The experiments were carried out to elucidate the varietal variation of retrogradation in aged cooked rice and its association with some physicochemical properties of milled rice. The fifteen rice materials were selected from forty-three low-amylose japonica and Tongil-type rice cultivars based on palatability and retrogradation of cooked rice stratified by preliminary sensory evaluation of warm and cooled cooked rice. One japonica glutinous rice variety was included for comparison of retrogradation of cooked rice. The $\alpha$-amylase-iodine method was adopted for checking the varietal difference in retrogradation of cooked rice. The desirable checking time for evaluating the varietal difference in deterioration of aged cooked rice was four hours after storing in room temperature and two hours after preserving in refrigerator based on the largest coefficients of variations in degree of retrogradation of cooked rice. The rice cultivars revealing the relatively slow retrogradation in aged cooked rice were Ilpumbyeo, Chucheongbyeo, Sasanishiki, Jinbubyeo and Koshihikari. A Tongil-type rice, Taebaegbyeo, and a japonica cultivar, Seomjinbyeo, showed the relatively fast deterioration of cooked rice. The retrogadation index represented by the percentage of retrogradation difference between warm and cooled cooked rice to original estimates of warm cooked rice was significantly affected by the degree of retrogradation of cooled cooked rice. Generally, the better rice cultivars in eating quality of cooked rice showed less retrogradation and much sponginess in cooled cooked rice. Also, the rice varieties exhibiting less retrogradation in cooled cooked rice revealed higher hot viscosity and lower cool viscosity of rice flour in amylogram. The sponginess of cooled cooked rice was closely associated with magnesium content and volume expansion of cooked rice. The hardness-changed ratio of cooked rice by cooling was negatively correlated with solids amount extracted during boiling and volume expansion of cooked rice. The major physicochemical properties of rice grain closely related to the palatability of cooked rice may be directly or indirectly associated with the retrogradation characteristics of cooked nce. The varietal difference in retrogradation of cooked rice can be effectively classified by scatter diagram on the plane of upper two principal components based on some retrogradation properties of cooked rice. The deteriorated structural change in cooled cooked rice by observing through the scanning electron microscope was more conspicuous in the fastly retrograded cooked rice than in the slower one.

Excess nitrogen (N) uptake of rice, which could cause much lodging, disease and reduction of rice quality, could be occurred at the paddy field with previous upland condition at which much soil N could be mineralized by soil-drying effect. N fertilizers of 0, 3, and 6 kg N $10a^{-1}$ were applied to early-maturity rice, cultivar Joanbyeo at the paddy field of first and second year after upland condition, and rice growth and nitrogen uptake were investigated to know the increase of rice N uptake at the paddy field with previous upland condition for one-year. Total dry matter (DM) and N uptake of rice at the paddy field with previous upland condition increased more than continuous paddy field. Total DM and N uptake of rice at the paddy field with previous upland condition increased linearly to N fertilizer 6 kg $10a^{-1}$ at the paddy field owing to vigorous growth compared to continuous paddy field. Rice N uptake was higher at the paddy field of the first year than the second year after upland condition in considering N uptake at the plot of no N fertilizer. Vigorous growth at the paddy field with previous upland condition resulted in higher rice yield which was related with high panicle and spikelet, but much N fertilizer as much as 6 kg $10a^{-1}$ at the paddy field with previous upland condition resulted in higher lodging and protein content of brown and milled rice. Particularly, protein content of brown and milled rice increased more when the same N fertilizer was applied two times splitly at transplanting and panicle initiation stage than when N fertilizer was applied one time at transplanting as basal N. N application with under 3 kg $10a^{-1}$ as only basal N was recommended at the paddy field with previous upland condition to obtain high quality rice without lodging.
This study was carried out at the Chuncheon Substation, National Institute of Crop Science to determine the effect of cold water irrigation on the milling and polished quality of rice, as well as its physicochemical and amylogram characteristics, and palatability Chilling by Irrigation of cold water $(17^{\circ}C)$ induced delay of days to heading, reduction of culm length, inferiority of panicle exsertion and high sterility of panicle. Head rice ratio was decreased, while the percentage of chalky and creak rice increased with increasing sterility over from 20%. Protein content was gained 0.9-2.0% more than, while whiteness and palatability of the milled grain were reduced under cold water irrigation treatment. Significant decrease in maximum viscosity and breakdown viscosity of rice flour was investigated under cold water treatment by amylogram analysis, while the initial gelatinization temperature and setback viscosity were increased. Sensory panel test showed that the palatability of cooked rice was unfavorable and its stickiness was lower compared with that under normal condition. Differences in the aroma of cold-treated and untreated cooked rice were not performed significantly.
