The purpose of this study was to investigate dietary habits and food compliance in stroke patients. One-hundred sixty eight elderly stroke patients and 97 young patients with first -ever stroke admitted to Asan Medical Center between 1994 and 1998 were studied. Using a structured interview, we assessed food intake. food consumption frequency and compliance to low salt, low meat hight fish and high fruit and vegetable diets. These results were analyzed with X$^2$, t-tests, and analysis of variance (ANOVA) using the SAS package program. Salted food intake and cholesterol-containing food frequency were increased whereas frequency of fruits and vegetables intake was decreased in young stroke patients compared to the elderly. Meat intake and cholesterol-containing food frequency were increased in the males compared to the females in elderly stroke patients. and fish intake and cholesterol-containing food frequency were higher in the males than the females in the young. In patients with high economic status, frequency of fruits and vegetables was elevated. Also compliance the low meat and high fruit and vegetable diet in young patients was lower than that in the elderly. When the life-style risk factors influencing the food intake of frequency of fruits and vegetables was affected by education in young stroke patients. In elderly stroke patients, meat intake frequency of cholesterol-containing foods and fruits and vegetables were influenced by sex and /or income. Our results suggest that dietary intake of salt meat ,cholesterol-containing foods. fruits and vegetables in stroke patients may vary with age, sex the presence of risk factors or economic status therefore guidelines and nutrition education should by formulated to prevent stroke recurrence based on dietary habits and risk factors of individual patients.
The aim of this study was to investigate the effects of food behavior and life-style behavior on the health-status of male industrial workers in the Masan region. The average age of the 173 male subjects was 42.9 years and 59% of the subjects were labor workers, 25% office workers, and 70% of them earned 1 - 1.5 million won monthly. The subjects were categorized into one of three groups : normal group, health-concerned group, and disease-suspected group classified by the criteria of the data (blood pressure, blood glucose, blood hemoglobin, serum total cholesterol, and serum triglyceride) obtained from a health examination. Forty seven belonged to the normal group, 71 to the health-concerned group, and 55 to the disease-suspected group. The health-concerned group, and disease-suspected group had significantly higher systolic and diastolic blood pressure, blood glucose, and serum total cholesterol than the normal group, and the disease-suspected group showed a significantly higher serum triglyceride level than the normal and health-concerned groups. The disease-suspected group consumed carbohydrate foods, such as cereals more frequently and protein foods such as beans and eggs less frequently than the normal group and health-concerned group. However, there was no difference in nutrient intakes among the three groups. The disease-suspected group and health-concerned group smoked more cigarettes and drank more frequently than the normal group, and the disease-suspected group exercised less as compared to the normal group. The kinds of diseases diagnosed in the disease-suspected group were hypertension, hyperlipidemia, liver disease, and neurological disease. The results of this study indicate that nutrition education and monitoring should be implemented for industrial workers to prevent chronic diseases and to reduce medical cost for the treatment of disease.
Deep sea water exists at depths of over 200m under the sea. As no sunlight reaches it, photosynthesis does not take place within it, and it contains no organic matter. In addition, its temperature is maintained at a stable low level throughout the year, so it does not get mixed with the sea water on the surface. It contains a large amount of nutritious salts, whose cleanness is maintained. It is a marine resource that has matured for a long period of time. Research into deep sea water, which started in the 1970s, has been made around the whole world, including the USA and Japan. In Korea, research has been active in this area since 2000. As there has been a good amount of research into industrial applications for deep sea water, since 1993, patents for the relevant technologies have been applied. This paper intends to provide a resource to researchers of deep sea water, by summarizing of all domestic deep sea water-related patents applied with Korean Intellectual Property Office from 1993 to 2008. This research was conducted using a computer and KIPRIS Database owned by the Korea Institute of Patent Information. 'Deep sea water' was used as the search keyword. A total of 222 Korean patents relating to deep sea water have been registered on the basis of IPC. Of these, 126 patents relate to the manufacturing and the treatment of foods, foodstuffs, or non-alcoholic beverages(A23L), while 50 patents relate to the production for medical, dental, or cosmetic purposes(A61K). 38 patents relate to water purification, treatment of wastewater, sewage and sludge (C02F), while 8 patents relate to fishery and farming(A01K). In summary, it was found that studies for the practical use of deep sea water have been conducted in relation to the manufacturing and the treatment of foods, foodstuffs, beverages, and cosmetics.

