Mass transfer Characteristic during Osmotic Dehydration of Ginger and Its Effect on Quality (생강 삼투압 건조 시 물질이동 특성과 품질에 미치는 효과)

  • Internal mass transfer during osmotic dehydration of gingers in sugar solution was examined as a function of concentration, temperature and immersion time of those solutions using moisture loss, sugar gain, molality and rate parameter. Influence of osmotic dehydration on browning reaction and texture properties of air dried rehydrated was also evaluated. Increasing the concentration and temperature of sugar solutions increased moisture loss, sugar gain, molality and rate parameter. Water loss and sugar gain were rapid in the first 3 min and then changed gentle slope. Moisture loss during osmotic dehydration using a sugar solution $(60\;Brix,\;80^{\circ}C)$ with 18 min immersion time was 40.05 g moisture/100 g wet ginger which was 52% reduction of initial moisture content in ginger (83.02%, wet basis). The changes of rate parameter were more affected by temperature than by concentration of sugar solution. Minimum browning degree (O.D.=0.027) was carried out by osmotic dehydration in sugar solution $(40\;or\;50\;Brix,\;80^{\circ}C)$ with 15 min immersion time compared to control (O.D.=0.132). Influence of osmotic dehydration on puncture forces of 3 min rehydrated ginger in boiling water were $22{\sim}34%$ of reduction, while blanching treatment had not affected compared to those of control.

WATER ACTIVITY AND PIGMENT DEGRADATION IN DRIED LAVERS STORED AT ROOM TEMPERATURE (건해태(김) 저장시의 수분활성과 색소분해반응)

  • The effect of water activity on degradation of pigments in dried lavers, Porphyra tenera Kjellm. was examined when stored at room temperature for fifty days. Chlorophyll pigment was extracted with methanol-petroleum ether mixture solvent(2:1 v/v), partitioned in ether, and analysed spectrophotometrically at 662 nm as chlorophyll a. The degradation products of chlorophyll were isolated on sugar-starch column(85:15 w/w) with n-propanol-petroleum ether solution(1:200 v/v) as a developing solvent. The isolated green colored zones were analysed individually at the wavelengths of 650, 662, and 667 nm as allomerized product, chlorophyll a retained, and pheophytin formed respectively. Carotenoida were also extracted with the methanol mixture solvent, partitioned in ether, and finally redissolved in acetone after the evaporation of ether in a rotary vacuum evaporator. The total carotenoid content was measured as lutein at 450 nm. From the results, it is noted that the rate of chlorophyll degradation reached a minimum at 0.11 to 0.33 water activity while progressively increased at higher moisture levels resulting in rapid conversion of chlorophyll to pheophytin. At lower activity, autocatalysed oxidizing reaction like allomerization seemed prevailing the acid catalysed conversion reaction. The loss of carotenoid pigment was also greatly reduced at the range of 0.22 to 0.34 water activity with much faster oxidative degradation at both higher and extremely lower moisture levels. These two moisture levels indicated above at which the both pigments exhibited maximum stability are considerably higher than the BET monolayer moisture which appeared 7.91 percent on dry basis at Aw=0.10 calculated from the adsorption isothermal data of the sample at $20^{\circ}C$. The rate of pigment loss in heat treated samples at 60 and $100^{\circ}C$ for 2 hours prior to storage somewhat decreased, particularly at higher moisture levels although the final pigment retention was not much stabilized.

Characteristics of Salted Radish Cubes at Different Season (계절별 절임 무의 특성)

  • Characteristics (salt concentration, weight loss, soluble solid content, moisture content, and textural properties) of radish cube $(2{\times}2{\times}2\;cm)$ were evaluated during salting. Three different summer radish cultivars harvested in high land were immersed into 15% brine solution (radish : brine solution = 1 : 2) at $15^{\circ}C$ for 4 h. The time required to reach the optimum salt concentration (3%) was different among cultivars; 3 h for 'Bakbong', 4 h for 'Kwandong' and '92343'. Similar weight loss (about 24-26%) of salted radish cubes was found among cultivars. While the highest value of weight loss of salted radish cubes was observed with '92343', the lowest, 'Bakbong'. Hardness decreased during salting; the highest value of hardness was observer with 'Kwandong', the lowest, 'Bankbong'. The sample of '92343' has the lowest moisture content but has the highest soluble solid content and hardness, while 'Bakbong' has the highest moisture content, but has the lowest soluble solid content and '92343'. In separate experiments, seasonal variations in characteristics of salted radish cubes at optimum salt concentration (3%) were observed: for 'Bakbong', salt concentration, weight loss, soluble solid content, and hardness, and for 'Bakwang', salt concentration, weight loss, and hardness were higher in autumn cultivars than in spring or summer one, while moisture contents of both cultivars were higher in spring or summer cultivars than in autumn one.

