This study aimed to examine associations between milk intake and metabolic syndrome. The subjects included 1,928 males and 3,103 females, aged 19 to 64 years, from the data of 'The Korean National Health and Nutrition Survey 2007-2010'. Daily intake of milk and dairy products was obtained by a 24 hour dietary recall method and divided into two categories by equivalent weight of one serving. The average individual intakes of milk and dairy products were 59.4 g and 74.1 g per day respectively. Milk intake was inversely associated with metabolic syndrome (OR: 0.69, 95% CI: 0.54~0.89), central obesity (OR: 0.75, 95% CI: 0.62~0.91), and hypertriglyceridemia (OR: 0.73, 95% CI: 0.59~0.90). The total intake of dairy products was also inversely associated with metabolic syndrome (OR: 0.74, 95% CI 0.60~0.92), central obesity (OR: 0.73, 95% CI: 0.62~0.86), hypertension (OR: 0.80, 95% CI: 0.65~0.99). The association between intakes of milk and dairy products and metabolic syndrome was significant in women, but not in men. These results indicate that increased consumption of milk and its products is associated with a reduced likelihood of metabolic syndrome and metabolic syndrome risk factors. Further research on causal relationship and dose-response association between milk intake and metabolic syndrome risk is necessary prior to applying the observed results in nutrition policies and programs to prevent the metabolic syndrome.
The international dairy federation's main objectives are to enhance the international dairy market and industry by producing an annual world dairy situation report. The IDF National committee and other international contributors provide a questionnaire to be completed for the country reports on top of other various official studies. Through this report, one can understand the full overview of the global dairy market and specified dairy studies across the world. Due to the economic boom of many developing nations, in 2014 the dairy market saw great increase in the total milk production. The estimated volume is at 802 million tons which is a 3.3% increase from the previous year. The world dairy trade states that due to the abundance of milk, other bi-products such as dairy powder and butter production increased as well. Generally, there is an increasing trend for the demand and supply of milk and all dairy products in the international dairy market.
In Korea, there are a couple of risk assessment organizations: The Animal Plant and Fisheries Quarantine and Inspection Agency(QIA) and the Korea Food and Drug Administration (KFDA). The major food laws include the Food Sanitation Act (FSA), the Livestock Product Processing Act (LPPA), and the Agricultural Products Quality Control Act (APQCA). Milk and dairy products are mostly controlled by the Food Sanitation Act and the Livestock Product Processing Act. This study was carried out to estimate the current standard methods of foodborne pathogens for dairy products, comparing the Livestock Products Processing Act with the Food Sanitation Act. The standard methods of foodborne pathogens for dairy products are composed by growth culture, isolation culture, and identification, however, standard methods of QIA and KFDA are different at the using of medium and inspection stage. Therefore, consolidation of risk management and risk assessment methods are regarded important to provide safe dairy products to consumer.
The consumption of natural cheese in Korea has dramatically increased since 1997. However, most of the cheeses consumed in Korea are imported. Thus, surplus milk has accumulated in Korea. To solve this problem, the Ministry of Agriculture, Food and Rural Affairs established a policy to create a farmstead dairy industry. Although the law governing the industry was established in 2016, food safety guidelines have not been prepared. Milk and cheese are prone to contamination with mycotoxins such as aflatoxin M1 and ochratoxin A, antibiotic residues such as penicillin and tetracycline, and pathogenic bacteria including Listeria monocytogenes, Escherichia coli, Salmonella, and Staphylococcus aureus. L. monocytogenes infections have a very high mortality rate; hence, special attention should be paid to preventing contamination of milk and cheese with this organism. To ensure the microbiological safety of farmstead dairy products, the HACCP model has been used. However, this model is not suitable for current processing environments of farmstead dairy products because of the small size of the operations. In addition, scientific data on the microbiological safety of farmstead dairy product are limited and are urgently needed.
The development of functional foods started booming from several years ago in the world. The size of functional materials are in the range of micrometer level. This size can be much smaller into nanometer level to be more effective. We face some problems from the materials, such as flavor, taste, color, viscosity, etc. in functional materials. The problems can be solved by micro / nanoencapsulation technique. This paper showed some results of the research related on the technique for functional milks and dairy products. The nono / microcapsules are the form of liquid instead of solid. Coating materials used were fatty acid esters, and core materials were lactase, iron, ascorbic acid. isoflavone, and chitooligosaccharide. The ranges of capsules are from 100 nm to 200 ${\mu}$m. The sample milks added nano/microcapsules were homogeneous and prevented the defects of core materials. It was observed that nano / microcapsules in milk and dairy products were effective as functional material without defaults. It was indicated that targeted functional foods can be developed further in various foods by nanotechnology.
