서울${\cdot}$경기와 강원지역의 잡곡밥의 섭취실태 및 만족도에 대한 조사 (A Survey on the Consumption and Satisfaction Degree of the Cooked Rice Mixed with Multi-Grain in Seoul${\cdot}$Kyeonggi and Kangwon Area)

  • The purpose of this study was to investigate the consumption and perception on the effect of cooked rice mixed with multi-grain (CR-MG). Reason for like and dislike, intake frequency and variables related with the satisfaction of CR-MG were also investigated. The data for the analysis was collected from 315 adults who were residing at Seoul${\cdot}$Kyeonggi and Kangwon area and analyzed by the SPSS 11.0 program. The result showed that 84.8% of the respondents consumed CR-MG, showing significant difference by gender and occupation (p<0.05). It also revealed that they consumed it knowing their effect, showing significant difference by all general characteristics except for resident area and BMI, respectively. Kind of multi-grain (MG) mixed with cooked rice was high in the order of SoRiTae (80.1%) > brown rice (73.4%) > black rice (72.7%) > waxy rice (61.0%), respectively. As for the mixing type of MG, 61.4% of the respondents preferred non-mixed product rather than pre-mixed product. 2 or 3 kinds were preferred numbers of MG mixed with rice, showing significant difference by age (p<0.001) and marital status(p<0.05), respectively. 59.9% of the respondents answered 'high nutritive value more than polished rice' as the major reason for like, whereas 31.3% answered 'greatly rough more than polished rice' as that for dislike, respectively. By the use of multiple regression analysis, it revealed that health was the most significant variable which affect the satisfaction of CR-MG. From these results, it was suggested that in view of the high consumption and intention to continue the intake of CR-MG, following studies should be conducted to improve the preference of CR-MG.

Stability Analysis for Grain Yield of Lowland Rice for the Largest Rice-Growing Region of Eastern india

  • Twenty-one lowland rice genotypes were evaluated for their stability parameters with respect to grain yield in a multi locational trial at five different sites of Eastern India viz. CRRI, Cuttack (Orissa); OUAT, Bhubaneswar (Orissa); CRS, Masodha (UP); RAU, Pusa (Bihar) and RARS, North Lakhimpur (Assam). Pooled analysis of variance reflects existence of genotype x environment interactions and contribution of both linear and nonlinear components to genotype (G) x environment (E) interactions. Through stability parameter analysis it was found that Rayda $\textrm{B}_3$, CR 778-95 and CR 661-236 were suitable for over all environments where as Sabita, OR 1334-16 and OR 1358-RGA-4 were suitable for rich environments. PSR 1209-2-3-2, CR 780-1937, Ambika, OR 877-ST-4-2 and CR 662-2211 were identified for poor environments.

압출성형 혼합쌀의 제조에 따른 곡종별 이화학적 특성 (Physicochemical Properties of Selected Cereals and Legumes for the Production of Extruded Multi-grain)

  • 쌀에 혼합취반이 가능한 혼식용 혼합쌀의 제조를 위해 곡물원료인 현미, 보리쌀, 밀, 조, 수수, 콩, 팥에 대한 물리화학적 특성 및 압출성형 특성을 조사하였다. 혼합쌀의 제조에 사용한 곡물은 전분, 단백질, 지방, 희분 및 총 식이섬유함량에서 서로 차이를 보여주었다. 곡분은 명도에 있어 백미, 보리쌀, 콩, 현미, 밀, 수수, 팥, 조의 순으로 낮았으며, 대부분 적황색도를 나타내었으나 곡종에 따라 다소간의 차이를 보여주었다. 곡분의 평균입자크기는 백미, 보리쌀과 같이 도정한 곡물에서 작았으며 현미, 조, 수수 같이 강층을 포함하는 정곡에서 다소 큰 것으로 분석되었다. 곡분의 손상전분 함량은 곡류에서 $5.4{\sim}10.9%$ 범위였으며 콩과 팥에서는 $0.5{\sim}1.4%$로 낮았다. 곡분의 수분흡수지수는 팥, 백미, 수수, 현미, 밀, 조, 보리쌀, 콩의 순으로 낮았으며 수분용해도지수는 두류인 콩과 팥에서 높게 나타났다. 혼합쌀 제조시에 곡종에 따른 이화학적 특성차이가 혼합쌀의 압출성형가공에 크게 영향을 주었으며, 현미 50%, 보리쌀 20%, 밀 10%, 조 5%, 수수 5%, 콩 7%, 팥 3%의 적정 배합비로 압출성형한 혼합쌀은 일반쌀과 혼용이 가능한 형태인 것으로 나타났다.