Factors Affecting Wet-Paddy Threshing Performance (탈곡기의 제작동요인이 벼의생탈곡성능에 미치는 영향)

  • Threshing operation may be one of the most important processes in the paddy post-production system as far as the grain loss and labor requirement are concerned . head-feeding type threshers commercially available now in Korea originally were developed for threshing dry paddy in the range of 15 to 17 % in wet basis. However, threshing wet-paddy with the grain moisture content above 20 % has been strongly recommended, especially for new high-yielding Indica -type varieties ; (1) to reduce high grain loss incurred due to the handling operations, and (2) to prevent the quantitative and qualitative loss of milled -rice when unthreshed grains are rewetted due to the rainfall. The objective of this study were to investigate the adaptability of both a head-feeding type thresher and a throw-in type thresher to wet-paddy , and to find out the possiblilities of improving the components of these threshers threshing. Four varieties, Suweon 264 and Milyang 24 as Tongil sister line varieties, minehikari and Jinhueng as Japonica-type varieties, were used at the different levels of the moisture content of grains. Both the feed rate and the cylinder speed were varied for each material and each machine. The thresher output quality , composition of tailing return, and separating loss were analyzed from the sampels taken at each treatment. A separate experiment for measurement opf the power requirement of the head-feeding type thresher was also performed. The results are summarized as follows : 1. There was a difference in the thresher output quality between rice varieties. In case of wet-paddy threshing at 550 rpm , grains with branchlet and torn heads for the Suweon 264 were 12 % and 7 % of the total output in weight, respectively, and for the Minehikari 4.5 % and 2 % respectively. In case of dry paddy threshing , those for the Suweon 264 were 8 % and 5% , and for the Minehikari 4% and 1% respectively. However, those for the Milyang 23 , which is highly susceptable to shattering, were much lower with 1 % and 0.5% respectively, regardless of the moisture content of the paddy. Therefore, it is desirable to breed rice varieties of the same physical properties as well as to improve a thresher adaptable to all the varieties. Torn heads, which increased with the moisture content of rall the varieties except the Milyang 23 , decreased as the cylinder speed increased, but grains with branchlet didnt decrease. The damaged kernels increased with the cylinder speed. 3. The thresher output quality was not affected much by the feed rate. But grains with branchlet and torn heads increased slightly with the feed rate for the head-feeding type thresher since higher resistance lowered at the cylinder speed. 4. In order to reduce grains with branchlet and torn heads in wet-paddy threshing , it is desirable to improve the head-feeding type thresher by developing a new type of cylinder which to not give excess impact on kernels or a concave which has differenct sizes of holes at different locations along the cylinder. 5. For the head-feeding type thresher, there was a difference in separating loss between the varieties. At the cylinder speed of 600 rpm the separating losses for the Minehikari and the Suweon 264 were 1.2% and 0.6% respectively. The separating loss of the head-feeding type thresher was not affected by the moisture content of paddy while that of the Mini-aged thresher increased with the moisture content. 6. From the analysis of the tailings return , to appeared that the tailings return mechanism didn't function properly because lots of single grains and rubbishes were unnecessarily returned. 7. Adding a vibrating sieve to the head-feeding type thresher could increase the efficiency of separation. Consequently , the tailing return mechanism would function properly since unnecessary return could be educed greatly. 8. The power required for the head-feeding type thresher was not affected by the moisture content of paddy, but the average power increased linearly with the feed rate. The power also increased with the cylinder speed.

Effect of Oral Administration of Pineapple Fruit Extract Containing Glucosylceramide on Skin Barrier Function Improvement in Animal Model of Atopic Dermatitis (글루코실세라마이드 함유 파인애플과실추출물의 경구 투여가 아토피 피부염 동물모델의 피부 장벽기능 개선에 미치는 효과)

  • Glucosylceramides (GluCer) are known to play an important role in both water retention and epidermal permeability barrier function in the mammalian stratum corneum. In this study, we investigated the effects of pineapple fruit extract containing glucosylceramides (PFEG) on the maintenance and recovery of skin barrier function using atopic dermatitis-induced animal models. Five-week-old male Hos:HR-1 mice were divided into four groups fed on standard diet, unsaturated fatty acids-deficient (HR-AD) diet, and HR-AD diet supplemented with 0.01% or 0.1% pineapple-GluCer. Skin barrier function was evaluated by transepidermal water loss (TEWL), dermal moisture content, moisture content of the stratum corneum and wrinkle formation. The control group (HR-AD administration group) showed increased transepidermal water loss (TEWL), while the epidermal moisture content and the moisture content of the stratum corneum slowly decreased. However, in the PFEG groups (with 0.1% or 0.01% glucosylceramide), the TEWL levels were significantly reduced at 2 weeks. The PFEG also helped maintain skin moisturizing function by significantly suppressing the decrease of the epidermal moisture content and the moisture content of the stratum corneum. These results show that the PFEG is effective for maintaining and improving the function of the skin barrier. Therefore, this study suggests that PFEG is a potential candidate material for skin functional foods.

