Effect of Modified Atmosphere Packaging and Vacuum Packaging on Quality Characteristics of Low Grade Beef during Cold Storage

  • Many studies have been carried out with respect to packaging methods and temperature conditions of beef. However, the effects of packaging methods and temperature conditions on the quality characteristics have not been extensively studied in low-grade beef. Low-grade beef samples were divided into 3 groups (C: ziplock bag packaging, T1: vacuum packaging, and T2: modified atmosphere packaging (MAP), $CO_2/N_2$ = 3:7) and samples were stored at $4^{\circ}C$ for 21 days. The water-holding capacity (WHC) was significantly lower in T1 than in the other samples up to 14 days of storage. The thiobarbituric acid reactive substances and volatile basic nitrogen values were significantly lower in T1 and T2 than in C after 7 to 14 days of storage. The total bacterial counts were significantly lower in T1 and T2 than in C after 14 days of storage. In a sensory evaluation, tenderness and overall acceptability were significantly higher in T1 and T2 than in C at the end of the storage period (21 days). We propose that the MAP method can improve beef quality characteristics of low-grade beef during cold storage. However, the beneficial effects did not outweigh the cost increase to implement MAP.

Effect of Modified Atmosphere Packaging Varying in CO2 and N2 Composition on Quality Characteristics of Dry Fermented Sausage during Refrigeration Storage

  • The current study investigated the effects of the most suitable modified atmosphere packaging (MAP) on the physicochemical, microbiological, and sensory properties of fermented dry sausages during 45 days of refrigeration (4℃) storage period. Treatments were vacuum-packed (control), 25% CO2/75% N2 (MAP1), 50% CO2/50% N2 (MAP2), 70% CO2/30% N2 (MAP3), and 100% CO2 (MAP4). All MAP samples regardless of their CO2 composition significantly (p<0.05) decreased in pH, aw, total plate count, and lactic acid bacteria count values as compared to the vacuum-package during storage. The Enterobacteriaceae count in all MAP packaging was significantly (p<0.05) lower than the vacuum-packed samples and counts in MAP3 and MAP4 samples were markedly (p<0.05) lower than all other treatments in prolonged storage of 15 and 45 days. Based on the thiobarbituric acid reactive substance content at day 15 and 30 storage time, treatments are ranked as follows: Vacuum-packed>MAP1>MAP2>MAP3>MAP4. The a* of MAP4 was higher than all other treatments. In the final storage days, no variation was exhibited (p>0.05) among treatments in lactic acid aroma and sourness, and MAP2 samples had the lowest (p<0.05) overall acceptability. The use of MAPs with an increase in the CO2 from MAP1 to MAP4 samples can help in better microbial inhibition than vacuum package, and 70% CO2/30% N2 (MAP3) and 100% CO2 (MAP4) were effective to maintain several quality parameters (aw, pH, microbial inhibition, stability against lipid oxidation, and instrumental color traits) and extend the shelf life of dry fermented sausage.

  • Modified atmosphere packagings were designed by combining the respiration characteristics of the enoki mushroom at 10oC and the measured film permeabilities to O2 and CO2 gases to attain the beneficial package atmosphere were fabricated and tested during storage. The packages of 100g size with 30 m low density polyethylene and cast polypropylene showed the good agreement between estimated and experimental package atmospheres. However, polyvinylchloride stretch wrap packs showed the gas composition close to the air, which was due to leaking of stretch wrapping. The CPP package attaining O2 below 1% and CO2 concentration of 15~20% gave the best retention of quality and thus the longest shelf life among the tried packages, and it was superior to the others in the Hunter L value, stipe elongation and sensory qualties.

Effects of an ice pack and sulfur generating pad treatment for home delivery on the quality of 'Duke' blueberry fruits

