Profiling of Volatile Components Using Gas Chromatography-Mass Spectrometry in Commercial Pine Needle (Pinus densiflora S. and Z.) Powder

  • Volatile components in commercial pine needle (Pinus densiflora S. and Z.) powder were extracted using simultaneous steam distillation and a solvent extraction (SDE) apparatus, and were analyzed by gas chromatography-mass spectrometry (GC-MS). A total of 230 compounds divided into 13 groups were identified, which included alcohols (42), ketones (39), aldehydes (32), terpenes (30), alkenes (17), esters (14), furans (14), benzenes (10), alkanes (8), napthalenes (7), acids (6), miscellaneous compounds (6), and phenols (5). Among the 230 compounds identified, 96 compounds were positively confirmed and quantified, and the rest of the compounds were tentatively identified. The major volatile components identified at relatively high levels were dodecanoic acid, hexadecanoic acid, hexanal, benzaldehyde, (Z)-3-hexen-1-ol, 1-penten-3-one, limonene, and $\beta$-caryophyllene oxide. Among the groups, terpenes accounted for 60.18% of the total concentration of all the volatile components. Some volatile components might account for the unique aroma and the biological activity of the sample.

쑥갓으로부터 추출한 정유의 휘발성 향기성분 분석 (Analysis of Volatile Flavor Components of the Essential Oil from Chrysanthemum coronarium var. spatiosum Bailey)

  • This study investigated the volatile flavor components of the essential oil from Chrysanthemum coronarium var. spatiosumBailey. The essential oil obtained from the aerial parts of the plant by the hydrodistillation extraction method was analyzed by gas chromatography and gas chromatography-mass spectrometry. One hundred and one (99.11%) volatile flavor components were identified in the essential oil from the Chrysanthemum coronarium var. spatiosum Bailey. The major compounds were hexanedioic acid, bis(2-ethylhexyl) ester (12.45%), 6.10.14-trimethyl-2-pentadecanone (7.94%), 1-(phenylethynyl)-1-cyclohexanol (6.34%), α-farnesene (5.55%), phytol (4.99%), and α-caryophyllene (4.39%). When the volatile flavor components of Chrysanthemum coronarium var. spatiosum Bailey were classified by functional group, the content was high in the order of hydrocarbons, alcohols, esters, ketones, aldehydes, and phthalides. Sesquiterpene hydrocarbons were the most common hydrocarbons, mainly due to α-farnesene and α-caryophyllene. Among the alcohols, the content of aliphatic alcohols was significantly higher, mainly due to 1-(phenylethnyl)-1-cyclohexanol (6.34%) and phytol (4.99%). The analysis of the volatile flavor components of Chrysanthemum coronarium var. spatiosum Bailey in this study will provide useful information to consumers when purchasing food and to industries using fragrance ingredients.

구기자(Lycium chinensis Miller)의 휘발성 성분 (Volatile Components of Lycium chinensis Miller)

  • 건조 구기자의 휘발성 성분을 분석하기 위하여 SDE 방법으로 정유성분을 추출한 다음 GC 및 GC-MS로 성분을 확인하였다. 확인된 성분은 54종으로써 알코올류 12종, 에스테르류 12종, 알데히드류 7종, 산류 6종, 탄화수소류 5종, 케톤류 8종, 푸란류 1종 및 피라진류 3종이었다. 그 중 에스테르류의 상대적 면적비가 가장 높았다. 건조 구기자의 주요 휘발성 성분은 hexadecanoic acid의 에틸에스테르, 1-octadecanone, tetrapyrazine, 2-furancarboxaldehyde, ethyl linoleate 등으로 구성되어 있었다.

채취시기에 따른 우엉 잎의 휘발성 향기성분 분석 (Analyses of the Volatile Flavor Composition of Burdock (Arctium lappa L.) Leaves according to Harvesting Season)