본 연구는 충남 공주지역 중학교에 재학 중인 1~3학년 남녀 학생 364명을 대상으로 중학교 현행 가정교과서의 우유 교육 내용을 분석하고 우유 유제품 관련 섭취 실태, 소비행동, 인식 및 영양지식을 조사함으로써 가정교과서의 우유 내용이 우유를 바르게 섭취하도록 돕고 중학생의 우유 섭취 향상을 위한 기초자료를 제공하고자 실시하였다. 현재 중학교에서 적용 중인 가정교과서의 우유 교육 내용은 우유의 영양성분, 식단작성을 위한 우유 유제품 섭취 방법, 선택과 보관방법에 대한 일반적 내용이어서 청소년의 우유 유제품 소비 실태를 반영하지 못하는 것으로 파악되었다. 조사대상자에서 우유 권장수준인 하루에 2컵을 충족하는 비율은 30.5%뿐이었으며 성별에 따른 차이가 없이 전체적으로 우유 섭취량이 낮았다. 우유를 마시는 주된 이유는 '키 크게 하려고'가 가장 많았고, 그 다음으로 '갈증을 해소하려고', '맛이 있어서'가 많았으며 성별에 따른 차이가 있었다(p<0.01). 우유를 마시는 방법은 우유만 마신다는 비율이 66.8%로 높았으나 그 외에 시리얼이나, 제티 등을 섞어 마시고 있었으며 성별에 따른 차이가 있었다(p<0.05). 학교우유급식에 참여하지 않는 비율이 23.1%이었으며, 만족하는 비율은 58.9%로 높지 않았다. 유제품 중 가장 즐겨 먹는 것은 아이스크림이었고 그 다음으로 요구르트, 치즈로 나타났다. 우유 선택시 '맛', '유통기한'을 중시하였고 '영양'을 중시하는 비율은 낮았으며 성별에 따른 차이는 없었다. 우유 유제품 소비촉진을 위해 '더 엄격한 위생관리'를 원하는 비율이 가장 높았고, 이어서 '맛의 개선', '제품 종류의 다양화' 등이 높았으며 성별에 따른 차이가 있었다(p<0.05). 좋아하는 우유 용기는 종이팩이 59.3%로 높았고 그 다음이 플라스틱병, 유리병이 높았으며 성별에 따른 차이가 있었다(p<0.001). K-MILK 인증마크를 안다는 비율은 28.8%뿐으로 낮았다. 그 의미를 '국내산 우유사용'으로 알고 있는 비율이 높았으며 성별에 따른 차이는 없었다. 중학교 가정교과에서 우유 관련해 원하는 수업방법은 목장체험 등 체험학습이 가장 높았고 그 다음으로 실험실습, 강의식 등으로 나타났으며 성별에 따른 차이가 있었다(p<0.001). 우유 유제품에 대한 인식은 보통 정도이었으며 남자가 여자보다 긍정적이었다(p<0.01). 우유 유제품에 대한 영양지식은 양호한 수준이었으며 여자가 남자보다 높았다(p<0.01). 따라서 중등학교 가정교과서의 우유 교육 내용을 청소년의 소비 흐름을 고려해 구성하고 실생활 중심의 학습이 될 수 있도록 돕는 수업방법을 적용함으로써 청소년의 바른 우유 유제품 이용으로 연결되도록 지원하는 것이 필요하다고 하겠다. 또한 설문 조사 결과 우유 섭취량을 늘리는 것이 시급하였으며 이를 위해 우유 맛의 개선, 우유와 동반간식을 제공하는 다양한 상품 개발, 우유 용기 및 용량 개선, 우유 섭취에 기여도가 높은 학교우유급식의 참여 제고를 위한 독려 및 선호도 높은 우유 유제품의 병행 제공 등이 필요하다고 하겠다.