'Jungmo1033', a japonica rice variety, was developed by the rice breeding team at the National Institute of Crop Science (NICS) in 1992. It is derived from a cross between a native variety 'Jagwangdo', which has translucent milled rice and medium maturity; and 'Hwayeong', which is an elite line with bacterial blight resistance and mid-late maturity. The heading date of 'Jungmo1033' was August 10 in the middle plain area of Korea, which was two days later than that of 'Hwaseong'. 'Jungmo1033' has a culm length of 79 cm, which was 5 cm shorter than that of 'Hwaseong', and 105 spikelets per panicle. 'Jungmo1033' showed resistance to bacterial blight (K1, K2, and K3 races) and stripe virus, but susceptibility to the K3a race of bacterial blight, dwarf and black-streaked dwarf viruses, and planthoppers. The milled rice of this variety exhibited translucency and a medium short grain shape. It had an excellent appearance and lower amylose content (19.1%) than that of 'Hwaseong'. The characteristics related to grain milling were better than those of 'Hwaseong', especially head rice milling recovery ratio and head rice ratio (94.8%). 'Jungmo1033' showed a milled rice productivity of 5.38 MT/ha at 11 sites under ordinary cultivation conditions. (Registration No. 5723)
"Samkwang1," a japonica rice variety, was developed as a cross between "Samkwang" and F1 of Suwon152 (IT008283), which has a medium maturing and lodging resistance and Samkwang (IT284608), a high quality variety with bacterial blight resistance and mid-late maturing property by the rice breeding team at NICS in 2015. The heading date of "Samkwang1" was August 8 in the middle plain area, which was 2 days early than that of "Hwaseong." "Samkwang1" had a culm length of 77 cm, which was 7 cm shorter than that of "Hwaseong," and it had 128 spikelets per panicle. The viviparous germination rate of "Samkwang1" was 2.1%. "Samkwang1" showed resistance to blast, bacterial blight (K1, K2, and K3 race) and stripe virus, but was susceptible to the K3a race of bacterial blight, dwarf and black streak dwarf viruses, and plant hoppers. The milled rice of this variety exhibits translucent and medium short grains. The cooked rice grains of "Samkwang1" have an excellent palatability index (0.35) and lower protein content (6.2%) than that of "Hwaseong." The characteristics related to grain milling were better than those of "Hwaseong," especially the head rice milling recovery ratio and head rice ratio (94.2%). "Samkwang1" showed 5.62 MT/ha of milled rice productivity at 11 sites under ordinary cultivation conditions (Registration No. 6798).

In order to investigate the effects of continual pre-plant application of liquid pig manure (LPM) on growth and quality of rice in double cropping system of rice and malting barley, the liquid pig manure was applied after harvesting rice and malting barley for 3 years. Field experiment was designed with non-fertilizer, chemical fertilizer (CF) 100% recommended by soil testing, rice (LPM 50%+CF 50%)+malting barley (CF 100%), rice (LPM 50%+CF 50%)+malting barley (LPM 50%+CF 50%), rice (LPM 100%)+malting barley (CF 100%) and rice (LPM 100%)+malting barley (LPM 100%). The yield of rice was increased by 13% with increasing culm length and No. of panicle per hill as 482 kg $10a^{-1}$ in rice (LPM 100%)+malting barley (LPM 100%) plot compare with 427 kg $10a^{-1}$ in rice (CF 100%)+malting barley (CF 100%) plot. Whereas, lodging index was high in rice (LPM 100%)+malting barley (LPM 100%) plot by increasing of internodes length from 3rd to 4th and decreasing of breaking strength. When the quality of milled rice was compare with rice (CF 100%)+malting barley (CF 100%) plot, it was decreased by increasing of protein contents and decreasing of rate of perfect grain in rice (LPM 100%)+malting barley (LPM 100%) plot. The content of amylose was not significant by 19.4~22.0%. Toyo-taste value was not different in LPM 100% and CF 100% plot. Rice could be grown with only liquid pig manure 100%, but considering yield and quality of rice and lodging risk, basal fertilization by LPM 50% and top-dressing by CF 50% application was recommended for rice cultivation.