  • This study investigated the chemical composition of burdock (Arctium lappa L.) leaves essential oil, and the quantitative changes of the major terpene compounds according to the specific harvesting season. The essential oils obtained by the hydrodistillation extraction (HDE) method from the aerial parts of the burdock leaves were analyzed by gas chromatography (GC) and GC-mass spectrometry (GC-MS). The essential oil composition of this plant was characterized by the higher content of phytol and 6,10,14-trimethyl-2-pentadecanone. Seventy seven (98.28%) volatile flavor compounds were identified in the essential oil from the burdock leaves harvested during the spring season of 2012, and phytol (33.47%) and 6,10,14-trimethyl-2-pentadecanone (32.47%) were the most abundant compounds. Eighty eight (99.08%) compounds were identified in the essential oil from the leaves harvested during the autumn season of 2012, and in this case, phytol (37.35%) and 6,10,14-trimethyl-2-pentadecanone (34.67%) were also the most abundant compounds. These two volatile components were confirmed as the major oil components of the burdock leaves during the time of any harvest. The ratio between the two components contained in the burdock essential oils did not differ significantly by harvesting season. But overall, the essential oil harvested during the spring season contained 65.94% of the two major components, while for the essential oil harvested during the autumn season, the total amount of these two major components was 72.02%. While the main ingredients of the essential oils were found to be unchanged from one harvest time to the next, it was found to differ in content. For the burdock leaves, the quality index of the volatile constituents according to the harvest time would be more useful for utilizing the total quantity other than the proportion between phytol and 6,10,4-trimethyl-2-pentadecone.

Determination of volatile compounds by headspace-solid phase microextraction - gas chromatography / mass spectrometry: Quality evaluation of Fuji apple

  • The volatile components in 'Fuji' apple were effectively determined by a headspace solid-phase microextraction (HS-SPME) combined with gas chromatography-mass spectrometry (GC-MS). A total of 48 volatile components were identified and tentatively characterized based on National Institute of Standards and Technology (NIST) MS spectra library and the Kovats GC retention index I (RI). The harvested Fuji apples were divided into two groups: 1-methylcyclopropene (1-MCP) treated and non-treated (control) samples for finding important indicators between two groups. The major volatile components of both apples were 2-methylbutyl acetate, hexyl acetate, butyl 2-methylbutanoate, hexyl butanoate, hexyl 2-methylbutanoate, hexyl hexanoate and farnesene. No significant differences of these major compounds between 1-MCP treated and non-treated apples were observed during 1 month storage. Interestingly, the amount of off-flavors, including 1-butanol and butyl butanoate, in 1-MCP treated apples decreased over 5 months, and then increased after 7 months. However, non-treated apples did not show significant changes for off-flavors during 7 month storage (p<0.05). The non-treated apples also contained the higher levels of two off-flavors than 1-MCP treated apples. These two compounds, 1-butanol and butyl butanoate, can be used as quality indicators for the quality evaluation of Fuji apple.

Antibacterial Activity of Volatile Flavor Components from Houttuynia cordata Thunb

  • The volatile flavor components were obtained from the aerial parts of Houttuynia cordata by a simultaneous distillation-extraction(SDE) method and bactericidal effects of the volatile flavor components on some strains were examined. Strong antibacterial activities were observed against Bacillus cereus, Bacillus subtilis, Vibrio cholerae 0-1 and Vibrio parahaemolyticus. To further elucidate the effective components in the extract, SDE extract was analyzed by gas chromatography (GC) and gas chromatography/mass spectrometry(GC/MS). A total of 98 volatile compound were detected. Of these, 90 were confirmed including 6 hydrocarbons(0.34%), 12 alcohols(1.31%), 13 aldehydes(33.81%), 1 acetal(0.01%), 6 esters(1.16%), 2 acids(3.10%), 5 ketones(5.87%), 2 furans(0.06%), 1 phenol(0.18%), 41 terpenes(53.23%)and 3 miscellaneous compound(0.93%). Major components were determined to be $\beta$-mycene, decanal, cis-ocimene and 2-undecanone.

포도의 품종별 휘발성 향기성분 분석 (Volatile Flavor Components in Various Varieties of Grape(Vitis vinifera L.))

  • SDE 방법으로 추출한 블랙올림피아, 캠벨, 델라웨어의 향기성분을 분석하여 각각 77종, 72종, 74종의 휘발성 향기성분을 분리.동정하였다. 블랙올림피아의 주요향기성분으로 (E)-2-hexenal(20.36%), diethylacetal(18.03%), hexanal, ethyl acetate가 다량 함유되어 있었다. 캠벨에서는 에스터류로써 30.81%를 나타낸 ethyl acetate가 가장 높은 함량을 보였으며, ethyl (E,E)-2,4-decadienoate와 ethyl butanoate가 각각 7.96%, 2.59%를 차지하였고, 알코올류와 알데이드류는 주로 $C_{6}$ 화합물이 다량 함유되었다. 델라웨어에서는 블랙올림피아나 켐벨과는 달리 알코올류가 높은 함량을 나타내었으며, 주요 성분은 (E)-2-hexenal (21.07%)과 (E)-2-hexen-1-ol(19.43%) 이었다. 세 종류의 품종에서 공통적으로 hexanal, (E)-2-hexenal, hexanol, (E)-2-hexen-1-ol, ethyal acetate 둥이 다량 동정되어 $C_{6}$-화합물이 포도의 주된 향기성분으로 확인되었으나 테르펜올류는 델라웨어에서만 미량으로 검출되었다. 품종별 휘발성 향기성분의 총함량으로 블랙올림피아, 캠벨, 델라웨어에서 각각 13.7 mg/kg, 48.5 mg/kg,15.3 mg/kg이 정량분석 되었다.

