Maize is one of the major crops consumed in worldwide, which nutrients accounts for a large amount of starch, but also functional components, and phenolic acid is known to have a high content. Maize is divided into waxy maize, sweet maize, and normal maize with its shape and use, therefore there is also a difference in nutritional composition. This study was conducted to analyze the content of functional components according to the type of maize and to produce natural variation data in consideration of environmental factors. 3 shapes of maize (waxy maize, sweet maize, and normal maize) samples cultivated in 3 regions (Suwon, Daegu, and Hongcheon) were analyzed using HPLC and GC-TOF-MS. Comparing with type through ANOVA, multivariate statistical analysis, Pearson correlation analysis, 28 components, including carotenoids and tocopherols, showed significant differences among a total of 32 components (p <0.05), 15 of them showed very significant differences (p <0.001). When comparing with regions, 15 components showed significant differences and only vanillate, syringate, C23-ol of them showed most significant differences (p <0.001). As a result of principal component analysis, cluster classification was distinguished by shape than by region, with α-carotene, cholesterol for waxy maize, vanillate and stigmasterol for sweet maize, lutein and β-carotene for normal maize had a great effect on cluster formation. It suggests that the content of functional components is more affected by genetic factors than environmental factors.

Phytotron and field experiments were conducted to determine the influence of morphological development and environmental temperature on synthesis, translocation and accumulation behaviour of Fructosan, Monoand Disaccharose in corn cv. Blizzard and fodder sorghum cv. Sioux and Pioneer 931 at Munich technical university. Sorghum and maize plants were grown for 42 days at 4 temperature regimes (30/25, 25/20, 28/18 and 28/8 dog C) and mid-summer sunlight over 13-h days. The obtained results are summarized as follows: 1 Non-structural carbohydrates in maize and sorghum were accumulated mainly as Mono- and Disaccharose. The concentrations of Mono- and Disaccharose were increased markedly after differentiation of growing points and shown at early milk stage the highest contents with 27.8-29.1% and 16.8-20.4% for maizeand sorghums respectively. 2. Non-structural carbohydrates were accumulated mainly in stalk. However, during the late maturity the most of Mono- and Disaccharose were translocated into grain and reserved as starch. The increase of starch was associated with decrease of total non-structural carbohydrates. 3. Fructosan synthesis was not affected by morphological changes and environmental factors, which shows a value of 1.5-2.5% in whole stage of maize and sorghum. 4. Sorghum and maize plants were shown to have a great photosynthetic rates to high temperature. Reserved Mono- and Diaaccharose were, however, declined when temperature exceeded 30 dog C. Under cold stress at l8/8 deg C non-structural carbohydrates were not translocated and also were accumulated in leaves too much that cause to restrict of photosynthesis. 5. Net Energy Lactation (NEL) of sorghum and maize were directly associated with synthetic rates of non-structural carbohydrates, especially Mono- and Disaccharose. The highest values of NEL were found at physiological maturity stage with 6.6- 6.9 MJ and 5.7-6.0 MJ-NEL/kg for maize and sorghum respectively.
Objective: An experiment was conducted to assess the antioxidant contents and activities of colored rice grains and to evaluate their nutritive characteristics in terms of chemical composition and in situ ruminal degradation. Methods: Ten cultivars of colored rice grains (Oryza sativa L.) collected from several areas of Japan were studied, and control rice without pigment, maize, barley, and wheat grains were used as control grains. Their chemical compositions, pigment, polyphenol contents, total antioxidant capacity (TAC), and degradation characteristics were determined. Results: The starch contents of the colored rice grains were in the range of 73.5% to 79.6%, similar to that of the control rice grain. The black and red rice grains contained anthocyanin (maximum: $5,045.6{\mu}g/g$) and proanthocyanidin (maximum: $3,060.6{\mu}g/g$) at high concentrations as their principal pigments, respectively. There were significantly (p<0.05) positive relationships among the pigment contents, polyphenol content, and TAC values in the colored and control rice grains, indicating that the increase in pigment contents also contributed to the increased polyphenol content and TAC values in the colored rice grains. The dry matter and starch degradation characteristics, as represented by c (fractional degradation rate of slowly degradable fraction) and by the effective degradability, of the colored rice grains and the control rice grain were ranked as follows among commonly used grains: wheat>barley${\geq}rice$>maize. The colored rice grains also included the most-digestible starch, since their potential degradable fraction and actual degradability at 48 h incubation were almost 100%. Conclusion: Colored rice grains have high potential to be used as antioxidant sources in addition to starch sources in ruminants.
The physicochemical properties of maize starch sonicated at various amplitudes (100, 200, and 300 W) and times (10, 30, and 50 min) were examined. The amount of enzyme-susceptible starch increased marginally after sonication. Sonication increased the amount of oil absorbed in the starch although the degree of oil absorption decreased with an extension of the sonication time, implied that different types and extent of damages occurred. Scanning electron microscopy revealed that ultrasound sonication did not form pores on the surfaces, but caused damages such as depression and erosion. Pasting viscosity of starch decreased with an increase in the severity of sonication conditions because of the weakened polymer network. X-ray diffraction suggested that the crystalline domains in starch were not susceptible to sonication and were more resistance to degradation. Sonicated starch formed more pin-holes on the surfaces in the initial glucoamylase reaction; subsequently, as the reaction proceeded, porous starch with enlarged pores was formed and finally, disrupted granular fragments were observed.

