  • The structure and textural properties of the traditional starch gel-form food Mook were investigated with the use of the Scanning Electron Microscope and Instron universal testing machine. Sensory evaluation was undertaken to evaluate the relationship between structure and textural properties of starch gel. When pure mungbean, potato, and sweet potato starches as well as 30% mungbean starches added to potato and to sweet potato starches were evaluated, it was found that mungbean starch gel had homogeneous and porous structure and showed the highest acceptability.

Physical properties of mungbean starch/PVA bionanocomposites added nano-ZnS particles and its photocatalytic activity

  • The main objective of this study is to prepare the bionanocomposite films using mungbean starch (MBS), PVA, ZnS, and plasticizers, and to evaluate the physical properties, thermal stability, and photocatalytic activity. The bionanocomposite films were cross-linked by heat-curing process. The ZnS and bionanocomposite films were characterized by FT-IR, XRD, and SEM. The results indicated that the mechanical properties and water resistance enhanced up to 1.2-1.5 times by the addition of nano-ZnS particles, and the thermal stability was improved by the addition of nano-ZnS particles. The photocatalytic activity of the bionanocomposite films added nano-ZnS particles was examined using bisphenol A (BPA) and methyl orange (MO). In addition, the photodegradation efficiency of BPA and MO was evaluated using the pseudo-first order kinetic model (PFOK).

Evaluation of the Resistance of Mungbean Lines to Sprout Rot Caused by Pseudomonas species (Pseudomonas sp. 유래 녹두 부패병의 병 저항성 녹두 계통 검정)

  • Mungbean sprout rot is one of the most serious problems of the commercial mungbean sprout industry. In this study, 70 strains of mungbean sprout rot pathogens were isolated from rotten sprouts at different time intervals. The pathogenicity of the isolated pathogens was tested. The highly pathogenic strain (YV-St-033) was identified as Pseudomonas sp. by 16S rRNA gene sequencing. In phylogenetic analysis, the YV-St-033 strain was grouped with P. mosselii, P. putita, P. fluorescens, P. entomophila, and P. lecoglossicida. The results of the 16S rRNA gene sequence analysis revealed that the YV-St-033 strain shared the highest sequence identity (more than 99%) with the P. mosselii R10 strain. The mungbean lines of Yeungnam University germplasm were screened against the YV-St-033 strain. Based on the growth rate of the sprouts after 3 days of inoculation with the pathogen, the YV148 line was highly resistant to the pathogen. The remaining lines were either partially or fully infected. The highly resistant line YV 148 is suitable for future breeding programs due to their thin sprouts and fast growing nature.

Effects of Grapefruit Seed Extract and An ion Solution on Keeping Quality of Mungbean Sprouts (자몽종자추출물과 은이온 용액이 숙주나물의 저장품질에 미치는 영향)

  • Effects of grapefruit seed extract and Ag ion solution on the keeping quality and shelf life of mungbean sprouts were investigated in terms of weight loss, gas composition, hardness, color, ascorbic acid content, and viable cell counts during storage. Packages with $30\;{\mu}m$ polypropylene(PP) film was applied for mungbean sprouts dipped in Ag ion solution, 50 ppm and 100 ppm GFSE, 50 ppm and 100 ppm GFSE in Ag ion solution and stored $5^{\circ}C$. Totally weight loss exceeded $1\%$ and no visible signs of shrivelling of mungbean sprouts were observed. GFSE in Ag ion solution treatment, resulting in mungbean sprouts of better visual quality, weight loss, color, ascorbic acid as compared to the control without dipping. A shelf life of 6 days was achieved with 100 ppm GFSE in Ag ion solution treatment.

Effects of Aeration Period and Temperature after Imbibition on Growth of Mungbean Sprouts (침종 이후의 Aeration 기간과 온도에 따른 숙주나물의 생장)