Mapping Paddy Rice Varieties Using Multi-temporal RADARSAT SAR Images

  • This study classified paddy fields according to rice varieties and monitored temporal changes in rice growth using SAR backscatter coefficients (${\sigma}^{\circ}$). A growing period time-series of backscatter coefficients was set up for nine fine-beam mode RADARSAT-1 SAR images from April to October 2005. The images were compared with field-measured rice growth parameters such as leaf area index (LAI), plant height, fresh and dry biomass, and water content in grain and plants for 45 parcels in Dangjin-gun, Chungnam Province, South Korea. The average backscatter coefficients for early-maturing rice varieties (13 parcels) ranged from -18.17 dB to -6.06 dB and were lower than those for medium-late maturing rice varieties during most of the growing season. Both crops showed the highest backscatter coefficient values at the heading stage (late July) for early-maturing rice, and the difference was greatest before harvest for early-maturing rice. The temporal difference in backscatter coefficients between rice varieties may play a key role in identifying early-maturing rice fields. On the other hand, comparisons with field-measured parameters of rice growth showed that backscatter coefficients decreased or remained on a plateau after the heading stage, even though the growth of the rice canopy had advanced.

영상처리식 온라인 품위판정을 위한 현미의 정렬공급장치 (Echelon Feeder of Brown Rice for On-line Inspection Using Image Processing)

  • An automatic echelon feeder of brown rice was presented for quality inspection system using color image processing. A echelon feeder was developed with vibratory feeder and cylindrical indent singulator having oblique light. The vibratory feeder consisted of a hopper, electromagnetic vibrator and multichannel grooves and supply the grain sample to the singulator. The feeding performance such as feed rate, blocking frequency of the channel was dependent on the size of groove and vibration pattern. A cylindrical indent singulator consisted of a rotating cylinder, prisms and a tungsten-halogen light source. It delivered grain kernels under the camera in a echelon form and illuminate the kernels with oblique ray and ambient light. The size of the indents installed on the surface of the rotating cylinder was determined by the dimensions of the paddy and a small triangular prism was placed in each indent to apply $ 20^{\circ}$ oblique light to the grain kernel.

Toxigenic Mycobiota of Small Grain Cereals in Korea

  • Mycotoxins are toxic secondary metabolites produced by fungi. They can be present in where agricultural-based commodities are contaminated with toxigenic fungi. These mycotoxins cause various toxicoses in human and livestock when consumed. Small grains including corn, barley, rice or wheat are frequently contaminated with mycotoxins due to infection mainly by toxigenic Fusarium species and/or under environment favorable to fungal growth. One of the most well-known Fusarium toxin groups in cereals is trichothecenes consisting of many toxic compounds. Deoxynivalenol (DON), nivalenol (NIV), T-2 toxin, and various derivatives belong to this group. Zearalenone and fumonisin (FB) are also frequently produced by many species of the same genus. In order to monitor Korean cereals for contamination with Fusarium and other mycotoxigenic fungal species as well, barley, corn, maize, rice grains, and soybean were collected from fields at harvest or during storage for several years. The fungal colonies outgrown from the grain samples were identified based on morphological and molecular characteristics. Trichothecene chemotypes of Fusarium species or presence of FB biosynthetic gene were determined using respective diagnostic PCR to predict possible toxin production. Heavy grain contamination with fungi was detected in barley, rice and wheat. Predominant fungal genus of barley and wheat was Alternaria (up to 90%) while that of rice was Fusarium (~40%). Epicoccum also appeared frequently in barley, rice and wheat. While frequency of Fusarium species in barley and wheat was less than 20%, the genus mainly consisted of Fusarium graminearum species complex (FGSC) which known to be head blight pathogen and mycotoxin producer. Fusarium composition of rice was more diverse as FGSC, Fusarium incarnatum-equiseti species complex (FIESC), and Fusarium fujikuroi species complex (FFSC) appeared all at considerable frequencies. Prevalent fungal species of corn was FFSC (~50%), followed by FGSC (<30%). Most of FFSC isolates of corn tested appeared to be FB producer. In corn, Fusarium graminearum and DON chemotype dominate within FGSC, which was different from other cereals. Soybeans were contaminated with fungi less than other crops and Cercospora, Cladosporium, Alternaria, Fusarium etc. were detected at low frequencies (up to 14%). Other toxigenic species such as Aspergillus and Penicillium were irregularly detected at very low frequencies. Multi-year survey of small grains revealed dominant fungal species of Korea (barley, rice and wheat) is Fusarium asiaticum having NIV chemotype.

