A laboratory study was made to develop a simple and economic model method for the systematic determination of functional properties of 'Soy Protein Isolates (SPI)' prepared from defatted soybean meal. These are required to evaluate and to predict how SPI may behave in specific systems and such proteins can be used to simulate or replace conventional proteins. Data concerning the effects of pH, salt concentration, temperature, and protein concentration on the functional properties which include solubility, heat denaturation, gel forming capacity, emulsifying capacity, and foaming capacity are presented. The results are as follows: 1) The yield of SPI from defatted soybean meal increased to 83.9 % as the soybean meal was extracted with 0.02 N NaOH. 2) The suitable viscocity of a dope solution for spinning fiber was found to be 60 Poises by using syringe needle (0.3 mm) with 15 % SPI in 0.6 % NaOH. 3) Heat caused thickening and gelation in concentration of 8 % with a temperature threshold of $70^{\circ}C$. At $8{\sim}12\;%$ protein concentration, gel was formed within $10{\sim}30\;min$ at $70{\sim}100\;^{\circ}C$. It was, however, disrupted rapidly at $125\;^{\circ}C$ of overheat treatment. The gel was firm, resilient and self-supporting at protein concentration of 14 % and less susceptible to disruption of overheating. 4) The emulsifying capacity (EC) of SPI was correlated positively to the solubility of protein at ${\mu}=0$. At pH of the isoelectric point of SPI (pH 4.6), EC increased as concentration of sodium chloride increased. Using model system$(mixing\;speed:\;12,000\;r.p.m.,\;oil\;addition\;rate:\;0.9\;ml/sec,\;and\;temperature\;:\;20{\pm}1\;^{\circ}C)$, the maximum EC of SPI was found to be 47.2 ml of oil/100 mg protein, at the condition of pH 8.7 and ${\mu}=0.6$. The milk casein had greater EC than SPI at lower ionic strength while the EC of SPI was the same as milk casein at higher ionic strength. 5) The shaking test was used in determining the foam-ability of proteins. Progressively increasing SPI concentration up to 5 % indicated that the maximum protein concentration for foaming capacity was 2 %. Sucrose reduced foam expansion slightly but enhanced foam stability. The results of comparing milk casein and egg albumin were that foaming properties of SPI were the same as egg albumin, and better than milk casein, particularly in foam stability.
The morphological, anatomical and physiological traits were eximined for Populus alba ${\times}$ glandulosa which is an important planting species in Korea. The results obtained are as follows: 1. External characters in the leaf shape and chaff shape in the catkin were inherited as incomplete dominance but nectar gland was inherited as dominance. 2. Among the 15 selected clones, 9 clones were male, 2 clones female and 2 clones monoecious. 3. There were well-developed cork layers and bast fiber bundles in the bark. 4. Primordial leaves composed of 3 layers of cells and those undifferentiated into palisade and spongy parenchymas differed in its origin. 5. Leaf scare consisted of two kinds of tissues; one is connected to vascular bundle and the other not to vascular bundle. Tissues which had been connected to vascular bundle were isolated with only 2 or 3 layers of cork cells from the outside. 6. There was complicated arrangement in the vascular bundle of petioles. 7. Growth of the hybrid was sensitively influenced by external temperature, day-length and amount of light. In particular, it was apparent in height growth. 8. Flatness, loam soils and a $60{\times}60cm$ spacing might be best factors for the growth of P. alba ${\times}$ glandulosa. 9. The rooting of 15 clones was dependant upon external factors. 10. The growth of P. alba ${\times}$ glandulosa was best at around 80% of soil moisture content on the basis of plot water capacity. 11. Temperature difference between inside and outside stems below 100cm during the winter was the greatest at the south among seasons and among directions. 12. The sap movement was markedly influenced by air temperature, relative humidity in forest stand and moisture content in stem. 13. Total sugars in the cortex changed with season but did not differ in the dircetion of the stem. 14. Isoperoxidase variations in the leaf were different among 15 clones. Thus, it may be useful as a criterium for clonal identification. 15. The rate of soil moisture content decreased at a rapid slope was faster than that at a slow slope. Poor growth of P. alba ${\times}$ glandulosa at the slope was probably due to depletion of soil moisture.