  • This study focused on the improvement of blueberry delivery service using pre-cooled ice and $SO_2$ pads to prevent an increase in the fruit temperature as well as decay. To maintain the fruit quality during low temperature storage, the effect of a $SO_2$ pad and modified atmosphere packaging was also examined. Harvested blueberries were precooled at $15^{\circ}C$, sorted, and packaged. And the fruits were placed in a similar environment as that for the parcel service. Part of the fruits were stored at $0^{\circ}C$ for long term storage. The air temperature in the delivery box increased along with an increase in the simulated delivery time regardless of the treatment. However, the rate of temperature increase was lower in the ice pad treatment. No significant difference was not found after 48 h. The oxygen concentration in the box ranged between 10.5 - 14.5% in the ice pad treatment, which was higher than that of the untreated control (7.5 - 11.9%) whereas the $CO_2$ concentration was lower in the ice pad treatment. No differences were found in the occurrence of off-flavor, decay, and sensory quality loss during the 48 hours of the parcel service simulation. The combined treatment of the $SO_2$ pad and modified atmosphere packaging (MAP) using a perforated film increased the shelf-life of the blueberry fruits, the overall quality such as firmness, and the soluble solid content was not different between the treatments except for the decay incidence. No decayed fruit was found in the combined treatment. However, the percentage of decayed fruit in the control was 25% on day 15 of storage and 75% on day 33 of storage, respectively.

The Quality of Modified Atmosphere Packaged Meat from Lambs Slaughtered at 50 and 100 Days of Age

  • The aim of this study was to determine the quality of modified atmosphere (MA) packaged meat from Pomeranian rams slaughtered at 50 and 100 days of age. Determined: chemical composition, physicochemical and sensory properties of meat, and the fatty acid profile of intramuscular fat. Meat from 100-d-old lambs was characterized by a significantly higher content of dry matter, total protein and crude fat, a darker color and higher physiological maturity ($p\leq0.01$). Meat from younger lambs was marked by a better water-holding capacity ($p\leq0.05$), a lower energy value and higher concentrations of monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA). An increase in the content of dry matter, total protein and ash, and energy value was noted in MA-stored meat. Meat pH decreased over MA storage and the sensory properties deteriorated. The studied meat remained safe from microbial contamination during storage.

Fresh Produce Container Operated with a Routine of Hypobaric Application, CO2 Injection and Diffusion Tube Opening for Keeping Beneficial Modified Atmosphere

  • A concept of household container to create and keep the modified atmosphere (MA) beneficial for fresh produce mix was devised and tested under typical chilled storage conditions of 3℃. The container system containing mixed products is initialized by applying weak hypobaric condition (0.9 atm) and subsequently injecting CO2 gas at an appropriate low level (0.03 atm). The passive atmosphere modification by produce respiration is then induced to reach a target until gas diffusion tube of proper dimension starts to open. The design was made to attain quasi-steady state mass balance of O2, CO2 and N2 to maintain the desired MA through the storage. Interrupted opening for taking out or placing some products was to reinitialize the loop of control logic. The developed concept was tested by the container which held commodities of spinach, pak choi, oyster mushroom, peeled onion, strawberry and cut carrot. The target optimum MA of 11% O2 and 10% CO2 (0.11 and 0.10 atm, respectively) was set to avoid injurious range of O2 and CO2 concentrations for any commodities. The developed container system could work to reach and maintain beneficial MA of 0.10-0.12 atm O2 and 0.07-0.10 atm CO2 close to the target during the storage contributing to quality retention of products measured in weight loss, chlorophyll content of spinach, ascorbic acid content of pak choi, color of onion, texture of oyster mushroom, bacterial count of strawberry and carotenoids of carrot. The container system shows potential to improve current preservation practice of fresh produce mix on consumers' level.

Polyethylene Film포장이 포도 Sheridan의 저장력에 미치는 영향 (Effect of Film Packaging on Storage Life of Grape, Sheridan)

  • This experiment carried out to find the storage life according to the kinds of packaging material. Sheridan(Grape) which was fumigated SO2 were wrapped with polyethylenes(Bio-PE and PE) and stored at $0^{\circ}C$ under 90% RH modified condition. The resorts were summarized as follow. Natural weight loss was increased according to the storage time during the 135days storage that was only 1.0-1.7% in sealing section while 10% in non-sealing section. Abonrmal fruits were increased as the storage time was increased and it was 6.6-6.7% in sealing section while 100% in non-sealing during the 135days storage. Quality of appearance and taste are better in sealing section than non-sealing section and it was good in Bio-PE sealing section between packaging materials. Moistrue content was de creased as the storage range was increased and the decreasing rate of that during the storage was 4.9-5.2% in sealing section between treatments. During the storage range increased, the soluble solid degree was increased in non-sealing section but decreased in sealing section.