  • Lateral roots formed on mungbean sprouts should lower their quality. The study was carried out to clarify the effects of aeration periods (AP; 1, 2, 3, and 4 hours) and temperature (AT; 20, 30, and $40^{\circ}C$) after 5 hour seed imbibition into 50 ppm benzyladenopurine (BA) solution on growth and morphological characters of mungbean (cv. Keumseongnogdu, Owoolnogdu and Zhong Lu 1) sprouts. On the 6th day, the mungbean sprouts were sorted by 4 categories on the base of hypocotyl lengths; > 7cm, 4 to 7cm, < 4cm, and non-germination to calculate their composition rates, number of lateral roots, lengths of hypocotyl and root, diameters at middle and upper parts of hypocotyl, fraction fresh and dry weights were measured. AP more affected growth of the cultivars than AT showing little effect on them. In the composition rate of the above 4 categories, cv. Zhong Lu 1 had the highest rate in longer than 7cm but nearly the same rate in AP treatments. Rates of longer than 4cm hypocotyls in cv. Keumseongnogdu, Owoolnogdu were increased with longer AP but their rates of shorter than 4cm showed reverse response to the former. Formation rate and number of lateral roots per sprout were decreased with longer AP, showing more severe decrement when delayed 3 to 4 hour AP. Upper part of hypocotyls and roots were more thickened and shortened in longer AP, respectively. Total fresh weights had no significant difference between AP treatments while hypocotyl fresh weights were increased with longer AP. It was concluded that in mungbean sprout culture aeration from BA treatment to the first watering permitted at least 4 hours.

Effects of Seeding Dates on Growth and Yield in Mungbean (파종기가 녹두의 생육 및 수량에 미치는 영향)

  • A mungbean cultivar, 'Seonhwanogdu', was seeded on April 20, May 10, June 1, June 20, July 10 and July 30 in 1988, 1989 and 1990 to determine the optimum seeding date of mungbean in Cheju province. As seeding was delayed from April 20 to June 20, the number of days from emergence to first flowering (days to flowering) decreased from 56.7 to 36.7 days, on the three year average. Days to flowering of mungbean seeded on July 10 and 30 ranged 30 to 35 days except that of the plants seeded on July 10, 1988. Days to flowering linearly decreased as the average of daily mean air temperature from emergence to the first flowering increased. The number of days from the first flowering to the first maturity (days to maturity) in mungbean seeded on April 20 to July 10 ranged 14 to 21 days and was 29 to 40 days at the July 30 seeding. The number of pods per plant, the number of seeds per pod, 1000 seed weight and yield tended to increase with delaying seeding up to June 1 and June 20, and then to decrease with further delaying seeding. This study indicates that the optimum seeding time of mungbean in Cheju province is around mid-June.

The Effects of ultrasonic irradition on germination of mung bean (녹두 발아에 미치는 초음파 조사의 영향)

  • The experiment was carried out to examine on effect of ultrasonication on the growith of a mungbean while a mungbean is germinated and to measure amino acid content of a mungbean during its germination. Mungbean seeds soaked are divided into three groups; the first group was control group, untreated and naturally germinated. the second was ultrasonic treated group(UTG I), irradiated by ultrasonication for 8, 16 and 24min respectively immediately after soaking. the third was ultrasonic treated group(UTG II), irradiated by ultrasonication after 48hr germinating. The results were as foolows; Fresh weight, moisture, length of mungbean increased as its germination proceeds. while dry weight decreased. Ultrasonication tends to inhibit its germination of mungbean and results in the decrease in weight, length and moisture. Specially ultrasonication had a marked effect on UTG II. The longer the time of ultrasonication was, the more was the growth inhibited. In the control groups, the content of amino acid increased until 72 hours, but after that, it decreased. of the amino acid determined, glutamic acid decreased marekedly in the cotyledons, While the opposite was the case with aspartic acid in the hypocotyls. Comparing with the control groups, UTG I, the content of amino acid decreased. As the ultrasonic treaed time was increased, the concentration of amino acid in hypocotyl cotyledon tended to decreased. UTG II, the content of amino acid was lower than control groups, but higher than UTG I, and the effects of ultrasonication were similar to UTG I.

Phenolic Compounds Content and DPPH, ADH, ALDH Activities of Mungbean Sprout Based on Growth Temperature (녹두나물 재배온도에 따른 페놀화합물 함량과 DPPH, ADH 및 ALDH 활성)

