A Study on Rheological Changes of Redbean Jam druing Storage (단팥의 저장 중 물성변화에 관한 연구)

  • The changes of the rheological properties of redbean jam were investigated during storage. The relationship between moisture content (40, 45 and 50%) and agar concentration (1, 0.1 and 0.2%) were studied for 5 days of storage. Water holding capacity was measured by placing redbean jam on Toyo Filter paper(No. 5A) and moisture movement was measured by placing redbean jam in bread. Sensory characteristics were examined in terms of color, flavour, preference, bitterness and taste. The results were as follows. Water holding capacity of redbean jam was increased as the solid content of sugar and agar concentration increased. Moisture movement was decreased as the solid content of sugar and agar concentration increased. Color, flavour, preference and taste were increased for the first day but decreased from the second day. There was significant difference(P<0.01). Bitterness did not show significant difference. 45% of moisture content, 0.1% of agar concentration and the first day showed the highest preference.

A Comparison of the Manufacturing and Quality Characteristics of Gluten-free Noodles using Guar Gum and Basil (Ocimum basilicum L.) Seed Gum (구아검 및 바질검 첨가 Gluten-free 생면의 제조 및 품질 특성 비교)

  • This study was investigated quality characteristics of gluten-free noodles added guar gum and basil seed gum (BSG). Gluten-free noodles were prepared using corn flour and corn starch and added 1% and 2% of guar gum and basil seed gum. Water binding capacity was measured by centrifuge, and moisture content was obtained by moisture analyzer. Color of noodles was measured from the midsection of noodles. Water absorption of noodles was calculated by weight of uncooked and cooked noodles. pH of noodles was measured by pH meter. Texture and tensile strength were obtained by rheometer. SPSS 12.0 program was used for significant differences by Duncan's multiple range test. Water binding capacity of noodles was the highest in 2% basil seed gum but 1% guar gum was the lowest. Moisture content was not different in uncooked noodles, but 1% guar had the highest moisture content in cooked noodles. Water absorption of noodles was high in basil seed gum group. pH of noodles was more increased in guar gum additions than basil seed gum additions. For hardness, control had the lowest as 16.09 N, but 2% guar gum showed the highest as 28.40 N. Tensile strength of noodles was increased by adding gums. These results suggested that 1% basil seed gum could be good materials for manufacturing gluten-free noodles in order to improve quality characteristics.

Study on Processing Quality of Different Parts of Pork and Beef (돈육 및 우육 부위별 가공적성 연구)

  • Purpose: The objective of this study was to investigate the quality characteristics of pork and beef meat according to species (pork: modern genotype pork, Korean native black pork; beef: Holstein, Korean native cattle) and cuts (pork: shoulder, ham, loin; beef: loin, tenderness, round). Methods: The moisture content, protein content, fat content, ash content, fatty acid compositions pH, whater holding capacity, cooking loss, shear force, color, and sensory characteristics were measured in triplicate. Results: The moisture content, pH, cooking loss, and shear force of modern genotype pork were significantly higher than the Korean native black pork; in addition, the moisture content of loin was significantly higher than shoulder and ham. The fatty acid compositions for different parts of pork showed no significant differences. Among the sensory characteristics, the parameters of pork were not significantly different. The moisture content of Holstein was significantly higher than Korean native cattle. The fatty acid composition of beef could not confirm the specific differences. Water holding capacity of Korean native cattle was higher than Holstein, while cooking loss of Korean native cattle was lower than Holstein. Overall acceptability scores of Korean native cattle was higher than Holstein. Conclusion: The study results of several parameters in selected raw meat samples provide useful information for developing new strategies to improve the quality of meat products consumption.