한국산 산초열매와 나무의 휘발성 향기성분 (Volatile Flavor Components of Korean Sancho Fruit and Tree(Zanthoxylum schinfolium))

  • An attempt was in this to analyzer volatile flavor components of sancho(Zanthoxylum schinfolium). Essential oils in sancho tree and fruit isolated by a simulataneous steam distillation (SDE) methods using n-pentane/diethyl ether as solvent. A total of 57 and 44 components were identified by gas chromatography(GC) and combined gas chromatography spectrometry (GC-MS), respectively. Granyl acetate(29.23%) geraniol (6.80%, p-isopropyl-2-chclohexenone(5.53%), phellandral (4.10%) in sancho fruit and 4, 6, 6-trimethyl-bicyclo(7.47%), T-carvelo(4.60%, ${\alpha}$-cypernone(3.58%) in sancho tree were found to be major volatile flavor. 22 compnents including myrcene, limonene, 1, 8-cinol in sancho fruit and 10 components including 4-(1-methylethyl)-cyclohexanol, methyl undecyl ketone in sancho tree were identified. The contents of unsaturated fatty acids of palmitic acid(24.34%), myristic acid(3,68%) in sancho tree was higher than that of the sancho fruit.

중화요리용 향미유의 제조 및 향미특성 (Preperation and Flavor Characteristics of Seasoning Oil for Chinese Dish)

  • Methionine과 xylose를 이용한 Maillard 반응생성물을 첨가하고 autoclaving mothod로 중화요리용 향미유를 제조하였다. 이 향미유와 서울 시내 중국 음식점에서 자장면용 양념자장 3종을 구하여 이들의 휘발성 물질을 GC, GC-MSD로 측정하였다. 향미유에서는 61종, 404.92ppm의 휘발성 물질이 분리 정량 되었고, 양념자장 3종에서는 각각 39종, 42종, 42종이 확인 되었으며, 그 양은 각각 333.52ppm, 330.01ppm, 393.18ppm이었다. 중화요리용 향미유의 주요 휘발성 성분은 diallyl disulfde, pentane, diallyl trisulfide, t, t-2, 4-decadienal 및 zinngiberene이었으며, 이들의 함량은 각각 40.15ppm, 32.32ppm, 19.57ppm, 15.06ppm 및 13.23ppm이었다. 시중 자장시중 3종에서는 pentane, propenal, hexanal, t-2-heptanal, 2, 4-heptadienal, t, t-2, 4-decadienal 및 미확인 물질이었다. 본 실험에서 제조한 향미유는 3종류의 sample과 유사한 향미 물질을 포함하고 있었으며 aldehyde, ethane, alcohol 등의 함량은 낮은 편이었다.

찹쌀밥의 주요 휘발성 성분 (Major volatile components of cooked glutinous rice)

  • 찹쌀밥에서 발생하는 휘발성 성분의 종류, 양 및 취반후 발생량 변화를 구명하기 위하여 한국산 찹쌀인 한강찰벼와 일본판 찹쌀인 히가리를 공시료로 하여 취반후 상온$(25^{\circ}C)$에서 휘발성 성분량을 조사하였던바 가스크로마토그람에 나타난 휘발성성 성분의 peak의 수는 100여개가 넘으며 이중에서 헥산알, 펜탄알, 부탄알, 옥탄알, 헵탄알, 노난알, 아세톤, 톨루엔 순으로 전체 peak 면적의 85% 정도를 차지하며, 헥산알이 이들 8가지 휘발성 성분의 전체 발생량의 86% 정도를 차지하여 가장 많이 발생하였다. 취반직후 이들의 총 발생량은 멥쌀밥에서 보다 찹쌀밥에서 6배 정도가 많았고 헥산알은 9배 정도 많았다. 그리고 찹쌀밥에서는 취반후 $70^{\circ}C$의 전기 밥통에 72시간 보관 후에도 멥쌀밥의 취반직후 발생량과 같은 수준이었다.