Modeling of longterm runoff is theoritically based on waterbalance analysis. Simplified equation of water balance with rainfall, evapotranspiration and soil moisture storage could be formulated into regression model with variables of rainfall, pan evaporation and previous-month streamflow. The hydrologic response of water shed could be represented lumpedly, qualitatively and deductively by regression coefficients of water-balance regression model. Characteristics of regression modeling of water-balance were summarized as follows; 1. Regression coefficient $b_1$ represents the rate of direct runoff component of precipitation. The bigger the drainage area, the less $b_1$ value. This means that there are more losses of interception, surface detension and transmission in the downstream watershed. 2. Regression coefficient $b_2$ represents the rate of baseflow due to changes of soil moisture storage. The bigger the drainage area and the milder the watershed slope, the bigger b, value. This means that there are more storage capacity of watershed in mild downstream watershed. 3. Regression coefficient $b_3$ represents the rate of watershed evaporation. This depends on the s oil type, soil coverage and soil moisture status. The bigger the drainage area, the bigger $b_3$ value. This means that there are more watershed evaporation loss since more storage of surface and subsurface water would be in down stream watershed. 4. It was possible to explain the seasonal variation of streamflow reasonably through regress ion coefficients. 5. Percentages of beta coefficients what is a relative measure of the importance of rainfall, evaporation and soil moisture storage to month streamflow are approximately 89%, 9% and 11% respectively.
In 1970's Black locust(Robinia pseudoacacia) had been widely planted Korea as an important forest greening species for erosion control afforestation. Since 2000, however, the tree's leaf-yellowing symptom has often been observed at a limited region and then spreaded out over the country in 2006. This study was conducted to study soil physiochemical properties of black locust stands with and without the leaf-yellowing symptom in Osan, Gyeonggi province. Most of soils in sampling sites were mostly slightly eroded, dry, and moderately dry. Available soil depth(16cm) and total soil depth(26cm) in leaf-yellowing (LY) site were significantly lower than in non leaf-yellowing (Non-LY) site's soil depths which were 30cm and 56cm, respectively. And solid phase proportion and bulk density in soils were lower in LY site than in non-LY site soils, while soil liquid phase proportion was also low. It could reflect that LY site soils might have a lower air and moisture movement in the rhizosphere of black locust stand compared with non-LY site soils. Soil acidity in both sites was very strong acid, soil pH (4.42) of LY site was slightly lower than non-LY site's (pH 4.54). Content of available phosphorous, exchangeable $Ca^{2+}$ and $Mg^{2+}$ and percent base saturation were less than LY site. These results indicated that soil physiochemical condition in LY site, more deteriorated than non-LY site, should adversely affect the retention and supply capacity of soil nutrients and moisture. Therefore the black locust may be more sensitive to other environmental stresses.
The objective of this study is to propose a method for computing the Natural Drought Index (NDI) that does not consider man-made drought facilities. Principal Component Analysis (PCA) was used to estimate the NDI. Three monthly moving cumulative runoff, soil moisture and precipitation were selected as input data of the NDI during 1977~2012. Observed precipitation data was collected from KMA ASOS (Korea Meteorological Association Automatic Synoptic Observation System), while model-driven runoff and soil moisture from Variable Infiltration Capacity Model (VIC Model) were used. Time series analysis, drought characteristic analysis and spatial analysis were used to assess the utilization of NDI and compare with existing SPI, SRI and SSI. The NDI precisely reflected onset and termination of past drought events with mean absolute error of 0.85 in time series analysis. It explained well duration and inter-arrival time with 1.3 and 1.0 respectively in drought characteristic analysis. Also, the NDI reflected regional drought condition well in spatial analysis. The accuracy rank of drought onset, termination, duration and inter-arrival time was calculated by using NDI, SPI, SRI and SSI. The result showed that NDI is more precise than the others. The NDI overcomes the limitation of univariate drought indices and can be useful for drought analysis as representative measure of different types of drought such as meteorological, hydrological and agricultural droughts.
This study was carried out to investigate the effects of adding lotus root and leaf powder on the quality characteristics of cooked pork patties. The patties were of four types: unadulterated (control, T0), 0.5% lotus root powder (T1), 0.25% lotus root and 0.25% lotus leaf powder (T2), and 0.5% lotus leaf powder (T3). We found that the moisture content was highest in T1 group, and that the protein and fat contents were lowest in T1 (p<0.05). The ash content was lowest in T0 (p<0.05). The cooking yield and moisture retention level were not significantly different among the samples, but fat retention was the highest in T3 (p<0.05). The hardness, springiness, cohesiveness and chewiness were also highest in T3, and the gumminess was lowest in T0 (p<0.05). The $L^*$ values tended to increase with longer storage periods, and that of T0 was the highest after nine days of the storage (p<0.05). By contrast, the $a^*$ values decreased with longer storage periods (p<0.05), with that of T3 being the lowest (p<0.05) during storage periods. The water holding capacity decreased with longer storage periods, and that of T1 was the highest (p<0.05) during storage periods. The pH of T1 decreased, and those of T2 and T3 increased with a longer storage period (p<0.05). TBARS values increased with a longer storage period, and those of T0, T1, T2 and T3 were 8.69, 2.95, 0.88 and 0.55 mg/kg, respectively, after nine days of storage (p<0.05).

