  • Because excessive consumption of sugar-sweetened beverages may reduce the quality of nutritional intake, this study examined the consumption patterns of commercial beverages, lifestyle, dietary habits, and perception of sweet taste. Participants were 407 male university students in Kyeooggido, Korea, and information was collected by self-administered questionnaire. Among them, 58 nonsmokers volunteered to participate in the taste test. Participants were divided into three groups according to the frequency of commercial beverage consumptions: 120 rare (< 1 serving/week), 227 moderate (1-3 servings/week) and 133 frequent (> 3 servings/week) consumption groups. More subjects from the rare consumption group chose water, tea, and soy milk, and more from the frequent consumption group chose carbonated soft drinks and coffee (P=0.031) as their favorite drinks. Frequent consumption group consumed fruit juice, coffee, and sports and carbonated soft drinks significantly more often (P=0.002, P=0.000, P=0.000, respectively), but not milk and tea. Frequent consumption group consumed beverages casually without a specific occasion (P=0.000) than rare consumption group. Frequent drinking of commercial beverages was associated with frequent snacking (P=0.002), meal skipping (P=0.006), eating out (P=0.003), eating delivered foods (P=0.000), processed foods (P=0.001), and sweets (P=0.002), and drinking alcoholic beverages (P=0.029). Frequent consumption group tended to have a higher threshold of sweet taste without reaching statistical significance. The results provide information for developing strategies for evidence-based nutrition education program focusing on reducing consumption of unnecessary sugar-sweetened commercial beverages.

  • The present research was designed to evaluate the effects of pre and post-partum energy level and feeding pattern on the performance of crossbred dairy cows and their calves under farm conditions. A total of 16 crossbred dairy cows were divided into two equal groups on the basis of their body weight and milk production. One group was given 30% less and the another was given 30% more energy than MAFF's (1984) recommendation. After calving all cows were given same ad.libitum diet to assess the effects of feeding during pregnancy on their performance. It was observed that just before calving cows on low energy group gained less (p<0.05) weight than that of the cows on high energy group (12.9$\pm$11.71 vs. 42.25$\pm$12.74 kg/cow. Birth weight of calves of low energy group was lower (p<0.05) than that of the calves of high energy group (17.87$\pm$1.78 vs. 20.73$\pm$2.24 kg/calf). Cows that were on low pre-calving dietary energy level produced less milk during lactation than the cows of high energy pre-calving group (3.45$\pm$0.75 vs. 4.27$\pm$0.79 lit./cow). No significant difference was noticed on calf growth rate and reproductive parameters of cow. Energy level that was 30 % less than MAFF's (1984) recommendation was found to be very low and not suitable for our crossbred cows during their last three months of pregnancy.

  • To study the effect of wheat bran and lactic acid producing bacteria (LAB) on the performance of calves, 20 crossbred male cattle calves (day old), distributed into two groups were fed on calf starters containing 50 or 0% maize grain, along with green berseem ad libitum and milk as per body weight. Each group was further divided into two sub groups and one subgroup of each group was supplemented with mixed culture of LAB (Lactobacillus acidophilus L. casei, L. Jugarti). Milk feeding was discontinued after 8 weeks of age. The addition of culture increased (p<0.05) DM intake in calves receiving grainless diet from eighth week to the thirteenth one. There was about 21% higher body weight gain and 14% lower feed : gain ratio in culture supplemented calves. DM digestibility was significantly lower (p<0.05) in calves getting grain without culture. The crude protein NDF and ADF digestibility was higher (p<0.05) in grainless than the grain fed group. No major change on rumen fermentation pattern among different treatments was found. The concentration of total volatile fatty acids (TVFA) and protozoa count was higher (p<0.05) in grain fed group. However, lactic acid concentration was higher and rumen pH was lower due to culture feeding. The incidence as well as severity of diarrhoea was reduced in culture supplemented group. The results indicate that crossbred calves can be reared successfully on grainless diet and berseen fodder. The performance of calves was also improved by LAB supplementation.

