The objective of this study was to investigate comparison of physicochemical, microbiological, and sensory characteristics of Hanwoo eye of round by various packaging methods [wrapped packaging (WP), modified atmosphere packaging (MAP), vacuum packaging (VP) with three different vacuum films, and vacuum skin packaging (VSP)] at a small scale. Packaged Hanwoo beef samples were stored in refrigerated conditions ($4{\pm}1^{\circ}C$) for 28 days. Packaged beef was sampled on days 0, 7, 14, 21, and 28. Physicochemical [pH, surface color, thiobarbituric acid reactive substances (TBARS), and volatile basic nitrogen (VBN) values], microbiological, and sensory analysis of packaged beef samples were performed. VP and VSP samples showed low TBARS and VBN values, and pH and surface color did not change substantially during the 28-day period. For VSP, total viable bacteria, psychrotrophic bacteria, lactic acid bacteria, and coliform counts were lower than those for other packaging systems. Salmonella spp. and Escherichia coli O157:H7 were not detected in any packaged beef samples. A sensory analysis showed that the scores for appearance, flavor, color, and overall acceptability did not change significantly until day 7. In total, VSP was effective with respect to significantly higher $a^*$ values, physicochemical stability, and microbial safety in Hanwoo packaging (p<0.05).
The effect of microperforated packaging films on fresh-cut apples was studied Apples (Malus domestica Borkh. cv. Red Delicious) were cored and cut, packaged in laser microperforated film or non-microperforated polyolefin film, and stored for 3 weeks at 4C. The flesh firmness of apples packaged in microperforated film during the storage period was significantly higher than that of apples packaged in non-microperforated film, and the level of soluble solids was also higher. The browning index, titratable acidity, pH, acetaldehyde and ethanol levels were not affected by microperforation. These results show that microperforated films could be used for retention of flesh firmness in fresh-cut apples.
To develop a wrapping film, which suppresses the microbial decay through the storage and prolongs the selflife of fruits and vegetables, the antimicrobial packaging films were prepared and applied to the preservation of strtwberries and cucumbers. Low density polyethylene(LDPE) film of 50㎛ thickness was faricated with 1% of Scutellariae baicalensis extract. The LDPE film impregnated with Scutellariae baicalensis extract showed antimicrobial activity on the disk test against Bacillus cereus, Escherchia coli and Fusarium sp.. The antimicrobial film changed the color and light transmittance, but did not affect heat shrinkage, mechanical tensile strength and wattability. Strawberries and cucumbers were separately wrapped with packaging films in the state of closely-adhered packaging as well as modified atmosphere packaging(MAP). The wrapped strawberries and cucumbers were stored for 21 days at 5$\^{C}$ and for 40 days at l0$\^{C}$, respectively. For the packaged strawberries and cucumbers at 5$\^{C}$ and 10$\^{C}$, the LDPE film impregnated with Scutellariae baicalensis extract showed the reduced growth of total aerobic bacteria, molds and yeasts and did not give any negative effect on other quality attributes during storage in comparison with conttrol film without any additive.

This study was conducted to find out the appropriate packaging materials to extend the storability and maintain the quality of cherry tomato for modified atmosphere (MA) storage. Tomatoes were grown by hydroponic at a plastic house in Gangwon Province. Light red maturity stage tomatoes were harvested and packed with MA condition (10,000; 20,000; 40,000; 60,000; 80,000; and $100,000cc/m^2.day.atm$$O_2$ permeability film) and perforated film to store at $5^{\circ}C$, $11^{\circ}C$ and $24^{\circ}C$. The fresh weight loss was less than 0.6% in all non-perforated breathable films at $^5{\circ}C$, $11^{\circ}C$, and $24^{\circ}C$, but perforated film had less than 2.93% at $5^{\circ}C$, 13.29% at $11^{\circ}C$ and 27.24% at $24^{\circ}C$. The 20,000cc at $5^{\circ}C$ and $11^{\circ}C$, and the 40,000cc film at $24^{\circ}C$ balanced optimum carbon dioxide and oxygen concentration in the package to maintain quality. The 10,000cc film was appeared the significantly highest ethylene concentration at $5^{\circ}C$, $11^{\circ}C$, and $24^{\circ}C$, this film had the lowest $O_2$ permeability. Visual quality, firmness, and soluble solids were maintained in 20,000cc films both at $5^{\circ}C$ and $11^{\circ}C$, the 40,000cc film at $24^{\circ}C$. There was no any trend in titratable acidity and vitamin C content of treated packed film types and temperatures at cherry tomatoes packages. Therefore, the appropriate MA condition for $5^{\circ}C$ and $11^{\circ}C$ is $20,000cc/m^2.day.atm$$O_2$ permeability film; for $24^{\circ}C$ it is $40,000cc/m^2.day.atm$$O_2$ permeability film because those films extended the storability through the firmness, soluble solids as well as visual quality.