This study was carried out to investigate the effect of the addition of safflower seed (Carthamus tinctorius L.) on the physicochemical properties of ground pork as an animal fat replacer. Three types of ground pork were evaluated: 20% pork fat added (control), 10% pork fat and 10% safflower seed powder added (10% SS), and 20% safflower seed powder added (20% SS). The moisture, protein, and ash contents were highest in 20% SS, and the fat content was highest in the control (p<0.05). The cooking yield, moisture retention, fat retention, and water-holding capacity were highest in 20% SS, and the control showed a reduction in the diameter (p<0.05). The external and internal L-, a-, and b-values of the control were higher than those of the 10% SS and the 20% SS (p<0.05). The cholesterol content of the control, the 10% SS, and the 20% SS was 50.85, 21.77, and 17.91 mg/100 g, respectively, and that of the 20% SS was lowest among the samples (p<0.05). The linoleic acid content of the control, the 10% SS, and the 20% SS was 28.68%, 41.04%, and 54.26%, respectively. The total unsaturated fatty acid content of the control, the 10% SS, and the 20% SS was 50.53%, 55.76%, and 64.93%, respectively. The linoleic acid and the total unsaturated fatty acid content were highest in the 20% SS (p<0.05). There was no significant difference in amino acid composition.
Lesion enlargement of ginger rhizome rot was most rapid at 35~40 C, but delayed greatly as temperature decreased. Time needed for a killing a ginger plant, 22~25 cm long, was about 5 days at 35~40 C, but was 15 days at 15 C in a growth chamber test. Higher RH above 90%, higher soil moisture level above 80% of maximum soil moisture capacity, and deeper planting below 4cm enhanced the lesion development on ginger stems and rhizomes. Pythium myriotylum existed in field soil as forms of hyphal portion, hyphal swelling body, or oospore- or zoospore-like bodies, and served as the origin of its colonization. Inocula of P. myriotylum was randomly distributed in soil surface around ginger plants, but its density was decreased as increasing soil depth with the highest density at 0~10 cm soil depth. Population density of P. myriotylum did not vary significantly between the rhizoplane and the rhizosphere soil of a ginger plant, but differed greatly between the disessed and healthy plants with several to several hundreds times higher population in the diseased plants. A positive curvilinear relationship was found between P. myriotylum density and ginger rhizome rot severity.

Onions cultivated with (SY) or without (SN) sulfur application were stored for up to 36 weeks at $4^{\circ}C$ since harvest, after which they were analyzed for chemical composition and antioxidant activity in relation to sulfur (S) application and storage duration. Compared with SN onions, SY onions showed lower moisture and higher protein, soluble solids, and flavonoid contents at the time of harvest, and moisture and protein contents remained the same until 20 weeks of storage. However, soluble solids decreased while antioxidant activities, including flavonoids content, total reducing capacity, and superoxide dismutase (SOD)-like activity, appreciably increased as storage time increased to 20 weeks, which could be attributed to onion respiration and protective response to environmental stresses, respectively. There were abrupt decreases in flavonoid content and SOD-like activity at 36 weeks, presumably due to severe deterioration. Interestingly, all phenomena observed depending on storage time were independent of S application of onions. The results show that the critical factor influencing the chemical composition and antioxidant activity of onions during storage was postharvest storage duration rather than S application during onion cultivation.
Purpose: The presence of the matric suction in unsaturated soil increases the stability of the slope, but the reduction of the matric suction due to precipitation can cause sudden slope failure, resulting in a major disaster. In this paper, engineering characteristics in unsaturated state were analyzed for granite weathering soil, which is the representative mountain soil of Korea. Method: Experiments and analysis were conducted on granulated weathering soil as unsaturated shear strength relationships for moisture characteristic curves, unsaturated injection curves, and matric suction under unsaturated conditions. Result: It was analyzed that a rapid change in the matric suction for volumetric water content occurs compared to the case where the particle size distribution is poor and the particle size distribution is good. A good case for the particle size distribution indicates a relatively small permeability coefficient at the same matric suction capacity compared to a poor case. The greater thematric suction, the greater the shear strength. Conclusion: For Korea's representative soil, granulated weathering soil, the functional characteristic curves, unsaturated permeability coefficients, unsaturated shear strength, etc., which are engineering characteristics in unsaturated state, were tested to secure each correlation.
