한국과 일본의 자포니카종 쌀에 대한 이화학적 특성의 비교 및 관능품질의 추정에 관한 연구 (Studies on the Comparison of Physicochemical Properties and the Presumption of Sensory Quality of Japonica Rice Varieties Cultivated in Korea and Japan)

  • Twelve varieties of Korean rice and ten varieties of Japanese rice were selected. After being milled. they were analyzed about various physicochemical properties such as moisture, protein and amylose, a -amylase activity, gelatinization properties. And after being cooked with proper amount of water texture and other physical properties were measured by Texturometer, Tensipresser and Rheolograph-micro. Finally the sensory evaluation test was carried out. The results were as follows. 1. In case of protein contents, amylose contents and $\alpha$-amylase activity, Korean rice had a slightly higher value than Japanese As a consequence. Korean rice showed a little stronger hardness and a little weaker stickiness compared with Japanese rice. 2. Amylose contents showed very high correlation with other physicochemical properties and peak viscosity and gelatinization temperature of RVA, the ratio of stickiness to hardness( -Hl/Hl ) of Texturometer and the tan $\delta$(the ratio of dynamic loss to dynamic viscoelasticity) of Rheolograph-micro showed high correlation with other analyzed properties. 3. The ( -/+)work balance of low compression test(25% ) of Tensipresser analysis(texture analysis on the surface of cooked rice) and tan f of Rheolograph-micro showed very high correlation with sensory evaluation results. By using this parameters as major independent variables, some trials to derive high confidence multiple regression equations were accomplished. By the equations it would be possible to make an approximate pre-estimate of eating quality for unknown japonica rice.

연근가루 첨가량에 따른 연근절편의 품질 특성 (Quality Characteristics of Julpyun Containing Different Levels of Lotus Root Powder)

  • This study examined the quality characteristics of lotus root Julpyun prepared using different ratios of lotus root powder. According to the analyses results, the moisture contents of the lotus root powder-containing samples ranged from 32 to 35%, and the moisture content of the control sample(without added lotus root powder) was 8.5%. The L-values of samples decreased with increasing amounts of lotus root powder however, the a and b values of the samples did not show consistent trend. From the mechanical evaluation results, no consistent trends were found for hardness, springiness, or cohesiveness according to the levels of added lotus root powder. The 10% lotus root Jeolpyun had the highest adhesiveness score, but there were no significant differences between the samples. Gumminess and chewiness increased as the amount of lotus root powder increased, but again there were no significant differences between the samples. According to the sensory evaluation results, the 10% lotus root Jeolpyun received the highest preference scores. Therefore the 10% lotus root Jeolpyun prepared with 900 g of rice flour, 85 g of lotus root powder, 10 g of salt, and 294.5 g of water was chosen as the optimal formulation.

오미자 첨가량에 따른 Demi-Glace 소스의 일반성분과 유리당 함량 및 관능적 특성 (The Proximate Composition, Free Sugars Contents and Sensory Characteristics of Demi-glace Sauce according to the Varying Quantity of Omija Added)

  • This study was conducted to examine the sensory characteristics and the contents of proximate composition and the free sugars of the Demi-glace with varying quantity of Omija extracts added. First, the qualities of Demi-glace sauces with varying quantity of Omija extracts added are as follows: (1) Proximate composition: The moisture content was 66.10~73.50%, and crude ash content was 1.59~1.89%. As the Omija extracts added increased, moisture content increased, whereas crude ash content decreased. The crude protein content was 6.12~7.95%. Among them, the one with the 2% Omija added showed the highest level of the crude protein. (2) Free sugars contents: In terms of total sugar contents, the control showed 1.32% and Omija sauces showed 1.44~1.55%. Major free sugars analyzed in the order of fructose, oligosaccharide, glucose and sucrose. Second, the results of sensory evaluation of Demi-glace sauces with the different levels of Omija added are as follows: (1) The preference of Demi-glace sauces according to occupation: Students and Cooks liked the one with the 2% Omija added in terms of color, flavor, taste, texture and overall acceptability. Cooks showed higher preference than students. (2) The preference of 5 tastes: It was found that Demi-glace sauce with the 2% Omija added was the best. The one with the 2% Omija added was suitable in terms of sweet taste and bitter taste and the one with the 3% Omija added was desirable for hot taste and saline taste. In terms of sour taste, the one with 1% Omija added was regarded as the most desirable one. (3) The preference for authentic tastes for Demi-glace sauce: In terms of simple taste, females showed higher preference than males. Demi-glace sauce with the 2% Omija added was found to be the best for savory taste, flavor enhancer taste, simple taste, after taste and overall acceptability. The one with the 1 % Omija added was regarded as the best for soft taste.