  • The objective of the paper was to study the drinking and other related behavior of dairy cows (Bos taurus). There were 142 Holstein dairy cows observed and compared in this study. The experiment was designed on the basis of two different housing systems (wet pad with forced ventilation cooling house and open house); two different seasons (winter and summer); four different stages (high milk yielding cows, low milk yielding cows, dry cows, and heifers); and grouping (home and visitor animals). All cows had free access to water. Dairy cows spent 13.8 min/day drinking in wet-pad house and 11.7 min/day in open house. owever, there was no significant difference in the duration of water drinking between these two housing systems (p>0.05). The water consumption was significantly higher in wet-pad housed animals (68 L/day) than open-housed animals (31.5 L/day) (p<0.05). A significant interaction between housing and grouping (p<0.05) was found. Home and visitor animals spent more time drinking in open house, wet-pad house, respectively. A highly significant interaction was found between housing and drinking time during the day (p<0.001). Animals in open house drank more during the morning (6:00 to 10:00 h), whereas wet-pad housed animals drank in the afternoon (14:00 to 15:00 h) and evening (18:00 to 20:00 h). The average time a cow spent in drinking in summer was not ignificantly different from that of drinking in winter. However, the water intake was significantly higher in summer (61.9 L/day) than in winter (38.6 L/day) (p<0.05). Drinking activity showed a highly significant interaction between season and physiological stage (p<0.01). High milk yield cows spent more time drinking in summer than in winter, whereas cows in all other stages followed the opposite drinking pattern. Grouping exchange did not influence the drinking behavior of dairy cows in either season (p>0.05); both home and visitor animals spent almost the same time in drinking water. A strong significant interaction between season and time during the day was found(p<0.01), suggesting that animal's high drinking frequency occurred during the daytime for both seasons, with a peak midday in winter and two peaks at 10:00 h in the morning and 19:00 h in summer. Thus, drinking behavior was associated with the cooler time of day in summer and with the warmer hours of day in winter. High and low milk yielding cows and heifers spent 15.3 min/day, 14.3 min/day, and 12.8 min/day, respectively, in water drinking activity, but there was no significant difference among them (p>0.05). There was, however, a significant difference in water drinking activity found in dry cows, which spent less time in drinking at 8.2 min/day (p<0.05).

  • Energy obtained by grazing cattle in oil palm plantations is usually used for maintenance of body functions, the construction of body tissues and pregnancy, the synthesis of milk and the conversion to mechanical energy used for activities such as walking, eating and others. In this study, attempt was made to estimate metabolizable energy (ME) requirement of grazing cattle. Models of ME requirement (MER) for maintenance, gain, pregnancy, lactation and activities were developed. ME system and units were used because of wide recognition. Estimation of ME intake in grazing cattle was expressed as MEVI = $14.58{\times}VI{\times}DMD$, and under grazing condition MEVI = $MER_i$. MER was expressed as a function of net energy(NER, MJ) required for the i'th body function. Coefficient of efficiency for conversion of ME into net energy(ki) was adopted from literatures. Quantifying of ME requirement for Kedah-Kelantan cattle under grazing condition was made by using equation MERM = NEM / kn. The estimated values of MER for Kedah-Kelantan cattle is quite reasonable if compared with other estimates as reported in literatures from stall-fed animals. Dynamic MER models for grazing herd was developed in order to estimate ME requirement for maintenance and productions. These ME requirement models can be used for prediction of energy utilization pattern of the herd in the grazing systems.

  • With the prosperous economy, the status of diet and nutrition among the urban and rural Chinese population has been improved significantly. This paper will focuses on three main surveys in China. (1)'Food and Nutrition Surveillance System in China': Phase I focused on analysis of previous data. Phase II was a pilot survey initiated in Beijing, Hebei, Heilongjiang, Ningxia, Zhejiang, Guangzhou, and Sichuan in 1990. (2) 'The China Health and Nutrition Survey' is an ongoing longitudinal project covered 8(9) provinces in 1991,1993,1997,2000. This paper will analysis the adults aged 18 45 of 1991, 1993, 1997, and 2000. (3) Survey on the status of nutrition and health of the Chinese (2002) is an across sectional study covered 31 provinces, autonomous region and the municipalities. The data was used to analyze the status of food consumption and dietary nutrients intake of Chinese population. In the past ten years, the prevalence of malnutrition and nutrition deficiency has been continuously decreased. The consumptions of animal products, milk, and edible oil have been increased, while the dairy and legume products consumption decreased. The unbalance was showed with a downward trend in cereals, vegetables and fruits consumption and a significant increase in animal products and oil intake among urban people. Dietary pattern of some subjects went away to 'high energy density' diet. The deficiency of calcium, retinal and ascorbic acid etc, especially in the rural areas still exist. China is undergoing a remarkable, but undesirable, rapid transition towards a stage of the nutrition transition characterized by high rates of DR NCDs in a very short time. China is facing the dual challenges of nutrition deficiency and nutrition imbalance. The results can help to understand the dietary structure and the status of nutrition among Chinese people over the past years. It will provide the basis for formulating relevant state policies.

  • This study was conducted to develop the standard breakfast menu for those weak groups having insufficient breakfast intake. The following three target groups are classified as: 16-19 years old high school male student, 20-29 years old female who have job or college students, 20-29 years old male or female who have job (double income family). While developing menus for each target groups, we applied several basic guidelines for meal planning as follows: Nutrient intake level was set to $\graction one-Third$ of RDA, while the energy level to $\fraction one-quarter $ of RDAs. Most Sequent meal pattern of Koreans was adapted; Suitabilities of appropriate serving size and cost for middle-income families were considered; Domestic foods and ingredients were used. We developed 24 menus summed by 2 menus for each season and three target groups. When evaluating the menus, most of the breakfast menus were sufficient of nutrients as a meal for the subjects. Three food groups such as grain/starch group, meat/fish/egg/bean group, vegetable/fruit group were included in all menus. Even though milk/dairy products group was not excluded for some menus, other calcium substitutes like anchovies were used. Oil/nut/sugar group was used to a minimum. The average number of foods for each menu was 12.8, which ranged from 10 to 17 depending on the menus. The average weight of the menus including soup was 822 g, 633 g and 730 g for each target group, respectively. The average price of the menu ranged from 2,000 to 3,500 won per person. The above results could be applied at home as well as foodservice institutes and furthermore could offer information for developing breakfast-substituting food products.