  • This study is to analyze the effects of the growth temperature of mungbean sprouts ($15{\sim}30{\pm}1^{\circ}C$) on the yield ratio, content of phenolic compounds and DPPH (1,1-diphenyl-2-picrylhydrazyl), ADH (alcohol dehydrogenase), ALDH (aldehyde dehydrogenase) activities of the sprouts. When the growth temperature of mungbean sprouts was higher, the yield ratio of the sprouts was higher while the hard seed rate was lower, but $25{\pm}1^{\circ}C$ and $30{\pm}1^{\circ}C$ showed no regular tendency. The content of the total phenol from the ethanol extract of the sprouts was higher in the growth temperature of $15{\pm}1$, $20{\pm}1$, and $25{\pm}1^{\circ}C$, while the content of total flavonoid was higher in the growth temperature of $15{\pm}1$, and $20{\pm}1^{\circ}C$. The DPPH radical scavenging activity of the ethanol extract of the sprouts was higher when the growth temperature was lower, while the activity of ADH and ALDH showed no regular tendency according to the growth temperature. Considering the yield ratio, content of phenolic compounds, biological activities of mungbean sprouts, the optimum cultivation temperature of mungbean sprouts may be $20{\sim}25^{\circ}C$.

Sensory and textural characteristics of mungbean starch gels with soy bean oil and sucrose fatty acid ester during room temperature storage (대두유와 슈크로오스 지방산 에스테르 첨가 녹두전분 겔의 상온 저장시의 관능적, 텍스쳐 특성)

  • This study was attempted to investigate the sensory and textural characteristics of mungbean starch gels with soy bean oil and sucrose fatty acid ester(SE) addition during room temperature storage. Freshly prepared mungbean starch gels, with and without soy bean oil and SE, were stored at 25$^{\circ}C$ for 24, 48 and 72 hours. The color value, syneresis, texture and sensory properties of the gels were measured. The lightness(L) of the gels with soy bean oil and without additives was similar whereas that with SE was lower than that without additives. Syneresis of the gels with soy bean oil and SE was lower than that without additives. Rupture stress, rupture strain and rupture energy of the freshly prepared gel with 2∼4% soy bean oil were increased, but there were no differences in rupture properties between the gel with soy bean oil and that without additives. Rupture stress, rupture stain and rupture energy of all the gels with SE were decreased. Addition of soy bean oil to the gel did not change the texture profile of the gel, whereas hardness, springiness and chewiness of the gel with SE were decreased. In sensory evaluation, the acceptability of freshly prepared gel with soy bean oil was similar to that without additives, whereas that of the gel with 2% soy bean oil stored for 24 hours was higher than that without additives. The acceptability of the gel with SE was decreased significantly.

Influence of Fungicidal Spray on Powdery Mildew Epidemics and Major Yield-Attributing Characters of Mungbean

  • The influence of fungicidal spray was assessed on powdery mildew epidemics caused by Erysiphe polygoni D.C. and on yield-attributing characters of mungbean [Vigna radiata (L.) Wilczek]. Mildew attack adversely affected the yield-attributing characters of mungbean and exhibited negative significant correlation with pod length (-0.57), pods/plant (-0.74), pod weight (-0.68), 100 seeds weight (-0.69), 100 seeds swell weight (-0.59), and seed germination (-0.71). These characters had direct or indirect effects on grain yield, which was also adversely affected due to mildew attack (-0.89). Powdery mildew was significantly retarded due to the single spray of carbendazim (0.05%) at 30-day-old crop, where the apparent rate of infection (r) was minimum at 0.0095/ unit/day and with low (11.44%) powdery mildew intensity. Other fungicides like tridemorph (0.075%) and penconazole (0.05%) were equally effective against the mildew disease where the disease intensity was less than 20% and the values of r were 0.0134 and 0.039/unit/day respectively, as compared with the control at 0.267/unit/day. Fungicide spray influenced the yield-attributing characters besides controlling the disease. Such effects were more pronounced in carbendazim (0.05%)-treated plots due to its phytotonic nature where pod length (7.59cm), pods/plant (29.75), pod weight (8.16 g), 100 grain weight (3.94 g), and swell weight of 100 seed (9.49 g) were maximum resulting to the highest yield (480 kg/ha) as compared with that of control (224 kg/ha). Spray of carbendazim also improved seed germination (74.5%). Spray of other fungicides like carbendazim with copper oxychloride in 1:1 ratio, tridemorph (0.075%), and penconazole (0.05%) was equally effective against powdery mildew of mungbean. These fungicides also exhibited positive effects on yield-attributing characters of the crop and finally increased yield. These systemic fungicides were more effective in controlling powdery mildew disease of V. radiata in the rainy season compared with wettable sulphur.