These studies were conducted to identify the effects of non-perforated breathable package film on storability at $1^{\circ}C$, $8^{\circ}C$, and $20^{\circ}C$ storage of 'Fuji' apples. The fresh weight loss rate was less than 2.0% in all non-perforated breathable films at three different storage periods and temperatures, $1^{\circ}C$; 210 days, $8^{\circ}C$; 75 days, and $20^{\circ}C$; 30 days except for the perforated film. 1,300 cc ($1^{\circ}C$), 5,000 cc ($8^{\circ}C$), and 10,000 cc ($20^{\circ}C$) films were closed at the optimum MA storage condition by carbon dioxide and oxygen concentration. Ethylene concentration was lowest at the 40,000 cc film in every temperatures during storage. The 1,300 cc film established higher result in soluble solid and vitamin C content than any other films at $1^{\circ}C$, also showed higher in visual quality by panel test. The 5,000 cc film had the best results on soluble solid and off-flavor in $8^{\circ}C$. In the $20^{\circ}C$ storage after 30 days of treatment the 10,000 cc film had highest firmness and visual quality. Following these results, it come to conclusion the suitable type of non-perforated breathable film such as 1,300 cc at $1^{\circ}C$, 5,000 cc at $8^{\circ}C$, and 10,000 cc at $20^{\circ}C$ for MA storage in 'Fuji' apples.

This study was conducted to investigate the effect of packaging methods and sterilization treatment on storability and microbial control in paprika fruits. When treated with chlorine dioxide gas for 3, 6, and 12 hours and cold plasma gas for 1, 3, and 6 hours, and then packed in a carton box and stored in a 8 ± 1℃ chamber for 7 days, chlorine dioxide treated 12 hours and plasma treated 6 hours was prevented the development of E·coli and YM(yeast and mold). Accordingly, the control was treated with chlorine dioxide for 12 hours and plasma for 6 hours, packed using a carton box and 40,000 cc·m-2·day-1·atm-1 OTR film (MAP), and stored in a 8 ± 1℃ chamber for 20 days. Fresh weight loss rate during storage was less than 1% in the MAP treatments, and the visual quality of the MAP treatments was above the marketability limit until the end of storage. There was no difference in the contents of oxygen, carbon dioxide, and ethylene in the film. In the case of firmness, the chlorine dioxide treatments was low, and the Hunter a* value, which showed chromaticity, was highest in the Plasma 6h MAP treatment. Off-odor was investigated in the MAP treatments, but it was very low. The rate of mold growth on the fruit stalk of paprika was the fastest and highest in the chlorine dioxide treated box packaging treatments, and the lowest in the chlorine dioxide treated MAP treatments at the end of storage. The aerobic count in the pulp on the storage end date was the lowest in the plasma treated box packaging treatments, the lowest number of E·coli in the chlorine dioxide treated MAP treatments, and the lowest yeast & mold in the chlorine dioxide treated box packaging treatments. As a result, for the inhibition of microorganisms during paprika storage, it is considered appropriate to treat plasma for 6 hours before storage regardless of the packaging method.

This study is in order to the effect of 1-methlycyclopropene (1-MCP) treatment and film package as modified atmosphere packaging (MAP) on the changes in fruit quality factors of 'Daehong' peaches during cold storage. The concentrations of 1-MCP were treated at 1µL·L-1 and 2µL·L-1, and peaches in film package were stored for 28 days in cold storage at 5±1℃ and 85±5% RH. The fruits stored carton box were used as a control of MAP, and 1-MCP free fruits were used as the control of both packages. Rate of fresh weight loss during storage was not significantly different between groups with and without 1-MCP treatment, but was higher in the box package than in the MAP. The control group had a higher incidence of both gases with the 1-MCP treatment group showing statistically significantly low. Carbon dioxide in the package was lowered by about 12% compared to the non-treated group, and the ethylene concentration was maintained at 1µL·L-1, showing a significance low compared to other treated groups. As the storage period elapsed, the firmness of 1-MCP and MAP treated fruits remained significant at 5-9% compared to the control group. Regardless of the packaging method Hunter a* values of exocarp and mesocarp were significantly higher in fruit treated with 1-MCP 1µL·L-1 treatment than in the control group, and anthocyanin was significantly higher in the fruit during the storage period, especially high in MAP. In summary, fruits of MAP group with 1-MCP 1µL·L-1 had rate of lower respiration and ethylene production, and little changes in firmness, Hunter a* values of exo-carp and meso-carp, and anthocyanin, which is considered the most suitable method for preserving postharvest quality of the peach cultivar during the storage.