  • Objectives: Recommended Menu (RM) prepared according to the Target Pattern expected to meet the dietary reference intake (DRI) of nutrients. Nutritional adequacy of RM in 'DRI for Koreans 2015' were analyzed to verify whether such expectation was fulfilled. Methods: Dishes in RM are categorized by 5 food groups, and number and types of dishes for main meal and between-meals were analyzed. The energy and 12 nutrients (protein, dietary fiber, Ca, P, Fe, Na, K, vitamin A, thiamin, riboflavin, niacin and vitamin C) contents in 10 RMs were calculated using the food composition table (CD) in 'DRI for Koreans'. Energy, energy contribution ratio, and nutrient contents in 10 RMs for 18 age groups were evaluated based on the 'DRI for Koreans 2015'. Results: Number of dishes per meal were 4.83, and representative table setting consisted of cooked rice + soup (or stew) +3 side dishes. Energy contents of RM were 75~109% of estimated energy requirement (EER). None of the RM met the DRI of all 12 nutrients examined. Calcium was the most insufficient nutrient. Only 1-2 years' RM met the DRI, all the other RMs did not meet the calcium DRI. Dietary fiber and potassium contents were also insufficient in most RM. In adult male's RM, only 1 nutrient, i.e. calcium did not meet the DRI, but in female adult's RM, 5~6 nutrients did not meet the DRI. Energy contribution ratio of carbohydrate, protein, and fat in RM were 59.0~70.4%, 15.7~17.5%, 12.1~23.5%, respectively. And 4 RMs out of 10 exceeded the upper limit of acceptable macro-nutrient distribution range (AMDR) of carbohydrate and 3 RMs out of 10 RM were below the lower limit of fat AMDR. Contribution ratio of nutrients were ${\geq}40%$ by food groups were as follows: grain group in energy and carbohydrate; meat fish egg legume group in fat, protein, and niacin; vegetables group in dietary fiber, vitamin A, and vitamin C; milk dairy products group in calcium. Conclusions: RM prepared according to the Target Pattern did not meet nutritional adequacy as expected. Especially calcium, potassium, and dietary fiber contents are needed to be increased in many RMs. Further, energy content in RM needs to be adjusted for fat sugar food group assigned in Target Pattern and condiment.

  • This study was aimed at comparing the dietary patterns of university female students according to their residence type. As for subjects, one hundred and twenty students of Kongju national university were chosen as a total. They were devided into three groups ; those who live in family home, or university dormitory, or self-boarding house. In this study, intakes of food and nutrient and dietary behaviors of each group were investigated through two-day food records and questionnaire. The result was that mean daily intakes of calcium and iron were lower than RDAs in all groups. According to residence type, subjects of family home and self-boarding seemed to have more serious problem in the nutrients mentioned above considering the proportions of less than 2/3 of RDAs. Especially, iron status was poorer than any other nutrients in the aspects of this proportion and food source. Iron was taken largely from vegetable foods which were recognized as a source of low bioavailability of iron. The average distribution ratios of breakfast, lunch, dinner and snack to total calorie intake was 22, 29, 30 and 19. Thus, it proved that breakfast tended to be more negligent than any other meals, and that snack was an important means to give nutrients for subjects. This meal pattern might be one of the factor for the decrease of the dietary quality. Processed foods were founded to be an important source for providing nutrients. Percentages of calorie, carbohydrate and fat consumed by processed foods to total nutrients. Percentages of calorie, carbohydrate and fat consumed by processed foods to total nutrients intake were 30.6, 29.5 and 46.2. However, other nutrient intakes from processed foods such as vitamin and mineral were small. And processed foods which give nutrients were mainly cereal products like ra myon, bread, and milk and milk products. Consequently, processed foods seemed to be selected as a combinient substitute food which supply calorie to fill their hunger. According to the living type, dormitory students had them more frequently than any other groups. Food habit score was within the category of poor or fair. Particularly, the score of self-boarding students was the lowest of groups(p<0.05). The major dietary problems were small or overating, missing meal and irregular eating. The degree of these problems was a little different among groups(P<0.01). Nineteen kinds of food were consumed per day, and family home and self-boarding students had foods less variously than dormitory students(P<0.05). Proportions of skipping breakfast, lunch and dinner were 20.8, 12.5 and 8.3%. Accordingly, breakfast was missed more often than any other meals. And self-boarding students missed breakfast more often than any other groups. As a conclusion, subjects should take more calcium and iron, and eat diverse foods to improve their nutritional status. And it is also necessary that breakfast should be regarded more importantly, and that processed foods should be taken considering nutritional balance. In view of residence type, subjects of family home or self-boarding had more dietary problems than dormitory subjects. Thus, these results suggest that university female students might have low ability of meal management, and dietary patterns were different by their residence type. Therefore, nutrition education for them should be carried out with respect to dewelling environment.