Studies on Wet Paddy Field Underdrainage Improvement in the Gum-Ho Area (I) (금호지구 저습답의 암거배수효과에 관한 연구(I))

  • This paper complies the results of the studies so far made on the subsoil improvement of subsurface drainage systems for wet paddy fields (those were located in the Gum-Ho area in Kyung Buk province) which had poor permeability and a high water table. In general, a drainage problem is an excess of water on the ground surface which can effect the productivity and bearing capacity of the soil. With drain pipe systems, (According to their depths and spacing) it may be possible to correct that problem. The experimentation consisted of three test plots, two of which included drain pipe systems with varing depths and width spacing of the pipes. The third plot (C) was an ordinary plot being exempt of a drain pipe system. In detail, the depth of plot A was 80 cm, and the width spacings began at 2. Om and increased by 2. Om up to 10. 0m. The depth of plot B was 60cm and the width spacing was the same as plot A. These tests were performed to research specific details; such as crop yeild, bearing capacity of the soil, the amount of underdrainage, surface cracks, root distribution, the water table level, the consumptive water depth and the soil moisture content. The test period lasted three years, from 1977 thru 1979. The results obtained were as follows: 1. During the test period, the weather conditions for the area tested were in accordance with the annual average for that area. Furthermore the precipitation factor during the spring cultivation season, the intermediate drainage period and the harvest drainage period was of optimum conditions for controling surface cracks, because of less precipitation than evaporation. 2. The difference in the level of the ground water table in plots A and B was hardly noticable, but the difference in the test plots and the ord. plot was greatly noticable. The test plots (A, B) were 30 to 40cm lower than the ordinary plot. On the whole, the ground water table of the ord. plot always stayed at a level of 15-20cm beneath the surface of the soil, the ground water table of the test plot A showed The difference in the depth of the pipe lower than the test plot B, while the test plots showed a remarkable descending effect. 3. The soil temperature in plot A was slightly core than in plot B with a difference of 0. 47$^{\circ}$C, but plot A was 1. 6$^{\circ}$C higher than the ord. plot during the flooding period, but after drainage the temperature difference climed to 2. 0$^{\circ}$C. 4. During the 3rd test year, the values of the cracks were recorded with the values of 59cm in plot A, 42cm in plot B and 15cm in the ordinary plot. Plots A and B had increased 2.5 times the value of the first year while the ordinary plot had remained the same. 5. The root weight of the rice was measured at a value of 77.2 gr. for plot A, 73.5 gr. for plot B and 65.3 gr. for the ord. plot. Therefore, the root growths in plots A and B were much more energetic than in the ord. plot. 6. The consumptive water depth measured during the 3rd year resulted in the values of 26. 0mm per day for plot A, and 24.9 mm per day for plot B, respectively. Therefore, both plot A and plot B maintained the optimum consumptive water depths, but the ordinary plot only obtained the value of 12.3 mm per day, which clearly showed less than the optimum consumptive water depth which is 20 to 30 mm/day. 7. The soil moisture content is in direct relationship to the ground water level. During drainage, test plot A decreased in its ground water level much more rapidly than the other two plots. Therefore, plot A had a much less soil moisture content. But this decreased water level could be directly effected by the weather conditions. 8. The relationship between the bearing capacity and the soil moisture content were directly inversely proportional. It can be assumed that the occurence of soil creaks is limited by the soil moisture content. Therefore, the greater the progress of the surface creaks resulted in a greater bearing capacity. So, tast plot A with a greater amount of surface cracks than the other test plots resulted in a greater bearing capacity. But, the bearing capacity at the harvest season could be effected by the drainage during the intermediate drainage period and by the weather conditions. 9. Comparing the production of the test plots to the ord. plot; there was an increased value of 840kg for plot A, 755kg for plot B and 695kg for the ord. plot in the rough rice. Therefore, plot A had an increase of 20% over the ordinary plot. The possibility of producing double crops was investigated. The effects on barley production in the test plots showed a value of 367kg per 10 acres, which substantiated the possibility of double crops because that value showed an increased value over the average yearly yield for those uplands. 10. So as a result, it can be recommended that by including a drain pipe system with the optimum conditions of an (80cm centimeter) depth and a (l0m) spacing will have a definite positive effect on the over all production capacity and quality of wetpaddy fields.