품종별 저장 기간에 따른 저염 토마토 장아찌 품질 특성 (Quality Characteristics of Low-sodium Tomato Jangajii according to Storage Time by Cultivars)

  • This study aimed to create a standardized recipe using three cultivars of tomatoes (Chal-tomato, Daejeo-tomato, Blacktomato) and select an appropriate tomato for producing tomato Jangajii through quality and sensory evaluation. With regard to the proximate composition of tomato Jangajii, moisture and ash contents of Chal-tomato were highest in the early stage of storage, whereas moisture, crude protein and ash contents of Black-tomato were highest in the final stage of storage. Daejeotomato showed minimal changes in pH, but showed the highest salt and sugar contents. L value increased with increasing storage time and then decreased thereafter (p<0.001). The a and b values decreased with increasing storage time and then increased thereafter (p<0.001). The reducing sugar content increased with increasing storage time and then decreased thereafter (p<0.001). With regard to Daejeo-tomato, hardness was the highest (p<0.001), and total microbial counts were lowest (p<0.001). Daejeo-tomato showed the lowest activities of PME as a softening enzyme and PG. For sensory properties, Daejeo-tomato showed a relatively high preference for all items except aroma. Based on the above results, Daejeo-tomato Jangajii showed superior quality characteristics and high preference in general among tomato Jangajii from all three cultivars of tomatoes. Therefore, Daejeo-tomato Jangajii is useful as low-sodium tomato Jangajii in light of quality characteristics and preference.

친환경 유기 농산물로 제조한 LOHAS 음료의 영양 평가 (Nutritional Assessement of LOHAS Drink with Organic Products)

  • LOHAS(Lifestyles Of Health And Sustainability) drinks were prepared by the addition of mulberry leaf powder(MLP) at various levels(0%, 5%, 10% and 20%). Their characteristics of the drinks were examined according to antioxidant activity and sensory evaluation. In the sensory evaluation, there was no significant difference between the control group(0% MLP group) and 5% MLP group for overall quality. For the proximate compositions of the LOHAS drinks, moisture, crude ash, crude protein and crude fat were all increased as the ratio of MLP increased. For the mineral contents, the amounts of calcium and magnesium were increased, but sodium, according to adding levels of MLP.

비파잎가루 첨가 비율에 따른 절편의 품질 특성 (Quality Characteristics of Jeolpyun with Different Ratios of Loquat Leaf Powder)

  • The purpose of this study was to determine the optimal mixing ratio of hot-air dried loquat leaf powder and optimum conditions for making Jeolpyun containing hot-air dried loquat leaf powder (LLP). Samples of Jeolpyun were prepared with different contents of hot-air dried LLP (0%, 3%, 6%, 9%, 12%) followed by analysis of chemical properties, moisture contents, color, mechanical quality characteristics, amylograph, and sensory tests. Chemical analysis showed that hot-air dried LLP consisted of 11.41% water, 8.34% crude protein, 1.90% crude fat, 7.74% crude ash, and 16.95% crude fiber, with $^{\circ}Brix$ of 2.07, and pH of 5.78. Moisture contents of samples ranged from 52.22 to 50.06%. L-value decreased with addition of hot-air dried LLP, whereas a-value increased with increasing amount of hot-air dried LLP, and no significant differences were observed regarding b-value. In the mechanical evaluation of physical properties, hardness deceased with increasing amount of hot-air dried LLP. The starting temperature amylograph of Jeolpyun was higher in samples with hot-air dried LLP than those without hot-air dried LLP. Set back was slower with increasing amount of hot-air dried LLP, an increasing amount of hot-air dried LLP made set back of Jeolpyun slower. In the sensory test, Jeolpyun with 6% hot-air dried LLP was the most preferred with less bitterness and proper softness, moisture and chewiness. Therefore, addition of 6% hot-air dried LLP to Jeolpyun made with rice flour showed the best overall preference. Based on the results of this experiment, samples with hot-air dried LLP showed slower hardening than those without hot-air dried LLP in textural changes during storage, and Jeolpyun with 6% hot-air dried LLP is expected to increase quality and preference of Jeolpyun.

자색고구마를 첨가한 설기떡의 품질 특성 (Quality Characteristics of $Sulgidduck$ Added with Purple Sweet Potato)

  • 이 연구의 목적은 익힌 자색고구마를 떡에 활용하여 향미와 질감이 향상되고 소비자의 기호에 맞는 기능성 설기떡을 제조, 개발하고자 하는데 있다. 설기떡에 익힌 자색고구마의 함량을 0, 10, 20, 30, 40% 첨가하여 수분함량, 색도, 텍스처, 관능검사를 실시하였다. 수분함량은 40.83% - 44.91% 이었다. 익힌 자색고구마의 첨가량이 증가할수록 명도와 황색도는 감소하였고, 적색도는 증가하였다. 익힌 자색고구마의 첨가량이 증가할수록 경도, 부착성, 탄력성, 검성은 유의적으로 차이를 보이지 않았고, 씹힘성만 유의적인 차이를 보였다. 관능검사 결과 색, 냄새, 맛, 촉촉함은 익힌 자색고구마의 첨가량이 증가할수록 유의적으로 높아졌다. 설기떡에 40% 익힌 자색고구마를 첨가한 것이 종합적인 기호도가 가장 높았고, 저장기간에 따른 경도 변화도 적었다.

