This study was conducted to evaluate the efficacy of the dipeptide form of phenylalanine as a new source of amino acid in terms of growth performance and whole-body amino acid composition in comparison to the free form for red seabream (Pagrus major). Fish ($1.46{\pm}0.001g$) were fed four isonitrogenous and isocaloric experimental diets containing 0.7 or 1.4% phenylalanine either in free or dipeptide form. A feeding trial was carried out in three replicates and the fish were fed to apparent satiation for six weeks. At the end of the feeding trial, feed intake of fish was influenced by both phenylalanine form and level and significantly higher values were obtained at an inclusion level of 0.7% and by the use of dipeptide form. However, the other growth parameters did not significantly differ among treatments. Whole-body amino acid compositions revealed no significant changes in concentrations of both essential and non-essential amino acids regardless of the increase in phenylalanine levels or the use of its different forms. The finding in this study indicates that juvenile red seabream can utilize dipeptide phenylalanine as efficiently as free form without any undesirable effects on growth performance or whole-body amino acid composition.

To determine the relative importance of two main factors, diet or culture environment, that affect the proximate composition and main nutritive ingredients (vitamin A, vitamin E, cholesterol, fatty acid composition) in cultured eels, we analyzed the composition of eels fed diets of formula feed (FF) produced by four different companies and of eels cultured at five different eel farms that provided only one of the four different FFs. The four commercial eel FFs did not markedly differ in proximate composition or major nutritive compounds, and consequently, these variables did not significantly differ in cultured eels fed the different FFs. The FF imported from Japan was marginally superior to the two domestic commercial FFs and the FF imported from Taiwan in terms of the proximate composition and main nutritive ingredients of both the FF itself and the eels cultured on it. However, proximate composition and main nutritive ingredients significantly differed among eels cultured at the five farms that used a different FF and among eels fed the four different FFs at the same farm. In conclusion, the difference in quality between domestic and Japanese FFs in terms of eel culture was small, whereas physical or chemical environmental differences among farms during eel culture may more strongly affect the proximate composition and levels of the main nutritive ingredients in cultured eels.

The objective of this study was to analyze proximate composition, dietary fiber, mineral content, fatty acid composition in Cheonggak (Codium fragile) in order to encourage the consumption of Cheonggak. The proximate composition of Cheonggak was found to be 5.51% moisture, 24.09% crude ash, 15.79% crude protein, 2.47% crude lipid and 45.31% dietary fiber. The major mineral content of Cheonggak was Na 8,950 mg/100 g, Mg 1,252 mg/100 g, Ca 807 mg/100 g, K 457 mg/100 g, and trace mineral content was Fe 26 mg/100 g, Mn 8 mg/100 g, Zn 0.4 mg/100 g. Palmitic acid 36.86% and ${\alpha}$-linolenic acid 20.14% were the most contained fatty acids in Cheonggak. The ratio of saturated fatty acids to unsaturated fatty acids was 85.49% while ${\omega}-6$ fatty acids to ${\omega}-3$ fatty acids were 59.10%. Based on the proximate composition, dietary fiber, mineral content, and fatty acid composition, Cheonggak was judged to be a major source of dietary fiber and Mg and Ca, and it was deemed to be helpful in promoting health, including the prevention of hyperlipidemia. Cheonggak contained valuable nutrients similar to seaweed, which is produced and consumed the most in Korea. Thus, it is necessary to include Cheonggak in the food items.
The purpose of this study was to evaluate the sensory characteristics and investigate the nutrients composition of sauce made with rock lobster shells or heads. Rock lobster head sauce(LHS) turned out to have better appearance, color, taste, flavor, texture and viscosity than rock lobster shell sauce(LSS). The crude protein content was 1.95% in LHS and 1.56% in LSS, and the crude lipid content was 1.60% in LHS and 2.27% in LSS. The major free amino acids of LHS were urea, a-aminoadipic acid, L-alanine, taurine, and those of LSS were urea, $\alpha$-aminoadipic acid, $nu$- and DL-$\beta$-aminobutyric acid. The major free fatty acids of both samples were palmitoleic acid and oleic acid, with a high quanitity of palmitoleic acid in LHS, and a significant amount of linoleic acid in LSS. The major minerals in rock lobster sauce were potassium and sodium.