This study was carried out to compare the grain quality under lodging time and grade at ripening. Ripened grain ratio and 1000-grain weight were higher with lodging of plants at $45^{\circ}$ angle from the ground and increased with crop development. The number of spikelets, as well as the protein and amylose content of the grains, were higher in plants under severe or complete lodging than those under lodging at $45^{\circ}$ angle from the ground. Palatability and sensory evaluation values were higher in plants under lodging at $45^{\circ}C$ angle from the ground than those under complete lodging. Brown rice: rough rice ratio was higher with lodging of plants at $45^{\circ}C$ angle from the ground and increased with crop growth. Milling recovery and milled rice recovery were higher with lodging of plants at $45^{\circ}C$ angle from the ground, whereas chalky grain, cracked grain and damage grains were higher at complete lodging.
This study was conducted to establish the post-harvest management system in rice. Harvested hulled rice was gathered into large-scale bag and combine bag, in which the rice quality and the influence on quality change were investigated on various storage periods and moisture contents. Moisture content of hulled rice ranged from 23.7% to 28.8% on different harvest times, which grew lower as harvesting time was delayed. When desiccation was retarded hulled rice in large scale bag was changed in color and emitted an of offensive odor in 3 days and that in combine bag showed similar symptom in 4 days. Inner temperature in large scale bag was changed a lot when the storage period was prolonged and also the moisture content was higher while that in combine bag increased regularly corresponding to the moisture content at the time of harvest. Moisture content of hulled rice stored in large-scale bag increased 2 days after harvest and the more moisture content showed the more increased tendency, while in the case of combine bag the moisture content was not changed much whether the hulled rice contained low or high moisture content in harvesting. As desiccation was delayed fatty acid increased much more in large-scale bag than in combine bag even though protein and amylose contentwere not changed. As desiccation was delayed more and hulled rice contained moisture more in harvesting head rice ratio of brown rice decreased and green-kerneled rice and damaged grain ratio increased and quality of milled rice also became deteriorated. As a result, desiccation day to minimize the deterioration of rice quality was estimated 1-2 days in large scale bag and 2-3 days in combine bag after harvesting.
To develop a new instant pumpkin gruel food, this study investigated the dried powder and gruel quality characteristics depend on drying method. The pumpkin powder was dried by infrared and freeze drying, and then milled to 80 mesh, after which the manufactured gruel was mixed with glutinous rice by heating. The gruels prepared by dried pumpkin powder were compared with steamed and freeze dried powder as a control, the crude protein and total sugar contents were high in the infrared drying powder, but freeze drying kept more carotenoid content. Soluble solid of gruel was higher in the freeze dried powder, and steam treated powder showed increased L and b values. Sensory test was carried out to select proper drying methods with 5-point scale. The gruel with freeze dried powder gained the highest score in overall quality. These results suggest that freeze drying could be used for manufacturing high quality instant pumpkin gruel.

'Gangbaek' is a japonica rice variety developed and registered by the rice breeding team of Department of Rice and Winter Cereal Crop, NICS, RDA in 2006. 'Gangbaek' was derived from a cross between 'Suweon345' with good grain quality and 'DV85' resistant to bacterial blight, $K_{3a}$. $F_1$ plants were grown in the greenhouse in winter of 1992/1993 and backcrossed with 'Suweon345' as the recurrent parent. Plants resistant to $K_{3a}$ race of bacterial blight (BB) were selected from $BC_1F_1$ to $BC_4F_1$ and used as parents in the backcrossing processes. This variety has about 120 days growth duration from transplanting to harvesting in west-southern coast and Honam plain of Korea. It is about 69 cm in culm length and tolerance to lodging. In reaction to biotic and abiotic stresses, it shows moderately resistance to blast, and resistance to bacterial blight pathogen, $K_1$, $K_2$, $K_3$ and $K_{3a}$, but susceptible to other major diseases and insect pests. The milled rice of 'Gangbaek' exhibits translucent, relatively clear non-glutinous endosperm and midium short grain. It has lower amylose content of 18.6% and protein content of 6.4% compared with 'Nampyeongbyeo'. The milled rice yield performance of this variety is about 5.28 MT/ha in local adaptability test for three years. This cultivar would be adaptable to the bacterial blight-prone area in the south-western coastal and Honam plain of Korea.