Maize, in Hungary, is the fodder-plant grown in the biggest quantity. It is not only used as a fodder but other products such as iso-sugar are made from it, too. The quality of the fodder and the produce is largely dependent on the composition of the supplied maize to the processing site. The examination of quality parameters besides conventional methods are investigated and measured by NIR spectroscopy on a routine basis. The investigated parameters are the following: water, total protein, starch and oil content. The accuracy and precision of determining these parameters we, apart from the wet chemical methods, influenced by sample preparation to a great extent. One of the main features of this is the sample particle size and its distribution across the sample. The uneven distribution of particle size negatively influences the measurement accuracy, decreases model robustness and prediction ability. With these in mind the aim of our experiment was to investigate the effect of particle size on the accuracy of maize composition determination using reflection measurement setup. In addition, we tested different spectrum transformations, which are suitable for canceling this effect. In our experiment 47 samples were analyzed with three different mesh sizes (1.5mm, 1.8mm and 2mm). The results of our findings are presented here.
Objective: This study was conducted to determine the effects of stale maize on growth performance, immunity, intestinal morphology, and antioxidant capacity in broilers. Methods: A total of 800 one-day-old male Arbor Acres broilers (45.4±0.5 g) were blocked based on body weight, and then allocated randomly to 2 treatments with 20 cages per treatment and 20 broilers per cage in this 6-week experiment. Dietary treatments included a basal diet and diets with 100% of control maize replaced by stale maize. Results: The content of fat acidity value was higher (p<0.05) while the starch, activities of catalase and peroxidase were lower (p<0.05) than the control maize. Feeding stale maize diets reduced (p<0.05) average daily feed intake (ADFI) throughout the experiment, feed conversion ratio (FCR) during d 0 to 21 and the whole experiment as well as relative weight of liver, spleen, bursa of Fabricius and thymus (p<0.05) on d 21. Feeding stale maize diets decreased jejunum villus height (VH) and VH/crypt depth (CD) (p<0.05) on d 21 and 42 as well as ileum VH/CD on d 42. The levels of immunoglobulin G, acid α-naphthylacetate esterase positive ratios and lymphocyte proliferation on d 21 and 42 as well as lysozyme activity and avian influenza antibody H5N1 titer on d 21 decreased (p<0.05) by the stale maize. Feeding stale maize diets reduced (p<0.05) serum interferon-γ, tumor necrosis factor-α, interleukin-2 on d 21 and interleukin-6 on d 21 and 42. Broilers fed stale maize diets had lower levels of (p<0.05) total antioxidative capacity on d 42, superoxide dismutase and glutathione peroxidase on d 21 and 42, but higher (p<0.05) levels of malondialdehyde on d 21 and 42. Conclusion: Feeding 100% stale maize decreased ADFI and FCR, caused adverse effects on immunity and antioxidant function and altered intestinal morphology in broilers.
This paper is intented to present a information of various aspects of quality related characteristics and standards for grades in maize. Maize is world's one of the three most popular cereal crops and a primary energy supplement and can contribute up to 30, 60, and 98% of the dairy diet's protein, net energy, and starch, respectively. Maize is also processed into industrial goods by wet or dry milling. Sweet corn is a leader among vegetable crops and its production for fresh or processing markets is a major industry in many countries. Over the years, the combined efforts of breeders and geneticists, biochemists, food scientists, and others have helped bring us to the point where we understand issues related to sweet corn quality. Traditional criteria for selecting corn hybrids have been based primarily on agronomic factors, including grain production, disease resistance, drought tolerance, and storage characteristics. Little emphasis has been placed on the quality and nutritional values of corn. Although there is widespread interest for value-enhanced corns have increased tremendously in the last five years, there is limited information available on the production and comparing the quality attributes of specialty grains with those of normal yellow dent corn. Most countries have developed national maize standards, aiming to provide a framework for trade, both internal and external. Where trading involves direct choice and price negotiation in front of the commodity, grading standards are rarely employed; quality is assessed visually and is influenced by end-use, and the price is determined more by local rather than national factors. The use of an agreed standard will provide an unambiguous description of the quality of the consignment and assist in the formation of a legally-binding contract. Standards can also be seen to protect consumers rights through setting limits to the amount of unsuitable or noxious material.