해바라기씨를 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk Supplemented with Sunflower (Helianthus annuus) Seeds)

  • This study was conducted to investigate the quality characteristics of Sulgidduk with different ratios of sunflower seeds (0, 3, 6, 9, 12%), stored over 3days. As amount of sunflower seed content increased, moisture contents decreased $41{\sim}36%$. The L-value decreased with increasing seed content, while a- and b-values increased. Mechanical evaluation revealed that hardness was highest at 0% and lowest at 12% seed content during the storage period. Adhesiveness was highest at 0% seed content, decreasing with increasing seed content on the first day, while cohesiveness did not show significant differences with or without seed content. Springiness increased with increasing seed content, while gumminess and chewiness decreased with increasing seed content. Results of sensory evaluations showed that color and flavor increased with addition of sunflower seed, with softness, moistness, chewiness and overall-acceptability being highest at 6% seed content. In conclusion, results prove that Sulgidduk with 6% of sunflower seed content is the best.

메주분말을 두부분말로 대체한 개량식 고추장의 품질특성에 관한 연구 (Quality Characteristics of Modified Kochujang Made with Tofu powder Instead of Meju powder)

  • 본 연구는 기존의 메주가루 첨가 고추장의 관능 기호도를 높이기 위해, 일반적으로 고추장 제조시에 사용되는 메주가루를 대신하여 두부분말(메주가루 양 대비 25%, 50%, 75%, 100%)을 이용하여 고추장을 제조하고 제조당일부터 저장 45일까지의 품질특성 측정 및 저장 45일째 고추장의 관능검사를 실시하였다. 수분함량은 두부분말 무첨가구가 상대적으로 높게 측정되었으며 이러한 경향은 저장 30일가지도 지속되었고 두부분말 무첨가구와 첨가구 모두 전반적으로 저장기간이 길어질수록 수분함량이 증가하였다. pH는 두부분말 첨가구가 무첨가구보다 상대적으로 높았으며 저장기간이 길어질수록 낮아지는 경향을 나타내었다. 산도는 두부 분말량이 증가할수록 낮아졌으며 대체적으로 저장기간이 길어질수록 산도가 높아졌다. 색도는 L, a, b값 모두 두부분말 무첨가구가 두부분말 첨가구에 비해 유의적으로 낮게 측정되었다. 환원당은 저장 45일째를 제외하고는 두부분말 첨가구과와 무첨가구간의 차이가 나타나지 않았으며 아미노태 질소의 함량은 두부분말 무첨가구가 상대적으로 높았고 두부분말 100% 첨가구(100% TP)는 저장 45일동안 지속적으로 낮은 함량을 나타냈다. 관능특성은 두부분말의 첨가량이 증가할수록 고추장의 색이 연한 것으로 평가되었으며 퀘퀘한 냄새가 약해지는 것으로 평가되었다. 관능 기호도의 측면에서는 냄새, 맛, 전반적인 기호도의 측면에서 두부분말 무첨가구에 비해 두부분말 첨가구의 기호도가 높았으며 그 중에서도 특히, 두부분말 100% 첨가구(100% TP)가 가장 높은 기호도를 나타내었다.

대추농축액을 첨가한 절편의 품질특성 (Quality Characteristics of Jeolpyeon with Addition of Jujube Concentrate)

  • The aim this study was to determine the optimum amount of jujube concentrate to add to rice flour in the preparation of Jeolpyeon (jujube rice cakes). According to the results, the moisture contents of Jeolpyeon with jujube concentrate were 50~53%. The L-value decreased with increasing addition of jujube concentrate, whereas the a-value increased, and the b-value did not differ by the addition of jujube concentrate except for the 0% sample. According to the results of mechanical evaluation, hardness decreased with increasing amounts of added jujube concentrate, whereas cohesiveness and springiness increased. Chewiness did not differ significantly as a result of addition of jujube concentrate, and gumminess and adhesiveness did not differ significantly (16% at most). The 12% jujube concentrate sample received the highest overall-acceptability scores from sensory evaluation results. In conclusion, according to its sensory and mechanical qualities, the optimal Jeolpyeon formulation consisted of 12% jujube concentrate added to rice flour.