Gelatin Coating on Quality Attributes of Sausage during Refrigerated Storage

  • Gelatin-based edible coating was used to reduce the oxidative degradation of low-fat sausages (LFSs) stored at $4^{\circ}C$ for 8 wk under vacuum packaging. The gelatin coating reduced thiobarbituric acid-reactive substances and peroxide value by 21.5 and 26.5%, respectively, compared with the controls. The moisture barrier effect was significantly better for the gelatin coating compared to the control. The gelatin coating reduced moisture loss in sausages by 32.6% over the control. However, the gelatin coating of sausages did not inhibit the growth of either the total plate counts or L. monocytogenes. Data show that gelatin can effectively be used as a natural antioxidative and moisture barrier coating to extend the quality and shelf life of sausages.

Impacts of Initial Soil Moisture on Hydrologic Outflow in a Distributed FLO-2D Model (분포형 FLO-2D 수문모형에서 초기토양함수가 유출결과에 미치는 영향)

  • Soil water enters the atmosphere via evapotranspiration, where it transforms into atmospheric water vapor and plays important role in the surface-atmosphere energy exchange. Soil conditions have a direct influence on the effective rainfall, and initial soil moisture conditions are important for quantitatively evaluating the effective rainfall in a watershed. To examine the sensitivity of the initial saturation to hydrologic outflow, a two-dimensional distributed FLO-2D hydrologic model was applied to a small watershed. The initial saturation was set to 0.3, 0.5, and 0.7 and the obtained results were compared. The Green-ampt model was chosen to calculate the penetration loss. Depending on the initial soil moisture, the peak flow rate varied by up to 60%, and the total water volume in the watershed by approximately 40%.

Hydrolysis of Tencel Fabrics by Cellulase Treatment (셀룰라아제 처리에 의한 텐셀직물의 가수분해)

  • Tencel fabrics were treated with cellulase after mechanical prefibrillation treatment. SEM analysis was carried out to study morphological change of the treated fabric. The cellulase-treated Tencel fabrics were evaluated for weight loss and tensile strength. X-ray diffraction method, moisture regain, and K/S value were used to elucidate crystalline structural changes occurred by cellulase treatment. Degree of polymerization and copper number of the cellulase-treated fabrics were also measured to estimate effect of hydrolysis. SEM analysis indicated that with treatment of prefibrillation and cellulase, fibrils were produced and damage occurred deep into the fiber. Increases in concentration and time of cellulase treatment increased weight loss and decreased tensile strength retention of the treated fabrics. As cellulase hydrolysis progressed, degree of crystallinity, moisture regain and K/S value were not much changed. (Korean J Human Ecology 2(1) : 142∼148, 1999)

Quality Characteristics of Pound Cake with Added Mulberry Fruit Powder (오디 분말을 첨가한 파운드 케이크의 품질 특성)

  • Mulberry fruit powder was substituted for wheat flour in pound cake recipes in amounts of 0%(control), 5%, 10%, 15%, and 20%. We measured the specific gravity of the dough, specific loaf volume, dough yield, baking loss, moisture content, pH, color, identified the texture, and conducted a sensory evaluation for each pound cake. Moisture content increased according to the amount of mulberry fruit powder, but specific gravity, dough yield, and pH decreased. Specific loaf volume and baking loss increased as the amount of mulberry fruit powder increased, but not considerably. The chromatic 'L' and 'b' values were reduced as more mulberry fruit powder was added to more pound cake, While the chromatic 'a' value increased. Texture hardness, springiness, gumminess and chewiness decreased as the pound cake contained more mulberry fruit powder. Cohesiveness did not show any considerable differences beteeen the cakes. A sensory evaluation showed a high preference for the pound cake made with 10% mulberry fruit powder.

A Study on The Phenolic Content of Potatoes (감자에서의 페놀화합물에 대한 연구)

  • Two varieties, Lasoda and Sebago potatoes, were studied. Different cooking methods, conventional oven baking at $218^{\circ}C$ and microwave oven baking, have been used to compare the retention of the phenolic compounds. Peeled cortex samples of fresh and cooked potatoes were analyzed for total phenols, phenolic constituents, and moisture loss. Phenolic content was higher in fresh potatoes than in cooked potatoes. Laasoda had higher phenolic content (3. 63mg) than Sebago (1. 71mg). Potatoes with higher phenols (Lasoda) also had larger quantities of chlorogenic acid. There was a greater moisture loss in conventional oven baking potatoes than in microware oven.
