  • The contents of raw materials which are components of mixed substrate for mushroom cultivation were analyzed to optimize the composition. The pure protein(amino acid) level of soybean meal was the highest, 44.02% followed by those of soybean curd residue(31.5%) and cotton seeds meal(30.6%). The non protein nitrogen(NPN) contents in crude protein of main nitrogen materials were 2.4% for soybean meal and 5.6% for dried soybean curd residue, while those of wheat bran and rice bran used as the carbon source were relatively higher, 17.6% compared to that of nitrogen supplying media. Crude protein content per price was 6.0 for rapeseed meal, indicating that it is high crude protein content per price. Nitrogen-free extract(NFE) considering as an ingredient for mycelial growth were high in alphacorn(72.9%) and wheat bran B(57.2%). • This study was carrie out to develop practical feed formulation for juvenile abalone (Haliotis discus hannai). Three replicate groups of abalone averaging 120mg were fed one of 7 isoproteic (34%) and isolipidic (5.3%) dlets containing various practical ingredients such as casein, fish meal, soybean meal, cottonseed meal, Undaria powder, wheat flour, spirulina, starch, and/or wheat germ meal for 4 months. The prices (5,000~800 won/kg diet) of these experimental diets were adjusted by adding different levels and ratios of practival ingredients. In addition, these experimental diets were compared with commercial feed or natural food (Undaria). Weight gain, soft body weight and shell growth of abalone fed experimental diets with low prices (2,500~800 won/kg diet) and commercial diet were significantly higher than those of abalone fed experimental diet with high price (5,000 won/kg diet)and natural food (P<0.05). The results indicate that our economic formulation (about 1,000 won/kg diet) can be useful for juvenile abalone.

  • The purposes of this study were (1) to analyze price sensitivity, (2) to define the range of acceptable prices for each foreign segment, and (3) to provide a price model for Korean traditional restaurants. From October to November, 2006, a total of 781 foreigners responded to individual surveys. Statistical analyses on the survey data were performed using descriptive statistics and Price Sensitivity Measurement (PSM). Major findings from the study are as follows: First, the ranges of the acceptable prices were $98$\sim$$130 for fine dining/gourmet restaurants, $70$\sim$$90 for theme/ambience restaurants, $40$\sim$$60 for popular/family restaurants, and $18$\sim$$30 for convenience/fast food restaurants. Second, the convenience/fast food restaurants showed the highest price sensitivity. Third, a low stress level and wide range of the acceptable price were observed for the fine dining/gourmet restaurants, suggesting that the price sensitivity of the fine dining/gourmet restaurants was quite low. Finally, the price sensitivity indicated by the Japanese was higher than by the other groups. In consequence, the research findings suggest that the managers of the Korean traditional restaurants should strategically plan prices by understanding different customers' price sensitivity within and between customer segments. Through additional research, marketers can compare perceptions of specific brands, the competition, and variations within a product line.