Efforts to have children consume milk continue across the world for the sufficient supply of calcium and protein. This study examines the frequency and amount of dairy milk and the recognition, acceptability, and knowledge of milk and dairy products by considering fifth- and sixth-graders in Hwaseong, Korea. The acceptability of milk and dairy products measured based on a five-point Likert-type scale was assessed to determine its correlations with breakfast frequency, the frequency of milk intake, and milk knowledge. According to descriptive statistics, 47% and 53% of the subjects were fifth- and sixth-graders, respectively, 53% and 47% were male and female, respectively, 45.3% and 51.2% had mothers in their thirties and forties, respectively, and 57% had working mothers. Breakfast frequency was 5.2 and 5.3 times per week, and milk and dairy intake was 4.6 times. The milk knowledge score was 5.3 out of 10 points. The average daily intake of milk was a cup (55.1%), and a vast majority preferred white milk (68.6%). Ice cream bar type (4.49 points) and cone type (4.48 points) showed the highest acceptability, and breakfast frequency was positively correlated with white milk and cheddar cheese (p<0.01). Daily milk intake frequency was positively correlated with white milk and fortified milk. Milk knowledge was positively correlation with white milk, fortified milk, functional yogurt (p <0.05), fermented milk, and cheese (p<0.01). The higher the breakfast frequency, the more likely the intake of white milk (p<0.01). An increase in milk intake increased milk knowledge (p<0.05). The higher the level of knowledge, the more likely the intake of fortified milk and the frequency of milk intake. These results suggest that school lunch milk may increase awareness and milk intake through continuing education in milk knowledge. High acceptability scores for white milk, fortified milk, and fermented milk indicate their suitability for school milk consumption.
Korea dairy industry has a long and chronic problems to consume raw milk , those are surplus milk and decline the market milk consumption continued about 10 years. This study was aim to propose and to find the solution for dairy industry problems. After WTO system, with the importation of dairy products, domestic milk production has fell into the situation of excess supply and huge inventory of dried milk, the milk powder stocks have increased since 2002. That made a chronic decline milk consumption in Korea. The core of chronic problem of Korea dairy industry is the decreasing in market milk consumption. If they have a settlement of any other way using their raw milk to process and consumption to market milk, there will be a solution to solve the chronic problems in this situation. Especially, that will be a development of small farm scale natural cheese production and consume. This may be lead a situation of increase the raw milk consumption, because natural cheese making needs much of raw milk more than market milk. But there are very low technical level of farmers cheese making status, so they need a cheese making educational program for their commercial level of cheese products. Under these situation, there are needed a way out of educational system for the dairy farmers to obtain the high level of cheese making technology from the trustable and scientific organization. The natural cheese making technique of dairy farmers should be accumulated to get the consumers' solid recognition of high quality of natural cheese as LOHAS(Lifestyle Of Health And Sustainability) foods.

Vietnam has become one of the largest markets in Southeast Asia, with huge demand for many kinds of consumer goods, including dairy products. Although the domestic industry of producing and distributing milk has flourished dramatically in recent years, Vietnam still heavily hinges on dairy imports. The total value of milk products in 2020 exceeded 1 billion USD, leading to Vietnam being one of the 20 biggest importers of dairy milk globally. To explore this potential industry, we applied a multivariate linear regression model to investigate the milk consumption behaviors of Vietnamese adults. 2000 participants took part in our survey in which the products evaluated were Dielac Alpha - the most famous national powdered milk introduced in 2007 by Vinamilk. This product was designed for all ages, from children aged 0-6 to pregnant women or adults. The results indicate that the decision to purchase milk could be attributed to a host of factors. While price represents the most strongly influential factor, there might be variations according to consumer characteristics, namely age, marriage status, gender, and particular shopping behavior. From these findings, we propose some managerial implications for regulatory bodies and relevant enterprises to prepare appropriate policies and strategies for their business development.
This review highlights areas of interest in the cholesterol removal of milk and dairy products. The demand for cholesterol removal has increased due to consumer demand for cholesterol-reduced products. At present the best method for producing without changing flavor, taste and texture of the products is entrapping cholesterol by ${\beta}-cyclodextrin({\beta}-CD)$. Especially, crosslinking of ${\beta}-CD$ is important due to recycling that could be separated the ${\beta}-CD$ from treated cream or milk. The recycling can be up to 10 times with keeping the rate of cholesterol removal. Various functional milk and dairy products can be produced in this manner. This report reviews general information including methods of cholesterol removal, crosslinking of ${\beta}-CD$, and recycling of the ${\beta}-CD$ in milk and dairy products.