  • Imaginary grass field was assumed suitable as the representative one for simplified estimation of local drought, and a moisture balance booking model computing drought was developed with the limited numbers of its determining factors, such as crop coefficient of the field, reservoir capacity of the soil, and the beginning point of drought as defined by soil moisture status. The maximum effective rainfall was assumed to be the same as the available free space of soil reservoir capacity. The model is similar to a definite depth evaporation pan, which stores rainfall as much as the available free space on the water in it and consumes the water by evaporation. When the pan keeps water less than a certain defined level, it is droughty. The model simulates soil moisture deficit on the assumed grass field for the drought estimation. The model can assess the water requirement, drought intensity, and the index of yield decrement due to drought. The influencing intensity indices of the selected factors were 100, 21, and 16 respectively for crop coefficient, reservoir capacity, and drought beginning point, determined by the annual water requirements as influenced by them in the model. The optimum values of the selected factors for the model were respectively 58% for crop coefficient defined on the energy indicator scale of the small copper pan evaporation, 50 mm for reservoir capacity on the basis of the average of experimentally determined values for sandy loam, loam, clay loam, and clay soils, and 65% of the reservoir capacity for the beginning point of drought.

  • This study was designed to understand the relationships among the soil physical and chemical properties and to obtain the useful regression to calculate the cation exchange capacity, field capacity, wilting point moisture content and organic matter content. Fourteen soil properties were collected from 315 representative soil series in Korea. Simple and multiple regression were analyzed with the data by grouping land use, drainage class and soil depth. The multiple regression equations which can be calculated the cation exchange capacity from clay and organic matter content were found out. Cation exchange capacity of clay was 22me/100g, and that of organic matter was 103.3me/100g. Moisture retentions, both of wilting point moisture content and field capacity, were closely related to clay and organic matter content. The coefficient of clay was increased with drainage class changed more poor but the coefficient of organic matter was highest at moderately well drained soil. Organic matter content can be calculated by soil texture and pH. Organic matter content was decreased by in creasing the pH. The highly significant regressions were found between base saturation and pH.

The Comparison of Electrical Conductivity for Soil Solutions Extracted in Field Capacity and Saturation-Paste (포장용수량과 포화 반죽 토양용액의 전기전도도 비교)

  • Estimating the electrical conductivity of the saturation-paste (SP) is a common method to assess soil salinity. To assess soil salinity realistically, it is important to extract soil solution under field capacity. However, few studies on salinity assessment have been conducted for soil solution extracted under field capacity (-33 kPa; FC) moisture condition due to difficulty in soil solution extraction. This study was conducted to evaluate whether saturation-paste can represent field condition. Soil solutions were extracted from 22 soils in the plastic film house (PFH) and 18 soils in the reclaimed land (RL) at saturation and field capacity moisture conditions. Those were analyzed for pH, EC, cations ($K^+$, $Ca^{2+}$, $Mg^{2+}$, $Na^+$) and anions ($Cl^-$, ${NO_3}^-$, ${PO_4}^{3-}$, ${SO_4}^{2-}$). Both cations and anions of soil solution extracted from FC showed high correlations with ions extracted from SP in the PFH and the RL, except for ${NO_3}^-$, ${PO_4}^{3-}$ in the RL. Results of the t-test, the ECe and $EC_{FC}$ were not significant at significance level 0.05. The slopes of the equations between $EC_{FC}$ and ECe at more than sand 50% soils were higher than less than sand 50% soils, and differences of saturation percentage between SP and FC showed larger as increasing sand percentage. EC was related to soil water retention by soil texture. To determine the EC, soil texture and other soil properties which effect the soil moisture should be considered.

Influence of Suction Force of Plate Anchor Embedded in Kaolinite (Kaolinite에 근입된 앵커에서 흡입력이 미치는 영향)

  • Plate anchors are primarily used in the foundation construction of earth-supported and earth-retaining structures. In order to estimate uplift capacity as well as suction force of clay, model tests were peformed with respect to various embedment depths and two different moisture contents in the prepared saturated kaolinite. Further, suction effects on the ultimate uplift capacity, at the various embedment depths of anchor, were also taken into account. Test results show that ultimate uplift capacity including suction force increases from 4.2kg at H/D=1 upto 11.6kg at H/D=5 in K1 and from 2.3kg at H/D=1 upto 7.3kg at H/D=5 in K2 respectively. The ratio of $F_s/Q_n/$ decreases along with the increases in the embedment ratio. In general, mud suction force under the ultimate uplift capacity in kaolinite decreases or becomes constant along with the increase of the embedment ratio.