호박 설기떡의 저장성에 미치는 변형기체포장의 영향 (Effect of Modified Atmosphere Packaging on Preservation of Pumpkin Rice Cake)

  • 식품의 저장성을 향상시키고 유통기한을 연장하는 수단으로서 사용되는 여러 변형기체포장이 호박 설기떡의 품질보존에 미치는 영향을 평가하였다. 대조구인 기체투과성 stretch wrap 포장과 함께, 소매 유통단위로 호박 설기떡을 트레이에 담아서 기체차단성 플라스틱 필름봉지 안에 함기, 진공, 60% $CO_2$/40% $N_2$, 100% $CO_2$ 의 조건으로 포장하고 $20^{\circ}C$에 20일간 저장하면서 총균수, 곰팡이/효모, 색택, texture 를 측정하였다. 60% $CO_2$/40% $N_2$와 100% $CO_2$ 의 변형기체 포장조건은 곰팡이/효모의 성장을 완전히 억제하였고, 다른 포장조건에 비하여 세균의 생육도 지연시키는 효과를 보였다. 포장기체 조성에서는 100% $CO_2$의 포장조건을 제외한 모든 포장조건에서는 미생물 성장과 함께 분명한 $CO_2$ 농도의 증가가 나타났다. 60% $CO_2$/40% $N_2$ 및 100% $CO_2$ 포장에서는 저장 직후에 헤드스페이스 $CO_2$용해로 인하여 $CO_2$ 농도의 감소가 나타났다. 어떤 변형기체포장조건은 경도증가로 나타난 호박 설기떡의 노화를 억제시키지는 못하였고, stretch wrap과 함기 포장에서는 총균수의 증가가 심해졌던 저장 5일경 이후에 경도의 저하가 나타났다. 허용가능한 미생물적 품질수준에 있는 떡의 표면색택에서는 포장간의 차이가 없었다.

The Effect of Modified Atmosphere Packaging and Addition of Rosemary Extract, Sodium Acetate and Calcium Lactate Mixture on the Quality of Pre-cooked Hamburger Patties during Refrigerated Storage

  • The effect of modified atmosphere packaging (MAP; 30% $CO_2$+70% $N_2$ or 100% $N_2$) and an additive mixture (500 ppm rosemary extract, 3,000 ppm sodium acetate and 1,500 ppm calcium lactate) on the quality of pre-cooked hamburger patties during storage at $5^{\circ}C$ for 14 d was evaluated. The addition of the additive mixture reduced aerobic and anaerobic bacteria counts in both 30% $CO_2$-MAP (30% $CO_2$+70% $N_2$) and 100% $N_2$-MAP (p<0.05). The 30% $CO_2$-MAP was more effective to suppress the microbial growth than 100% $N_2$-MAP, moreover the 30% $CO_2$-MAP combined with additive mixture resulted in the lowest bacterial counts. The hamburger patties with additive mixture showed lower CIE $L^*$ and CIE $a^*$, and higher CIE $b^*$ than those with no additive mixture. The 30% $CO_2$-MAP tended to decrease the TBARS during storage regardless of the addition of additives. The use of 30% $CO_2$-MAP in combination with additives mixture was effective for maintaining the quality and extending the shelf-life of pre-cooked hamburger patties.

Quality of Meat (Longissimus dorsi) from Male Fallow Deer (Dama dama) Packaged and Stored under Vacuum and Modified Atmosphere Conditions

  • This study evaluated the effect of vacuum and modified atmosphere (40% $CO_2+60%$ $N_2$, MA) packaging on the chemical composition, physicochemical properties and sensory attributes of chill-stored meat from 10 fallow deer (Dama dama) bucks at 17 to 18 months of age. The animals were hunter-harvested in the forests of north-eastern Poland. During carcass dressing (48 to 54 h post mortem), both musculus longissimus muscles were cut out. Each muscle was divided into seven sections which were allocated to three groups: 0, A, and B. Samples 0 were immediately subjected to laboratory analyses. Samples A were vacuum-packaged, and samples B were packaged in MA. Packaged samples were stored for 7, 14, and 21 days at $2^{\circ}C$. The results of the present study showed that the evaluated packaging systems had no significant effect on the quality of fallow deer meat during chilled storage. However, vacuum-packaged meat samples were characterised by greater drip loss. Vacuum and MA packaging contributed to preserving the desired physicochemical properties and sensory attributes of meat during 21 days of storage. Regardless of the packaging method used, undesirable changes in the colour, water-holding capacity and juiciness of meat, accompanied by tenderness improvement, were observed during chilled storage.