It is of critical importance to understand the characteristics of papermaking additives and their reaction mechanisms to fully utilize the benefits they provide. Among the papermaking additives, retention aids play critical roles in improving productivity, product quality and process economy. Diverse research efforts to understand the reaction mechanisms between cationic polymers and anionic microparticles have been made since microparticle retention systems were introduced into the market. And it is most commonly accepted that flocs formed by the addition of cationic polymers are dispersed by shear force and the broken flocs are reflocculated instantly with the addition of microparticles. There are still many unanswered questions, however, on the reaction phenomena between cationic polymers and anionic microparticles. In this study, several cationic polymers including waxy maize starch, com starch and guar gum were used to investigate their retention efficiency when they were used along with anionic colloidal silica.

This paper examines some properties of concrete, such as strength, oxygen permeability and sorptivity using starch [cassava (CA) and maize (MS)] as admixtures. Concrete cubes containing different percentages of the CA and MS by weight of cement (0, 0.5, 1.0, 1.5 and 2.0 %) were cast. Compressive strength tests were carried out after 3, 7, 14, 21, 28, 56, 90, 180, 270 and 365 days of curing. Oxygen permeability and sorptivity tests were carried out on another set of concrete specimens with the same percentages of starch at 7, 28, 90, 180, 270 and 365 days. Oxygen permeability and sorptivity tests data obtained were subjected to Kruskal-Wallis one-way analysis of variance by ranks. The strength increase after 1 year over the control for CA 0.5 and CA 1.0 are 2.7 and 3.8 % respectively, while MS 0.5 and MS 1.0 gave 1.5 % increase over control. These results showed a decrease in oxygen permeability and rates of sorptivity, with concretes containing starch as admixtures giving better performance than the control concretes.

Steers with ad libitum access to rice straw were assigned to four diets to evaluate the effects of maize or soybean hull supplementation on intake, in vivo digestibility, ruminal pH, VFA, ammonia-nitrogen ($NH_3-N$) and in situ ruminal disappearance of feed nutrients by cattle consuming rice straw. Supplement treatments were: no supplement (RS); soybean meal at 0.127% BW (SBM); cracked maize at 0.415% BW plus 0.044% BW soybean meal (MAIZE); or soybean hulls at 0.415% BW plus 0.044% BW soybean meal (HULLS). The MAIZE and HULLS diets were formulated to provide approximately 4 MJ of $NE_m$ per kg of diet. Rice straw DMI was not affected (p = 0.34) by supplement. Apparent dry matter (DM) digestibility was greater (p<0.001) for MAIZE and HULLS (56.6 and 60.0%, respectively) than for steers consuming SBM or RS (51.8 and 44.4%, respectively). Apparent NDF digestibility was greater (p<0.0004) for HULLS than MAIZE (61.7 vs. 58.0%, respectively) and apparent ADF digestibility was greater (p<0.0008) for HULLS than MAIZE (61.1 vs. 49.2%, respectively). There was no difference in apparent hemicellulose digestibility (p = 0.43). Analysis of ruminal fluid collected 0, 2, 4, 6, and 8 h post-feeding revealed ammonia-nitrogen was greatest (p<0.05) for steers on SBM and HULLS diets at 2 h (24.08 and 22.57 mg/dl, respectively) and total volatile fatty acids was greatest (p<0.05) for HULLS at 4 h (230 mM/L). In situ disappearance, measured at 0, 2, 4, 6, 8, 16 and 24 h, indicated that SBM, MAIZE and HULLS tended to enhance the digestibility of DM and fiber components of rice straw. In situ disappearance of rice straw DM was greatest for SBM and/or HULLS from 4 to 24 h (p = 0.03). Rice straw NDF and ADF disappearance was enhanced by supplementation from 16 to 24 h (p<0.02). Rice straw DM, NDF and ADF disappearances at 24 h were similar for MAIZE and HULLS treatments. When feeding cattle rice straw diets, energy and protein-based supplements are essential. This study showed that fiber-based supplements are just as, if not more, effective as starch-based supplements in rice straw utilization. This study shows that soybean hulls, in spite of their high fiber content, are as efficient as maize for supplementing rice straw primarily because fiber in soybean hulls is highly digestible as shown by in vivo digestibility and in situ disappearance.
