  • New malting barley variety "Sacheon #6" is an early maturing, medium height, lodging resistance, high tillering, good quality and high yielding. This variety was developed from the cross Harupin-Nizo x Hokudai #2 made in 1970 at Sacheon Malting Barley Experiment Station, Doo San Farms Co., This variety was determined to recommend to the all malting barley production areas in southern part of Korea from 1979.from 1979.

  • New malting barley variety" Doosan #8" is a short culm, lodging registance, high tillering, good quality and high yielding variety. This variety was developed from the cross 'Tai Chung 2 rowed barley #1 \times Deba abed' made in 1972 at Sacheon Malting Barley Experiment station, Doo San Fann's Co. This variety was determined to recommend to the all malting barley production areas in southern part of Korea from 1981. of Korea from 1981.

Effects of Varietal Variation in Barley on ${\beta}-Glucan$ and Malting Quality Characteristics (보리의 품종적 변이가 ${\beta}-Glucan$ 및 맥아의 품질에 미치는 영향)

  • This study was conducted to evaluate malt quality characteristics of barley cultivars(2- and 6-rowed barley) grown in Korea. Changes in ${\beta}-glucan$ content during malting process were also investigated. Two-rowed varieties of barley exhibited considerably higher values in test weight(TW), 1,000 kernel weight (1,000 KW), and % plumpness than six-rowed barley varieties, which obviously influenced the level of malt extract. Six-rowed barley samples had slightly higher levels of ${\beta}-glucan$ content than two-rowed ones. There were varietal differences in malt quality characteristics and degree of malt modification. During malting process, ${\beta}-glucan$ content was significantly reduced and the rate of the ${\beta}-glucan$ degradation was dependent on the variety. Total ${\beta}-glucan$ content present in raw barley tended to affect wort viscosity. A high correlationship was observed between ${\beta}-glucan$ content in malt and wort viscosity, suggesting that malt ${\beta}-glucan$ content was highly associated with malt quality.

  • This experiments was carried out to study the identification of sugar formation during malting period in non-germinated malts. The yields of non-germinated and germinated malts were 89.5% and 83.0%, respectively. The content of reducing sugar in non-germinated malts by acid and freezing treatment methods showed more increasing tendency during malting 4 days than standard method. Fructose, glucose, maltose in non-germinated malts (Malting 1) were identified by HPLC and its content were calculated as 3.9 mg/g, 52.1 mg/g, and 20.1 mg/g.

Malting Quality Characteristics of Korean and North American Barley Varieties (한국산 보리와 미국산 보리의 제맥특성)

  • Eight samples of Korean two-rowed barley, 9 samples of North American barley and 3 samples of Korean six-rowed barley were analysed for 1,000 kernel weight, steeping time, germinative capacity, and protein content. The barley samples were malted with the same malting schedule and analyzed for malting loss, protein content, soluble protein, percent extract, wort viscosity, and diastatic power. The American barleys were higher in germinative capacity, percent extract and diastatic power than the Korean two-rowed barleys. The protein content ranged from 11.8 to 14.2% for the North American barleys and 9.7 to 15.5% for Korean barleys. The three Korean six-rowed barleys were lower in germinative capacity, percent extract and diastatic power, but were higher in wort viscosity than the Korean two-rowed barleys.

Variation in Characters by Grades of Malting Barley from Different Locations (검사등급이 다른 맥주보리의 지역에 따른 형질변이)

  • In order for investigating the variability of the characters related to malting barley quality of the different seed lots, about 150 seed lots sampled from the six districts in the southern parts of Cheonnam were analysed. The percentages of the first, second, and off grade of different seed lots of inspected malting barley were 25.9%, 62.7% and 11.4%, respectively. The coefficients of variation (CV) for years in the first grade was 25.0% and the off grade 43.4%. The CVs for 1,000 grain weight, assortment rate, grain colour, germination energy and capacity of different seed lots were 9.1%, 13.2%, 35.7%, 6.2% and 5.0%, respectively. Also, the CV for starch content of different seed lots was 4.8% and 9.6% for ${\beta}$-glucan, 14.0% for crude protein, 14.7% for husk rate, respectively. Seventy five percentage of seed lots in the first grade was fitted for the Agricultural Inspection Law of malting barley and the fitted rates in the second and off grade were 90% and 83%, respectively. The grade of malting barley were positively correlated with grain colour, crude protein, crude fiber, husk rate and ${\beta}$-glucan, but negatively with assortment rate, 1,000 grain weight, germination energy and capacity and starch content.

Reduction of Deoxynivalenol in Barley by Chemical Treatments and Malting

  • Fusarium mycotoxin deoxynivalenol (DON) contents and its critical quality parameters were analyzed using two-rowed, six-rowed, and hulless barleys. DON content in the two-rowed Korean barleys was lower than that in the six-rowed barleys. The average DON contents of six-rowed, two-rowed, and hulless barleys were 1.35 ppm, 0.36 ppm, and 0.49 ppm, respectively. The DON content was reduced by 6.2% by sieving, by 6.0% by washing with water and by 18.1-69.8% by treatment with aqueous chemical solutions. Of the reagents investigated, aqueous sodium bicarbonate gave the greatest reduction in the barley DON level. The DON content was reduced to 62.5% of initial level after 3 days of steeping and to 23.1% after 3 days of germination. DON was not detected after steeping barley for 24 hr in 0.1M $Na_2CO_3$ solution with 0.1 % activated carbon.

Effects of Rice Straw Application on Barley Growth and Grain Yield in Paddy Field (답리작 보리 재배시 볏짚 시용 효과)

  • For the labor-saving cultivation of barley in rice-barley double cropping system in paddy field, a series of expriments on the effect of rice straw application were carried out at the National Yeongnam Agricultural Experiment Station from 1992 to 1993. The affection of phenol compounds released from fresh rice straw could be lessened when seeded under rice straw in the soil and that made emergence rate increase by 11%, compared with that on application on the rice straw. Although utilization of rice straw as an organic material caused the poor growth of barley in early stage, it could be enhanced the culm breaking strength. On this reason, affected by rice straw, grain yield was increased from 8% in common barley and up to 20% in malting barley. The more nitrogen, CaO$_2$2 and SiO$_2$ applied, the more decomposition of rice straw accelerated from 2% to 6.9%. On the application of rice straw as an organic material in malting barely cultivation, the content of crude protein was decreased while 1,000-grain-weight and grain assortment was increased.
