Changes in Antioxidant Contents and Activities of Adzuki Beans according to Germination Time (발아시간에 따른 팥의 항산화성분 및 항산화활성의 변화)

  • The purpose of this study was to evaluate the yield, antioxidant content, and antioxidant activity of adzuki beans according to germination time. Cultivated varieties were Vigna angularis var. Nipponensis cv. Chungju-pat (CJP), and Yeonduchae (YDC), and Vigna radiata (L.) R. Wilczek cv. Dahyeon (DH). The moisture, crude protein, calcium, and magnesium contents of YDC significantly changed with increasing germination time, whereas potassium, natrium, and aluminium contents did not significantly change. Sprout yield, total polyphenol, flavonoid, and tannin contents of ethanolic extracts from adzuki and mung beans significantly increased with increasing germination time. Total polyphenol contents of ungerminated CJP, YDC, and DH were 1.96, 2.68, and 2.02 mg/g, and those of CJP and YDC germinated for 144 h were 3.33 and 3.47 mg/g, respectively. Total flavonoid content of adzuki beans substantially decreased with increasing germination time. Total tannin content substantially increased with increasing germination time, and YDC showed higher contents (0.85 mg/g) sample germinated for 120 h. DPPH radical scavenging activities of CJP and YDC substantially decreased with increasing germination time, whereas that of DH increased. ABTS radical scavenging activities of ungerminated CJP, YDC, and DH were 4.57, 6.51, and 2.82 mg/g, respectively, and increased after germination for 72~120 h.

Additional Data for the Folate Database for Foods Common in Korea (한국인 상용식품의 엽산함량 분석에 의한 식품영양가표의 보완)

  • A reliable nutrient database is a prerequisite for accurate calculation of dietary intakes. The folate database currently available in Korea, however, is not reliable because the values were obtained from published data in other countries using ineffective methods to extract folates from the food matrix. The purpose of this study was to complement the folate database by analyzing folate content in foods using a more effective method to extract food folates (trienzyme treatment). Folate content per unit weight was highest in laver, fermented soybeans, soybean, spinach, black soybeans, crown daisy, mung beans, and quail's egg in descending order. Legumes, leafy greens, eggs, and seaweeds were rich in folate, and meats, chicken, fish, and some fruits contained less folate. Some of the analyzed values were 10 times higher than those in the currently available database. Folate values of 423 foodcodes out of 2,932 foodcodes ($14.4\%$) in the database in the 7th revision in the Recommended Dietary Allowances for Koreans can be replaced by those analyzed in this study. Since folate values of rice and Kimchi, which are core dishes of Koreans, in the newly established database are higher than those in the current database, folate intake assessed using our data will be higher than that using the current available database. Folate content in more foods commonly consumed in Korea are needed to update the folate database. Meanwhile, folate values presented here can be used to assess dietary folate intake of the Korean population.

Investigation of dry dog food market trends and valuation of carbohydrate sources for dog diets

  • Plant-based, grain-free, and gluten-free diets have been the focus of recent research, as part of the premiumization trend in dog food. However, the lack of comprehensive information regarding carbohydrates in dog food makes it difficult to produce nutritionally balanced meals. Therefore, we aimed to evaluate the nutritional value of carbohydrate ingredients commonly used in commercial dog foods. First, using data from Euromonitor, we investigated the trends in the dry dog food industry and analyzed the annual volume of dry dog food sales, as well as the dog population from 2010 to 2021 in Korea. The growth of the market was greatest in 2021, when the total value of sales of premium dry dog food was 254.3 billion KRW (Korean won) more than in 2010. In addition, sales of dry dog food by age category were marked by a significant increase (404.8%) in the market for dry food for senior dogs. Second, we examined the frequency of carbohydrate ingredients used in dry dog food and conducted a proximate analysis of the top 10 most frequently used ingredients. Subsequently, we analyzed the crude protein, crude fat, and nitrogen-free extract in the carbohydrate ingredients based on dry matter (DM) and calculated the ratio of metabolic energy content supplied from each nutrient in the carbohydrate ingredients. The ratio of metabolic energy content in the carbohydrate ingredients indicated that mung beans had the highest crude protein content (31.3%), whereas oats exhibited the highest crude fat content (23.3%). Sweet potatoes had the highest nitrogen-free extract content, measuring at 93.6%. The results of this study are expected to provide a valuable foundation for the growth and development of the domestic dog food industry, while also contributing to a deeper understanding of the specific role of each ingredient as a carbohydrate source.

Quality Characteristics of Takju, Yakju, Spirit made by Pulse Crop Nuruks (두류 누룩으로 제조한 탁주, 약주, 증류주의 품질 특성)

  • This study was carried out to evaluate the quality of characteristics of the Takju, Yakju, spirit made by various pulse crop Nuruks which were made by Whyangonkuk(whole wheat, mung beans), Naebubijeonkuk mung beans, wheat flour, millet), Daedukuk(whole wheat, soybean). pH, Brix, total acidity, cell numbers of yeast and alcohol content of brews were analysed and flavors, organic acids, sensory evaluation of Takju, Yakju, and spirit were employed to analyze for current study. Results showed that pH value of Whyangonkuk brews during fermentation decreased the lowest, and Brix value also decreased. Total acidity of Whyangonkuk at the initial and final stage of fermentation revealed the most. Alcohol contents of Naebubijeonkuk brew presented the highest at the initial stage of fermentation, but there were no significant differences among Whyangonkuk, Naebubijeonkuk and Daedukuk at the final stage of fermentation. Cell numbers of yeast were found the most in Daedukuk at the first stage of fermentation, and cell numbers started to decrease after 2 days, but there were no significant differences at the final stage(p<0.05). In terms of analysis of flavor components, acetone and n-amyl alcohol were not detected in Takju, Yakju, and spirit. n-butanol was detected the most value followed by i-amyl alcohol. Fusel oil were detected the highest level at spirit, but no differences among Takju, Yakju and spirit. In analysis of organic acids, fumaric acid and formic acid were detected in Takju and Yakju. while 7 kind of organic acids were detected. Lactic acid showed the highest level in organic acid analysis. Takju and Yakju made by Whyangonkuk showed the highest score, and Daedukuk showed the opposite result but there were no differences in spirit made by Whyangonkuk, Naebubijeonkuk, and Daedukuk. As a result of this study, Whyangonkuk presented the most desirable Nuruk.