DNA 마커를 이용한 벼멸구 저항성 선발 및 복합내병충성 벼 계통 육성 (Marker Assisted Selection of Brown Planthopper Resistance and Development of Multi-Resistance to Insect and Diseases in Rice (Oryza sativa L.))

  • 본 연구에서는 관행의 교배육종과 DNA 마커를 이용한 MAS의 접목을 통하여 벼멸구 저항성과 관련된 단점을 보완하고, 효율적으로 도열병, 줄무늬잎마름병, 흰잎마름병, 벼멸구, 끝동매미충 저항성이 집적된 복합내병충성 우량계통을 육성하고자 수행하였다. 교배모본으로는 완전미율이 높고, 끝동매미충에 저항성인 '남평'과 단간이면서 흰잎마름병에 저항성인 '주남'을 반복친으로 사용하였고, 벼멸구저항성 유전자 Bph1을 가지고 있지만 간장이 크고 재배안전성이 미흡한 '밀양220호'를 공여친으로 사용하였다. 벼멸구 저항성 연관마커 RM28493을 이용하여 $BC_1F_1$$BC_2F_1$ 세대에서 MAS로 저항성 개체 선발과 여교잡을 수행하였으며, 복교잡 $F_1$ 세대에서 MAS를 통한 벼멸구 저항성이 고정된 계통을 선발하였다. 고세대 계통에서 생물검정을 통하여 흰잎마름병, 끝동매미충에 저항성인 계통을 선발하였다. MAS와 생물검정을 통해 도열병, 흰잎마름병, 줄무늬잎마름병, 벼멸구 및 끝동매미충에 저항성인 85개의 복합내병충성계통을 선발하였다. 복합내병충성 계통의 간장, 완전미율 및 수량은 각각 71~88 cm, 51~93%, 449~629 kg/10a 사이에 분포하였다. 복합내충성계통중 간장, 완전미율 및 수량이 남평벼와 비슷한 계통을 선발하여 '밀양265호'로 명명하였다. 최종적으로 본연구에서는 기존의 교배육종과 분자육종의 접목을 통하여 복합내병충성 우량계통을 육성하였으며, 이는 금후 유용교배모본으로 활용될 것으로 기대된다.

재가 노인들을 위한 노인복지관의 급식 식단 평가 (Evaluation of the Menus of Senior Welfare Centers for Home-bound Elderly)

  • This study examined the characteristics of the foodservice menu items offered at senior welfare centers to provide information on Korean senior menu development. A total of 514 lunch menu items were collected from 27 senior welfare centers in April, July, October and January. The most frequently served staple foods, soups, and side dishes were multi-grain rice, seaweed soup, Bulgogi, Kimchi, and liquid yogurt. The proportions of carbohydrate, protein, and lipids of total energy serving of senior welfare centers were 59.8%: 16.7%: and 22.8%, respectively. The nutrients served at less than 40% of the Recommended Nutrient Intake (RNI) and Adequate Intake (AI) of Dietary Reference Intakes for Koreans (KDRIs) were chloride (1.0%), vitamin D (1.3%), biotin (1.7%), magnessium (4.5%), Iodine (7.5%), pantothenic acid (8.0%), vitamin E (12.5%), vitamin $B_6$ (20.0~21.4%), vitamin K (21.1~24.3%), and water (35.7~39.7%). The nutrients served in excess of the daily intake goal and RNI were iron (98.9~127.1%), sodium (104.9%), and copper (1,100.0%).