The effects of precooling treatments on the storability of chicon were investigated during modified atmosphere (MA) storage. The forced air cooling showed faster precooling rate that reduced the internal temperature of chicon to $2{\pm}1^{\circ}C$, and the precooling time of forced air cooling was 1/6 of room cooling. The half cooling time was 3 hr 21 min in room cooling and 1 hr 17 min in forced air cooling. Weight loss was less than 0.5% in all treatments both $5^{\circ}C$ and $10^{\circ}C$ MA storage and maintained higher in forced air cooling treatment. The concentration of carbon dioxide, oxygen, and ethylene of $50{\mu}m$ ceramic film packages were observed higher at $10^{\circ}C$ than $5^{\circ}C$. The precooling effect on respiration reduction was not shown at $5^{\circ}C$, but appeared that the gas concentration of precooling treatments showed less carbon dioxide and higher oxygen than non precooling treatment by 9 days after $10^{\circ}C$ storage. Ethylene concentration of precooling treatments showed lower than non precooling treatment until 3 days both $5^{\circ}C$ and $10^{\circ}C$ MA storage. Precooling showed the effect on maintaining visual quality of chicon both $5^{\circ}C$ and $10^{\circ}C$ MA storage. However, the forced air cooling that showed faster precooling rate did not appeared more precooling effect on the visual quality than room cooling because the fast air flow (6.0 m/sec) of forced air cooling hit directly on chicon outer leaves and might cause physical damage to chicon. Although the forced air cooling showed the effect on maintaining quality of chicon, but additional studies should be needed that investigated proper air flow rate and cooling box structure can prevent physical damage by air flow.
This study was carried out to compare the storability of Salsola komarovi Iljin and Suaeda maritima L. Dum which stored at different storage temperatures in MA storage. These plants that had grown in greenhouse packed with $50\;{\mu}m$ ceramic film and then stored in $2^{\circ}C$, $10^{\circ}C$, and $25^{\circ}C$ temperature. The fresh weight loss both plants was less than 1% in all temperature treatments. The highest fresh weight loss showed at $25^{\circ}C$ among storage temperature treatments in Salsola komarovi Iljin between plants. The highest carbon dioxide contents in package showed at $25^{\circ}C$ among storage temperature treatments in Salsola komarovi Iljin between plants, and at $2^{\circ}C$ and $10^{\circ}C$ temperature treatments remained less than 1%. Oxygen contents in package both plants showed the highest level at $2^{\circ}C$ temperature treatment, but Salsola komarovi Iljin showed less oxygen contents than Suaeda maritima L. Dum. Although there was no significant difference ethylene contents in package between $2^{\circ}C$ and $10^{\circ}C$ temperature treatments, the higher showed in $10^{\circ}C$ than $2^{\circ}C$ temperature treatments. The ethylene contents in package both plants were roughly $20\;{\mu}L{\cdot}L^{-1}$ and the higher was in Suaeda maritima L. Dum than Salsola komarovi Iljin at $2^{\circ}C$. As increasing the storage temperature, the contents of carbon dioxide and ethylene in package also increased in both plants. The carbon dioxide and ethylene contents of Salsola komarovi Iljin showed a significant difference between $2^{\circ}C$ and $10^{\circ}C$ temperature treatments, but Suaeda maritima L. Dum did not show. The shelf life of Salsola komarovi Iljin based on visual quality was 14 days at $2^{\circ}C$ temperature treatment and 7.5 days at $10^{\circ}C$ temperature treatment. However, the shelf life of Suaeda maritima L. Dum did not show a significant difference between $2^{\circ}C$ temperature treatment that was 11 days, and $10^{\circ}C$ temperature treatment that was 9.5 days. Considering visual quality and gas contents in package, Suaeda maritima L. Dum might appear chilling injury at $2^{\circ}C$ temperature treatment.
The physicochemical characteristics of chicken breast were determined to identify the optimal ratio of $CO_2$ and $N_2$ to maintain chicken breast quality during cold storage for 6 d. The mixing ratios of $CO_2$ and $N_2$ were 20:80, 40:60, 60:40, and 80:20, respectively. The pH of the chicken breast packed with 80% $CO_2$ and 20% $N_2$ was lower than that of the control on day 1 (p<0.05). The lightness ($L^*$) of the breast increased with increasing $CO_2$ during storage (p<0.05), whereas no difference was found for redness ($a^*$) and yellowness ($b^*$). A lower volatile basic nitrogen level was found for chicken breasts exposed to higher $CO_2$ levels. Furthermore, lipid oxidation of the chicken breast packed with $CO_2$ decreased with increasing $CO_2$ level, and 40% $CO_2$ significantly reduced 2-thiobarbituric acid reactive substances (TBARS) values on days 1 and 6. The total number of microbes was reduced in chicken breast exposed to more than 40% $CO_2$ during storage days 3 and 6 (p<0.05); however, Escherichia coli was not affected by $CO_2$ level. Coliforms of chicken breast were reduced in the 40% $CO_2$ level on storage day 3. Moreover, tray-packed chicken breast exposed to 40% $CO_2$ did not collapse. These results suggest that 40% $CO_2$ and 60% $N_2$ were the optimal conditions for packaging chicken breasts during cold storage.