The present study was designed to clarify whether scuba diving at 5 meters of seawater influences cerebral hemodynamics, hematological and biochemical variables. Twenty healthy young men well trained scuba diving participated in this study. The blood flow velocity in the right and left middle cerebral arteries (L-MCAV and R-MCAV), blood pressure (BP), heart rate (HR), CBC and differential count, prothrombin time (PT), activated partial thromboplastin time (aPTT), biochemical variables, D-dimer and interleukin-8 (IL-8) levels were determined before, immediately after scuba diving for 30 min, and after 30 min of rest (Pre-scuba, Scuba and R-30m, respectively). L-MCAV and R-MCAV tended to increase, but the only significant increase was in L-MCAV in Scuba. SBP and HR significantly declined in R-30m compared with those of Pre-scuba and the Scuba. IL-8 levels were elevated in Scuba and R-30m compared with that of Pre-scuba. In Scuba and R-30m, hematological variables except PT and biochemical parameters excluding glucose and lactic acid did not significantly changed in comparison with those of Pre-scuba. PT level at Scuba and glucose level at R-30m significantly declined in Scuba, while lactate level at R-30m increased compared with each in Pre-scuba. However, PT level at Scuba was within a normal range. These results suggest that scuba diving at 5 m of seawater for 30 min has no adverse effects, is safe and useful for improving health. However, further study must be performed to clarify the mechanism of elevated IL-8 level following scuba diving.
Objectives : "Donguibogam(東醫寶鑑)" is a medical book of the Joseon Dynasty compiled by Heo Jun and was first published in 1613. It recorded a great deal of prescriptions which contained pork and gave detailed explanations of parts of pork's natural properties and effects. Pork is widely used as a food ingredient in the world but the traditional medicine community has a contraindication of pork and traditional herbal medicines taken together. The aim of this study was to find the supports to develop pork functional foods for the treatment of diseases in "Donguibogam". Methods : Therefore we investigated the documents recorded in "Donguibogam" about usefulness of pork which were used for not only a food ingredient but also a medicine. Results : "Donguibogam" introduced 25 parts of pork including liver, kidney, stomach, bladder, heart etc, and a variety of taking ways i.e. common usages which are internal, external, common use, and aid use which cure a variety of diseases not a simple food but a therapies food. Conclusions : We confirmed that pork has been used to treat many diseases, so we propose to develop pork functional foods available for prevention and cure of certain diseases.
This study was conducted to find out the most suitable DNA isolation methods for PCR detection of foodborne pathogens. Four DNA isolation methods including Universal Genomic DNA Extraction Kit (TaKaRa), PrepMan Ultra (Applied Biosystems), boiling method and alkaline lysis method (w/PEG) were tested and compared. The Universal Genomic DNA Extraction kit (TaKaRa) was considered as the more efficient isolation method for Escherichia coli O157:H7 and Staphylococcus aureus in lettuce, fish and beef. Meanwhile to detect the foodborne pathogens directly from foods without enrichment, the four different buffers such as double-distilled water, saline, glycine-saline, glycine-saline with Tween-20 and beef extract were also evaluated. As a result, saline was more suitable buffer for E. coli O157:H7. And double-distilled water was more suitable buffer than saline for S. aureus, respectively

This study was carried out to compare the nutritional status with food preference of subjects in eight constitutional groups on the view point of constitutional medicine. The constitutions of 124 college women was classified by Kwon's theory. Food preference of the subjects was surveyed in accordance with the suggested foods for each constitution and the health status was investigated by Cornell Medical Index. The following determinations were also made to compare food preference score with the nutritional status : Hb, Hct, WBC, serum levels of albumin, protein, IgG, IgA, IsM, $C_3$, Triglyceride, cholesterol, and total lipids, and lipoprotein fraction ratio. The distribution of the constitution revealed that Jupito individuals accounts 51.6%, the most followed by ; Saturno, 21.8%: Hespero, 10.5%: Jupita, 8.1%: Hespera, 3.2%: Mercurio, 3.2%, no subject belonged to satura. There were no difference among constitutional groups in food preference score, health status and the values of most blood components. Only significant difference was that the percentage of mental complaints in Mercurio was lowest and serum IgG level in Jupito was the highest among groups. Correlation between values of blood component and food preference score shows variety of different trends. However, the results suggested that the better food consumption of the subjects was in accordance with the suggested foods for the constitution, the better the nutritional status of the subjects was.
