farming

  • Hulled and naked oat is a perspective crop for the low input production systems due to its low requirements for soil quality and nutrition. Oats have good competitive ability against weeds and can provide appropriate yield in organic farming in comparison with other cereal species such as wheat or barley. It is a perspective crop from the point of view of use in the food industry too. The aim of our study was to compare the production and quality parameters of naked and hulled oat grown in both organic (OF) and conventional fields (CF). Small plot trials were conducted in two locations in the Czech Republic (České Budějovice, Prague) for four years (2018-2021) in two production systems (OF, and CF). We used four varieties of hulled oat (Korok, Kertag, Raven, Seldon) and one variety of naked oat (Patrik). During the vegetation, agronomically important data were recorded. After harvest samples were processed in the laboratory and analyzed selected quality parameters of grain dry matter (the protein content was determined by the Kjeldahl method, starch content in grain according to Ewers, fat content in grain dry matter by the modified method according to Soxhlet, and ash content in grain dry matter). The data were evaluated using the program STATISTICA version 13.2, StatSoft, Inc., California, USA. It is clear from the results that the number of panicles before the harvest was influenced by the location, cultivation system, year, and, to a lesser extent, the influence of the variety. The number of panicles in OF averaged 340 per square meter, which was 90% of the value of CF. For thousand grain weight (TGW), a significantly predominant effect of year was found. The independent effect of location on TGW was statistically not significant. Grain yield was predominantly influenced by cultivation system and location. In OF, it reached an average of 3.97 t.ha-1, which was 75% of the yield of CF. As part of the evaluation of the basic grain quality indicators, the content of protein, starch, fat, and ash in the dry matter of the grain was evaluated. The content of protein in the dry matter of the grain was predominantly influenced by year, followed by the influence of the variety and a fairly comparable influence of the cultivation system and locality. On average, it achieved 16.05% in OF and 17.01% in CF. The starch content was then related to the protein content, where as a result of the lower protein content in the grain of OF oats, the content of starch and fat was on the contrary increased. The year turned out to be the most significant factor, affecting both the starch content in the dry matter of the grain and the fat content. This was followed again by a fairly comparable influence on the cultivation system and locality. The influence of the cultivation system and location was not statistically significantly applied in the case of ash content in dry matter. Based on our results we can propose both types of oat (hulled and naked) as perspective crops for OF. An organic farmer can expect to achieve stable yields which, in less favorable conditions for the production of cereals in the OF, may be close to the level of conventional yields. In the future, it will be important to change agrotechnology in OF and increase oat yield because this crop has a good potential to grow in areas with low nitrogen input or less fertile soil.

Quality and genetic relationship on dehulling characteristic in oat variety (국내 귀리품종 탈부특성에 따른 품질 및 유연관계 분석)

  • The consumption of oats (Avena sativa L.) with high nutritional utility is accelerating due to the increased consumers' demand for functional foods. In Korea, naked oats are used as food, while covered oats are used for animal feed. However, it is difficult to distinguish naked oats from covered oats when the husk is removed from the grains by a special process. The present study was carried out to investigate experimental methods that would be beneficial in the segregation of different types of oats after husk removal. Grain quality-related biochemical compounds were analyzed in a bid to differentiate the oat dehulling characteristics. In addition, 61 SSR markers were examined for genetic relationship and variety identification of oats using five naked and seven covered oat varieties. Results showed that, the contents of protein, lipid, and ${\beta}-glucan$ were not significantly different among the oat varieties and this could not be used as an index for distinguishing oats husk character. However, in the fatty acid composition ratio,, naked oats had a higher ratio of stearic acid (C18:0) and oleic acid (C18:1) than covered oats, and covered oats had a higher ratio of linoleic acid (C18:2) and linoleic acid (C18:3) than naked oats. The assessment of SSR marker genotype revealed that 33 polymorphic bands among 12 oat varieties and 1 variety could be distinguished through the combination of polymorphic markers thus indicating the usability of these markers for variety identification in oats.

Physicochemical properties and β-glucan contents of Korean naked oat (Avena sativa L.) cultivars (국내 육성 쌀귀리 품종의 이화학 특성 및 베타글루칸 함량)

  • Due to increased consumption and demand for oat-related foods and processed food, this study examined physicochemical properties, antioxidant activity, and ${\beta}-glucan$ contents of 5 Korean naked oat cultivars. Oat seeds had long-grain appearance in all cultivars except for Seonyang. The contents of main components such as protein, starch, and crude fat were significantly different among cultivars. The total ${\beta}-glucan$ content was 3.78-4.60% and the soluble ${\beta}-glucan$ ratio was 71-83%. Fatty acid composition was C18:1, C18:2, C16:0, C18:0, and C18:3. Unsaturated fatty acid (USFA) content was 75.4-81.2%. 2,2-Diphenyl-1-picrylhydrazil (DPPH) and 2,2'-azino-bis-3-ethyl-benzo-thiaxoline-6-sulfonic acid (ABTS) radical scavenging activity were significantly different for each cultivar. Daeyang had the highest ${\beta}-glucan$, USFA content, and antioxidant activity. Protein content showed a negative correlation with starch content (r = -0.775). Antioxidant activity was positively correlated with total phenol content (r =0.760). Ash content and flour whiteness showed a positive correlation (r =0.732).

A New Naked Oat Cultivar for Human Food, "Daeyang" with High-Yielding and Good-Quality (조숙 대립 양질 다수성 식용 쌀귀리 "대양")

  • A new naked oat cultivar Daeyang (Avena sativa L.) was developed by Department of Rice and Winter Cereal Crop, NICS, RDA in 2007. It was derived from a cross between 'FLX446-1-84-Q1'. and 'SO92004-B-3-3-5-7'. The FLX446-1-84-Q1, a naked oat cultivar from USA, is early heading and has good seed quality, while the SO92004-B-3-3-5-7, a covered oat breeding line, has a high yield with large grain. Subsequent generations were handled in a bulk method and pedigree selection program, and the SO97013-B-16-4 was selected based on agronomic performance in 2001. The line showed both high yield and good husking rate of seed in the yield trial tested at Suwon from 2002 to 2003, being designated as Gwiri51. The Gwiri51 was subsequently evaluated for winter hardiness, earliness, and yield in four locations, Gimje, Iksan, Jeongeup, and Jinju, from 2004 to 2007 and was designated as "Daeyang" and released. Its heading date was May 8 and maturing time was June 14 in a paddy field condition. The new cultivar Daeyang had 97 cm of culm length and 25.2 cm of spike length, 644 spikes per $m^2$, 65 grains per spike, 30.3 g of 1,000-grain weight, and 635 g of test weight. Daeyang showed better winter hardiness than that of the check cultivar 'Sunyang', and similar seed quality to the check cultivar in respect to percent content crude protein and $\beta$-glucan. However, it showed higher husking rate than the check cultivar. Grain yield of Daeyang in the regional yield trial for 4 years were averaged 4.18 MT $ha^{-1}$, which was 20% higher than that of the check cultivar Sunyang. Fall sowing cropping is recommended only in a south area where daily minimum mean temperatures are averaged higher than $-4^{\circ}C$ in January, and should be excluded in mountain area where frost damage is presumable.