Atomic absorption spectrophotometer was used for analyzing each 10elements(Cu, Pb, Sn, Zn, Sb, Fe, Ni, Ag, Co and Mn)on 64 Chinese coinsre covered from Shinan seabed sunken ship. The results show that Cu, Pb and Sn were found to be a major elements consisting of coins and its composition ratio was 6 to 2 to 1.The composition of trace elements on coins was classified 3 levels : Sb, Fe and Zn(0.02%-2.2%), Ag, Ni, and Co(50 ppm-5500 ppm) and Mn(Trace). Theam ount of major elements, Cu and Sn were decreased while increased in Pbby the passage of ages (10th - 13th century) in China. There seems to be no systematic compositional change in major elements but content in trace elements was confirmed to increase with age.
Approximate composition and physicochemical properties of 2 cultivars of plum (P. salicina), Humoosa and Daeseok, were examined. The contents of crude fat and N-free extract were different between 2 cultivars. Total mineral contents of Humoosa and Daeseok were 30.00 and 17.99% respectively, and S, K and Mg were major minerals in both cultivars. Humoosa has higher contents of fructose whereas Daeseok has higher contents of sucrose. Major organic acid in flesh was malic acid. While citric acid was major organic acid in the peel of Humoosa, malic acid was major in the peel of Daeseok. Glutamic acid, alanine and ${\gamma}-aminoisobutyric$ acid were major free amino acid in both cultivars and their total contents were about the same.
Bacillus sp. KYJ 963, which was isolated from Korean salt-fermented anchovy (anchovy-jeot), produces an extracellular ${\beta}$-amylase. The analysis of the digestion products of substrates by thin layer chromatography from the purified protein revealed that the enzyme could not hydrolyze maltose or ${\alpha}$-cyclodextrin. In the amino acid composition analysis, the major characteristic of the ${\beta}$-amylase was the high proportion of amino acids that possess short side chain such as glycine and alanine.
Nine Holstein cows in mid lactation period were utilized to examine the effect of recombinant bovine somatotropin (BST) of tow companies (Company A, Company B) on milk production and milk composition under the feeding conditions of Korea. Treatments were 0 (Control), 25 mg BST/day from company A (BST A) and 25 mg BST/day from company B (BST B) injected subcutaneously, once daily beginning at $200{\pm}20$ days postpartum and continuing for 28 days. Cows were fed ad libitum a total mixed diet throughout the experimental period. BST treatments increased average 4% fat corrected milk yields and milk energy output over the 28-day treatment period. However, no differences were observed in dry matter intake, gross efficiency, energy intake and percent milk energy. Although there was a tendency for increased milk fat percent, there were no differences in milk composition and yields of major milk components except for milk fat yield with BST injection. Somatic cells of all groups were also characteristic of a well managed herd. Neither mean body condition score nor body weight was significantly (p <0.05) changed before and during BST treatment. BST concentration in milk remained in the range of control animals throughout the experimental period of BST treatment. Results indicate that short-term injection of recombinant bovine somatotropin from two companies to lactating dairy cow resulted in similar increased in milk yield without alteration of major milk components or feed intake.
This study investigated the volatile flavor composition of essential oils from Solidago virga-aurea var. asiatica Nakai with different harvesting area. The essential oils obtained by the hydrodistillation extraction method from the aerial parts of the plants were analyzed by gas chromatography (GC) and GC-mass spectrometry (GC-MS). Ninety-five (91.61%) volatile flavor compounds were identified in the essential oils from the S. virga-aurea var. asiatica Nakai harvested in Koheung, Jeolanamdo. The major compounds were hexadecanoic acid (29.22%), 7-hexyl eicosane (9.12%), spathulenol (7.701%), 3,8-dimethyl decane (6.48%), caryophyllene oxide (4.52%) and α-copaene (4.23%). Fifty-seven (97.43%) volatile flavor compounds were identified in the essential oils from the S. virga-aurea var. asiatica Nakai harvested in Seoguipo, Jejudo. The major compounds were 2-carene (40.95%), α-copaene (10.77%), α-muurolene (5.81%), and spathulenol (3.11%).