Background: Oesophageal cancer presents high incidence rates in the so-called Brazilian-Uruguayan belt. Materials and Methods: The present study included 1,170 participants (234 cases and 936 controls) which were analyzed by unconditional multiple logistic regression in order to examine risk of oesophageal squamous cell carcinoma (OESCC) associated with several food groups. Results: Boiled red meat (OR 2.59, 95%CI 1.69-3.97), lamb meat (OR 1.64, 95%CI 1.07-2.51), processed meat (OR 1.49, 95%CI 1.01-2.21), whole milk (OR 1.78, 1.19-1.68), fresh vegetables and fruits (OR 0.42, 95%CI 0.27-0.63), mate consumption (OR 2.04, 95%CI 1.32-3.16), and black tea (OR 0.10, 95%CI 0.04-0.28) were significantly associated with risk of OESCC. Conclusions: Hot beverages (mate) and hot foods (boiled meat) appear to be important determinants in the risk of OESCC, allowing the penetration of carcinogens in tobacco and alcohol into the oesophageal mucosa.

Food-dependent exercise-induced anaphylaxis (FDEIAn) is induced by different types and various intensities of physical activity, and is distinct from food allergies. It has been shown that consumption of allergenic food followed by exercise causes FDEIAn symptoms. Intake of allergenic food or medication before exercise is a major predisposing factor for FDEIAn. Urticaria and severe allergic reactions are general symptoms of FDEIAn. Dermatological tests and serum IgE assays are the typical prescreening methods, and have been used for several decades. However, these screening tests are not sufficient for detecting or preventing FDEIAn. It has been found that exercise may stimulate the release of mediators from IgE-dependent mast cells that can result in FDEIAn when a certain threshold level has been exceeded. Mast cell degradation might be a major factor to induce FDEIAn but this has not been determined. A number of foods have been reported to be involved in the onset of FDEIAn including wheat, eggs, chicken, shrimp, shellfish, nuts, fruits, and vegetables. It is also known that aspirin increases the occurrence of type I allergy symptoms when combined with specific foods. Moreover, high intensity and frequent exercise are more likely to provoke an attack than low intensity and less frequent exercise. In this paper, we present the current views of the pathophysiological mechanisms underlying FDEIAn within the context of exercise immunology. We also present a detailed FDEIAn definition along with etiologic factors and medical treatment for cholinergic urticaria (UC) and exercise-induced anaphylaxis (EIA).
The identification of volatile constituents in foods is important in creating flavor compounds to improve the flavor of foods. This study was conducted to identify the flavor compounds in soybean sprouts cultivated with 4 different types of soybean seeds. A total of 52 flavor compounds were identified and composed mainly of alcohols (16), aldehydes (17), ketones (10), acids (2), furans (2), and miscellaneous compounds (5). Sprouts cultivated with Dawonkong and Orialtae showed 46 flavor compounds whereas Pungsannamulkong and Nokchaekong was 49 and 50. In total flavor compounds contents, Orialtae was the highest (19.3 mg/kg RC) and followed by Pungsannamulkong (15.83 mg/kg RC), Dawonkong (13.2 mg/kg RC), and Nokchaekong (11.3 mg/kg RC) in that order. Two groups including alcohols and aldehydes were detected high amounts in which their ratio were analyzed 32% and 51% in total flavor contents, respectively. It may be responsible for flavor in soybean sprouts. In case each flavor compound content, 2-hydroxybenzaldehyde was detected the major compound and hexanol, 1-octen-3-ol, and hexanal that the main compounds in lipid oxidation of soybean products were identified the main volatile flavor compounds in soybean sprouts.