압출성형기법에 의해 제조한 재성형 혼합곡의 품질특성 (Quality Characteristics of Reconstituted Multi-Grain by Extrusion Process)

  • 쌀밥에 곡류나 두류를 적당히 혼합하면 쌀에 부족된 영양적인면을 보완할 수 있으나 혼합취반에 따른 번거로움 때문에 쉽게 일상화되지 못하고 있는 실정을 감안하여 현미, 보리, 밀, 조, 수수, 콩, 팥 등의 원료를 일차 분쇄하고 혼합한 후 쌍축압출성형기를 사용하여 쌀알 형태로 성형하였다. 원료의 기본배합비를 현미 30%, 보리 30%, 밀 20%, 조 5%, 수수 5%, 콩 7%, 팥 3%로 결정하였으며 원료의 배합비율에 따른 압출성형조건으로 스크류 속도는 250 rpm, 가수율은 $24{\sim}30%$, 배럴온도는 $50{\sim}60^{\circ}C$로 설정하여 성형물의 팽화를 억제함과 동시에 $5{\times}0.8mm$ 직사각형의 토출구를 사용하고 절단칼의 회전속도 등을 조절하여 재성형 혼합곡을 성공적으로 제조하였다. 재성형 혼합곡립의 크기와 형태는 단립종 백미와 유사하였고 체적은 백미에 비해 약간 높았으며 침지에 의한 수화속도가 빨라 수분흡수율이 높게 나타났다. 취반 후 혼합곡립의 경도는 백미에 비해 약간 낮았고 부착성은 높았다. 압출성형기법을 이용하여 제조한 재성형 혼합곡은 쌀밥에 영양성, 간편성, 기호성을 보충시킬 수 있는 주식개념의 혼합곡으로서의 가치가 매우 큰 것으로 판단되었다.

고품질 중만생 벼 품종 '효원6호' ('Hyowon6', a Mid-Late Maturing Rice Variety with High Quality)

  • '효원6호'는 밥맛이 우수하고 복합저항성을 보이는 품종을 육성하고자 식감이 우수하고 밥을 지었을 때 윤기가 도는 양식미인 'Koshihikari'와 복합저항성을 보이는 '화영벼'를 인공교배하고, 2006년부터 2011년까지 계통육성을 하면서, 종자 및 쌀의 외관 특성이 우수하고, 임성, 초형이 양호하며, 포장 병 저항성이 우수한 계통을 선발하여 생산력 검정을 수행한 결과 우수성이 인정되어 품종으로 출원 및 등록되었다. '효원6호'는 중부평야지에서 8월 22일경에 출수하는 중만생종으로 화영벼에 비해 11일 정도 늦다. 간장과 이삭길이는 각각 85.7 cm, 21.1 cm로 화영벼보다 길었으며, 포기당 이삭수도 14.5개로 화영벼보다 많았다. '효원6호'는 성숙기 엽노화가 보통수준이며 중 정도의 내도복성을 보였으며, 강 수준의 내냉성을 보였다. 목도열병과 흰잎마름병 및 줄무늬 잎마름병에 대해 중 정도의 저항성을 나타내었으나 멸구에 대한 저항성은 없었다. '효원6호'의 현미 천립중은 21.36 g이며, 장폭비가 1.69인 단원형이다. 현미 아밀로스 함량과 단백질 함량은 17.7%와 6.7%로 화영벼보다 낮고, 밥의 윤기치는 83으로 화영벼에 비해 월등히 높은 것으로 나타났다.
